PRESIDENT’S REPORT Dear Member, With the Financial Year for 2015-16 just completed, it is pleasing to report that once again our Club will return a healthy profit. The final figures will be advised closer to our A.G.M. after all deductions and adjustments are determined. Early indications are that the net profit will be similar to last year’s profit figure. I can now advise Members that the “Hawks on Second” site has been sold and settlement has recently been effected. The site was closed down at the end of 2011, and it has been a long and difficult process to reach this point. The proceeds of the sale will fall into this financial year and the final outcome after taxes and all relevant expenses will be provided in next year’s annual report. Further details will be provided in my next journal report later in the year. Renovations are continuing in the Club with the Palm Court Bistro now being overhauled, and we thank Members for their patience with regard to the sections of the bistro that have to be closed to complete the work. The works should be complete by the end of August, apart from new carpet for the lower level which won’t be available until mid-September. The new carpet will be installed with minimal, if any, disruption to Members at that time. New furniture is also being installed and we hope that Members like the contemporary new look. I am pleased to report that recently the Board donated $54,100 to Ryde Hospital as the balance of the cost of the purchase of a new portable Ultrasound machine to replace their old one which had seen better days. The total cost of this machine was $86,000. The Board believes that this machine may at some time in the future help many of our Members who may be taken to the Hospital and that this donation is more than worthwhile. Your Club also hosted the Adam Gardiner Fund Sportsmen’s Luncheon in early July, which raised over $13,000 for the Amyloidosis Clinic at Westmead. In addition your club provided a cheque for $20,000 at this event which was the balance of our $30,000 commitment to the clinic for this year, and the first year of a five year commitment to ensure that funds are available to this clinic over that time frame. Once again, I thank all Members for their support in making the above things possible, and in so doing contributing to both the Club and the local Community. Keith Aggett. President

Refurbishment News THE PALM COURT BISTRO Dear Members, You might have noticed some changes going on in the Palm Court Bistro during July. We are currently undertaking refurbishments to make our members’ dining experience more comfortable and more memorable. There will be new furniture and a new look décor-wise to the Palm Court. The refurb is due for completion by late August. So why don’t you come down and check out the changes. Sidney Ho, the operator of the Palm Court Bistro, has kindly put together a fantastic Salt and Pepper Squid recipe for for you to try. (See below). Don’t worry, if you think your culinary skills are not quite up to scratch then let one of Sidney’s chefs prepare one for you on your next visit to the Palm Court Bistro!

THE

PALM COURT BISTRO

THE PALM COURT BISTRO

Sidney’s ‘Salt and Pepper Squid’

INGREDIENTS 200g squid tubes, cleaned Vegetable oil, to deep-fry 1 egg white, whisked 150g (1 cup) potato starch 1 spring onion, thinly sliced 1 red bird’s eye chilli, thinly sliced 1 small garlic clove, crushed

Salt and pepper seasoning 1 tbsp salt 1 tsp white pepper 1 tsp ground ginger 1 tsp white sugar 1/2 tsp Chinese five-spice

1.

To make the salt-and-pepper seasoning, combine all the ingredients in a bowl.

2.

Lay the squid tubes on a chopping board. Working from the top of the tubes down to the bottom, run a knife to open them. Score the squid with a criss-cross pattern, cut in half lengthwise, then slice width-wise into five-millimetre pieces. Place in a bowl.

3.

Fill a wok or large deep frying pan one-third full with oil and heat over a high heat to 180C (or until a cube of bread turns golden in 10 seconds).

4.

Meanwhile, using your hands, work the egg white into the squid. Gradually add the potato starch, a little at a time, until the squid is well coated and feels quite dry.

5.

Shake off the excess flour, then, working quickly with a few pieces at a time, add the squid to the hot oil. Using a slotted spoon, remove and discard any bits of batter that rise to the surface. Cook for two minutes or until light golden and the batter feels firm when tapped with a wooden spoon. Using a slotted spoon, remove the squid and transfer to a colander to drain.

6.

Drain the oil from the wok, leaving one tablespoon, and place over medium-high heat. Add the onion, chilli and garlic, toss to combine, then add the squid. Cook for half a minute, sprinkling the squid with the seasoning as you cook. Serve immediately with the dipping sauce.

GOLF CLUB Round 1 of Matchplay was at Windsor; congratulations to the top 8. Our winner on the day was Steve Ferns with Rick Beves runner-up. Lynwood hosted round 3 of the Stableford trophy and once again the loss of balls would indicate the course was the winner, but a couple of people managed a good round. Congratulations Steve Ferns and Terry Ludlow, our winners, and Robert Wood and Yuri Popov, runners-up. Medals at Dunheved went to Steve Mac and Billy Chick; runners-up on the day were Steve Ferns and Jeff Ackers. Medals at Georges River went to Ulla Wood and Terry Ludlow, with Dave Whybro and Natalia P runners-up. Massey Park once again hosted the Maris/Busher Cup in honour of our long serving President Alan Maris, and Ryde-Eastwood retained the cup for another year. Richmond was another medal round on a wet Sunday morning; winners were Ulla Wood and Eric Tsui with Alan Henderson runner-up. Fox Hills was the final round of the Stableford trophy. SENIORS CLUB It is with sadness that on 1st June one of our longstanding members, Robert (Bob) Watts passed away. Our condolences go to all his family and friends. We have had another very busy three months with our monthly bus trips, the highlight of which was a visit to the NSW Mounted Police, where the majority of officers are female. The horses loved the carrots and apples. We have more bus trips arranged for the next three months so come along and join a very happy group of Seniors when we can perhaps take you to places you have never been before. We try to have a walk once a month on a Monday somewhere in and around Sydney weather permitting (we do not walk in the rain). A game of cards (Solo) is played each Thursday at 1.30pm at Ryde-Eastwood Leagues Club, and new members are most welcome. We have two meetings a month, on the first and third Thursday at 11am in the Function Rooms at the Club. On the third Thursday we also have a speaker. Our fee is $5 to join and for more information please contact Marie Weston, Secretary on 9638 7419.

INTERNAL CLUB NEWS SQUASH CLUB Statistically last season, the Division 5 squash team saw the odds stacked against them, as they were one of the lowest ranked teams allocated to their division. Nevertheless, the team still retained their enthusiasm and tried as best as they could, finishing respectably in 5th place. In August every year, the Squash Club holds its Club Championships. This event ignites past rivalries, converts teammates into opponents and encourages club members to hone their fine skills as they battle it out to be declared the best player in the club. If you wish to watch an amazing display of squash mastery, please feel free to join us at the finals. The Squash Club has once again entered a team in the NSW Squash Spring Pennant. We wish them all the best in this upcoming season. Feel free to enquire about joining the Squash Club. We are always happy to welcome new members. For all enquiries regarding the Squash Club, please contact Ernie on 9807 3348. I asked a friend of mine why he only wears glasses when he is playing squash. His response – because it is a “non-contact” sport. TRAVELLING BOWLS CLUB Our trip to Picton on Sunday 17 April 2016 was a great day and we all enjoyed ourselves as we normally do when we visit this Club. The planned trip to Umina in June had to be cancelled due to the extremely bad weather, which was a shame but understandable. Our next outing is to the Everglades Country club (Woy Woy) on Sunday 7 August 2016. This should be a great day as we have always enjoyed the club’s hospitality. Hopefully the weather will start to warm up for us. Dress code: Mufti. The bus leaves at 9.30am from Ryde-Eastwood Leagues Club. Then on Sunday 25 September we are off to Avoca Beach Bowling club for another fun day of Bowls. Everyone is welcome to come along and join in the fun, and as the saying goes, “The more the merrier”. For further information please contact Robyn Newton on 9858-3014, Brenda Paterson on 8819-9650 or Milly Farrell on 9874-4667. TRAVEL CLUB In June our members visited “Back to the 50s” which was a trip down memory lane. We viewed all the things we used to use back in the fifties. A terrific day was had by all including a lovely lunch at Cardiff Arms RSL. In July: We enjoyed Yulefest in the Blue Mountains with a traditional roast, piano entertainment, carols and plenty of frivolity. August: In August we head off to the famous Doyles Seafood Restaurant for chowder, fish and chips and a glass of wine. September: This trip is off to Medowie Macadamia Farm in the Yarramalong Valley and is sure to be a great day. October: This is a great time of year and we head to Canberra for a 2-day trip packed with plenty to do and see. Enjoy the Floriade Festival and so much more. We meet in the Ryedale Room at the club on the first Tuesday of the month. We are always happy to welcome new members, both men and women. For more information on these events or our meetings please contact Yvonne Steel (President) on 9878 1164, Helen Tuckwell (Treasurer) on 9809 4335 or Gordon Irving (Secretary) on 9871 8358.

“Learning to swim has many benefits for our children. It’s great for their health and wellbeing; it enhances their self-esteem and, importantly, teaches them a respect for water. While children are capable of being independently mobile in the water from a very young age, they must never be left unsupervised. No child is drown-proof”. Laurie Lawrence - Olympic Swimming Coach The Fitness Edge Swim School offers a safe, friendly and encouraging environment for people of all ages and abilities. Our youngest students are 6 months of age while our most senior member is in their 70s. It’s never too late to learn the life skill of swimming. All staff at The Fitness Edge is Austswim Qualified and all hold current CPR certification. Babies & Preschool classes are held Monday to Friday between 11am and 1pm. School-age Learn to swim classes are by far the most popular. These classes cater for all school ages and abilities. The focus for younger children is on safety and helping them to be independent in the water.

Adult classes are held on Thursday, Friday and Saturday morning. Our classes cater for all members, from complete beginners to those that want some help with stroke development. Each class has a maximum of six participants to one instructor so that all swimmers receive some individual tuition while still working in a group environment.

Once our swimmers have gained confidence we then start to develop all swimming strokes to ensure they have good technique in each stroke before introducing another.

swimmers to elementary swim freestyle and backstroke.

Once our swimmers have mastered all strokes they then move into our Squad Groups. While we maintain our focus on technique, we also develop speed, stamina and racing skills.

Our office hours during term time are: Monday to Friday: 10am – 6pm Saturday: 8am – 1.15pm
