Elizabeth Beetham BSc Holistic Nutritionist, Natural Health Journalist and Wellbeing Expert Shares her Philosophy on Health and Wellbeing After last month’s article where I set out my thoughts on the importance of making food your medicine; this month I want to share my general philosophy surrounding good health – life’s most precious gift. I will summarise what I see as the three major aspects that help us to attain good health or perhaps more important that sense of complete wellbeing. These ideas of course are not new in fact many of you will have read about them and are hopefully taking action already. The first is the power of the mind. I cannot emphasise enough the importance of ensuring you control your thoughts. I am not just talking here about positive thinking this is often chanted as the answer to happiness. For many, creating positive thoughts is easier said than done particularly when facing serious problems. Here is the real dilemma because it takes practice to control the mind. Try spending a few days listening in to your own internal dialogue, you will soon realise how often your thoughts are negative and critical toward yourself. Science is becoming aligned to ancient mystical thought that what we think creates our world; indeed the law of attraction is powerful. Start paying attention to your thoughts and you will notice this process. Be brave, it does take courage to start creating the world you really want. To create wellbeing we must become conscious of our bodies so listen to what your body is telling you. The second is breathing. It might seem the simplest thing in the world but it is surprising how many people do not breathe correctly. They take shallow breathes that only fill the top half of the lungs so the body is not being provided with a good supply of oxygen. The secret to breathing effectively is to start with exhaling, completely empty your lungs puff it out through your mouth then inhaling and filling your lungs is automatic. Breathing correctly is a wonderful way of calming the body and bringing balance into your life. If you are feeling stressed or angry take a few minutes to concentrate on your breathe you will quickly feel more relaxed and in control. I highly recommend attending yoga classes or learn to meditate. We live in such a stressful world breathing correctly can really improve your health and wellbeing.

The third is the food we choose to nourish our bodies. The food we eat provides the fuel our bodies need to give us energy. It gives us the necessary nutrients required to repair damage, provides protection from disease and keeps us healthy. It is vitally important for health that we have the best diet available to us; foods that nourish us. We live in the fast food age which is having devastating affects on our health; the increase in heart disease, cancer and adult onset diabetes illustrate this fact. Processed food is not a health food. Home cooked fresh food is the sensible choice for wellbeing. Choose food of high quality, become a discerning shopper. I highly recommend buying organic food whenever you can if the cost is not prohibitive. Eat plenty of fresh fruit and vegetables, locally grown when possible. As I often say remember to support our local farmers. If you are not already a vegetarian why not introduce a few meals each week without meat or fish; there are some wonderful ways to prepare vegetables. If you would like some recipes please email me. It is important to get lots of variety in your diet this ensures you get adequate supplies of all the vitamins and minerals we need. Unfortunately because of the quality of the food we eat today this has become more difficult. Always choose wholegrain carbohydrates, bread, pasta, rice, beans, and pulses. As well as providing us with slow burning energy they also provide the roughage the body needs to help cleanse the intestines. Many people have the problem of constipation. One of the causes is not eating sufficient fibre in your diet. We need approximately 30g each day. Another reason for constipation is insufficient intake of water we should all keep our bodies well hydrates with clean fresh water. Gardening Jobs for MAY Spring is well underway now, and it’s a busy time for the garden.

• This is the month to get summer bedding plants started in containers and borders, these will give you lots of colour to come. Towards the end of May you can also start to plant summer bedding out in the borders too. It’s best to pot up containers in their final positions, or they can be too heavy to move when full! Add moisture-retaining crystals to the compost to help reduce the amount of watering needed, and feed with fertiliser during the flowering period. • Prune any shrubs that flowered in spring as soon as flowering finishes. Broom, forsythia and flowering currant (Ribes) all need pruning now. Cut off any dead and damaged stems and then remove about a third of the oldest flowering stems. This will rejuvenate the plant, creating a good display next year.

• Most evergreen shrubs can also be pruned this month before any new growth starts. Remove damaged or dead shoots and then thin out any overcrowded branches. This makes the plant look better and encourages vigorous new growth. • May is the month to plant out vegetable plugs and seedlings. Tomatoes, courgettes and other plants sown should be planted out in the garden in a sunny, sheltered spot. • If you sowed the seeds indoors or under cover, make sure to harden the plants off. Move them outside in their pots during the day and bring them back inside overnight for two weeks to acclimatise them.

Tomatoes are a great veggie for kids to grow, as they don’t require much space and can be grown out in a garden or in pots, as long as there’s plenty of sunlight. Young plants are available from garden centres around now. But they will still require frost-free conditions and hardening off before planting outside, plus plenty of watering. After about eight weeks you will be able to pick the juicy tomatoes, there is nothing more satisfying than picking and eating them fresh from your own garden, and they will truly taste better than any bought from shops.

Rugby care home bridges the generation gap A Rugby care home bridged the generation gap on recently by kick-starting a weekly sing-along activity for 0-4-year olds and their parents within the local community. Anya Court Care Home, on Dunchurch Road, will now host a weekly session on Wednesdays called Songs & Smiles held in association with not-for-profit social enterprise, The Together Project. Songs & Smiles has been designed to entertain and engage everyone from the youngest to the oldest members of the group, through singing, movement, instruments, coloured scarves and bubbles. Each session lasts approximately an hour, with the creative activity followed by refreshments and a meet and mingle with the homes residents and care team. The purpose of the activity is to reduce loneliness, improve well-being, tackle ageism and unite local communities through joyful intergenerational activities. Lifestyles Team Leader, Sue Mitchell said: “We are delighted to have introduced the weekly Songs & Smiles activity at Anya Court Care Home, as we know how intergenerational activities can help to improve the residents’ physical and emotional well-being.” “Our first session went really well and we hope that local parents and their little ones will continue to come along and join us for a great morning of socialisation and fun.” Founder of The Together Project, Louise Goulden said: “Our first Songs & Smiles session at Anya Court was such a wonderful experience. b ak e Mediterranean Chicken Traybake It’s all change this year. This time last year we were braced for snow with the promise of various cold snaps. This year Spring seemed to come early and we were breaking records held for over a hundred years. You’ve got to love global warming! With this in mind I have been trying to serve a Sunday roast but with a more Mediterranean Spring-time twist. One thing that annoys my wife is the number of pans I seem to use but I have tried to explain that I use what the dish demands and contrary to what she may think do not simply use pans for the fun of it or to see how many the work top will house in a vain attempt to break some non existent kitchen record (although I’m sure someone somewhere has attempted such a futile record and an internet based publication has documented it!) Like many people I love a family day and a roast but am so bored by the conventional way of doing it so I now I prefer a simple one tray bake.

The Ingredients Chicken leg or thigh and drum: It’s just too easy to overcook and dry out a breast and even the best cooked breast just doesn’t have the taste or succulence of the leg Oregano, garlic & chilli: This is a fantastic combination so don’t scrimp or be too mean Leeks: Long and proud and green and white Peas: Green, sweet spheres of happiness Charlotte potatoes: They’re petite, they’re not Jerseys nor Pipers Peppers: I prefer red but I’ll leave that down to you Please note you are entirely at liberty to use any vegetables at your disposal or lying about the place

The Method Season and spice up the chicken. Slice the vegetables in any way you see fit and throw into a tray and drizzle with cold pressed rape seed oil. Place the chicken on top and roast at 170 degrees for approximately an hour basting the chicken occasionally. Simples!
