Delicious Seasonal Recipe Tutti Fruitti Christmas Cake

Now it IS only just November but Christmas Cakes are best made early; at least 4 weeks in advance is best. This recipe has appeared in the magazine before, but we have great feedback so I make no apologies for repeating it. This is a recipe I have been using for years and no, I’m not a baker by any stretch of the imagination but, it’s a recipe a friend gave to me years ago and I've always stuck with it. I’m not sure where it came from but it is a delicious, rich, fruity cake.

Ingredients 1lb Currants (450g) 6oz Sultanas (175g) 6oz Raisins (175g) 2oz Glace Cherries, rinsed and finely chopped (50g) 2oz Mixed Peel, finely chopped (50g) 3 Tblsp Brandy (for now...)

8oz Plain Flour (225g) (Gluten Free flour if needed) 1/2 Tsp Salt 1/4 Tsp Freshly Grated Nutmeg 1/2 Tsp Mixed Spice 2oz Almonds, chopped (50g), skins can be left on 8oz Soft Brown Sugar (225g) 1 Dessert spoon Black Treacle 8oz Unsalted Butter (225g) 4 Eggs Grated Peel of 1 lemon & 1 orange

Method The night before you make the cake place all the dried fruit & peel in a bowl and mix in the Brandy.

Cover the bowl with a cloth and leave to soak for at least 12 hours.

Pre-heat the oven to Gas Mark 1, 275F (140C) 8” round cake tin or 7” square tin, greased & lined with greaseproof paper.

Sieve the flour, salt & spices into a large mixing bowl and in a separate bowl cream the butter & sugar together until light and fluffy (this is the most important part of the cake, so don’t cut any corners!)

Next beat the eggs, then a tablespoon at a time add them to the creamed mixture, beating thoroughly after each addition, add a little of the flour if it starts to curdle.

When all the egg has been added, fold in the flour & spices (fold DON’T BEAT!) Now stir in the fruit & peel that has been soaking, the treacle, the cherries and the grated lemon & orange peel.

Spoon the mixture into the prepared tin & spread it out evenly with the back of a spoon - if you are not going to ice your cake you could arrange some blanched almonds over the surface at this stage but do it lightly or they’ll disappear into the cake forever!

Tie a band of brown paper around the outside of the tin & cover the top of the cake with a double sheet of greaseproof paper (put a hole in the middle of the greaseproof paper first about the size of a 50p piece.

Bake on the lower shelf of the oven for 31/2 to 33/4 hrs and don’t open the door to peek until at least 3 hrs has passed. When the cake is cold wrap it well in double greaseproof paper & store in an airtight container.

Feed the cake at odd intervals with Brandy throughout the storage time. To do this, strip off the lining papers, make a few holes in the top with a thin darning needle or skewer and pour a few teaspoons of Brandy into the cake. Repeat this each week in the lead up to Christmas. Christmas day - slice up and enjoy!

November Gardening Tasks With the weather getting colder and wetter, you might be tempted to retreat indoors and ignore the garden for a few months. But be brave, put on some warm clothes and head outside, as there are a number of important gardening jobs that need doing at this time of year. Here are just some of the things you might want to focus on.

Leaf Clearing

One of the most common seasonal jobs we do is leaf clearing. Once the leaves start to fall in the Autumn it’s an ongoing battle to clear them. Left to decay on your lawn, the grass will suffer and moss is likely to grow - a huge shame if you’ve been carefully tending your lawn through the summer months. We’ll also remove leaves from ponds, paths and driveways, anywhere they are collecting and making your property look untidy.

Remove fallen leaves as part of your regular garden maintenance schedule.

Leaves are great for composting; fill your compost bin or, if you don’t have one, put them into bin bags that can be stored in your shed or garage to rot down to use in the garden in the spring.

Leaves on paths and driveways can leave surfaces very slippery; to ensure that you and your visitors are not at risk of accident, power-washing any slippy surfaces after clearing the leaves..

Planting Seeds It may seem a strange month to sowing seeds. However, some flower seeds require a period of cold to break their dormancy, so now is a good time to start planting them. Coleus Seeds - Rainbow Mix. Nemesia Seeds - Masquerade Eryngiums, bugle, Corydalis solida, sweet peas and Allium sphaerocephalon among the flowers that can be planted now, ready to blossom in the spring.

Pond Pumps If you have any fish in your pond, then keep your pump running. This helps to prevent the water from freezing, which can prevent fish deaths in the winter. If there is no livestock, the only reason to keep the pump running would be for the aesthetic (i.e. a waterfall or fountain). If you do keep your pump running and it is a submersible pump, then raise it up from the bottom of your pond. This will minimize the different water temperatures from mixing, as this could affect your fish. By raising the pump from the bottom of the pond, only the top layers of the water will mix; preventing your fish becoming shocked or stressed out. This will help to prevent temperature-related fish deaths throughout winter.
