Well I spoke too soon last month when i said I’d recovered from Covid. Just a few days later I got ill again and am still ill. I’m currently on my second lot of anti biotics and due for a review mid January as the hospital feel it may be long covid :-(. Fingers crossed its not. I can’t beleive how many people I know who are ill at the minute with a nasty cold, cough, sore throat etc, this winter seems worse than ever. I hope by the time you read this (i’m writing it before Christmas) you will have had a lovely Christmas and a positive start to 2023. What does this year mean to you? Delicious Seasonal Recipes Slow Cooker Chicken Gnocchi Soup

Creamy slow cooker chicken gnocchi soup with perfectly seasoned chicken and pillowy potato gnocchi is pure comfort food and perfect to return to home to in the January cold evenings.

Ingredients (Serves 6)

4 boneless, skinless chicken breasts

1/2 onion, diced

4 cloves garlic, minced

1 celery stalk, diced

2 large carrots, grated

2.5 pints of chicken broth or chicken stock

1 teaspoon dried basil

1 teaspoon Italian seasoning

1/4 teaspoon ground nutmeg

1 bay leaf

Salt and pepper to taste 230ml of double cream

1 (450g) package potato gnocchi

100g fresh baby spinach, tightly packed (about 3 cups) 1 tablespoon of cornflower

Method

Place chicken in a 5.5 ltr slow cooker and top with onions, garlic, celery and carrots.

Season with basil, Italian seasoning, ground nutmeg, bay leaf and salt and pepper.

Pour chicken broth over the chicken and veggies. Cook on high for 3-4 hours or low for 6-8 hours.

Remove chicken to a cutting board and chop or shred it into bite-sized pieces. Discard bay leaf. Add the chicken back to the slow cooker.

Pour in heavy cream, add gnocchi. Mix 1 tablespoon of cornflower with 2 tablespoons of cold water to make a cornflower slurry and add to pot. Cook on high for 30-45 minutes or until the gnocchi is tender and the soup has thickened.

Toss in spinach, cover and let it sit in the residual heat until the spinach has wilted into the soup.

Adjust seasonings to taste and dish and serve hot.

Enjoy!

Start 2023 with a POSITIVE PLAN

Forget New Years Resolutions - for most people these are unachievable and barely last beyond early February. Statistics show that over 80% of rashly made, unplanned new years resolutions are so unrealistic that they are usually not achieved and have been forgotten about by the end of January. OK, maybe Dry January is a good idea for those that overindulge in December but not if it means you are feeling deprived and then end up binging on the 1st February! If you are gong to make a resolutionbe realistic.

A better idea is to make a list of what you want to achieve in 2023, rather than what you want/need to stop doing. Its a better mindset to and you are more likely to carry it through. Your list can be anything you like, but think about your life as a whole, rather than just putting pressure on you as an individual.

So maybe something like: Travel to and explore a new city / Grow my own vegetable (not plural - start small!) / de-clutter the house room by room and donate any unwanteds to charity / decorate a specific room / make time and book in to see friends and familywe are all guilty of saying ‘ooh we must meet up’ but then don’t get around to organising it / do 10,000 steps or a 20 minute walk everyday / turn notifications on your phone off a hour before you go to bed / try a new pastime, club or sport. Of course, these are just a random list of suggestions, I’m sure you all have ‘things’ you want to do in 2023, so why not make a list, keep it somewhere prominent and enjoy ticking them off as we go through the year. Why not get the whole family involved? We are a family of 5 and the children are always involved in the New Years List and they enjoy keep re-visiting it to see how we are getting on and what’s left to achieve & enjoy.

Make a Memory Jar

This is a great idea for families. Find a jar, pot, or something similar. Get the children to make a label for it - 2023 Adventures is a great one. Each time you go somewhere or do something great, it may be something simple like going to the cinema or a day at a theme park, an afternoon at a park or a big family holiday. You could each write a thought down, add a photo or an entry ticket etc to the jar and then at the beginning of next year or better still on New Years Eve sit together as a family and read through all that you did. It’s a great way to remember all the fabulous family times you’ve had and helps to remind the children of all you have done, especially if they are young.

Promise yourself that you are going to look after YOU!

A simple statement but not one we always do. Busy lives often mean we neglect ourselves in some way as ‘life’ take over. We all have things we ‘really need to get around to’. Well, make this year the year that you put yourself first and kick the year off in a positive way. There are many ways we can improve our health and general well being. Diet of course is important but other ‘things’ often get in the way too. Consider some of these:

Acupuncture - this can help with pain management, fertility, migraines, stress, and a host of other issues.

Hypnotherapy - traditional hypnotherapy can help with all sorts of issues including stopping smoking, fears & phobias, weight loss.

Meditation - becoming more and more well known and talked about is this great tool that EVERYONE can be capable of. Even just 10 minutes a day can help to calm the mind, reduce stress and make life more manageable.

Exercise - whether this be something as simple as walking more or going to a new class/group, exercise is proven to promote happy thoughts so can work on 2 levels: helping with weight management & fitness and keeping us happy & positive. Taking small steps is often the best way so why not get those trainers on an put your best foot forward?!

Whatever you decide to do with your year, do it with positivity, do it because YOU want to do it and most importantly, BE HAPPY. If it doesn’t make you happy, don’t do it.

January Gardening Tasks

The weather can be so fickle at this time of year - warm one day, wet another and freezing the next day, January can be pretty sharp when it chooses. Gardening in January and February: It might be cold but the garden is starting to come alive, so get digging, feeding, mulching and pruning in preparation for the year ahead

Recycle Christmas Trees

Don’t be too quick to discard your Christmas pine tree. If you can shred it, the chippings will make great compost for ericaceous plants, such as camellias and blueberries. Try using the branches as plant supports for peas and broad beans. Alternatively, if you bought a felled tree this year, you’ll need to make sure it goes into green bin ready for recycling. . These trees are usually chipped and used as compost. So there’s no need to add festive waste to the landfill, which is bad for the environment. Let’s make our January greener.

Time to feed your plants

...get ready to feed your plants. They’re about to have a huge growth surge and it would really help them get off to a good start. If you have time, dig in well-rotted organic matter but, for a quick fix, sprinkle a balanced fertiliser onto the soil.

Lawn Care

Keep off the grass! During the winter months, it’s best not to step on your lawn too frequently. When the ground is wet or frosty, it’s particularly important to keep off the grass. Walking on frosty grass can scorch it, which will leave it looking black or brown. Stepping on a wet or waterlogged lawn will compact the soil, meaning amongst other things that it can’t drain as well. So if possible, you should only step on your lawn when conditions are dry and frost-free.

During the winter, grass roots are taking their ‘downtime’. They aren’t under constant pressure to supply food to sustain the growth of the grass blades. They’re recuperating their strength. Given the right nutrients, they can grow deeper, build strong cell walls, and get set for really healthy growth in the warmer season. Stronger roots are also better at fighting disease, which can be rife in damp conditions. So, feeding your lawn in winter will provide many benefits.

Lawn feed for autumn and winter is different to summer lawn feed though. You’ll need a specialist winter lawn feed that doesn’t contain nitrogen. Added iron and magnesium will help prevent disease, phosphorus and potassium promotes healthy root growth too.

Lastly - make sure your lawn is free from leaves. Grass won’t survive if you don’t clear away debris that blocks sunlight and hinders proper drainage.

The Friends of the Hospital of St Cross

The Friends of St Cross celebrated 500 years of service by active volunteers

At the recent AGM of the Friends of St Cross a group of volunteers received long service awards having completed more than 10 years of service.

Elizabeth Burnett, Trustee of The Friends, said “In recognition of the fact that many of our volunteers have retired later than those recruited in earlier years, and so may choose to volunteer for a shorter period than their predecessors, the Board has decided to reduce the length of time to qualify for Long Service Awards from 15 years to 10 years.”

Elizabeth also said that “the Friends Board decided that Long Service Award badges should be given to all 90 – 35 of whom are still actively volunteering for the Charity and have themselves given over 500 years of service!” She then read out a list of 90 volunteers, many of whom had already received awards for 15 years of service, to the audience of over 60 volunteers and supporters of the Charity at the AGM.

During the proceedings of the AGM, the importance of the contribution made by volunteers at the Hospital of St Cross was recognised by Carolyn WatsonMerret, The Mayor of Rugby, Andy Hardy and Dame Stella Manzie, Chief Executive Officer and Chair of University Hospitals Coventry and Warwickshire Trust

Doug Jones. Chair of The Friends said “The various services provided by the Friends at St Cross are managed through a team of eight Service Co-ordinators leading the 150 plus volunteers who continue to deliver, week in week out with commitment, enthusiasm and good humour more hours of service than before the pandemic struck. To all our volunteers both new and long serving, I thank you for your service.”

Sundays - Rugby Sport for the Disabled Association (RSDA) All ages and abilities welcome to join us on Sundays from 2-4.30 at the The Queen’s Diamond Jubilee Centre.
