How tea is made

Tea production falls into one of two styles, orthodox or non-orthodox, and includes five basic processing steps.

These steps can be adjusted and often repeated, depending on the style of tea being produced.

Orthodox production:

Step 1. Plucking: the leaves are harvested by hand, ranging between just the unopened bud to the top three leaves and the bud.

Step 2. Withering: the leaves are laid out to wilt and wither to prepare them for further processing. Without withering, tea leaves would shatter and crumble when rolled and shaped.

Step 3. Rolling: this is the stage where thousands of varieties in tea appearance are created, and also where the process of developing flavor is started. The softened tea leaves are rolled, pressed or twisted to break the cell walls of the leaf, wringing out the juices inside.

Step 4. Oxidation: After rolling, the leaves are laid out to rest, allowing oxidation to take place. Oxidation

(which may be referred to as fermentation) is the process by which the oxygen in the air interacts with the now-exposed enzymes in the leaf, changing its chemical composition.

This step also has the greatest impact in the creation of the many wonderful and complex flavors in tea. The length of this process depends on the style of tea being produced and the ambient conditions at the time.

Step 5. Firing: the final step in the production process is to “fire” or heat the leaves quickly to dry them and stop the oxidation process.

Non-orthodox or “CrushTear-Curl” (CTC) production:

CTC is a very different process. Machinery is used to harvest the tea leaves (mowing the top of bushes to collect the leaves) and to process. This method produces stronger tasting, higher caffeine and darker teas. This process denigrates the inherent quality of the leaf but is less time and energy intensive than orthodox manufacture and results in a higher cup-per-pound yield.

This is the process that is often used in producing tea bags.

Red Feather Theater Company’s fall production

red Feather may be under new management but that doesn’t stop ruidoso High’s talented theater students from putting on a fantastic show. The play was astounding last weekend, as everyone in attendance raved about the performance. The students compiled their favorite short skits from The Carol Burnett Show. each skit was studentdirected by one of the actors in the skit.

The skits were short, small-casted, and good ol’ fashioned, wholesome, clean comedy fun.

Jon Wall, theater/tech teacher and manager of the theater, acted only as

producer in this show. The students really took the reins and did a breathtaking job. Students preformed eleven skits. Some of the audience favorites

were “The exterminator” featuring Joey Marshall and Hannah Coleman, “Who’s on First?” featuring Hannah Coleman and Cheyenne roller, and “Rolls Royce” featuring Joey Marshall, Zabrina Jones, and Carlos Chavez.

The students did a wonderful job and everyone is eagerly waiting for their next show in the spring.

Not 2 Shabby Shop thrift store – A reason to give thanks in Capitan

By Rosalyn Stevenson in 2006, the not 2 Shabby Shop thrift store opened its doors to provide recycled, donated clothing and household goods to the community.

Today the shop, a 501c3 non-profit enterprise of the Capitan Library, is thriving under the management of Kay Mcneer, with about 20 volunteers.

Mcneer has been manager of the not 2 Shabby shop since March 2011. Profits from the shop go to funding of utilities, equipment, supplies, books, computers and whatever else is needed for the Capitan Public Library to keep its doors open for its patrons.

The not 2 Shabby Shop provides about 250 free items of clothing to those in need each month as a part of a contractual agreement with the Village of Capitan for service to the community. in addition it offers a wide array of household items; clothing for men and women; baby clothes; toys; furniture; small household appliances; candles; decorative items and more at very low thrift store prices. Collectors of vintage items will occasionally find a treasure or

SAnTA Fe — The new Mexico Department of Health announced results of a survey of parents who received personal religious belief vaccination exemptions on behalf of their children in 2011. This is the first survey ever conducted in New Mexico to assess parents who choose vaccination exemption, which has increased from 1,148 in 1999 to 3,372 in 2011. That’s an increase of 194 percent.

The survey of 729 out of 2,176 eligible vaccination exemption households in new Mexico who had one or more children exempt from required school or day care vaccination requirements in 2011 was conducted by telephone between May and July 2013. A standardized questionnaire consisting of 60 questions was used to assess multiple domains, including the demographics of the population, knowledge, attitudes and beliefs, and parents experience with the vaccination exemption process in new Mexico. results indicate that parents requesting vaccination exemption in new Mexico tend to be White, non-Hispanic (74.2 percent), have at least a fouryear college degree (66.7 percent) and female (82.3 percent). Over half of all vaccination exemptions were in Bernalillo and Santa Fe counties (29.8 percent and 23.7 percent, respectively). The number one reason indicated for seeking a vaccination exemption

The park brought in 10 members of the elite Mexican firefighting crew, Los Diablos, which has enjoyed a strong relationship with the National Park Service for more than 20 years, to supplement Guadalupe Mountains National Park trail crews.

The park has re-opened the Frijole Trail, Guadalupe Peak Horse Trail and Devil’s Hall Trail, resulting in restored access to high country trails and most backcountry campgrounds. Water has also been restored to Frijole Ranch, including the public corrals.

The National Weather Service reported that the Bowl recorded 12.41 inches of rain during a 24-hour period from Sept.

11-12, while Dog Canyon recorded 9.5 inches, McKittrick Canyon recorded 7.32 inches and the Pinery recorded 5.12 inches. The Texas Tech University West Texas Mesonet weather station, located near the park’s fire cache, registered 15.73 inches of rain between Sept. 9 and 14, including 13.5 inches during a 24-hour period Sept. 12-13.

Although delayed because of the federal government shutdown from Oct. 1-16, trail stabilization and repairs resulting from September’s storms and flash floods continue and are on-going. Equipment will operate outside of the park’s wilderness area, on weekdays only, while hand crews will work on trails throughout the park on weekdays and weekends.

Park staff and other

park volunteers are serving as flaggers to ensure that visitors are able to safely pass working trail crews and equipment. Visitors are urged to exercise caution, particularly in areas where trail equipment and crews are working and to comply with instructions from park staff, for their own safety. Do not go near working equipment and wait until the operators shut down equipment before passing.

The Salt Basin Dunes remain closed from September’s storms and flash flooding, as a portion of Williams Road to the Salt Basin Dunes remains under water. Hikers and backpackers should continue to exercise extreme caution, and all visitors are asked not to enter closed areas, for their own safety.

Guadalupe Mountains National Park Superintendent Dennis A. Vasquez stated, “we are grateful for the assistance of Los Diablos, the Texas Master Naturalists and other park volunteers in repairing trails and serving park visitors.

Park staff have worked very hard to stabilize trails, and ensure that they are safe and passable, and to open almost all of the park in time for Fall Colors.

Autumn is typically the time of highest visitation for the park, and is a special

time at Guadalupe Mountains National Park. We welcome everyone back.”

‘High Hopes,’ new Springsteen album due Jan. 14

Columbia Records – You can call it a late Christmas present for the Bruce Springsteen fan in your life. The Boss’ new album, “High Hopes,” will be out on Jan. 14.

Springsteen’s first studio album since last year’s “Wrecking Ball” will feature 12 tracks in all, including what Springsteen in the liner notes calls “a proper studio recording” of live staples “American Skin” and “The Ghost of Tom Joad.”

Springsteen calls many of the tracks, “some of our best unreleased material from the past decade.” That material includes contributions on several tracks by late e Street Band members Clarence Clemons and Danny Federici.

Mick Jagger to become a great-grandfather

Here’s some great news for Mick Jagger: he’s set to become a greatgrandfather.

The rolling Stones frontman’s 21-yearold granddaughter, Assisi, is expecting a child early next year, according to her mom. Jade – Mick’s 42-year-old daughter – tells Britain’s The Sunday Times, “it is true. i am going to be a grandmother.” Jade doesn’t expect Mick’s life to change dramatically as a great-grandfather. She says, “i think making Mick a grandfather obviously has a big impact whereas, now, making him a great-grandfather is no longer particularly fascinating.”

TLC talks DWTS finale performance and whether they’d ever compete

On Monday night’s finale of Dancing with the Stars, the four remaining contestants – glee star Amber riley; Jack Osbourne, son of Ozzy; High School Musical star Corbin Bleu; and comedian Bill engvall – will do a “samba relay” with their pro partners as TLC performs their classic “No Scrubs.” The iconic girl group says they’re not just appearing on the long-running ABC reality series because it’s a promotional thing – they truly are fans of the show.

So what can fans expect from the performance on Monday night? “A little bit of dancing, some singing, y’know, what we always do,” laughs Chilli, while T-Boz says we can also expect “energy.”

Despite their love for the show, T-Boz says that she’s not sure she’d ever compete on it. in fact, she has been asked to do it in the past but passed due to a medical issue.

Willie Nelson’s band tour bus crashes in Texas

Facebook.com/Papa – roachPapa roach recently teamed up with the Make-a-Wish Foundation to support Mark guerra, a fan of the band who was diagnosed with a brain tumor, and make his rock star wish come true – to have Papa roach record an eP with his band, Breaking Boundaryz.

Papa Roach fulfilled Guerra’s wish, recording four songs with Breaking Boundaryz and Fuse was there to document it. The music network aired the special about guerra’s experience, Mark’s Wish Story, nov. 26.

A two-minute video of the special can be seen on YouTube, which features Papa roach hanging with guerra at one of their concerts in new Jersey and laying down tracks in the studio.

Three of Willie nelson’s bandmates were hospitalized and Willie’s tour was suspended after the band’s tour bus crashed Saturday morning near Sulphur Springs, Texas.

Willie nelson’s team issued a statement saying that icy conditions were to blame for the accident, which occurred at 3:30 a.m. on a bridge off interstate 30, approximately 80 miles northeast of Dallas.

A spokeswoman with the Texas Department of Public Safety confirmed that nelson was not on the bus and that the driver of the bus was struggling to navigate through heavy rain and strong winds before the vehicle crashed into a bridge pillar.

Republic Records – While the soundtrack for the first Hunger Games film dominated the top spot on the Billboard 200 album chart its first week out, the soundtrack for the second installment, “The Hunger games: Catching Fire,” won’t be so lucky – though it won’t do too badly.

The soundtrack is expected to place somewhere in the top five on the tally, with projected sales around 60,000 copies. The record features tracks by a number of rockers including Coldplay, imagine Dragons, The national, The Lumineers and Of Monsters and Men, as well as a cover of the Tears for Fears classic, “everybody Wants to Rule the World” by Lorde.
