Editors Letter...

Hi everyone and welcome the December Edition....

Well just as we thought things were getting back to ‘normal’ in the office the dreaded Covid 19 struck.

I’m still recovering from my ankle break and am able to walk with crutches in the house, so that’s an improvement, albeit very slow. Then my son got ill with Covid and the whole family had to isolate. I’m pleased to say he’s well again now and no-one else in the family got it, so for that I am very grateful that’s the last thing I needed on top of this ankle!

It did mean however, that Catherine and me couldn’t work together for 14 days so I was thrown back into the deep end and had to work full time to get this edition together. All of which just makes me even more grateful to Catherine for her support over these past 13 weeks while I’ve been incapacitated.

A couple of things that have helped keep me sane are listening to meditation on my phone, writing ‘stuff’ down and watching comedy - I really do think that laughter is often the best medicine.

Anyway, enough of my boat in this years Storm. I hope you are all keeping well and managing to stay

positive.

Wonderful isn’t it? I love that the snowman is doing the right thing and wearing Bionic Anne his mask. I really do enjoy running this competition each year and we have had an amazing amount of entries this year, many of which can be seen inside the magazine. A big thank you to all the entrants for brightening up my weeks.

Local at-home care company, Home Instead Senior Care Rugby has been tasked with the challenge to raise £500 for the Bring Joy Foundation’s ‘Challenge 500’ by the 31st January 2021.

For every £1 donated, Home Instead will add a smiley face photo to its ‘Wall of Smiles’ to help raise funds for local community groups that enhance and enrich the lives of seniors by keeping them fit, active, healthy and more importantly, connected and contributing to their local communities.

Sarah Slater, owner of Home Instead Rugby, commented: “This year has been tough for us all, especially for those who have been self-isolating, leaving many feeling lonely and isolated. So now more than ever it is very important for us to support the elderly as much as possible.”

Dear Readers, I have been writing about health now for over 15 years, and this month I hope you will not mind if I share with you my thoughts on the year, and this Christmas season.

We can think about the year in many ways; horrific, terrible, frightening, lonely, extraordinary, and sad. There is certainly sadness for all the lives that have already been lost to Covid-19. Our hearts and thoughts must be with those who have lost a loved one to this horrible virus, which is controlling our lives at present. One thing we can all say is that it has provided us with more time for reflection and even transformation. Perhaps a breathing space in this hectic world. Have your priorities changed? I know mine have; I have realised more than ever how very fragile we humans are and how precious each new day is, with all its opportunities and gifts.

Now we are in December, and we are all wishing and hoping to share some precious time with our families and friends. How can we approach this Christmas with hope and positivity? Christmas is a time for coming together again, a time for celebration and sharing, I truly hope this is going to be possible; we all do I am sure.

I love Christmas, the festive decorations, buying presents and wrapping them in pretty paper with bows and glitter. Deciding what food and wine to buy and making plans to visit or invite friends and family. Generally, the whole Christmas experience is something I always look forward to with great enthusiasm, but this year does feel different. My priorities have changed.

Over the last few months, I have been running an online chat session on zoom on Wednesday afternoons, called “Tea and Positivity.” We have discussed various topics from “Effective Communication, to Kindness.” If you would like to join this eclectic friendly group, please email me for the zoom details.

Kindness was a great topic and thinking about Christmas and all the difficulties people are experiencing, made me remember the words; “Goodwill Towards Men,” because being kind, expressing goodwill, seems to be more important than ever right now.

In the scriptures Luke tells us the angels of heaven sang, “Glory to God on high, and on earth peace, goodwill towards men.” This is a wonderful Christmas message, which I would urge us all to embrace this year. It is not just a Christian message but for everyone to remember that we need to be kind and compassionate toward our fellow men. Kindness can change the world and the amazing thing about being kind is that it makes us feel good about ourselves. It has a ripple effect so if you act kindly then it’s catching – I think that’s such a positive thing to think about. Yes, each of us can make a difference. We can, by being kind, thoughtful and generous to those less fortunate make this Christmas special.

Food has become so expensive; in the last six months prices have seemed to increase weekly, although I do notice the supermarkets are making more profit than ever! Which brings me to my final point.

As part of being committed to being kinder and more generous please remember our local shops because if we do not support them then they will disappear, many already have. Every time a shop closes, that means shattered dreams and heartache and probably financial hardship. It also represents a reduction in our freedom of choice. We should not allow the big monopoly companies to take over and we can stop this by buying locally from small independent shops. Many of them do have an online presence so do investigate your options and choose wisely.

We do not need to overindulge. Why not decide to eat a little less and give a little more this Christmas instead? It will benefit your health in many ways. Just an idea. There will be many who will be struggling to buy food and presents this year so let us remember to have “Goodwill towards our fellow men.” I wish you all a Very Merry and Joyful Christmas.

FESTIVE SIDES S p ro u t B a k e

Cheesy Brussels Sprouts Gratin Ingredients 8 ounces pancetta, cut into ½-inch pieces 2 pounds Brussels sprouts, trimmed, halved, quartered if large 2 shallots, thinly sliced 3 garlic cloves, finely grated 4 tablespoons melted unsalted butter ½ teaspoon freshly ground black pepper 2 tablespoons thyme leaves, divided 2 cups heavy cream 1 tablespoon Dijon mustard 1 cup walnuts 2 ounces Gruyre, grated 2 ounces Parmesan, crumbled 1 teaspoon crushed red pepper flakes

Position racks in upper and lower thirds of oven; preheat to 475°. Spread pancetta on a rimmed baking sheet and roast, tossing once halfway through, until lightly browned and fat is beginning to render, 6–8 minutes.

Transfer pancetta to a large bowl; reserve baking sheet. Add Brussels sprouts, shallots, garlic, butter, black pepper, and 1 Tbsp. thyme to bowl with pancetta and toss to coat. Scrape Brussels sprouts mixture into a 13x9” baking dish. Roast gratin on bottom rack until tops of Brussels are browned, 15–20 minutes. Carefully toss to expose green Brussels below, then continue to roast until tops of Brussels are browned, 15–20 minutes more.

Whisk cream and mustard in a large glass measuring cup. Arrange walnuts on reserved baking sheet with pancetta drippings. Remove gratin from oven, carefully pour in cream mixture, and sprinkle cheese over.

Reduce oven temperature to 375°. Return gratin to bottom rack, then place sheet with walnuts on top rack. Roast, tossing nuts halfway through, until nuts are browned on both sides, 8–10 minutes, and cream is thick, vigorously bubbling, and browned around the edges, 15–20 minutes. Let gratin cool 10 minutes.

Meanwhile, chop walnuts and transfer to a medium bowl. Add red pepper and remaining 1 Tbsp. thyme and toss to combine. Top gratin with walnut mixture before serving.

Roasted Butternut Squash with Apple Cider Vinaigrette Ingredients 2 small butternut squash (about 1 1/2 pounds each), peeled, seeded, and cut into 1/2-inch-thick slices 1 medium red onion, cut into wedges 3 tbsp. olive oil, divided kosher salt freshly ground black pepper 1 c. apple cider 1 1/2 tbsp. whole-grain mustard 1 tbsp. red wine vinegar 2 tbsp. chopped fresh flat-leaf parsley Preheat oven to 425°F. Toss squash and onion with 2 tablespoons oil on two rimmed baking sheets. Season with salt and pepper. Roast, rotating pans once, until golden brown and tender, 20 to 25 minutes.

Meanwhile, bring cider to a boil in a small saucepan over high heat. Reduce heat to low and gently simmer until liquid has reduced to 3 tablespoons, 12 to 15 minutes.

Whisk together mustard, vinegar, reduced cider, and remaining 1 tablespoon oil in a bowl. Season with salt and pepper. Stir in parsley.

Drizzle squash and onion with vinaigrette just before serving. It’s as easy as that.

Rotarians from Rugby Dunsmore have been working furiously to devise an online method of getting children to ‘Talk to Santa’ even though they cannot visit him in person at his grotto or meet and chat if he passes by on his sleigh.

Anyone can simply click on the link to Ticketsource: https://www.ticketsource.co.uk/ rotaryrugbydunsmore/e-oyzjyl and book a family space to see Santa on a specific date and time. A day or so before the due date, the family will receive the link to their meeting with Santa, simply click on it and they will be given access to Santa.

GARDENING JOBS FOR DECEMBER As the year draws to its close, and the days are at their shortest, limit gardening work to protecting tender plants and aiding wildlife in your garden, but there are still a few things to do for those committed gardeners.

contain a range of different seeds, but the best ones include lots of flaked maize, peanut granules and sunflower seeds, so look out for those. Avoid ones which contain beans, dried rice or lentils as only large birds can eat these, which may deter smaller birds from your garden.

Niger (Nyjer) seeds, black sunflower seeds and peanuts are all great choices, as they all contain lots of fats or oils so will help birds to fuel up well. NO salted or dry roasted peanuts. Food bars, ‘bird cake’ or fat balls are great for birds, especially in the winter months when they need extra fat. Top tip is to hang bird feeders near roses to attract hungry birds that will also pick off any overwintering pests

Make your own at home by using a mixture of melted fat (lard or suet), nuts, oatmeal, cheese, dried fruit and seeds, and set in the fridge until hard.

The best ratio for this recipe is one part fat to two parts dry mixture. Mix all your dry ingredients together in a bowl.

Once deciduous plants and climbers have cleared, repair garden structures. Dig over new borders. Plant evergreen shrubs if conditions are dry. Net your pond to keep the water clear of leaves. Prune bush roses down by half to avoid roots damage in winter winds. Plant fruit bushes when ground is not frozen. No rest for gardeners!

ConnectWELL’s new home-based Volunteer Telephone Befrienders are helping people in Rugby and Warwickshire by giving them a friendly, weekly phone call to see how they are.
