Recipe of the Month Asparagus, Goats Cheese and Smoked Bacon Quiche SERVES 8

work surface until it’s an even thickness of about ½ - 1cm. Get your loose bottomed tart case (20cm diameter by 3-4cm deep/ 35cm x 12cm fluted flan tin as an alternative to the round one).

PREPARATION 15 mins COOKING 25-30 mins A healthy and easy recipe using food in season.

INGREDIENTS

Grease the tart case with butter then line it with your pastry making sure you press into the edges of the tart case all the way round (use a 2cm ball of pastry to do this to stop from piercing the pastry). Prick all over the pastry base with a fork, to release trapped air and stop the pastry from rising.

FOR THE PASTRY: 250g plain flour 125g unsalted butter (room temp) 1 egg 2 tbsp water (or make life simple - buy readymade short crust pastry)

Now line the pastry case with parchment paper, fill it with baking beans or rice. Then place onto a baking tray and bake for 15-20 minutes at 190˚C. Remove the beans and the paper from the case, brush the pastry with a little milk or egg wash, then pop back in the oven at 180˚C for 10 more minutes until golden. Remove from the oven and set aside.

FOR THE FILLING: 30g butter 2 rashers of thick smoked back bacon (finely chopped) 6 spears of asparagus 100g of goat’s cheese 300ml double cream 200ml of milk 4 medium eggs Salt & pepper 2 tbsp grated parmesan

Spoon the bacon mixture into the cooked pastry case, add the asparagus and crumble the goat’s cheese on top. Make your mix up by adding the cream & milk to a jug, adding the eggs and whisking together; add a little salt and pepper to season.

METHOD Start by making the pastry; sift the flour into a large bowl, then rub in the butter with your finger tips until it resembles breadcrumbs.

Mix the egg, then add to the flour and bring together with your hands, add the water and knead on a cold floured surface until fully mixed. Then cling film and chill for 30 minutes in the fridge.

For the filling, melt the butter in a pan and add the diced smoked bacon, fry until golden brown and cooked, then set aside. Now get your asparagus spears; trim off the hard root, cut them length ways then add to a hot griddle pan with a little oil & cook until charred.

Pour the mix into the pastry case - don’t worry if you have some mix left over. Sprinkle the top with the grated parmesan and bake the tart in the oven at 180˚C for about 20-30 minutes until the filling is golden and the mix is set.

To serve, slice a good size piece of quiche and serve with fresh watercress.

Meander of the Month

A Stroll in the Stunning Calke Park Deer Distance: 2.4 miles (3.8km) Calke Abbey, Derby DE73 7LE, United Kingdom - Calke Abbey is an hours drive up the M1 from Rugby well worth the effort. You can also make it a day trip - relax in the restaurant and enjoy the warming local and seasonal food on the lunch menu or delicious cakes to go with your afternoon tea. Girft shop, local produce for sale in the new Calke Pantry. Dogs are welcome in the park and stables on a lead please. Explore Calke’s new wetland area and discover a preserved 18thcentury deer shelter on this pleasant amble through an ancient parkland landscape.

The walk starts in the main overflow car park at Calke Abbey, follow the exit road past the stables and down to a gravel track on the right. Turn half right and walk uphill across the grass towards the preserved deer shelter, which is visible through the trees. The Calke Abbey building team have preserved this interesting building to prevent it deteriorating further. It was built in the 18th century amid old ridge and furrow land, to entice deer into the open parkland. The family could then observe them from the comfort of the house. Two hundred years later, red and fallow deer were re-introduced to Calke as an enclosed herd, and you can still see them today in the deer enclosure to the east of the House.

After visiting it, continue ahead keeping the fence on your left then descend to the carriage drive that is stoned. Turn left to follow this to a corner, a white gate on the left and a wall ahead.

Turn right on reaching the wall and follow it to the main drive.

The mound high on the right is part of the original water supply for the house. Designed by Henry Marley Burton in 1865 it was specifically for fire-fighting after a potentially devastating fire at the abbey. The water was taken from Pistern Hills (the skyline on the left) along cast iron pipes. Cross straight over here and walk down the side of the road, turning left onto a track.

Leading into Poker Leys Wood.

Go through the gate and turn right into a wetland area. At this point you might like to take a detour along the path on the right to a bird hide. Afterwards return to continue along the track keeping a fence on the left. Cross a stile at the end.

Wetlands - At the heart of the park is a series of two culverts and a weir, located between four ponds. The ponds were created in the 18th century and were used for fishing and recreation by the Harpur Crewe family of Calke Abbey. They now provide an important wetland habitat for a range of wildlife. A project to improve water quality in the pond system and give a further habitat for the native white clawed crayfish

resulted in this wetland area. It acts as a natural sediment trap as water flows in from the surrounding areas.

Follow the fence line on the right, around the field and cross over the next stile leading into woodland.

Stroll through the woodland on the path. Enter the field and head uphill.

Cross a stile on the right. Follow the path through a narrow strip of woodland to reach another stile and open grassland with the ticket check above on the left.

Cross the road and pass through the gate in the fence about 50 metres below the ticket check. Veer right across this field in a diagonal direction towards a large wooden gate in a wall. Here you enter the National Nature Reserve. Turn right.

Go through the gate at the end of the wall and follow the woodland path, which bears round to the left.

Come out of the wood into the Fisherman’s car park. To see the oldest tree in the park, The Old Man of Calke, walk a short way beyond the car park through a kissing gate on the left. The tree stands 50 metres on the left and is protected by railings. Return to the car park.

Follow the narrow stoned then stepped path down from the car park to Betty’s Pond. Bear left and go between two ponds.

Next ascend steps after a gate. A number of Calke’s ancient trees (some over 800 years old) can be seen on the left.

Keep to the upper path to return to the car park.

Look Younger Naturally this Summer!

Next year I will be having another big ‘O’ birthday – tempest fugit. Thinking about yet another milestone in my life it made me consider what an ageist society we live in and I know many people feel pressurised into “holding back those years”. I for one am certainly working at looking the best I can for the rest of my life.

Getting older should not equate to feeling sick and worthless. Aging is a part of life and it is more important to look after and value our health and live with joy and vitality than to worry too much about those extra wrinkles. I have met people in their eighties in robust good health, who still contribute enormously to society and look fantastic. I think the goal should be to live a healthy and fulfilling life for as long as possible. Personally I advocate holding back those years naturally and work with many men and women to help them do the same. I hope the following will help you look and feel younger and healthier this summer.

Posture and Breathing Good posture can immediately take 10 years off your age. Don’t slouch it is so bad for your health and your mind. Bad posture can cause all sorts of back and neck problems and also affects your overall physiology which in turn affects your emotions. Breathing correctly is calming in times of stress and to oxygenate the blood effectively breathe deeply. Look at my website for some breathing exercises. I highly recommend yoga which calms the body and improves posture and breathing.

Exercise We were born to move! Don’t be a couch potato, go for a walk enjoy some fresh air, we live in a beautiful county, enjoy it and feel healthier and look younger. As we get older the importance of exercise increases and it is never too late to start. Exercise reduces stress and helps improve circulation and protects us from many diseases.

A Diet for Youth To protect the skin from aging we need powerful antioxidants provided by Vitamins C and E found in sweet potatoes, blackberries and dark-green leaf vegetables. Vitamin C is the most important because it neutralises the damaging free radicals that destroy elastin and collagen. Eat plenty of berries, citrus fruits, red and yellow peppers for Vitamin C and include nuts and seeds in your diet which are rich in vitamin E. Foods that also reduce the affects of aging are salmon, asparagus, broccoli, spinach, strawberries, blueberries, blackberries, apples and almond, hazel or macadamia nuts. These foods are anti-inflammatory and powerful antioxidants which promote firm young looking skin.

Manage your weight A healthy diet is essential when “holding back those years”. Do not skip meals; always have a good breakfast which includes protein; it is the most important meal of the day. Do not over eat as this stresses the body and being overweight or obese puts your health at risk and is very aging. Avoid processed foods; they are generally full of salt, sugar and fat. Cook for your family and improve their health too with freshly cooked food. I recommend organic food whenever possible and buy food which is locally produced. It is good to support our local farmers and protect the environment at the same time.

Drink at least 6 to 8 glasses of water each day, your urine should not have a strong odour and should be straw coloured. Dehydration is responsible for many health issues.

12 June, Sunday - villagers of Pailton, just north of Rugby, are holding an “Open Garden Day” in aid of the village church of St Denys. There are 9 gardens open this year, some large, some smaller, some different and some unusual! In addition, ~ice creams are being sold near the Church, ~refreshments and plants are on sale in the Village Hall,~ and there are floral, quilting and art displays in the Church.
