Editors Letter... Hi Everyone and welcome to the January Edition... Well what a busy month December was! I had the wonderful job of collecting and delivering the top 3 prizes to our competition winners. A big thank you again to our sponsors: Rugby Theatre, Macready Theatre, Sweet Retreat and Rugby School Enterprises. I love running this competition every year. Many of you will also know that I, along with other volunteers organise a Christmas Tree for the Village of Bilton each year and we have an evening of gathering, drinking mulled wine, eating mince pies and singing carols together. Its always wonderful event, tiring but so worth it. Thank you to Matt Randall for another fantastic local front cover image. Delicious Seasonal Recipes Coconut Sweet Potato Lentil Soup with Rice

When you’re in need of warming comfort food, but you also want healthy, this Coconut Sweet Potato Lentil Soup with Rice is just the soup to make. All made in just ONE pot in less than an hour. It’s cozy, a little spicy, and filled with vegetables. The perfect healthy bowl of soup!

Ingredients 2 tablespoons extra virgin olive oil 1/2 yellow onion, chopped 1 inch fresh ginger, grated 2 cloves garlic, minced 2 sweet potatoes, peeled and cubed 1 tablespoon yellow curry powder 1/2 teaspoon cayenne pepper, more or less to taste 950ml vegetable stock 150g cup dried red lentils kosher salt 1 can (14 ounce) coconut milk 150g baby spinach 450g cooked basmati rice 15g of Coriander, chopped, plus more for serving fresh Naan, for serving

Method Prep Time: 10 minutes mins Cook Time: 25 minutes mins 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion and cook 5 minutes until soft. Add the ginger, garlic, and sweet potatoes and cook until fragrant, about 2 minutes. Stir in the curry powder and cayenne and cook another minute.

Seasonal Food This Month Apples, Beetroot, Brussels Sprouts, Carrots, Celeriac, Celery, Chicory, Jerusalem Artichokes, Kale, Leeks, Mushrooms, Onions, Parsnips, Pears, Red Cabbage, Salsify, Savoy Cabbage, Spring Greens, Spring Onions, Squash, Swedes, Turnips, White Cabbage.

2. Add the stock and lentils. Season generously with salt. Bring the mix to a boil over high heat, then reduce the heat to low. Cover and simmer 15-20 minutes, until the lentils are soft and the sweet potatoes tender. 3. Stir in the coconut milk and spinach, cook 5 minutes. Remove from the heat and add the coriander. 4. To serve, divide the rice among bowls and ladle the soup overtop. Garnish with cilantro. Serve with Naan on the side. Enjoy!

RSPB - Big Garden Birdwatch is the UK’s largest garden wildlife survey. It’s been running since 1979, and every year, around 700,000 people take part. It takes place over the last weekend in January each year. In 2024, Big Garden Birdwatch will be back on the 26 to 28 January. Register to take part in the world’s largest garden wildlife survey. In 2023, over half a million people took part. This year, you could be one of them! Once you register, you will given top tips on how to get ready for your best birdwatch ever. On the weekend of the Big Garden Birdwatch itself, taking part couldn’t be simpler. You just spend an hour watching the birds in your garden, from your balcony or in your local park, and tell us what you’ve seen. Once your seedlings are growing they can be moved to somewhere light and they will tolerate much cooler conditions… somewhere like a coldframe, porch or greenhouse is ideal.

General Gardening Maintenance Top up bird baths with fresh water daily and melt ice with warm water on frosty days. Repair wobbly or damaged fences, and treat wooden structures with preservative during dry spells. Give your lawn mower a basic service or take it to a dealer for maintenance, while it’s not in use. Put up bird boxes in sheltered spots, on tree trunks, sheds or walls, well before the nesting season begins. Clean and sharpen your tools, including hoes, secateurs and shears, and spray metal tools with oil. Sprinkle an all-purpose fertiliser along the base of hedges and around shrubs. Trim back ivy, Virginia creeper and other climbers that have outgrown their space, before birds start nesting.
