This authentic Mexican guacamole is our favourite recipe. • 5 large avocadoes, black and slightly soft to the press • 2 large limes, juiced • 1 medium white onion, diced • 3/4 cup loosely packed fresh cilantro, chopped finely • 1 large tomato, diced • A pinch of salt • 1 finely chopped fresh jalapeno 1. Scoop the avocados into a bowl. Add juice of one fresh lime immediately to prevent browning and mash to desired consistency. 2. Add chopped onions, tomato and cilantro. Stir gently to mix ingredients. 3. Add juice of second lime and then salt to taste. Stir just slightly until incorporated. 4. Add jalapeño to taste. We like our guacamole on the creamy side, so we use a food processor.
