Delicious Seasonal Recipes Sweet Potato Pancakes

This pancake recipe makes eight soft delicious pancakes. Simply roast sweet potatoes to make your own puree and you’ll have fluffy, homemade pancakes that’s better than any box mix could produce. You want to make sure the potato is really well cooked so it mashes easily, the batter will be beautifully smooth. Without the topping they are perfect for baby-led weaning as they are easy to pick up and have a lovely soft texture.

Ingredients 220g plain flour 2 tsp. baking powder 1/2 tsp. bicarbonate of soda 2 tbsp. packed brown sugar 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. ground nutmeg 1/4 tsp. ground ginger 420ml buttermilk 2 small sweet potatoes, roasted and pureed until smooth 2 large eggs 1 tsp. vanilla extract Butter, for cooking and serving Toasted pecans, for serving Maple syrup, for serving

In a large bowl, whisk together flour, baking powder, bicarbonate of soda, brown sugar, salt, cinnamon, nutmeg, and ginger.

Banana and walnut - 1 chopped banana, 1 tbsp chopped walnuts, 1 tbsp maple syrup

In a separate bowl, whisk together buttermilk and sweet potato puree, then add eggs and vanilla. Add wet ingredients to dry ingredients and stir with a wooden spoon until just combined. Melt butter in a large nonstick pan or griddle over medium heat. When butter is foamy, reduce heat to medium-low and ladle a scant 120ml pancake batter into pan. Cook until bubbles start to form in batter and pancake is golden underneath, about 3 minutes, then flip and cook other side until golden, another 3 minutes.

Blueberries and Greek yoghurt or soya yoghurt - 1 tbsp blueberries, 1 tbsp Greek or soya yoghurt, 1 tbsp chopped pecan nuts, 1 tbsp maple syrup Chopped banana and peanut or almond butter Spread 1 tablespoon of peanut or almond butter on one half of the pancake, then add chopped banana and fold the pancake in half. Banana, strawberries, hazelnuts and chocolate - 1 chopped banana, 1 handful of chopped strawberries, 2 tbsp chopped hazelnuts, 1 tbsp grated dark chocolate, Greek yoghurt and mango

Repeat with remaining batter. Serve with more butter, toasted pecans, and maple syrup.

Gardening Tasks

Lengthening days may tempt keen gardeners back out again. In all areas, there is still time to plant trees, hedges and shrubs before they resume growing in the spring. You can also plant bare rooted fruit trees and soft fruits. If it is too wet and cold for gardening, sit back and use the time to plan for the coming year. Why not look at other gardens in your area to see what grows well and looks good at this time of year?

Planting bulbs for late Spring and Summer We always associate spring with bulbs, daffodils, crocus, hyacinth, but there are many lovely summer bulbs, which although usually planted in the Autumn, if you missed that slot, early spring provides another opportunity. Allium, make a fabulous display and mix so well with many popular plants and if planted in February will flower in late spring and early summer. Allium are easy to grow and once established return reliably each year. Plant Lilies in Feb/March for a great scented display. Lilies dislike heavy, wet soil which can make them less reliable in subsequent years. If your garden conditions are not ideal with wet heavy clay conditions, it is better to plant in containers. Anemone can be planted now. The corms (bulbs) are best soaked overnight before planting. There are lots of summer flowering bulbs in the garden centres from now onward, check the packets carefully as not all are fully hardy, those which are not frost hardy need to be planted later. The best chance of ensuring summer bulbs flower the following year is to feed them during the growing season, right up to flowering. Tomato feed is ideal.

Birds in the Garden At this time of year look into the different style of bird boxes – there are lots of differing styles dependent on the types of birds that you have in your garden. Things to consider when choosing where to position your nestbox include: • Boxes for tits, sparrows or starlings should be fixed two to four metres up a tree or a wall. • Unless there are trees or buildings which shade the box during the day, face the box between north and east, thus avoiding strong sunlight and the wettest winds. • Make sure that the birds have a clear flight path to the nest without any clutter directly in front of the entrance. Tilt the box forward slightly so that any driving rain will hit the roof and bounce clear. • House sparrows and starlings will readily use nestboxes placed high up under the eaves. Since these birds nest in loose colonies, two or three can be sited spaced out on the same side of the house. Keep these away from areas where house martins normally nest.

Mahonia The time to prune Mahonia is when it has finished flowering. If the Mahonia is looking healthy, with lots of growth and in good shape, prune it by simply removing the spent flowers. if it is a little straggly, prune out the long shoots and tidy up. However, as it matures, Mahonia has a tendency to become leggy with bare stems at the base of the plant, which requires a hard prune.

Presentation

The presentation of a home has always been an important part of selling someone’s property for me. Having been in the industry for 35 years now, I like to think that I’ve just about got the hang of it, but I think it’s essential to adapt and learn new techniques. If nothing else, Covid has taught us that. I witness regularly that the properties that look the best and most appealing, regardless of type, size and design, achieve greater selling figures than those that aren’t looking at their best. Now I know that that might sound an obvious thing to say, but I’m talking significantly higher. Even in a busy market like we have today, where, let’s face it, it’s not difficult to sell any kind of property, ensuring that the property looks at its best, making it appeal to the largest audience, is still having a direct result on the levels of offers we’re receiving, resulting in the best possible sale prices – and some of the prices that we have achieved recently have exceeded both the vendors and our own expectations! Quite literally, presentation can make you, or indeed lose you, thousands of pounds. Now before you worry about the level of work you’re able/willing to do, the good news is, in most cases, only simple changes may be necessary to give an up to date look, which in turn will add that extra appeal to your home, resulting therefore in a greater value. The sale price of a home – is not purely determined by its accommodation or square footage. It’s determined invariably by the perceived ‘Lifestyle’ that the potential buyer can imagine for themselves and their family there. For example, in a Living room, some new soft furnishings in contemporary styles and colours, such as cushions or throws added to an existing sofa, can update the look of a room both simply and inexpensively. These changes can make a 'nod' to a more contemporary trend without having to go to the expense of restyling the whole room. Taking it a step further, one might paper or repaint a feature wall, or even add some interesting artwork. This process is not designed to cost a lot of money - quite the opposite to be honest. In fact, the most productive tasks of decluttering and maybe rearranging furniture to create a better layout will cost nothing at all. To demonstrate my point, I can think of an example in Rugby recently where two identical 4 year old houses were both on the market at the same time with the same agent at £255,000 but they sold for very different figures. One house was furnished to a more ‘old fashioned’ style. It also had quite dark furniture and carpets. This sold for £244,000. The other was styled with much more contemporary furniture and a modern colour palette with complimentary soft furnishings. This sold for £257,000. A difference of £13,000, purely due to aesthetics! So, as you see, it's definitely worth putting in a little effort before your property appears on Rightmove, because you never get a second chance to make a first “Clare went ‘above impression! and beyond’ during the sale

Volunteers Needed - Warwickshire Vision Support are looking for new volunteers to support our Social Club for visually impaired people, located at Hamilton House, Rugby. The club takes place every other Friday, from 10.30am – 1.30pm. Volunteers are required to support the Club Leader with organizing entertainment, activities and refreshments, as well as making members feel welcome. All training is provided.
