Quinoa and chimichurri

steak salad

This nutritious meal would be perfect when enjoyed alfresco this summer! Any cut of steak may be used but it would also work well with grilled chicken or prawns.

The quinoa is toasted to give it an extra nutty flavour and then tossed in a honey, chilli and lemon dressing.

Servings: 4

Ingredients

250g dried quinoa

500ml chicken stock

2 tortillas

175ml olive oil

2 tsp ground cumin

4 x 150g rump steaks, fat trimmed

1 garlic clove, peeled

25g fresh coriander

15g fresh parsley

25g fresh oregano, leaves picked

½ tsp chilli flakes

juice of 1/2 lemon

½ tsp agave syrup

4 large tomatoes, thickly sliced

2 small handfuls of raisins

Method

Toast the quinoa in a large deep frying pan (that has a lid) over a medium heat for 3 mins. Add the stock and bring to the boil. Turn down the heat, reduce, cover and simmer for 12-15 mins until the quinoa is tender and has absorbed the stock. Empty into a serving bowl and put to one side

Preheat the oven to 200C (180C fan). Brush the tortillas with a little oil and slice into 2cm wide strips. Arrange on a baking sheet and bake for 5-7 mins until golden. Set aside to cool

Rub cumin into the steaks. Heat 1tbsp of oil in a large frying pan over a medium heat. Cook the steaks for 2-3 mins on each side for medium meat or a longer/shorter amount of time depending how you like your steak. Set the steaks to one side to rest

In a food processor, whiz the remaining oil, garlic, herbs, chilli flakes, lemon juice, agave and 2tbsp water until smooth. Reserve 4 tbsp dressing and stir remaining through the quinoa; toss through the tomatoes and raisins

Slice steak and arrange with the quinoa salad, then drizzle with the remaining dressing and serve with the toasted tortilla strips

August Gardening Tasks

August is usually one of the hottest months of the year - making watering essential. Try to use grey water wherever possible, especially as water butts may be running low if it has been a dry summer. August is traditionally holiday-time, so you might need to enlist the help of friends and family to look after the garden while you are away.

Pond Algae

If your pond is covered in algae, it can be tempting to change the water – this may solve the immediate problem, but will only make things worse in the long run. Improving the conditions that are causing the algae to thrive will be much more effective long term – if you don’t, the algae will just keep returning. However, there several short-term fixes you can also try, but they need to be repeated to keep algae at bay: Physical removal – with blanket weed and other floating algae, scoop them out with a net or a rake, to twirl them out. Float a mesh bag of barley straw on the pond – about 50g of straw per sq m (1½oz per sq yd) of water surface area is ideal, and should discourage all types of pond algae. Add the straw in spring and remove it when it has turned black (usually about six months later). Sometimes lavender is added to the barley straw for additional effectiveness or alternatively - Add pond dye – Dyofix Pond Black claims to help deter algal growth. By colouring the water black, it deflects ultraviolet rays, so the algae can’t photosynthesise. Surface plants such as waterlilies aren’t affected. It lasts for several months and can be used all year round. Pond Blue is paler, allowing you to see fish and other pondlife beneath the surface

Cutting Hedges

This is a good month to give established hedges a final clipping. This helps reduce any straggly growth and helps make them compact and neat. Clear out the bottom of hedges from grass, weeds and debris that has gathered. This is a favourite place for pests and insects as they use those for winter shelter. You can use a granular weed killer to keep that area weed free.

Lawn Care

Unless you’re going away on holiday, August is an excellent month to fertilise your lawn soil. This is because your grass loses much of its energy when the weather is warm and during heavy use. Use a higher nitrogen fertiliser to help your grass plants cope with the warmer, dryer conditions

Business Spotlight

Rugby’s Got Talent 2023 surfaced probably the strongest field of entrants ever in the opinion of the judges of this annual Rugby performers top talent competition.

Operated by a partnership of local organisations who combine their expertise and energies to give young people residing in the Borough of Rugby the opportunity to show off their emerging talents.

Held at the Benn Hall, of one of the Towns best venues, with professional technicians and highly experienced judges to provide advice and supporting critiques of their performances. It creates everlasting memories which will encourage all involved to develop their musical potential to the maximum.

Head judge Rotarian Mike Folly, who has spent a lifetime of creating innovative events and shows featuring some of the biggest names in show business said, “As always, it was a real privilege to listen and help this cast of 2023 performers who made it almost impossible to select one act in preference to all the others. It was so close!! Everyone, both semi-finalists and finalists, could happily entertain an audience and will have gained something special from putting themselves through this experience. We congratulate all of them, thank them for being part of the show series and would welcome them back again with open arms anytime in the future.

Other judges on the panel this year were Amie Boyd, Musician, teacher, Choir leader and Rock Star from Hillmorton. Paula Cannon, former professional singer, design expert and all-round performer favouring Blues, Country and rock styles .Rob Sloan, film director at Walt Disney Studios, and joint creator to Rugby’s “In the Round” Theatre Group for young people.

Jades Dance Studios, Last year’s winner EZZA Brianna singer songwriter who had had a great year as last year’s winner and benefitted enormously from the experience. And whilst the judges were deliberating over the winner and runners up The Big Sing who had appeared in last years show and then gone on to feature strongly in Britain’s Got Talent last year providing everyone with an up lift with their set of great numbers known to all!

The Winner for 2023 was: Just Li, (Harrison), who has just moved to the area from South Africa and has made her home in Rugby.

The judges were captivated by the quality and talent of all the performers in this year’s shows.
