HOW TO STORE MINCE PIES

PACKAGING

If you are buying mince pies, look for the longest Best Before Date on the shelf and leave in their packaging unopened until you want to eat them

STORE

Store in a dry, airtight container for up to 3 4 days (if they are around for that long)

FREEZE

You can freeze mince pies for up to 6 months. After this period they will still be okay to eat but might have less flavour and a slightly changed texture.

REVIVE

To revive stale mince pies, place them in the oven at 180C or Gas Mark 5 to warm through Enjoy

Well I’m pleased to say that this month has been better than last and I eventually got back to full health, but the illness that came with Covid lasted over 3 weeks, almost 4. There seems to be alot of cases of it again now though doesn’t there, and I’m guessing many more undiagnosed ones too.

As the month has been challenging with both mine and Catherine’s health we haven’t managed to take our usual silly Christmas picture so have re-used last years when we were both in alot better health!

Judging this years Childrens Front Cover Competition has been as tricky as previous years with some fantastic entries again. We have chosen the winner, not just based on Phoebes lovely design, but also based on her message of Love is all you need. With times as tough as they are for many people I felt it was a nice reminder that Chrismtas doesn’t have to be all about the presents we give but more about the presence we have in each others lives. You can see the Runners Up and a selection of the entries on pages 34-37. I’m just sorry we can’t print them all!

Fried Brussel Sprouts with lemon, Sage and Parmesan Crumble Ingredients

800g of Brussels sprouts

25g of butter

25g of breadcrumbs

2 sprigs of sage, leaves picked and roughly chopped

1 lemon, zested

25g of Parmesan, or use a similar vegetarian hard cheese if preferred 25g of olive oil salt and pepper

Method

Bring a pan of salted water to the boil and add the sprouts. Cook for 3 minutes, then cool in iced water – as soon as they’re cool remove them from the water to prevent them going soggy. Cut the sprouts in half and leave to dry on a paper towel.

Meanwhile, place a large frying pan over a medium heat add add the butter. Cook until the butter is just starting to turn a light brown colour, then add the sage and breadcrumbs. Cook, stirring constantly until the breadcrumbs are an even golden brown. Remove from the heat and add the lemon zest and Parmesan. Preheat the oven to 180°C/ gas mark 4

Cover the base of a frying pan with olive oil and place over a medium heat. Place the sprouts cut-side down and roast until golden, about 4 minutes, then roast in the oven for 3 minutes. Remove and season with salt and pep per. Serve covered with the lemon, sage and Parmesan breadcrumbs pepper and salt.

Sausage & Chestnut Stuffing Loaf with Cranberry

Ingredients

12 rashers of smoked streaky bacon

50g butter

2 onions, peeled and finely diced 100g dried cranberries (such as Craisins)

1 x 340g packet of high-meat content pork sausages (of your choice, skinned)

100g fresh breadcrumbs

8 fresh sage leaves, finely chopped grated zest of 1 small orange salt and pepper to taste

Method Pre-heat oven to 190C/375F/Gas5. Line a 1kg (2lb) loaf tin with the streaky bacon slices, overlapping them slightly. Don’r worry if they hang over, as you can tuck them over the top of the stuffing loaf. Melt the butter in a large frying pan and saute the onions until they are soft and translucent. Add the cranberries, sausages (skin them and crumble the sausagemeat), breadcrumbs, sage and grated orange zest and mix well, with your hands is best. Season to taste with salt and pepper.

When all of the ingredients are combined, spoon the stuffing into the bacon lined loaf tin and pack the mixture down firmly. Cover with a piece of buttered greaseproof paper and bake for 30 minutes, before taking the loaf out, carefully in verting it onto a greased baking tray and baking it for a further 20 to 25 minutes, or until the bacon is crispy and golden brown. Allow to come to room temperature and cool slightly before serving in slices.

Parkinsons effects many people each year, there are about 17,300 new diagnoses. It’s a progressive neurological condition. It causes problems in the brain and is the fastest growing neurological condition in the world. Scientists are chasing new treatments and a cure. Each person’s symptoms can be different. For Pat Chittenden her left side tremors. Knitting stops this!

Beat The Chill was started in Autumn 2020 as we discovered that whilst knitting Pat’s symptoms stopped. She loves knitting anyway and has always had an involvement, having worked at Websters wool shop in Dunchurch for those that remember the shop, attending a knitting club and being a wizz with machine knitting.

Beat The Chill uses Toft Aplaca double knit wool. It’s a lovely soft, warm wool and it means we are supporting another local business. We started with the signature wristwarmers and have expanded to a hat with matching alpaca pompom, headbands and this year the neckwarmer.

The wristwarmers allow you to still carry out jobs as the fingers are free, they work by keeping your pulse point on your wrist warm. They are grey and can be edged with a choice of 16 colours. Hats are usually made to match with the pompom colour being the same as the gloves. The pompoms are also removable and interchangeable. Headbands and Neckwarmers are available in grey, camel or cream. Everything is knitted to order so please order in plenty of time

December Gardening Tasks

As we approach the shortest day of the year in December you will need work to keep you warm outside, such as digging and tree pruning. Check your winter protection and if you have a greenhouse make sure the heater is working. Hopefully there are not too many jobs left to do this year so you will have time for some fireside garden planning.

Wild Birds

If you only do one thing...hang out a bird feeder – somewhere you can see it but that the cats can’t get to. There are lots of different ways to help birds through winter but a feeder is easy and rewarding. It’s also one of the simplest method of attracting a good variety of species. You’ll probably see sparrows, and maybe finches and blue tits too. The ones that come will depend on what food you put out. Coconut halves are a great source of food for many birds, especially blue tits and long-tailed tits. Fat balls are made with a mix of suet, seeds and cereals, with or without mealworms Robins will love these.

Using foliage for Christmas

Take a look around your garden and use your imagation. Cut evergreen foliage and branches to fashion into festive garlands and wreaths. Conifers, ivy, Cornus stems and holly make beautiful traditional displays. Eucalyptus and ferns can make strikingly simple displays in a more contemporary setting.

Digging

For those with heavy soils, this is the perfect time to dig, so that winter frosts can help break down newly turned clods. Digging heavy ground is hard work, and is best staggered over a few sessions to save your back. In the vegetable garden, this is the ideal opportunity to work in goodness in the form of organic matter. The contents of the compost heap, well-rotted manure or even composted bark can be worked into the bottom of the trench, where the worms will redistribute it to improve soil consistency. Be systematic: remove a trench a spit deep and take it to the far end of the plot to turn into the last trench when you finally reach it. Fork over the bottom of the trench if your soil is very heavy and add the organic matter in a generous layer before turning in the next spit.

On “new” ground, where you are preparing beds, you can go through the same process. If it is lawn that you are taking up, turn the sod into the base of the trench where it will rot down, but on weed-infested ground you need to fork out live roots as you go. Super-heavy soils can have a generous layer of sharp grit spread over the surface after digging, but light soils are best dug at the end of the winter and the organic matter spread over the surface now. The mulch will protect the soil from winter rains and can be forked in rather than trenched in late February and March.

This Kingdom and its purpose largely remain a mystery to many, but this need not be the case Whilst it is not an easy task, it is possible for virtually everyone to grasp the basic themes of the Bible. It just requires a little time and attention, but the great treasures to be discovered there can thrill and amaze the reader of the Bible.
