THE BEST IS YET TO COME

On behalf of the entire team at Hilton Sandestin Beach Golf Resort & Spa, it is my honor to welcome you to what I hope will be a most memorable stay.

Whether you’re visiting us for the first time, or are one of our valued returning guests, we want for you the best possible experience in every aspect of your stay.

As your new General Manager, it is my mission to continue the legacy of success ushered in by my predecessor, Gary Brielmayer. He left some mighty big shoes to fill, but I am following in his footsteps in making customer service a top priority.

While I am new to this role, you should know I’m not new to Hilton Sandestin Beach.

I first walked through the hotel’s doors 19 years ago from Beaufort, South Carolina, where I worked within another hotel’s food and beverage division. At Hilton Sandestin Beach, I began as Manager of Sandcastles, Barefoot’s and Seagar’s before becoming the resort’s Director of Food and Beverage. I’ve also been a member of the Northwest Florida chapter of the Florida Restaurant & Lodging Association for a number of years, serving as president in 2014 and on the board the year following. Being a part of this association has garnered me an additional breadth of knowledge of the hospitality industry at large.

My most recent role as Director of Operations opened a whole new world for me as I became intimately acquainted with the daily processes of our spa, recreation, housekeeping and front office departments.

As a large hotel that deals in a high volume of business, operations must be efficient, effective and proactive. We strive to improve with every new year. And, going into 2023, I can honestly say that our team is the best it’s ever been.

While a new era always brings about change, I truly believe the best is yet to come for our resort.

We are thrilled to announce that, over the next three years, our property will see enhancements through an $30 million renovation. We’re getting a fresh face, while still maintaining our old soul of Southern hospitality that keeps our guests choosing to stay with us time and time again.

This resort has come a long way over the last 38 years, and we are going to continue opening the door to new experiences and opportunities. We thank you for accompanying us on this journey, and look forward to making your stay a memorable one.

A BID FAREWELL

For my longtime colleague and dear friend, Gary Brielmayer, becoming a hotel general manager was inevitable.

When I say he grew up living and breathing the hotel industry, I mean he was literally raised in the penthouse of what used to be the Ramada on Okaloosa Island. Over the years, Gary has shared with me memories of his storybook upbringing; from waking up early to help the kitchen prepare steamship round roasts to assisting his father — the hotel’s general manager — with his daily task list.

I believe this is what created the strong work ethic, wisdom and intrepidness with which Gary has led Hilton Sandestin Beach Golf Resort & Spa as the General Manager for the past 13 years.

He first joined our resort 25 years ago as Director of Food and Beverage, whereupon he worked his way up to Director of Operations and, in the winter of 2009, became General Manager.

When I asked what kept him going throughout all those years, he said, “Stubbornness … no way I was going to quit, no matter what obstacle came my way.”

In my 19 years of working alongside him, I have tried to adopt and conduct myself with that same tenacity. Gary always welcomed a challenge, and his doggedness is what got us through some of our most difficult times.

I was proud to witness his leadership when Hurricane

Michael devastated Northwest Florida in 2018, and he helped secure a base of operations for the U.S. Coast Guard here on-site. I was even more proud to watch as he navigated our team through a worldwide pandemic in 2020, making our safety a top priority during uncertain times.

Gary is someone who truly cares about his community and its people. Beyond our property, he has sat on boards for the Walton Chamber of Commerce and our local tourist development council, Visit South Walton.

He is the proud father of two, both of whom he is looking forward to spending lots of time with — and getting in all the fishing and diving he can! — in his retirement.

Here at Hilton Sandestin Beach, we will miss our jovial, cowboy boot-wearing General Manager. Gary, we are so thankful for all that you have done in your tenure, and we wish you the best of health, happiness and fulfillment in your new adventures.

TIPS FROM THE CONCIERGE

◆ Restrooms are available on the lobby level near the indoor swimming pool and pool deck access area.

◆ Complimentary Wi-Fi, computer access and an ATM are available at the Connectivity Kiosk near the Gift Shop.

AT YOUR SERVICE

This guest services team is the cream of the concierge crop

Within the hospitality industry, the front office team has long been considered the face of the hotel.

As a guest, it is your first and last impression of your stay, the hub of information regarding the goings-on of the property and beyond, and an example of the quality of service and commitment to excellence to which a staff adheres.

For Director of Rooms Robin Bailer, Hilton Sandestin Beach Golf Resort & Spa’s guest services department does all that and more.

“Though the department has shifted within these last couple of years, I can say our current guest services team is the cream of the crop,” said Bailer. “Each member is focused on creating a seamless experience for the guest, from beginning to end.”

That experience can begin as soon as you book your reservation. Reach out to the concierge prior to your arrival, and they’ll be happy to assist you with any inquiries or special requests.

This team excels at crafting memories. Should your visit here celebrate a loved one’s birthday or anniversary, the concierge will whip up a special surprise to make their arrival experience one to remember.

Such accommodations are made all the more easy when you message the guest services team through Kipsu, the text messaging and alert system utilized by Hilton properties all across the globe.

“One thing that’s changed in the past couple of years is a shift to focus on the digital aspect of guest services,” said Bailer, who has been with Hilton Sandestin Beach since opening in 1984. “The concierge desk used to be full of pamphlets but now, guests are opting for website links and QR codes. Kipsu has been helpful in allowing us to support our guests; requests go right to the front desk so that the team can disseminate information to the proper departments and solve situations in real time.”

You can message the front office team before, during and after your stay, but guest services staff do treasure engaging visitors with daily face-to-face interactions and hospitality.

“Our concierge team are all true locals, so when we recommend something, it’s because we’ve personally had good experiences there,” said Bailer. “We’re always happy to make suggestions and help you make the most of your stay.”

Don’t hesitate to let the concierge know as soon as you need something. After all, we are at your service!

◆ Check-in begins at 4 p.m., but we offer complimentary valet parking while your room is being prepared.

◆ Complimentary charging stations are available for electric vehicles, let our bellman know when you arrive if your vehicle needs to be plugged in.

◆ Remember to close your balcony’s sliding glass door. Moisture can seep in and cause your room to feel damp.

◆ Each guest room is equipped with its own mini refrigerator, microwave, handheld steamer and coffee maker.

◆ Running every 20 to 30 minutes, a complimentary shuttle will transport you to the Village of Baytowne Wharf and Silver Sands Premium Outlets. Hours vary seasonally.

LASTING Memories

Experience Hilton Sandestin Beach through the eyes of our team members

Hilton Sandestin Beach Golf Resort & Spa is a place where guests retreat to, escaping realities of work and life for a break at the beach. But for our team members, this vacation getaway is home. Memories are made here for guests, but also for the Hilton Sandestin Beach staff.

These team members make your stay memorable, assisting with everything from crafting the perfect cocktail to perfecting every detail of your banquet event. Seeing the satisfaction on a guest's face upon giving good service makes the job that much more enjoyable.

It is a symbiotic relationship between the guest and the employee. Without one, we can’t have the other. At Hilton Sandestin Beach, we pride ourselves on maintaining satisfaction amongst our team, focusing on their experience as much as the guests, resulting in retention and great service.

It is thanks to our guests that we can maintain these high-quality employees. For every member of our team, hospitality is a true calling. Our guests challenge us to work harder and smarter, helping us to improve with every interaction.

The following testimonials from our staff are just a handful of some of the incredible experiences our guests have given us. We hope your stay at Hilton Sandestin Beach left as memorable an impact on you and your family as it did with us.

DAWN AGBAS BANQUET CAPTAIN

Here at Hilton Sandestin Beach, teamwork is truly one of our greatest assets. Our staff is always willing to lend a helping hand wherever it’s needed, and our banquet department has seen that tenfold in the last few years. Most recently, we had a 150-person function that was set and ready to go the evening before. The next morning, we found out the entire function was being moved to a different ballroom. Since everything was already set to go, and with the short period of time we had to make this change, our banquet manager reached out to the rest of our hotel staff for assistance. When the time came, we were overwhelmed by the amount of support we received from our team. This incredible display of teamwork is one of the many reasons why I enjoy working here so much.

MARIYAH DAVIS

IN-ROOM DINING SERVER

What I enjoy most about my role at Hilton Sandestin Beach is how many people I get to meet on a daily basis. From guests to coworkers, there are so many new faces to interact with. I love being able to create unexpected moments of happiness for everyone I come into contact with, especially our hotel guests.

WILLIAM POWERS

SANDCASTLES RESTAURANT SERVER

My experience being a part of the Hilton Sandestin Beach family has been truly amazing thus far. I love being able to interact with guests from around the world while having interesting conversations with them. Working in an environment where I get to truly connect with our guests from the start of their day at breakfast, has been the best.

CRYSTAL HAIRE

FRONT DESK SUPERVISOR

Every day I walk into the Hilton Sandestin Beach with the mindset that I am going to create the best stay ever for each and every guest that I interact with. Being part of the Hilton brand, our company prides itself on providing unmatched hospitality and giving A-plus customer service to our guests. I strive to always make our guests smile and look at each day as a new opportunity to help create something amazing. I thoroughly enjoy working in hospitality and hope to continue on with the Hilton family for years to come.

CHRISTOPHER ENCINAS SECURITY

Working at the front gate is a job that can be both fun and grueling. While some days are long and hot, other days go by quickly with the breeze, thanks to our awesome guests that come through. My role is typically the first interaction our guests have here on the property, and I love being able to make families laugh as they come through our gates. If I can’t make them laugh, I am not doing my job to the best of my abilities. Keeping our property safe while also creating lasting memories is what working security in hospitality is all about!

SPENCER ATKINSON

FINANCIAL ANALYST

Throughout my time here at Hilton Sandestin Beach I have noticed our guests always find a familiar face, or two, while they are here. The familiarity is certainly evident for them while they are interacting with my incredible fellow team members. What strikes me most about our resort is that there always seems to be something memorable taking place, a chance encounter of sorts. The joy and sheer surprise that comes with those moments is incredibly special. One of my favorite moments was when my dad had an unexpected run-in with a great friend he hadn’t seen in years. While he was going to grab a cocktail from Sandcastles Lounge after checking in, he heard a voice ring through the bar calling his name. It was my dad’s high school friend that he played baseball with nearly 50 years prior and hadn’t seen in several years. They were able to reminisce, rejoice and regale a few stories over cocktails. My mom called later that day to tell me all about the moment, the events that unfolded and the fun they had. Even my dad, who had never been to the Emerald Coast after living in Florida for 70-plus years, got to experience firsthand how Hilton Sandestin Beach seems to have a certain magic that brings folks together, whether it’s planned or not.

HAIR STYLIST

For over 10 years, I have been proudly working at Serenity by the sea Spa as the lead stylist for the hair salon. Between the upbeat environment, from happy guests to happy coworkers, to the quality of services we’re able to provide, my tenure here has been one for the books. Every person hopes to one day find a company that treats them so well they choose to retire there, and I’ve found that company (and family) here at Hilton Sandestin Beach.

TANIESH WAITE CAFETERIA ATTENDANT

Here at Hilton Sandestin Beach, I have the privilege of taking care of our hardworking employees each day in our staff cafe. The best part of my day is when our team members come in to take their breaks with a smile on their face after an encouraging guest encounter. Their positivity is infectious and really brightens the room, making my day an even better one.

SCHICKRI AINA

My favorite thing about working at Hilton Sandestin Beach is the diversity of all the team members that work together. Throughout our large staff base there are over 23 countries represented. I find it so exciting to be able to learn about so many different cultures right here under one roof. We are fortunate to have this same experience with our guests as well. I enjoy getting to learn about each guest, where they come from and finding ways to make their experience even more memorable for them.

INVESTING IN YOURSELF

New and enhanced experiences await at Serenity by the sea Spa

For Hilton Sandestin Beach Spa Director Shanelle Lucas and Assistant Spa Director Erin Story, producing the best wellness-treatment results means keeping up with the latest industry trends, technology and protocols.

“Over the last couple of years, there has been a huge emphasis on skin care,” said Story. “The HydraFacial, our number one facial service, will be receiving a major upgrade with new Syndeo towers featuring LED lights, motion sensors and hands-free enhancements for a more seamless experience.”

Serenity will also be adding the Geneo, a customizable facial experience boasting “immediate, long-lasting results,” that has gone viral online and has been featured in Glamour magazine as one of the world’s best facial cleansing brushes.

“Essentially, it’s like a Clarisonic facial brush with changeable heads designed to exfoliate, cleanse and moisturize,” added Lucas. “It’s an elevated, all-in-one experience.”

“Services like these are the highest you can get without going to a med spa,” added

HILTONSANDESTINBEACH.COM 29
MICHAEL BOOINI

Story. “We want you to get the best benefits, where you leave with glowing skin and look forward to coming back.”

The ladies of Serenity recently attended the International Spa Association (ISPA) Conference & Expo in Las Vegas, where global spa industry professionals experienced cutting-edge technologies, sampled top-rated products and learned sustainable business practices.

Pandemic-spurred touch-free services continue to dominate, and Serenity will be augmenting its services by offering sound therapies, LED light treatments and other facility enhancements for guests to “tune out, and fi nd some zen,” said Story.

Guests can also be on the lookout for new products in the Spa Shoppe, as well as implement them into their treatments. Serenity recently met with the producer of Antedotum, a Colorado-based skin care product that implements the healing properties of white Aspen tree bark and non-THC CBD to hydrate, alleviate and fi rm the skin.

“We’ve watched peoples’ faces change with Antedotum,” said Lucas. “In just six weeks, we had a guest go from not leaving the house without a full face of makeup to only wearing mascara.”

Too, “Power Hour” morning coffee in the locker rooms and afternoon tea time will be offered with Good Pharma

beverages — new, revolutionary mushroom-based blends promoting stress relief, cognitive support, sleep aid and energy-boosting benefits.

“ISPA really focused on mental health, for both the client and provider,” added Lucas. “To take better care of you, we want to make sure we’re taking care of our wonderful team. For that reason, we’ll be adding a wellness room just for staff: a place they can go for a quiet break, use a chair or foot massager and relax their muscles.”

Circadia, a top skin care brand at Serenity, will be training the spa’s estheticians on new protocols that will allow for new specials. VOYA, the producer of seaweed-based facial and body products at Serenity, will additionally send a trainer to certify the entire team on how to implement their products for those undergoing cancer treatment.

As our defi nitions of self-care continue to evolve, Serenity continues to expand its menu of full-service spa services and vetted products to meet your individual needs.

As both Lucas and Story say, “It’s worth investing in yourself.”

THE GULF COAST GOLF SCENE

Get in the game while on vacation with four gorgeous courses and state-of-the-art tennis courts

The perfect climate and Gulf Coast locale make this area a haven for golfers and tennis players alike. Our guests have access, through Sandestin Golf and Beach Resort, to four championship golf courses among some of the most beautiful settings that the Emerald Coast has to offer, so it’s no wonder that Hilton Sandestin Beach Golf Resort & Spa is one of the Top 20 Florida Golf Resorts, according to Condé Nast Traveler.

If you swing better with a racquet than a club, the resort has you covered with access to 15 tennis

courts — 12 of them being HydroGrid clay. The tennis center at Sandestin Golf and Beach Resort, set amid beautiful landscaping, includes private tennis courts, a renowned Pro Shop, a shingled clubhouse with decks, private lessons with certifi ed staff, group clinics, children’s tennis activities and six pickleball courts. A complimentary shuttle runs between the tennis center and the resort. THE LINKS GOLF CLUB

The Links course, the resort’s original course, has been welcoming and challenging golfers for more than four decades. Designed by renowned architect Tom Jackson, The Links treats golfers to breathtaking views of Choctawhatchee Bay and Baytowne Marina. Not only do the coastal breezes help tame the Florida sun, but they also offer a good challenge on this true links-style course that has five waterfront holes. The Links course has four sets of tees to choose from and challenges golfers of any skill level. Take a swing on a course that’s been named one of the “Top 100 Courses in Florida” by Florida Golf News.

BURNT PINE GOLF CLUB

Burnt Pine, designed by Rees Jones, brother of designer Robert Trent Jones Jr., offers golfers a one-of-a-kind experience throughout its expansive 7,000 yards, which include rolling fairways and strategically placed bunkers. The front nine at Burnt Pine takes players through pine forests and wetlands, while the back nine spotlights charming views of Choctawhatchee Bay. Golf Magazine has called Burnt Pine the “Crown Jewel of Florida Golf.” Seasonal and limited tee times are available.

RAVEN GOLF CLUB

It’s not every day you get to play on a course where the pros sank birdies. The Raven Golf Club, twice a stop on the PGA Champions Tour, affords you that luxury. Some of the country’s best amateur golfers played Raven as part of the Division III National Championship in 2013. Designed by Robert Trent Jones Jr., brother of Rees Jones, this course is just what the doctor ordered if you want to work every club in your bag. It meanders through wetlands, marshes and pine trees throughout Sandestin Golf and Beach Resort. Golf Week named Raven one of the “Best Courses You Can Play” on four occasions.

BAYTOWNE GOLF CLUB

Accolades galore have been written about the course at Baytowne Golf Club, and they are well deserved. This unique course has earned a 4.5-star rating from Golf Digest and features a variety of elevation changes, which is uncommon for courses in this region. Designed by Tom Jackson, this is the only golf course along Florida’s Gulf Coast that stretches from the Gulf of Mexico to Choctawhatchee Bay. Baytowne Golf was home to the 2013 NCAA Division III National Championship. The course’s five tee locations offer a challenge no matter the skill level or handicap.

DIVERSION DELIGHT IN

Our recreation crew always brings the fun

With a spacious beachfront, three pools, an expansive deck primed for sunbathing and a myriad of fitness amenities and spa treatments, there’s no shortage of entertainment at Hilton Sandestin Beach Golf Resort & Spa.

But what some guests may not realize is that the resort staffs an entire department dedicated to taking that fun to the next level.

Tiffany Howell and Caidan Cryar, Director and Assistant Director of Recreation, respectively, are here to amuse. In addition to overseeing resort-wide celebrations, the pair are responsible for curating scenes for special occasions, group activities and relaxation.

Whether you’re organizing a trip with your special someone, extended family or business organization, the recreation team will collaborate to create experiences that meet your idea of a good time.

“It’s not uncommon for guests to spy, say, a beach bonfi re and tell me, ‘We didn’t know you could do that!’” said Howell, who has worked at Hilton Sandestin Beach for over 21 years. “We can, and we have plenty of fun ways to create an escape for you and your group.”

Hilton Sandestin Beach’s recreation team can set up everything from a perfect day on the beach, a VIP poolside cabana, a beach volleyball tournament or even a beach bonfire for your group.

Perfect for both picturesque marriage proposals and bonding with your tribe over s’mores and cocktails, starlit bonfi res on the sand can accommodate groups of two to 200, and must be booked prior to your arrival.

“We also recommend reserving your beach chairs as soon as you book your room,” added Howell. “And, those planning on bringing their own equipment should defi nitely hit the sand early. We leave a section of our beach empty just for you, and ask that you only bring chairs, an umbrella and whatever personal items you may need.”

Those seeking a sand-free sunning experience can similarly stake out space on the pool deck,

OUR MEMORIES

• Sandcastle Kids is a South Walton-based nonprofi t organization, supporting families and children walking through childhood cancer. These children and families undergo severe mental, emotional and fi scal stress each day. Our primary program provides these families with an allexpenses-paid vacation to the local area. We strive to provide them a week away from doctors and hospitals in hopes that these children and their families are able to experience rest, relaxation, rejuvenation and healing on our beautiful beaches.

The Hilton Sandestin Beach Golf Resort & Spa began their partnership with Sandcastle Kids in 2017 and has become a vital member of our team, including creating a child-specifi c welcome package for each and every one of the approximately 100 children we have served during the past fi ve years. It is such a gift to watch the child’s face light up as they see the items handpicked specifi cally for them by Hilton Sandestin Beach staff, based on a “favorites” list provided to us by their family.

The generosity of Hilton Sandestin Beach in providing these welcome baskets to our organization allows Sandcastle Kids to allocate additional financial resources to supporting local children walking through cancer and to donate annually to childhood cancer research being performed locally and regionally. We are incredibly grateful to Hilton Sandestin Beach and the role they have played in our mission thus far, and we hope to continue our partnership in the years to come as we serve these families together.

which recently received an additional 2,500-square-foot expansion. Rentable pool cabanas have been upgraded to a new, VIP lounge experience that grants guests access to comfy couch seating, private storage space and a personal fridge.

For Cryar, both the beach and pool deck are playgrounds for team-building activities her team organizes for family reunions, wedding parties and organizations. Past bashes have included beach olympics — complete with rope barrier courses, giant ring tosses, water balloon fights and brain-busting trivia — beach and pool volleyball and an “Amazing Race”-style scavenger hunt spanning the resort’s property.

“We don’t like to leave anyone out,” added Cryar. “We’ve done a poolside “Jaws” movie night for teens, where we used lights to turn the water red. We also organize crafts, scavenger hunts and games

for the little ones, should your group wish to enjoy a nice night out without the kids at our on-site steakhouse, Seagar’s.”

Recreation staff invite all guests to join in on holiday celebrations. Last Earth Day, Howell and Cryar agree, was one for the books.

Guests enjoyed watching Dan in the Sand, a local sand sculptor, craft a beautiful sea turtle hugging the earth out of sand. Attendants also participated in a beach clean-up initiative, a sandcastle building contest and learned from South Walton Turtle Watch volunteers about the nesting habits and conservation efforts of native sea turtles.

“We’re able to do all of this thanks to the creativity and care of our team,” added Howell. “We have a strong core group that has been with us for years, and making our guests happy proves you can have fun while working a job!”

CELEBRATING 25 YEARS OF SEAGAR’S

A South Walton staple and tradition, this classic New York-style steakhouse remains elevated in gastronomy

42 HILTON SANDESTIN BEACH 2023
MICHAEL BOOINI

When guests at Hilton Sandestin Beach Golf Resort & Spa began inquiring about the best fine dining experiences in the area, Frank Flautt set out on a mission.

Flautt, co-founder of Hilton Sandestin’s management company, Sandcastle Resorts and Hotels, thought it only right that his full-service hotel had for its guests an exclusive, refined restaurant on property.

“We had built additional space downstairs, and I decided I wanted it to house a high-end steakhouse,” recalled Flautt. “Something elegant, something that only used the freshest, most premium ingredients, but with a relaxed environment where you’d want to stay a while.”

Flautt, who concedes he’s something of a “foodie,” fondly recalls embarking upon a tour of the East Coast’s finest eateries and vendors to sample products and borrow inspiration for the experience he wished to emulate in Sandestin. Places like Delmonico’s and Sparks steak houses in New York, and Folk’s Folly in Memphis, he said, were just the ticket.

But superior product could only carry his fledgling restaurant, Seagar’s Prime Steaks & Seafood, so far without a highly-skilled team dedicated to superior customer service.

“We have been fortunate to have truly good people work for us,” Flautt said. “Our first executive chef, Mark Sublet, set the tone of the quality that people have come to expect from us — that we are going to use the best possible ingredients and the best possible people to serve our guests.”

For Seagar’s, which has had the honor of receiving a AAA Four-Diamond rating for the past two decades, it’s a quality that has endured and earned them a devoted local following who have made the restaurant synonymous with special occasions and celebrations.

Dining here is an unhurried, deliberate experience. Repeat clientele will tell you to expect to spend at least a couple hours here as you savor each course, absorb the ambiance of dim lighting and a live pianist, sample the 600-label wine list and engage in meaningful conversation.

“I see it as my job to keep those conversations going,” said Seagar’s current Executive Chef, Fleetwood Covington. “People know, at our core, we’re a classic New York-style steakhouse. What I try to do is take that reputation and add an element of surprise for a fresh, progressive approach.”

Some of Covington’s latest conversation pieces entail avant-garde items such as a translucent key lime pie or rich diver scallops served atop housemade laminated pasta with edible flowers.

“I am fortunate that our company takes pride in who we are, because they make sure we’re enhanced every year by investing in us, giving me the ability to try some pretty

cool things,” said Covington.

Seagar’s menu changes seasonally, but it’s important to Covington to retain Seagar’s identity — with classics like the tableside Caesar salad, sumptuous Steak Diane and flambeed bananas foster — while adding an extra layer of worldly gastronomy to elevate Seagar’s into a new era.

“I met Fleetwood when he joined us to work on Seagar’s front line in 2017, and it’s been a joy to watch him grow,” added Flautt. “He is an extremely talented young man who brings experience from his time spent in Europe, and people genuinely enjoy eating his food. I know he is the next star of Seagar’s.”

“Seagar’s makes me very proud, and it has remained consistent with its values,” said Flautt. “We put the guest first in the restaurant just like we do at the hotel. Over the next 25 years, I think we’ll continue doing just that.”

BON APPETIT

SEAGAR’S

PRIME STEAKS & SEAFOOD

While contemporary connotations of “fine dining” are a far cry from the blacktie affairs of the past, Seagar’s Prime Steaks & Seafood believes some traditions are worth maintaining.

Since opening its doors in 1998, Seagar’s locally sourced menu, elegantly curated atmosphere, emphasis on detail and premier customer service has not only earned the steakhouse a AAA FourDiamond recognition for over 25 years, but also made them synonymous with special occasions in South Walton.

But it doesn’t have to be an anniversary, birthday or graduation to indulge in the pinnacle of Gulf Coast cuisine. Eating here is an experience and, according to Seagar’s Executive Chef, Fleetwood Covington, a celebration in and of itself.

“I can’t tell you how honored I am to serve in this role,” said Covington. “Whether you’re a local or a guest here at the resort, our team will work hard to serve you the level of excellence Seagar’s customers have come to expect.”

Mainstay menu items include USDA prime steaks and chops with veal au jus,

steamed or broiled Maine lobster and multi-tiered, sumptuous seafood towers with house-made cocktail sauce and drawn butter.

To complement your selection, Seagar’s offers a 600-label wine collection, craft cocktails and martinis. For dessert, the bananas or peaches foster — flambeed and served over vanilla ice cream — is a must.

Seagar’s aims to create for you an unhurried, intimate evening. Pull up a chair, enjoy the candlelit atmosphere and let the melodic tunes of a live baby grand piano serve as a mellow metronome to your enlivening conversations.

HADASHI SUSHI BAR

True sushi enthusiasts know the makings of a good roll: fresh fish, premium sushigrade rice and just the right amount of accompaniments to enhance, and yet not overpower, the whole dish.

At Hadashi Sushi Bar, Chef Jin Kim never disappoints. Located just off Hilton Sandestin Beach’s main lobby, guests can pull up a stool at the sushi bar or be seated at a table to enjoy authentic sashimi, nigiri and hand-rolled sushi staples, as well as unique chef creations from the master himself.

Chef Kim won’t tell you his is the best sushi in South Walton, but Angelina Covington, General Manager at Hilton Sandestin Beach Golf Resort & Spa, tells it like it is: “I’ve heard, numerous times, people say his sushi is the best they’ve ever eaten,” she said.

Between Chef Kim and his second in command, Juni, they have over 50 years of expertise in the art of sushi making.

The perfect close to a day at the beach or as a date night spot, Hadashi boasts a casual atmosphere that reflects its refreshingly simplistic offerings.

Get started with traditional Japanese seaweed salad, miso soup and edamame.

For the main event, Chef Kim has rolled out an all-new menu of specialty sushi rolls to include the Sashimi Ceviche, Yukke, Tuna Tataki, Hamachi Chili, Chirashi Sushi and the Cool Breeze, for a taste of some of the freshest sushi you’ll find!

Kim’s custom rolls will vary seasonally and depend on the freshest fish available in the Gulf of Mexico, but it’s safe to say any item pairs well with a cold Sapporo beer. To really augment the authenticity, consider ordering a carafe of warm or chilled sake.

Gather your friends, raise a glass and, as the Japanese say, “Kanpai!”

BAREFOOT’S BEACHSIDE BAR & GRILL

No shoes? At Barefoot’s Beachside Bar & Grill, that’s no problem.

Located in the center of Hilton Sandestin Beach Golf Resort & Spa’s pool deck, the open-air eatery serves sandy-toed beach enthusiasts an unhindered view of the gorgeous turquoise Gulf waters and some of its fi nest seafood delicacies.

Keeping to the breezy, carefree atmosphere of a day at the beach, Barefoot’s Chef Princeton McDonald, under the direction of Executive Chef Dan Tederous, offers a little something for everybody with a menu of casual beach fare, traditional handhelds and shareable appetizers.

The pair have combined to debut this year’s new, entree-driven lunch items, as well as health-conscious options such as the new cauliflower tortilla, perfect for a low calorie taco.

Indulge like the locals do with Barefoot’s fried surf n’ turf baskets, or cool off with a crisp, custom salad. Gather around the restaurant’s fl at screens to cheer your team on and indulge in gameday favorites, such as hot dogs and chicken wings and a newly enhanced craft burger menu, plus the new Barefoot signature burger.

You don’t have to wait until 5 o’clock to try a Barefoot’s craft cocktail, a glass of wine or a beachside brew.

If you’re parched or peckish, but not quite ready to quit the shore, The Sandbar, located directly on Miramar Beach, offers water and the same frozen, tropical cocktails and refreshments as Barefoot’s.

Place a lunch order there to enjoy some of Barefoot’s fare right from your beach chair, or don’t even

bother getting up. Hilton Sandestin Beach’s seasonal “sand kickers” patrol the shore, and will gladly take your order from wherever you’re set up and ensure you get your food in a timely manner, without the hassle.

EXPLORE ARTIFICIAL REEFS

In 2015, eco-tourists and locals alike went crazy for the new artificial reef that debuted in Grayton Beach. This man-made structure was coined Turtle Reef, as it is shaped like a sea turtle when viewed from above. Since then, the South Walton Artificial Reef Association (SWARA) has installed reef structures at 16 evenly distributed sites along the Walton County coast. Snorkelers and divers can find reefs taking the form of various ocean life to include a dolphin, a seahorse, a cobia and others. Like natural reefs, these habitats attracted the attention of sundry marine creatures that now live and flourish in the newfound shelters. At the SWARA snorkel reef sites, families are invited to snorkel and observe a colorful array of fish, marine plants and rare sea turtles as they weave through the towers of the reef. Conduct an underwater photo safari to capture the brilliance of the environment, skindive or stay at the surface and fish from a kayak. And diving to further depths can be explored at the SWARA fish and dive reef sites. SWARAreefs.org

BIOPHILIA CENTER

Though the emerald-green waters of our beaches may get the most attention, visitors should know that Walton County is a natural wonderland upland, too. Fascinate your family with a visit to the E.O. Wilson Biophilia Center, nestled in an enchanting longleaf pine forest in Freeport, just a short drive from the resort. The center, named for the world-renowned biologist, explores the region’s rich biodiversity by way of trails, expert staff, interactive exhibits and displays. The Biophilia Center hosts events for the benefit of conservation efforts that are open to the public upon registration. Check the center’s website for public hours, and get ready to embark on an enriching adventure. EOWilsonCenter.org

EDEN GARDENS

When you meander in Eden Gardens State Park, you travel back in time. The first thing you see is an alabaster mansion known as the Wesley House.

Dating to 1897, this house is now inhabited by antiques and vintage furnishings that provide snapshots of a bygone age. Take a guided tour or feel free to roam the grounds. Weeping willows and oaks overhang impressive, green acreage ideal for picturesque picnics on the grounds or under the pavilions and for outdoor recreation. At one end of the property is Tucker Bayou, where anglers can spend the day casting from the docks. The gardens present a vibrant collection of flowers and shrubbery year round. Hiking trails lead visitors into the natural areas beyond the ornamental gardens.

MORRISON SPRINGS

Morrison Springs County Park in Ponce de Leon encompasses 161 acres of preserved woodland. Trekking along in the shade of cypress and oak trees, you wind up at one of the area’s most striking natural springs. Submerged in the crystal-blue waters of the spring, which is about 250 feet in diameter, are several underwater cave systems, cementing its status as one of Florida’s finest dive sites. If your family doesn’t want to take that deep plunge, shallower depths serve ideally for swimming and kayaking. Snorkelers have the opportunity to encounter various species of bass, sunfish and carp, as well as underwater flora that thrive in this hidden paradise. Picnic areas, docks, trails and observatories supply all the necessary amenities for a perfect day.

TOPSAIL HILL PRESERVE

A local favorite destination, Topsail Hill Preserve State Park has it all. Its 3.2 miles of beach, tall sand dunes and rare coastal dune lakes furnish endless activities to suit your family’s taste. Take a guided hike or navigate yourself through beachside byways, wetlands and pine forests that are optimal for spotting birds wading and on the wing. Select trails are sites for caches if you’re a family of geocachers, so come prepared for an exhilarating treasure hunt. If walking’s not your style, bike along paved paths to Campbell Lake or

catch a ride on the tram to the beach. There, you can sunbathe, search for shells, swim or rent kayaks to paddle for the day. While you’re free to cast your line there, three coastal dune lakes are supreme spots for freshwater fishing. The park has full amenities including picnic pavilions, shower stations and conveniently located restrooms.

COMMUNITY COLLABORATION Destin Charity Wine Auction Foundation

• The Destin Charity Wine Auction Foundation was created to raise money benefiting Northwest Florida children in need. The organization brings wine enthusiasts together with events, such as the popular Harvest Wine & Food Festival, to support 17 local children’s charity organizations.

The organization has donated more than $28 million to Northwest Florida charities since its inception in 2005.

Hilton Sandestin Beach has been a proud supporter of the organization from the very beginning — donating auction packages, hosting events throughout the year at the resort and serving as a welcoming lodging location for DCWAF’s wine- and culinary-industry celebrity guests.

“Hilton Sandestin Beach is more than just a sponsor and a donor; it’s a true partner to

DCWAF,” said Kate MacMillan, the charity organization’s Director of Marketing and Communications.

“They have worked alongside us for many years to ensure that children in need in our local community are able to get the services they need to thrive, and we are grateful for their support,” MacMillan added.

In 2020, when the global pandemic shattered the normalcy of events across the world, DCWAF was faced with the cancellation of their annual live auction event.

“Hilton Sandestin Beach stepped up and provided DCWAF with ballroom space to build a broadcast studio to televise the auction, live into the homes of our participants,” MacMillan boasted. “Without their support, we would not have been able to successfully hold our flagship event during the pandemic when our charity partners needed us most.”

Wedding Planning MADE SIMPLE

Let the Hilton Sandestin Beach wedding planners create the seamless, stress-free day of your dreams

Getting engaged may have you popping bottles as you envision the rest of your life with your best friend. But, then, the anxiety sets in.

It’s time to start planning a wedding, and the stress of fi nalizing all the details for a fun, aesthetically pleasing and costeffective ceremony compounds and overwhelms you.

But when you book a wedding at Hilton Sandestin Beach Golf Resort & Spa, an expert wedding planning team will help you fi nd joy in the process, and allow you to focus all your attention on what’s most important: Committing yourself to your beloved and celebrating with friends and family.

“One thing that sets us apart from other venues is the fact that we’re allinclusive,” said Meagan Jones, Wedding Coordinator at Hilton Sandestin Beach. “Between our specialized wedding packages, pre-vetted vendors, resort amenities and event spaces, we like to tell people we’re a one-stop shop.”

Jones, along with the resort’s long-tenured Wedding Manager, Angela Kramer, will ensure your big day measures up to the ceremony of your dreams by ironing down every detail. The resort’s exclusive packages grant couples a dedicated day-of wedding coordinator, professional photographer and your choice of officiant.

Of course, your dedicated team will collaborate with you to determine how best to portray your love story. They’ll help you weave meaningful details into your ceremony; such as custom florals, seating, arbors and ceremony playlists perfect to complement your nuptials.

78 HILTON SANDESTIN BEACH 2023

Hilton Sandestin Beach also prides itself in going above and beyond to cover the less obvious particulars.

“We’re happy to offer beach security for your seaside ceremony, so nobody wanders by in a swimsuit and photobombs your big moment,” said Jones. “When our talented in-house Pastry Chef, Yascha Becker, makes your custom wedding cake, he’ll box up an extra layer so you can take it home, freeze it and enjoy it on your one-year anniversary.”

Soon-to-be spouses receive in-room amenities the day of their wedding in the form of chocolate-covered strawberries, champagne and a congratulatory note from Kramer. For brides, the team knows that, between greeting your guests and getting pictures made, there’s little time for you to enjoy a meal. The resort is happy to box up your catering from on-site dining options and send it up to your room for a midnight feast.

“I would say we put on around 60 weddings a year,” said Jones. “More, if you count vow renewals, which are extremely trendy nowadays. Looking at our bookings over the past year, I would say we are also trending toward higher guest counts. New nonstop fl ights to our area likely attribute to this change.”

Of course, Jones and the team love executing small, intimate elopements and private receptions at Seagar’s but, as they say, “the bigger, the better.”

Make your day look and feel effortless with a wedding at Hilton Sandestin Beach — where the wedding planning team handles everything from planning and decor to helping you capture picture-perfect moments.

OUR MEMORIES

Hilton Sandestin Beach has recently attracted a number of cultural destination weddings with ceremonies spanning across several days. These guests essentially take over the hotel as upward of 600 people celebrate the newlyweds within the resort’s newly-renovated deck, spacious ballrooms and striking private beach. Special bridal spa packages, a round of golf for the groomsmen and a complimentary tram transporting your party to the Village of Baytowne Wharf guarantees nobody grows restless before the main event.

“All you have to do is show up, and have the best day of your life,” said Jones.

• We chose to have our 50th anniversary vow renewal at the Hilton Sandestin Beach for several reasons. First, the venue was beautiful — right on the beach. Second, the people in charge were terrific to work with. They recommended a photographer and florist who both did an outstanding job. Plus, they listened and reacted to our needs, not only for the vow renewal, but also for our meal planning. Even though it rained right when we planned to be on the beach repeating our vows, wedding coordinator Meagan Jones quickly moved us into a lovely room — all set up — to complete our vow renewal. We then enjoyed a delicious dinner, all 14 of us, on property. Thank you Hilton Sandestin Beach for a memory our whole family will cherish!

GETTING BACK TOGETHER

Face-to-face meetings and event gatherings bring a return to normalcy

The pandemic may have normalized Zoom meetings, remote conferences and virtual event platforms, but for Jon Lovett, Director of Events at Hilton Sandestin Beach Golf Resort & Spa, the reinstatement of faceto-face meetings and gatherings is a welcome return to good business sense.

“You can’t put a true measure on how important it is not only for fellow coworkers and association members to meet in person, but also for businesses

to get in front of their customers again,” said Lovett. “And, doing so here at our beautiful resort, plus having the ability to take advantage of all the amenities we have to offer, makes that all the easier.”

After all, more decisions are made over a cocktail, round of golf or aboard a fi shing boat than could ever be made over a phone call.

Situated on what many consider to be one of the most beautiful beaches in the world and boasting intimate

boardrooms, spacious ballrooms and al fresco deck space for your crowd to convene, Hilton Sandestin Beach and its expert event planners successfully host thousands of get-togethers and special events year round.

“Navigating through the pandemic was a challenge, but we are already seeing a large influx of interest in 2023 events which leads me to believe that this market is back,”

Hilton Sandestin Beach boasts banquet space to accommodate groups of up to 2,000 across three ballrooms, prefunction spaces and a 1,260-squarefoot theater.

Seeing the critical need for the services ECCAC provides, Hilton Sandestin Beach has been partnering with the organization since 2000, when Frank Flautt, cofounder of Sandcastle Resorts and Hotels, the resorts management company, was introduced to the organization after touring their Niceville center.

“Since that day, he and Hilton Sandestin Beach have been unwavering, kind and generous supporters for over 20 years,” said Julie Porterfield, CEO of ECCAC.

Hilton Sandestin Beach hosts the center’s signature gala event annually where thousands of dollars are raised to support the many programs the center provides to child abuse victims in the local community.

“The team at Hilton Sandestin Beach, each year, has gone above and beyond to ensure its success on so many levels,” said Porterfield.

“Most recently, we experienced a flood and fire at our Niceville center. And they were there to lend financial support to help keep our head above water.”

Over the 20-plus years of support that Hilton Sandestin Beach has offered to ECCAC, the resort has helped raise hundreds of thousands of dollars for the organization to assist in their efforts.

But that dollar amount is just a portion of the benefits of partnering with Hilton Sandestin Beach.

For Porterfield: “We can say it’s priceless.”

said Kevin Rosa, Director of Sales and Marketing at Hilton Sandestin Beach. “Association meetings will always be large but I think trends are shifting more in the corporate world, where meetings are becoming more exclusive to executive-type gatherings with fewer attendants.”

“Our devoted on-site event planners have adapted over the last few years to create more specialized, detailed programs for our groups, no matter the size,” said Rosa.

That said, the resort can accommodate groups of up to 2,000 with its three ballrooms, pre-function spaces and 1,260-square-foot theater. Hilton Sandestin Beach is honored to have dozens of return customers, such as the United Steelworkers, that trust them each year with their event.

“For the United Steelworkers, this will be the first time their group of 1,300 members has been able to gather in its entirety since 2019,” Rosa said of the conference. “This year, we’re

excited to debut for them and others our new, linenless banquet furniture. It’s a nicer, more streamlined and user-friendly product that offers not only a cleaner look but is also a more sustainable option.

“As many of you come together for the first time in a while, it is our goal to create for you a safe meeting environment,” added Rosa. “Our fantastic events team is ready to work with you and welcome you back to normalcy.”

Bill Atwood and his wife enjoy visiting the hotel for Memorial Day weekend, noting that, “There are tons of great activities, music and decorations, and the weather is usually spectacular.”

NO ORDINARY HOTEL STAY

Afriend looked over my shoulder at the computer screen.

“What are you doing?” he asked.

I replied, “I’m booking a stay at the Hilton Sandestin Beach.”

“You’re having a meeting there?”

“No. This is just 100% pure family fun.”

“Let me get this straight,” he said quizzically, “you travel 300,000 miles a year, stay in countless hotels and, for fun, you are going to stay in another hotel? After all that travel and hotel time, I would think that would be the last thing you would want to do.”

“Ah,” I said, “The Hilton Sandestin Beach is different. It’s like staying with friends who have a giant house on the world’s best beach, with amazing food and total rest. Whether it's Tiffany taking care of our beach chairs and umbrellas, Ben overseeing our food and beverages or enjoying

a great room (thanks, Robin), everyone at the hotel is top notch. What great leadership Gary, then general manager, has provided, and what a great team he has assembled. It all makes for a great hotel experience.”

And so it has been — every year, for as long as I can remember — heading to the hotel, usually over Memorial Day weekend. Of course, COVID-19 messed up everything, but even in navigating the pandemic, Hilton Sandestin Beach had our backs. The health and sanitation standards were perfect. Every possible source of concern was eliminated.

The view of the beach from our room shows the order and serious way that Hilton Sandestin Beach dealt with the pandemic versus neighboring properties, with beach setups spread out rather than in tight quarters. And every table and chair was sanitized after any use. The cleaning standards with Hilton were over the top. It made us feel safe and secure — and made it easy to be rejuvenated even with the virus still around.

I spend a lot of time overseas in developing nations, working on sustainable development projects. It is rewarding but very tiring work with far too many 15-hour flights. After lots of travel and long days, Hilton Sandestin Beach provides the perfect place to reflect, recover and unwind.

OUR HOME AWAY FROM HOME

Istarted in sales with a company in the corrections industry in 2000. Traveling for work had not been something I had done previously and from what I discovered, was not always as glorious as it seemed. Sleeping in different hotels in towns across the country may sound fun on the surface, but can often be uncomfortable and exhausting. The first time I visited the Hilton Sandestin Beach Golf Resort & Spa, I did not know what to expect … but wow, what a great surprise!

In the early part of 2002, our company was growing, and I was given the opportunity to start working with different Sheriff’s Offices in Louisiana. I was in my mid-20s at the time, and my only real experience with Louisiana was having met some great people and loving the food. As luck would have it, turns out the Sheriffs in Louisiana

know how to host a great annual conference. They have partnered with Hilton Sandestin Beach for years. When I attended that first conference I was blown away. When I arrived, I called my wife and told her all about the hotel, the staff, the pools, the food and the beautiful views! Needless to say, she would be coming with me the following year — and every year since.

We have come back to stay at the Hilton Sandestin Beach every year since 2002, it is our go-to vacation spot. We have three kids, Kylar, Colten and Kalyn, and they love it as much as we do. When we arrive and walk into the lobby, we all know it is time to unwind, reconnect and enjoy. We have experienced the most amazing Fourth of July fireworks shows, relaxed in the spa, had some great workouts in the gym, played games in the pools and

we always overload on the good food each year.

The white-sand beaches are beautiful and perfect for sandcastles, sunrise and sunset walks and crab hunts at night, most looked forward to by our kids. The ocean waves are perfect for riding with boogie boards and the most beautiful background for our annual family photos. It has been the perfect relaxation spot and getaway from real life that our family has grown to cherish. We have celebrated birthdays and, this past year, our 21st wedding anniversary at this hotel.

It has truly become our home away from home.

We’ll be back soon and look forward to creating more great memories. Thanks to all the staff at the Hilton Sandestin Beach that make these visits so special.
