Sacred Grounds’ Union Ramal Santa Cruz of Mexico coffee In Chiapas, Mexico close to the Guatemalan border, sits the cooperative Union Ramal Santa Cruz. It was founded in 2001 with just 80 members and has now grown to include 537 members – and 450 of those are growing organic certified coffee.

Like most of the Mexican coffee farmers, Union Ramal are focused on organic coffee production – with 621 tons of its 696 ton capacity being organic coffees.

Coffees from Chiapas are among the best in Mexico. This particular coffee is sweet, smooth, and is one of the best quality Mexican coffees we’ve carried. The 2012 harvest has yielded wonderfully balanced coffee that is sure to please a variety of tastes. A sweet, butterscotch fragrance will be noted when you first grind the coffee. This is accompanied by a subtle, yet crisp brightness and lingering notes of lemon and dark chocolate that will stick with you through the finish.

“When you drink a cup of coffee, it concentrates the work of a lot of people,” Heifer Mexico project officer Max Garcia said as we drove into the interior of the southern Mexico state of Chiapas. A lot of coffee is grown and processed in the Sierra Madres, and we were here to see all the work that goes into it.

But cooperatives like Ramal Santa Cruz are transforming the process by dealing fairly with both sides – ensuring not only that farmers get a fair price for their coffee but also that the roasters will get a quality product. And Heifer International is finding ways to plug into and strengthen the economies in coffee-growing communities.

‘Le Corsaire’ – local students

By Milu Abel “What will impact the audience?” asked Robert Phaup, who was busy directing his attention on a group of theater students from the Ruidoso High School. Eyes glued, the Red Feather high school group was attending to learn from the real world working theater. With more than 24 years of experience in stage direction, lighting design and set construction, Phaup knows how to impact the audience. “That is what we strive to achieve. We have a lot of shows coming through this theater. Our job is to keep the performances running smoothly, while keeping the experience enjoyable for all.”

In the 15 years since the opening of the Spencer Theater, many world-class performances in theater, music and dance have been offered, creating a yearround venue which has enriched the lives of residents and visitors from all around the world. “Everyone helps.” said Phaup with a big smile. “It is all about the chemistry with the people you work with, that is how we all can pull it off.” “‘Le Corsaire’ is the largest endeavor we have ever inspired to present,” stated Phaup. “This upcoming presentation in June has five different scenes each presented in a way to transport audience members to a 17th century world of pirates.” Skipping back a few decades doesn’t happen easily. “My challenge is not

MEXICAN COFFEE, from pg. 2 sacks of coffee directly from some of the thousands of growers in the surrounding mountains. When they have enough, they bundle it and sell it to a larger, usually foreign, coffee roaster.

Some of the larger middlemen advertise the coffee roasters they supply, like the one with the Starbucks logo painted on the side of its building.

But most of these operations are small – a single storefront with a rollup metal door and a lone, large scale inside a white-walled room. The coffee that comes in with high humidity is dried just outside the front door on the edge of the street, pieces of plastic blowing into the drying beans.

But unlike a well-run coffee coop, which would not accept anything approaching this poor quality, this middlewoman bought the beans, albeit for a paltry 50 cents a pound.

Coffee harvesting is hard work.

First, each ripe coffee cherry (here they are called uva, or “grape”) must

be picked by hand. Pickers use small wicker baskets tied around their waists that, when full, are emptied into heavily patched burlap sacks. When the sacks are full, beans are carried back to the community for cleaning, fermenting and drying. This has usually been done on the backs of the growers. As a coffee grower in another community told us, “Taking so much coffee out of the fields day after day just kills a person.”

“The intermediary pays the entire price up front. So for this reason, a lot of producers go to the intermediary,” Carbajal said. “The difference is, with CESMACH, we pay the anticipated price” – this season, about $2.30 a pound. If the roaster-ready coffee later brings more, CESMACH will then pay the difference to the farmers.

CESMACH works with more than 360 families in 21 communities throughout the Sierra Madres. The harvesting begins at the lower alti-

tudes in December and continues up the mountainsides through late spring.

The farmers pick, depulp and dry their coffee at home. They store the sacks of dry coffee in their homes until it is trucked down to Jaltenango to be weighed and tested.

Carbajal estimated that 460-465 sacks come through CESMACH in an average year. And while CESMACH has set up a small roasting operation here that allows them to sell a valueadded product, 90 percent of this coffee will be exported to roasters like Green Mountain Coffee and Equal Exchange.

Watching the men and even boys near Puerto Rico buckling under the weight of coffee sacks, shuffling down the dusty streets, would disavow anyone of a romantic view of coffee farming and help them to understand the relief the horses bring.

“Before, we would have to carry the coffee,” Torres said. “Now we can

Ratay, a Lincoln County resident for more than eight years believes men’s voices should be heard in the issue of violence. “I don’t think men’s voices are any different than women’s. Men are victims too, of violence,” he said. Travelling through more than 40 countries, living in South Africa and photographing global issues, Ratay came to document the event and show his support.

Take a cue from mom and dad

Each generation, it seems, strives to distinguish itself from the former generation. Trendy hairstyles, funky fashion, special slang, alternative lifestyles, and even different ideals are eagerly adopted in an effort to differentiate “us” from “them.” Consequently, it takes years – maybe even becoming parents ourselves – before we can recognize and fully appreciate the wisdom of former generations.

Perhaps it was painful memories and lessons learned from The Great Depression and two world wars that yielded the fiscally reserved, financially disciplined people we call mom and dad. They embraced simple mottos like “patience is a virtue,” “good things take time” and “the early bird gets the worm.” They worked hard, planned and saved diligently for the future and lived frugally in the present. If you want something done right, they said, do it yourself.

Maybe we can take a cue from mom and dad, after all.

Of course, we want the comfort that comes from planning ahead. But, it’s hard to think about a time when we or a loved one might need long term care. If we don’t plan now, our options may be limited when the need arises because it will be immediate and perhaps pressing. It may be difficult to get on a waiting list for a preferred facility, for example. What’s more, we may lack information and funds to pay for care.

Maybe mom and dad knew that planning ahead would grant them more control over their future.

Advance planning allows us to

investigate services in our community, find out about eligibility requirements for receiving services, and learn what services cost, as well as what payment options are available. Obtaining this information before the need arises may ensure that we will have a range of options and more control over where and how we receive care.

By planning ahead, we may preserve our assets and income for purposes other than long term care, such as maintaining the quality of life for our spouse, partner, or other loved ones. With planning, there is a greater likelihood of leaving our estate to heirs, as we may be less likely to consume our financial resources paying for care.

Planning ahead also minimizes the emotional and financial toll on everyone involved. It provides a way to involve family in the decision-making process without depending solely on them to bear the burden of cost and care.

We all want to maintain our independence for as long as possible, and we all want the freedom to choose how and where we receive necessary services. Maybe it’s time to forget about “us” and “them.” Maybe it’s time to take a cue from mom and dad, and like the old adage says, “never put off until tomorrow that which can be done today.”

The play, put on by the Lost and Found Drama Club of the Community United Methodist Church, details the exploits of Jarvis – a.k.a. “Captain John Red Boots” – as he fights to protect a legendary treasure while maintaining the Wiki Resort in an island backwater.

Dozens of colorful characters populate this whodunit, as the audience is expected to take part in a mystery surrounding the stolen pirate booty.

The audience will also be treated to a Caribbean meal during the show.

Magnetic levitation track reaches new world record HOLLOMAN AIR FORCE BASE — The 846th Test Squadron successfully performed its most ambitious test to date on the magnetic levitation track at Holloman AFB, Feb. 7. Members of the 846th were able to use the Maglev track in conjunction with a new propulsion system to reach an astounding speed of more than 500 miles per hour.

“We went faster than we’ve ever gone before,” said Jim Daniel, 846th Test Squadron business development manager, “and that causes all kinds of interesting risks. In this business, there’s a lot of risk in the unknown, and we’ve never tested the Maglev system under these conditions.”

As Daniel explains, what makes the Maglev track so extraordinary is its ability to mimic flight conditions by drastically reducing the amount of vibration felt by the object being tested. The track enables this effect through the use of four superconductive electromagnets that attach to the test sled like wheels on a car. Once charged with a current, the magnets are able generate enough force to lift the sled about one inch off the track throughout the duration of the rocket propulsion.

Part of what makes the magnets so unique is their ability to display a phenomenon known as superconductivity. Once the magnets are in this state they have exactly zero electrical resistance, meaning that they can maintain a charge without an active current flowing into them. However, in order to reach this state, the magnets must be cooled below their characteristic critical temperature, approximately -450 degrees Fahrenheit. In order to get the magnets to be this cold, liquid helium must be pumped into the magnets until they are cold enough to hold a current. This passive system of charging the magnets differs from the active kind of magnetic levitation used in bullet trains that require a constant source of electricity. As long as the magnets are cold enough and charged, no additional electrical power is required for them to be able to lift the sled.

Much of the technology used to complete the test was provided to the 846th by General Atomics, the primary contractor of the Maglev track.

“What we were trying to do was prove the system,” said Daniel, “make sure that it works at higher speeds, and as a subtext of what was going on, we were trying to transition from General Atomics operating the system, to the Air Force operating the system.

So it was a test for data, and a test to confirm our initial operating capability. Through the completion of this test, we are truly able to claim the Maglev system as an Air Force asset.”

Though the Maglev track has been tested before, this most recent test pushed its capabilities to the max.

As Daniel describes, six improved Zuni rockets were attached to the sled to provide the thrust necessary to reach the new speed. The sled was aligned along sophisticated dual-track beams made of concrete and embedded with copper, which repelled the magnets to allow for more stabilization.

“There are lots of forces at play with the testing of the Maglev system, you have magnetic forces, the forces from the rocket motors, and the forces from the air drag. All of these forces are fluctuating as the test is being performed, and part of our goal was to determine exactly how they interact with one another so that we can learn more about our capability with magnetic levitation.”

The Maglev’s success at Holloman AFB allows the 846th to provide a ground-based test environment that can accurately simulate the vibrations of a real flight test. Daniel explains that the smoothness of the ride is the Maglev’s key asset. With the stability that the Maglev track can offer, the most delicate components of a payload can be preserved intact throughout the duration of a test.

“It’s a more benign environment,” said Lt. Col. Keith Roessig, 846th Test Squadron commander, “the magnetic forces lifting and keeping the sled in the

With temperature, load and vibration instrumentation on the sled combined with high-speed camera footage of the test as it takes place, a complete record of the event is captured for further analysis. As an alternative to flight tests, the Maglev and the traditional steel rail can acquire roughly 90 percent of the data needed at about 10 percent of the cost.”

The test that took place Feb. 7 was the culmination of nearly two decades of intensive research and engineering. On the day of the test, several General Atomics personnel came to witness as the Air Force used the technology they developed to break new ground in magnetic levitation.

“The most exciting part of this test, beyond just the sheer display of power from the rockets, is being able to tell people that we now have this unique capability available using only Air Force personnel and assets, “said Roessig. “We’re now able to provide quality test data to program offices for a whole new set of electronic systems at a fraction of the risk and cost inherent in flight test. This could truly be the next generation of test track.”

Beads of courage

By Eric Ehrich The Mountaintop Turners Club (MTT) has recently taken on participation in an international, charitable project run by participating children’s hospitals. UNM Children’s Hospital in Albuquerque is a participant. The project is called Beads of Courage and is designed to provide encouragement and rewards for children with serious illnesses such as cancer, blood disorders or cardiac conditions. The children are rewarded for their bravery after such unpleasant treatments as radiation, chemotherapy or surgery with special beads, each of which symbolizes the nature of the treatment (For more information go to www.beadsofcourage.org). The leaders of the project found that the kids need containers to collect their beads in, prompting them to come up with a secondary project which they call Bowls for Beads and which will provide those containers. Mountaintop Turner Club, under President Jerry Longbotham, has volunteered to produce those containers. On Feb. 26, Longbotham went to the hospital to deliver the first batch of several more to come. As can be seen from

the smiling faces of project leaders Jamie Shields and Ryan Kelly at the hospital, the containers were well received. Each box or bowl is made by a club member using his or her own design.

Mountaintop Turners Club was formed by a group of wood turners who make vessels such as bowls, vases and a variety of artistic shapes made of a great variety of woods.

The club has been in existence since 2002 and is located in Loma Grande Estates, Lincoln County, New Mexico. Members regularly take part in Art Loop events as well as the annual Christmas Jubilee in Ruidoso.

Cancer prevention tips It is my understanding that cancer is not a natural cycle of life, but is caused by our lifestyle choices.

The air we breathe, the skin products we use, the food we eat, the cleaning chemicals we use, etc. Prevention is the best medicine and can be achieved following these basic guidelines: Eat right - a lifestyle consisting of whole foods (foods closest to their natural state such as fruits, vegetables, and may include minimal consumption of unpasteurized milk and grass fed meats) preferably organically produced. By consuming a whole foods diet we are less likely to be exposed to chemicals, additives, preservatives and other unnatural processes that change the structure of our food; therefore making it easy for the body to digest and route proper nutrients to necessary destinations. When consuming large amounts of uncooked fruits and vegetables, we can experience a larger intake of water which will aid in many necessary functions of the body such as nutrient absorption and detoxification.

Physical activity - by getting our body active, our heart rate increases; therefore enhancing the activity levels of oxygen flow throughout our body. Physical activity can also encourage sweat, which will also aid in the detoxification process.

Outlook - we often increase the toxin levels in our body by entertaining negative thoughts such as allowing ourselves to be judgmental of ourselves and others, and by allowing ourselves to be stressed. A few tricks that have helped me gain a more positive outlook is to remind myself that I am in control of my thoughts, where I can choose to only see the

beneficial side of things. A few examples of these thoughts are: I don’t have to get angry at myself or others as we make mistakes in life, it’s a learning process. Forgiveness is powerful for both me and others. I don’t have to stress about things, as life will always work itself out and besides, only good things happen to me.

Environmental health - we can be more mindful of the body products we apply on our skin, make smarter choices when we choose our cleaning products and allow ourselves to get plenty of fresh air outside in the sunshine which is another immune system booster.

For those who have been affected by cancer, or other chronic disease, or know someone who is, here are a few internet resources that can educate us in ways to aid in healing: YouTube: Dr. William Li - Eat to starve Cancer and The Gerson Therapy for Cancer Explained. Independent research on raw veganism is also a great tool for understanding how to heal the human body.

The human body was not designed to break down on us halfway through life, but to sustain us through all the joys meant for us to experience.

Getting over cancer

By Carol Brophy For the past year my whole life has been about making and keeping doctor appointments, getting tests, getting to and from the airport and taking my meds on time. Just keeping track has been a full time job. I was not able to do much of anything, as recovering from four surgeries really took a toll on me. It hit me that I have to get my life back in order, which goes for working, play and just feeling good about me, now that I am cancer free, and finished with treatment. I feel like my old self, but missing the strength I had before. I found myself very weak, mostly on my right side, where I had four surgeries in just seven months.

Just picking up a gallon of water or opening a door is a real chore. I have regained some of my strength but I knew on my own that I would never get back to where I was before.

I considered joining a gym, but with my other health issues, arthritis, three weeks of unexplained dizziness, and having to watch out for lymphedema it seemed that I needed a place where I could get more experienced help and treatment if needed.

Having had physical therapy in the past I knew that The Ruidoso Physical Therapy Clinic had everything I needed. So I called to make an appointment, and they put me on the schedule that week.

On Dec. 26, I had an appointment with one of the physical therapists. The PT Lydia took a full medical history, list of my

medication, surgeries, as well as asking me what problems I was having in my everyday life. I explained that opening doors, lifting a gallon jug of water or anything that required me to lift or push was a real problem. Some of the questions she asked made me aware of other issues that I was dealing with but had not paid any attention to. Like my right shoulder was lower, my bar was uncomfortable, my neck was stiff and my energy was low. Lydia gave me a full exam at this point for strength, flexibility as well as checking out my scars to see how they were healing and if they were causing any of my problems. She ended the exam by asking me what I wanted to achieve out of my visits. My main goal was to get my strength back, maybe more flexible and just feel better.

After the exam Lydia started me on a machine that she called a UBE – it was like a bike for the arms. Then on to some arm exercises with bands, and finished up with several stretches that really made me feel good, it was a nice way to end. Before I left she gave me some homework, exercises and stretches to do at home and recommended that I come in three times a week.

I could join the fitness center, that way I could use the equipment at the clinic, and do my stretches at home.

Now it’s up to me to make the time and put in the effort.
