Ingredients:

• 2 Each Quail • 2 Each Scallion, green part only, blanched • 1/2 Teaspoon Pine Nuts (pignolia), toasted • Serve with Roasted Seasonal Vegetables and Quinoa I Tablespoon (each Quail) Quail Seasoning • 1 Cup Kosher Salt • 1 Cup Tajin Seasoning • 1 Cup Roasted Garlic Seasoning • 1 Cup Smoked Paprika Mix all ingredients thoroughly 2 Teaspoons (each dish) Guacamole Cream Sauce • 1 Cup Guacamole • 1/2 Cup Heavy Cream • 1/4 Cup Fresh Lemon Juice Place guacamole in food processor bowl. Process until smooth. Add cream and lemon juice, process until well blended. Adjust amount of liquids needed for desired consistency.

Directions:

Pat the quail dry with paper towels. Season generously with seasoning blend. Place on char-broiler, cook just long enough to develop grill marks. Turn 90 degrees and cook to develop cross hatch grill marks.Transfer to pan and place in oven to finish cooking: internal temperature of 165°F, or when juices run clear. Be careful not to overcook, as quail will become dry quickly if over-cooked. Heat quinoa blend in soup cup in microwave. Pack firmly to retain shape. Invert soup cup, centered, on dinner plate and release quinoa onto plate. Garnish quinoa with toasted pine nuts. Remove quail from oven. Using blanched scallion tops, tie legs together. Arrange quail, using quinoa blend to hold legs up. Using a squeeze bottle decorate plate with guacamole cream sauce. Garnish with fresh cilantro sprigs. >>43<<

The world is full of beauty and wonder, diverse landscapes, and many national parks protecting and showcasing them. Western Colorado is home to such a place known as the Colorado National Monument. Spanning a distance of 32 square miles, beginning in Grand Junction and ending in Fruita, this spectacular landscape of sandstone and granite is full of unique rock formations, dozens of hiking trails, and outdoor activities such as horseback riding and rock climbing. For the less adventurous or active, the scenic drive from one end to the other showcases the best views the Monument has to offer, including the Coke Ovens, Devil’s Kitchen, and of course, the Independence Monument. For the avid outdoor enthusiast, there are so many trail systems at varying degrees of difficulty, that it is easy to find a trail to one’s self. There are trails short and easy enough for small children, as well as challenging enough to give the more advanced hikers a worthwhile experience. COLORADO RIVERS

The rivers, for example, provide both calm stretches for paddle boarding and rapids for the more adventurous kayaker or rafter. Grand Junction itself, is named for the area in which the Colorado River joins the Gunnison, while the western slope as a whole has many other rivers, including the Yampa, White River, and San Juan. Many resevoirs have also created areas for an abundance of outdoor activities such as water skiing or tubing. Blue Mesa is by far the largest of these, outside the town of Gunnison at a size of over 940,000 acre-feet â€“ nearly twice as large as the next largest. GRAND MESA WINTER SPORTS

Photo by Amy Kappler The Grand Mesa is the largest flat top mountain in the world, with an area of roughly 500 square miles. It has a maximum elevation of over 11,000 ft. It is home to over 300 lakes, a national forest, and Powderhorn Resort for the winter sports lover. Come wintertime, Western Slope residents and tourists alike can enjoy an abundance of activities offered by the Mesa. There are places to ice fish, snowshoe and cross country ski trails that loop the many lakes, skiing and snowboarding at Powderhorn, and even sledding at the â€œold powderhornâ€? - a well-maintained old hill that is perfect for smaller children. Mesa Lodge and Powderhorn Resort are always full of people. With its evergreens and aspens, the Mesa is a drastically different landscape from all the other surrounding mountains in the Grand Valley such as the Bookcliffs as well as the Monument which are more sandstone and dry.
