VACATION MAKER Concierge Leads Families to Fun, Food and Outings BY HANNAH BURKE

ELLEN CORNELL

I

18 HILTON SANDESTIN BEACH 2018

n his 30 years in the hotel industry, Darrell Smith has dabbled in nearly every hospitality post in the business, working at properties from the West Coast to the East Coast, in Hawaii and even Mexico. At Hilton Sandestin Beach, Smith found his home. For 12 years, he has been the in-house concierge. With a knack for people and a love for land and sea, he masterfully creates custom vacation experiences for each family that seeks his suggestions. “More than anything, my job is about making memories,” Smith says. “A family walks in and it’s obvious that they’ve been travelling for hours, but they’re really happy about being here. One of the strongest components of my personality is my ability to identify with people. From there, I’m able to assess their needs. Seeing their excitement grow is what makes me happy.” Once Smith taps in on a family’s energy level, he takes a good look at each member. The age range of the children and the personalities of the parents play the main role in determining what recreations to recommend. No matter how your tribe varies, Smith knows that families choose to stay at the resort for its family-friendly amenities. Whether you’re a family of beachcombers or a pack of thrill-seekers, there’s a surplus of offerings to keep you and yours occupied. Obviously, the primary attraction of Hilton Sandestin Beach is its breathtakingly lovely Gulf beach. Some families choose to simply soak up the sun or splash in the waves, but for more active beachgoers, there are kayaks, paddleboards and a full-service marina at the ready. To enjoy the water without the sand, families may spend time at either of

“Most families are overwhelmed when they learn just how much there is to do in the area. Athletic families have a gamut of activities to choose from: four golf courses and family putt-putt for the kids, a tennis court, running paths, biking and fitness programs. At Baytowne, children are able to go zip-lining, rock-climbing and run a rope course.” — DARRELL SMITH the two outdoor pools, the fully heated indoor pool or the toddler pool. For adventurous families who desire a unique way to experience the water, Smith is excited to share a brandnew activity in his repertoire. Three artificial reefs were recently constructed off the shores of South Walton, offering snorkelers the opportunity to observe an array of marine life in the wild. These structures, made of steel, limestone and concrete, serve as sanctuaries for fish, which thrive there, ensuring that swimmers have plenty to see and learn about. When it’s time to dry off, the concierge has plenty of upland activities to keep the good times rolling. “Most families are overwhelmed when they learn just how much there 20 HILTON SANDESTIN BEACH 2018

is to do in the area,” Smith grins. “Athletic families have a gamut of activities to choose from: four golf courses and family putt-putt for the kids, a tennis court, running paths, biking and fitness programs. At Baytowne, children are able to go zip-lining, rock-climbing and run a ropes course.” Across the street, the Village of Baytowne Wharf offers the perfect scene for extravagant shopping excursions, including child-friendly entertainment. Smith notes that another shuttle runs to and from the Silver Sands Premium Outlets. Families can easily spend the whole day there, taking the kids to the massive Disney Store and snacking on sweets from the Rocky Mountain Chocolate Factory.

Don’t let the sweets spoil your appetite, though. “Where’s a good place to eat?” is one of Smith’s most frequently asked questions, and he’s prepared to satisfy each family’s taste. “I make them aware of our on-site restaurants that offer delicious cuisine like seafood, steak, sushi and outdoor dining” Smith notes. “Outside of that, guests want to know about quality local restaurants — mom-and-pop places that they can’t find anywhere else. I do have a list of my go-to restaurants that are vetted through the hotel, but it’s a matter of finding what suits them. How far are they willing to travel? What’s their budget, and what kind of atmosphere are they looking for? These are questions I ask myself before I point the way.” If Dad is looking to take Mom out for a special meal, Smith highly recommends children spend time with the Kids Krew, a seasonal day and nighttime program that provides engaging activities for children, such as themed parties, scavenger hunts and hands-on crafts. Parents can take it easy knowing their kids are being supervised by the compassionate staff, and it’s often the highlight of a child’s vacation. “Shaping remarkable experiences is what keeps families coming back,” says Smith. “Most recently, I recognized a family who has been staying with us for 12 years. I had the opportunity to help upgrade them to one of our phenomenal family suites, and they were blown away. Being able to reconnect with them and make them happy, and making any of our guests happy, is what I’m passionate about.”

A Tip from the Concierge If you see what looks like a tire track coming out of the water onto the sand during your morning walk, you may have found a sea turtle crawl! Please don’t disturb it, and be sure to notify our recreation team so they can notify South Walton Turtle Watch!

Tish and Tony Drago

CLOSELY KNIT For Some, Resort Is a Family Affair BY ROSANNE DUNKLEBERGER 22 HILTON SANDESTIN BEACH 2018

sk anyone who’s worked on the staff of the Hilton Sandestin Beach Golf Resort & Spa for a time, and they’ll invariably say their coworkers have become like family to them. For dozens of employees, though, there’s no “like” about it. They really are family. Throughout the resort, you’ll find husbands and wives, parents and children, sisters and brothers, and other extended family members working together in the front of the house and behind the scenes to provide guests with Hilton Sandestin Beach’s brand of friendly, yet always superior, service. Bartender Tish Drago at Barefoot’s Beachside Bar & Grill has worked in food and beverage at the resort for 29 years. She and her husband, Tony Drago, were already married and parents of a second-grader when they moved to the area from southeast Louisiana. While Tish came to Hilton Sandestin Beach and stayed, Tony has had other careers before coming aboard as a bellman in 2015. Although their positions put them within earshot of each other, there is limited “together” time for the Dragos when they’re at work. “Basically I’m working six days a week out at the restaurant, and he’s scheduled anywhere from 5 o’clock in the morning to 10 o’clock at night at the bell stand,” says Tish. “We very seldom see each other here,” says Tony, who sports a gray brush cut and has a penchant for saying “yes, ma’am.” “We might sit down and have a brief lunch, that’s about it.” During the busy summer season, between Memorial Day and Labor Day, there’s even less time to spend together, even at home, but when the rush subsides, the couple has time to enjoy the outdoors with their dogs. “We have three dogs, and we take them out on kayaks,” Tish says. “They love to swim.” Nicole and Aaron Harrison also are married and came to the resort as a couple after meeting in college in Miami. She had recently graduated and worked a summer job. “I loved it so much, I decided to stay,” says Nicole,

now the resort’s director of purchasing. Aaron came to the area after a moment of skepticism about whether a big city guy would enjoy the Southern charm of Northwest Florida. “I came out myself and I saw all the sand dunes, and I fell in love with the beauty of the area,” he says. As assistant director of Food & Beverage, Aaron wakes up before 3:30 a.m. to make the 45-mile commute from the couple’s home in Defuniak Springs. Like most of the family members who work together, the Harrisons’ work times don’t allow them to carpool together. For one thing, they take turns transporting their young son, Aidan. Nicole is usually the one to drop the 4-year-old off at a nearby school, and Aaron often picks him up. “At first, it was a little scary, but we learned to make it work out,” she said of mixing parenthood with two high-level positions at the resort. Their jobs are in different orbits, but both say working at the same place has given them insight into each other’s work. “I think it’s helped us learn to grow and respect other positions within the hospitality industry,” Aaron says. “What

she accomplishes on a daily basis and what I accomplish, we can share those stories and learn from them.” There’s no such thing as “that’s not my job” when someone’s in need of help at Hilton Sandestin Beach, and their worlds sometimes do collide. Aaron recalls a time when his team needed to change an entire ballroom from a ladies’ bingo event to a kids’ recreation area in an hour. “I just called Nicole and asked, ‘Will you help?’ and she sent the entire purchasing team. The client was blown away by how organized and fast it was completed,” he says. If you’ve ever enjoyed a meeting at the resort, chances are you’ve met supervisor Patricia Cordero, who’s been in charge of coffee breaks and continental breakfasts for 20 years. Over that time, all four of her daughters have worked at the resort, but currently her only child now on the staff with her is her youngest, Jonathan Graff.

Aaron and Nicole Harrison

Now a banquet beverage captain, Jon claims he practically grew up at Hilton Sandestin Beach. “I’ve been coming to this hotel since I was 3 years old,” says the 23-year-old. “I was polishing spoons before I was in school. It was nice to come here because, back in the day, they had an arcade, so I used to go down there and play all the time. “It’s good people, good money and I get to enjoy the view,” Jon says. “Sometimes when we have late functions, you’ll have the sun going down, it will be just at the edge of the water and it looks beautiful.” There is a bit of a downside, though. His mother is a tough act to follow. Patricia Cordero and her son, Jonathan Graff

“Everybody knows her, knows she’s a good worker, a hard worker, and so I’ve got to do that, too,” he says. “I keep an eye on him. Make sure that he’s here and he’s on time,” admits Patricia. “You’re a mother; you always do that with the kids, no matter how old they are.” Adarius Knight knows the feeling. He started out bussing tables eight years ago, and the 24-year-old is now a server at Sandcastles Restaurant. His mother, Shirley Knight, also works in food service in in-room dining and, if there’s a challenge, “she’s the first person they run to. They don’t have to go to anybody else, they’ll just go to her.” The two do see each other in the kitchens, although Shirley has a set 6 a.m. to 3 p.m. schedule and Adarius likes to work doubles, often splitting his days with shifts from 7 a.m. to 24 HILTON SANDESTIN BEACH 2018

1 p.m. and 5 to 9 p.m. And each has been known to help out the other — son helping mother gather trays from rooms, and mom pouring drinks for diners. Cora Shipman met her future husband two decades ago when she was a laundry attendant and he was a house man. “I looked at him and said, ‘When you want something you have to do something,’ right? So I introduced myself to him,” she says. Now disabled, Robert Shipman no longer works at the resort, but Cora still works with family. After working off and on during different times, her daughter, Charina Drab, has been employed in the laundry for the past year. Serving 22 years with the commercial-sized washers, dryers and irons, Cora has worked there longer than any of her coworkers. And she has long-term plans for her daughter Charina.

“I told her next year she can open her 401K because then, when you retire, you’ve got money,” Cora says, complimenting Hilton Sandestin Beach’s investment plan, health insurance and other benefits. “I told her, ‘When I retire, you can take over.’ She’s only 37, she’s got 30 more years to work.” While there is tremendous joy in working with her daughter, Cora also speaks warmly about her friends in the laundry, who ask after her husband, even though he hasn’t worked at Hilton Sandestin Beach in five years. “This is like my second home. I started in the laundry, and I’m going to finish in the laundry,” she declares. “I love to work with my team. If I don’t see a happy face, you try to give them a happy face. Everybody just working together is what I love about it.”

The Links course, the resort’s original course, has been welcoming and challenging golfers for more than four decades. Designed by renowned architect Tom Jackson, The Links treats golfers to breathtaking views of Choctawhatchee Bay and Baytowne Marina. Not only do the coastal breezes help tame the Florida sun but they also offer a good challenge on this true links-style course that has five waterfront holes. The Links course has four sets of tees to choose from and challenges golfers of any skill level. BURNT PINE GOLF CLUB Burnt Pine, designed by Rees Jones, brother of designer Robert Trent Jones Jr., offers golfers a one-of-a-kind experience throughout its expansive 7,000 yards, which include rolling fairways and strategically placed bunkers. The front nine at Burnt Pine takes players through pine forests and wetlands, while the back nine spotlights charming views of Choctawhatchee Bay. Golf Magazine has called Burnt Pine the “Crown Jewel of Florida Golf.” Seasonal and limited tee times are available.

RAVEN GOLF CLUB It’s not every day you get to play on a course where the pros sank birdies. The Raven Golf Club, twice a stop on the PGA Champions Tour, affords you that luxury. Some of the country’s best amateur golfers played Raven as part of the Division III National Championship in 2013. Designed by Robert Trent Jones Jr., brother of Rees Jones, this course is just what the doctor ordered if you want to work every club in your bag. It meanders through wetlands, marshes and pine trees throughout Sandestin Golf and Beach Resort. Golf Week named Raven one of the “Best Courses You Can Play” on four occasions.

BAYTOWNE GOLF CLUB Accolades galore have been written about the course at Baytowne Golf Club, and they are well-deserved. This unique course has earned a 4.5-star rating from Golf Digest and features a variety of elevation changes, which is uncommon for courses in this region. Designed by Tom Jackson, this is the only golf course along Florida’s Gulf Coast that stretches from the Gulf of Mexico to Choctawhatchee Bay. Have your company decide on a theme, and the Kids Krew team will create a blowout around it. Last year, a returning company selected an Oscars theme. Kids Krew rolled out the red carpet and had the latest Disney princess, Moana, and Captain America there to take pictures with kids as they checked in. Cardboard limousines transported families to various activity stations that recreated iconic movie scenes, and everyone felt like a movie star! “The best feeling is when parents come to pick up their kids, and they beg for just five more minutes,” Bass laughs. “Knowing that they’re having so much fun and we’re creating these special memories is why I love my job so much.”

sk any child around the resort, and they’ll likely tell you the best part of their vacation is spending time with Kids Krew. Incorporating imagination with hands-on entertainment, these in-house day and night programs bring summer camp to the beach. While Mom and Dad enjoy some time at Barefoot’s Beachside Bar and Grill or at Serenity by the sea Spa, Recreation Manager Alexis Bass and the exuberant staff of the Kids Krew provide themed activities for children ages 5 to 12. When you check in and happen to see a group of kids and team members patrolling the lobby dressed as super heroes … well, that’s just a typical Wednesday. “This year, we’re adding Pirates and Mermaids, Monster Madness, and Under the Sea days,” Bass describes. “Kids love to dress up and play along in huge group games, watch movies and participate in different activities that tie in with those themes.” While kids get plenty of thrills from action-packed outdoor activities such as crab hunting and beachside bonfires with their peers, Kids Krew also throws

ine dining is not an everyday affair, but the rules are different on vacation. You’ve been dreaming of eggs Benedict and mimosas for breakfast and Steak Diane for dinner, and now is the time. Welcome to the resort’s assortment of restaurants, cafes and in-room dining options, each catering to the longings of your family at any given hour of the day. As sunrise softly, gradually illuminates the beach, Sandcastles is preparing farm-fresh eggs for your breakfast, along with Frangelico French toast, biscuits, bacon and burgeoning bowls of berries and fruit. Order fresh-squeezed OJ for the table, and add a splash of champagne for Mom and Dad.

Through the day, feast at will on peel-and-eat Gulf shrimp with snow crab clusters at Barefoot’s Beachside Bar & Grill, and indulge in varieties of gourmet hot dogs for all ages at Picnix Poolside Market. As the sun sets and moods calm, Hadashi Sushi Bar awaits, with sushi rolls, pot stickers, sashimi and wraps created especially for children. Have tea party with your children featuring a pot of hot green tea, while warm sake and cold beer are yours for the asking. And don’t leave the resort without indulging in Seagar’s, the resort’s AAA Four-Diamond steakhouse. It is a rare and wonderful thing to dine on fresh seafood dishes and Prime Black Diamond steaks in a setting of this caliber. You deserve this.

CUISINE FOR KIDS Menus Offer Array of Tasty, Quick Options BY ROSANNE DUNKLEBERGER

rom a dazzling array of choices at the breakfast buffet, pizza in the room at night — as well as a great selection of poolside lunches and treats in between — kid-pleasing food is always kept in mind at Hilton Sandestin Beach Golf Resort & Spa. While the fine dining at Seagar’s Prime Steaks & Seafood on the lower level is an experience best saved for grownups, “I think all of our menus on the main level are kid-friendly because that’s who we are,” says Angelina Covington, the resort’s director of operations. While Sandcastles restaurant in the hotel lobby is open for all three meals, it’s the daily breakfast buffet that starts the day off right for families — and children younger than 10 eat

free with resort charge. All breakfast favorites are on display, and omelets, waffles and pancakes are made to order. But that’s not the only breakfast choice. The Coffee Shop also offers breakfast sandwiches, bagels, monster-sized, house-made pastries and individual servings of cereal. “If somebody doesn’t want to wait in line for breakfast or the kids are a little fussy and hungry, they can go down to The Coffee Shop,” Covington advises. Lunchtime is a kid’s paradise, with Picnix Poolside Market and Barefoot’s Beachside Grill offering meals that fill young tummies fast, to maximize pool and beach time. No need to shower and change. Barefoot’s is a come-asyou-are sort of place with a menu that features burgers, sandwiches and salads. Picnix is a perfect choice for the younger set, with an array of choices to satisfy kids, such as hot dogs (including a footlong corndog), chicken tenders, single-serve pizza and mac and cheese. Let them get as messy as they like with a scoop of Edy’s® ice cream or soft-serve yogurt. If kid favorites don’t appeal, Mom and Dad can always find a salad, sandwich or healthful smoothie at Picnix, or elevate that dog with gourmet versions such as Philly, Chicago and Buffalo, created by the resort’s executive chef, Dan Vargo. If the kids can’t bear the thought of missing a moment of pool time or wave-riding to eat, the resort seasonally offers an even more convenient option — barefootsonline.com. “If the kids are all wet and out of the pool, all they have to do is use our Barefoot’s online site,” she explains. “They just pick up their phone, place an order and we have it delivered to either the chair at the beach they’re sitting in or at the pool.” After a long day of fun and sun, the family can ride the elevator downstairs to the lobby level to enjoy dinner at Sandcastles, which offers an array of fresh seafood. In Sandcastles Lounge, you’ll find Hadashi Sushi Bar as well as adult-style beverages. Or, take it really easy and order in-room dining. The menu has select options from the resort’s various restaurants, as well as pizza, a bona fide hit with the kids. “It’s the best pizza in town,” Covington declares.

o doubt about it, Seagar’s is a classic American steakhouse — to its marrow — featuring classic food prepared with the best of locally sourced seasonal ingredients and a level of service unmatched in the region. AAA has declared the Seagar’s experience dining as its finest, giving it a Four-Diamond rating since 2000. Black diamond-rated Prime Steaks are the star, but with the bounty of the Gulf of Mexico right outside the resort’s door, seafood takes its rightful place on the menu. fter a busy day of work or play, Hadashi is an ideal place to relax and start your evening. Located in Hilton Sandestin Beach’s lobby, our sushi bar is a great place to gather for drinks, whether it’s hot or cold sake or a pint of Japanese imported beer, such as Sapporo®. Hadashi serves up the finest sushi, sashimi, nigiri and other Japanese fare prepared by traditionally trained chefs. The sushi rolls are a delight for the senses, beautifully presented with a fresh-from-the-sea taste. Start off your meal with appetizers such as seaweed salad, edamame and miso soup, as well as nigiri, sashimi or classic sushi rolls. Chef specialties include sashimi ceviche, white fish, tuna, salmon, yellowtail, krab stick, masago, scallion, yuzu ginger dressing and Japanese tomato salsa or the spicy chirashi sushi, sushi rice topped with sashimi tuna, salmon, hamachi, escolar, shrimp, crab, barbecue eel and salmon caviar. Hadashi also offers two dozen specially prepared sushi rolls (including cooked and raw options), so you’re sure to find something that satisfies your palate. Enjoy traditional fare such as our California or spicy tuna rolls. But if you’re looking for something more exotic, order the dragon skin roll, cucumber, eel, avocado, lump crab, and eel sauce or

Prices range from $6 for some appetizers to up to $19 for some specialty rolls and $45 for the assorted sashimi plate, ahi tuna, salmon, yellowtail, escolar and white fish. With 600 labels in the wine cellar, you’re sure to find one to pair beautifully with whatever you eat. It’s your chance to take your time to savor a superb meal in an atmosphere of luxurious indulgence. Former Chef Dan Vargo is now executive chef for all of Hilton Sandestin Beach’s restaurants, but he found his replacement right in the Seagar’s kitchen. Now leading the Seagar’s team is Chef Laurie Graupner, who worked her way through several positions and served as sous chef under Vargo for three years. While talented chefs from around the country vied for the position, in the onsite tasting, Graupner outshined them all. “During the interview process we sat at the pass so we could interact and talk,” Vargo explains. “You can always tell how people handle pressure when they’re cooking and doing an interview — trying to focus on the food, trying to focus on the answers.” “We knew right when she was finished, she was the one. She just outperformed all of them,” says Angelina Covington, the resort’s director of operations.

BAREFOOT’S BEACHSIDE BAR & GRILL

At Barefoot’s, casual doesn’t compromise quality. It just means you don’t have to worry about what shoes to wear or what the sea breeze is doing to your hair.

hat started out as a trio of tiki huts and guys cooking outside on grills has grown into one of Hilton Sandestin Beach’s most popular restaurants, serving up to 1,000 meals in just three hours during the summer. And why not? Barefoot’s location is ideal — tucked between the resort’s two outdoor pools, with the beach’s bright white sand and emerald green water always in view. There’s seating outdoors or under the large, open gazebo — with a hint of airconditioning for cooling off a bit during an afternoon of sunbathing, swimming and building sandcastles. The restaurant’s menu features fresh, delicious casual fare that includes nachos, burgers, hot dogs, sandwiches,

wraps and salads. Seafood choices include peel-and-eat shrimp, snow crab clusters and oysters on the half shell, as well as tacos and fried baskets. All that playing on the beach or poolside can be hot work, and Barefoot’s bar and seasonal Sand Bar can help you cool off with beer, wine, specialty cocktails and frozen drinks. And if you find you just can’t bestir yourself from the lounge chair, Barefoot’s will come to you. Use your smart device to visit barefootsonline.com, place your order for food and drinks, and a “sandkicker” will deliver it to you at the beach or poolside. The restaurant features shaded seating, a seasonal fire pit, expansive decks and “invisible” railings that give unobstructed, expansive views of the surf and sand.

The breakfast buffet at Sandcastles remains an extraordinary tradition, but the dinner menu is being updated to emphasize local and regional seafood.

says resort Executive Chef Dan Vargo. “This region has the best seafood, why not celebrate it and have a restaurant that highlights it?” You might recognize his name. For five years, Vargo was chef at the resort’s culinary crown jewel, Seagar’s. He is now focusing on expanding the quality, attention to detail and creative cuisine he lavished on the AAA Four-Diamond restaurant to include all the food outlets under Hilton Sandestin Beach’s roof. “With the Florida fish house-style feel and menu, I think we’ll have a larger, broader appeal, especially for families,” says Vargo. Also new to Sandcastles will be the Oyster Bar, which features raw and cooked oysters, raw and baked clams, “Peel n Eat” shrimp and a house-smoked Gulf Seafood Salad. Almost every option on the new bar will be gluten free. In addition to gluten-free options, the Sandcastle’s dinner menu now includes creative vegetarian choices. “If you’re vegetarian, your only option isn’t a salad or pasta with steamed vegetables,” Vargo says. “There are so many different ways to put dishes in front of people that everybody would love and … wow, you didn’t even realize you had a gluten-free meal.”

careful balance of “same” and “different” helps to keep guests coming back to Hilton Sandestin Beach. Same, because they want to recreate that warm feeling of family, fun and relaxation year after year — and different, because guests don’t always want to see and do the “same old, same old” again and again. At the resort, the breakfast buffet at Sandcastles is one of those cherished rituals. The restaurant is buzzing, the counters are filled with an extravaganza of breakfast choices, and youngsters can watch as their waffles are being made — and top it with whatever they want. While most guests are in meetings or outside recreating, lunch is usually a quieter affair, when a well-dressed businessman can eat a burger in air-conditioned comfort. But this season, it is dinner that will reflect a big change. “In 2018, we’re going to take our restaurant and transform it into a fish house at night,” says Angelina Covington, the resort’s director of operations. “From the appetizers to the main courses, everything is going to be geared toward local and regional seafood. All the seafood we’ll be doing will primarily be from the Gulf or the Atlantic side of Florida,”

There’s a German dog with sauerkraut, onions and mustard, or go a little crazy with a Buffalo dog featuring Frank’s® Buffalo sauce, blue cheese crumbles, shredded carrots and celery and blue cheese dressing. Got a tee time to make or a boat to catch? No worries. At The Coffee Shop, you can pick up a few breakfast essentials on the fly.

Pastry Chef Yascha Becker and his talented staff have spent the wee hours whipping up a variety of pastries sure to satisfy your sweet tooth. The delectable display includes plate-sized Danish pastries, croissants, cinnamon rolls and seasonal varieties of muffins. And don’t forget those fresh-baked cookies. It’ll be a tough choice between peanut butter, chocolate chip, sugar, oatmeal raisin and white chocolate macadamia varieties. Becker also has devised some new sweet temptations for 2018. “The almond bear claws are going to be pretty dangerous,” quips Dan Vargo, Hilton Sandestin Beach’s executive chef.

“Another is a chocolate-filled croissant.” There also are convenient graband-go items, including single-serving protein shakes, oatmeal, cereal, Greek yogurt, fruit, energy bars and a variety of bottled drinks. “For a quick breakfast, get some milk and cereal and take the kids outside to sit at a table and eat there, while the parents enjoy the view,” suggests Angelina Covington, the resort’s director of operations. At Hilton Sandestin Beach, care is taken to make in-room dining as exceptional as the resort’s in-restaurant options. In-room dining offerings arrive quick, hot and delicious.

aybe you want to enjoy the luxurious comfort of your Hilton Serenity Bed for just a few more minutes before heading out for a day of meetings. Or the rain has put the kibosh on plans for a day of frolicking in the sun. Or the family’s worn out by a big day of play at the pool and rounding up the crew to get dinner is wellnigh impossible. Or you want to have an intimate, romantic dinner for just the two of you. Just dial extension 44. Sandestin Hilton Beach’s in-room dining team is at your service whenever the spirit might move you to eat or drink, 24 hours a day. “In-room dining goes hand in hand with all the other food venues at the resort,” explains resort Executive Chef Dan Vargo. Much of the room service menu is tied to Sandcastles’ offerings, but “we pull from Seagar’s menu, we feature sushi and rolls from Hadashi.” “A lot of times, the parents have been out with the kids all day. When they get back to their nice, beautiful room, they turn the AC down to 62 degrees, everybody showers, relaxes and walks out on the veranda and looks at the water,” says Angelina Covington, resort director of operations. “And then they order room service and snuggle in to watch a movie.” In-room dining is a popular choice at the resort, and it’s treated as a seventh onsite dining option, not an afterthought. “We put a lot of effort and a lot of attention into room service,” says Vargo. “There are always innovations in delivery and getting food to a room in a timely manner so that it’s hot and delicious.”

In 2015, eco tourists and locals alike went crazy for the new artificial reef that debuted in Grayton Beach. This man-made structure was coined Turtle Reef, as it is shaped like a sea turtle when viewed from above. As of late last summer, three other reefs taking the forms of a dolphin, a sea horse and a cobia had made their homes in the waters off Scenic Highway 30A. Like natural reefs, these habitats attracted the attention of sundry marine creatures that now live and flourish in the newfound shelters. Families are invited to snorkel and observe a colorful array of fish, marine plants and sometimes rare sea turtles as they weave through the towers of the reef. Conduct an underwater photo safari to capture the brilliance of the environment, skin-dive or stay at the surface and fish from a kayak. Waltonreefs.org

BIOPHILIA CENTER

Though the emerald-green waters of our beaches may get the most attention, visitors should know that Walton County is a natural wonderland upland, too. Fascinate your family with a visit to the E.O. Wilson Biophilia Center, nestled in an enchanting longleaf pine forest in Freeport, just a short drive from the resort. The center, named for the world-renowned biologist, explores the region’s rich biodiversity by way of trails, expert staff, interactive exhibits and displays. The Biophilia Center hosts events for the benefit of conservation efforts that are open to the public upon registration. Check the center’s website for public hours and get ready to embark on an enriching adventure. EOWilsonCenter.org

MORRISON SPRINGS

Morrison Springs Park in Ponce de Leon encompasses 161 acres of preserved woodland. Trekking along in the shade of cypress and oak trees, you wind up at one of the area’s most striking natural springs. Submerged in the crystal-blue waters of the spring, which is about 250 feet in diameter, are several underwater cave systems, cementing its status as one of Florida’s finest dive sites. If your family doesn’t want to take that deep plunge, shallower depths serve ideally for swimming and kayaking. Snorkelers have the opportunity to encounter various species of bass, sunfish and carp, as well as underwater flora that thrive in this hidden paradise. Picnic areas, docks, trails and observatories supply all the necessary amenities for a perfect day. FloridaSprings.org and FloridaHikes.com/ springs 60 HILTON SANDESTIN BEACH 2018

When you meander in Eden Gardens State Park, you travel back in time. The first thing you see is an alabaster mansion known as the Wesley House. Dating to 1897, the plantationstyle house is now inhabited by antiques and vintage furnishings that provide snapshots of a bygone age. Take a guided tour or feel free to roam the grounds. Weeping willows and oaks overhang impressive, green acreage ideal for picturesque picnics on the grounds or under the pavilions and for outdoor recreation. At one end of the property is Tucker Bayou, where anglers can spend the day casting from the docks. The gardens present a vibrant collection of flowers and shrubbery year-round. Hiking trails lead visitors into the natural areas beyond the ornamental gardens. FloridaStateParks.org/EdenGardens

TOPSAIL HILL PRESERVE

A local favorite destination, Topsail Hill Preserve State Park has it all. Its 3.2 miles of beach, tall sand dunes and rare coastal dune lakes furnish endless activities to suit your family’s taste. Take a guided hike or navigate yourself through beachside byways, wetlands and pine forests that are optimal for spotting birds wading and on the wing. Select trails are sites for caches if you’re a family of Geocachers, so come prepared for an exhilarating treasure hunt. If walking’s not your style, bike along paved paths to Campbell Lake or catch a ride on the tram to the beach. There, you can sunbathe, search for shells, swim or rent kayaks to paddle for the day. While you’re free to cast your line there, three coastal dune lakes are supreme spots for freshwater fishing. The park has full amenities including picnic pavilions, shower stations and conveniently located restrooms.

The Blue Giraffe studio and gallery is a charming establishment that captures the beauty of its location on 30A on canvas. Memorabilia from local artists is available for purchase, but your family members may choose to spend the day crafting their own pieces. The Blue Giraffe knows art takes many forms, and that’s why they offer classes that specialize in multiple areas of creativity. The Cultural Arts Alliance of Walton County (CAA) promotes the arts in our area. Founded in 1989, the CAA has nurtured cultural pursuits in our community by bringing in festivals, children’s educational programs and countless instances of funding for fine arts events. The headquarters of the CAA is the Bayou Arts Center, located in scenic Hogtown Bayou of Santa Rosa Beach, presenting more than 200 family-friendly art classes. Learn to paint with the beach-themed hues of pastels, bold acrylics and whimsical watercolors. If you’d like to try your hand at sculpting, ceramics and pottery classes are at your disposal. While the center exhibits its own art, you are highly encouraged to visit the galleries of its partners, such as the Foster Gallery in Sandestin. Depending on which time you’re visiting, you’ll want to check out the talents of CAA-sponsored events such as the 30A Songwriters Festival, Art Week and the Flutterby Festival. Area shopping venues include Grand Boulevard (top left) and the Silver Sands Premium outlet mall, which includes a Coach factory store. At The Village of Baytowne Wharf (top right) shopping is a play-as-you-go experience.

SHOP THE VILLAGE OF BAYTOWNE WHARF

At The Village of Baytowne Wharf, there’s a little something for everybody. The best part? This full-service marina and shopping destination is a two-minute shuttle ride across the street from the resort. For some quality time with the family, an extensive selection of charter boats are available for light tackle fishing or scenic cruises across Choctawhatchee Bay. Athletic families may opt to rent WaveRunners or paddleboards for some wet ’n’ wild fun. After you’ve worked up an appetite, the Village serves up some of Walton County’s numerous award-winning restaurants, including The Marlin Grill, Another Broken Egg Café and Poppy’s Crazy Lobster. For children, the Village provides a spacious playground, zip-line, rope course, trailside treehouse and Blast Arcade and Laser Maze. After you’ve spent time finding one-of-a-kind garments at exclusive boutiques, catch a concert at the Village’s center stage, or stop by Hammerhead’s on the dock for more live music and dancing.

GRAND BOULEVARD

Also conveniently located near the resort is Grand Boulevard, one of Sandestin’s premier entertainment venues. In addition to high-end shops such as Tommy Bahama, Vineyard Vines, Anthropologie and Lilly Pulitzer, this outdoor center is home to delicious eateries of all styles. Cantina Laredo serves up authentic Mexican dishes and signature margaritas deemed the Best of the Emerald Coast. New to Grand Boulevard is Emeril’s Coastal Italian, celebrity chef Emeril Lagasse’s debut restaurant in Northwest Florida. Top it off with some homemade ice cream or fudge from Kilwin’s, and snag some gourmet candy, too! If your beach day gets rained out, Grand Boulevard is also the site of the Boulevard 10 Cinema. This luxurious movie theater provides dining options if you choose to see a movie in their Ovation Dining Room, as well as a colossal “Big-D” auditorium for the ultimate 3D viewing experience.

SILVER SANDS PREMIUM OUTLETS

Silver Sands is another shopping stop for the resort’s complimentary shuttle and the place to go for premium deals on designer goods. With renowned brands such as Coach, Michael Kors, Polo Ralph Lauren, Nike and Saks Fifth Avenue, it feels as if you’ve stepped into New York’s premier shopping district. That is, until you take in the palm trees and sea breeze as you wander through this al fresco center. Plenty of stores like Nautica, Sperry and Solstice Sunglasses keep the beach vibe alive and provide an ideal collection of gear for your vacation. Gap Kids, Oshkosh B’Gosh and the Disney Outlet supply fun fashion and toys for the little ones, and entertainment is endless at the outlet’s outdoor playground. Once you’re all shopped out, Cheeseburger in Paradise, Ciao Bella Italian Bistro and Mrs. Fields Cookies are perfect pit stops in which to refuel. HILTONSANDESTINBEACH.COM

oming together for memorable experiences is all the more meaningful in a beautiful setting such as South Walton on the beautiful Gulf of Mexico. Imagine the joy of happy families gathering to celebrate the nuptials of two loved ones, intertwining two lives and two clans on a timeless coastline where hope springs eternal and the horizon goes on forever. The symbolism fits the occasion perfectly. Meanwhile, expert wedding managers at Hilton Sandestin Beach Golf Resort & Spa discreetly handle the logistics and cue all the magic right on time. Likewise, conferences held here present the ideal time to mix business with pleasure. Gather with colleagues in the resort’s prestigious meeting spaces to generate creativity and dream up the future of your business or industry, drawing inspiration from your glorious surroundings. Bring family along and stay a few extra days, perhaps with other families from your business group, to savor experiences that buoy your spirits long after you return home.

VOWS BY THE SEA Dreamy Setting + Perfect Logistics = I Do BY HANNAH BURKE

each weddings have timeless allure. Many bridesto-be dream of walking down an aisle of sand as white as their dress, their loved one waiting beneath an arch of driftwood. As emerald-green waves lap at the shore, vows are exchanged, accompanied by the whisper of a sea breeze. The setting sun is as fiery as their love, and the beauty of this moment will never be forgotten. Then, you remember a perfect wedding requires perfect planning, and the dream comes to a screeching halt. Take a deep breath, and relax. It is the job of Hilton Sandestin Beach to provide not only the most pristine seaside setting for your big day but everything else too, from the cake and catering to lovely lodging for each guest. The wedding planners at Hilton Sandestin Beach, such as Angela Coteat, are your new best friends. Having transformed many reveries into realities, they are with you each step of the way to design your dream come true. “The best thing about us is how simple we make the process,” Coteat says. “Once you decide on who you want from our excellent selection of vendors, the fun part begins. We like to think of ourselves as a sounding board for all of your ideas. Make a collage on Pinterest of what you want, shoot us an email or call any time, and we’ll create that personalized look and feel for your wedding.” Though the main focus is on the bride and groom, weddings also are about the merging of families. Be it assisting little ones with their ceremonial duties, appeasing wishful mothers or seamlessly combining the bride’s and groom’s sides into one big party, Hilton Sandestin Beach has it covered. One happy bride who reaped the benefits of Coteat’s creativity is Missy Pierce. She had traveled to the resort for 84 HILTON SANDESTIN BEACH 2018

years with her two children to celebrate the Fourth of July. When she started seriously dating her future husband, Sam Parker, he and his two daughters joined the tradition and fell in love with the area. “When it came time to tie the knot, we had to do it July fourth weekend at the resort,” the now Missy Parker says. “Our wedding was beautiful, and everyone had a fantastic time! With a perfect reception and delicious food, we could not have asked for more involved wedding planners. We are so grateful our family was created here!” The resort also is the perfect site for vow renewals. Most of these ceremonies are kept “sweet and simple,” because these head-over-heels-in-love partners aren’t looking for another big bash like their wedding day. Instead, the best way to reaffirm their bonds is through a serene exchange by the sea — alone, or attended only by their closest friends and family members. “With a pristine beach and endless amenities, you’re entering your own oasis,” Coteat adds. “From your sunset ceremony to your reception on the deck beneath our amber string lighting, it’s paradise for everyone right here at the resort.”

Missy Parker and her husband, Sam, posed moments after beginning their married life. In Missy’s mind, there was no alternative to a Fourth of July weekend wedding at Hilton Sandestin Beach.

MIX BUSINESS WITH PLEASURE ELLEN CORNELL

Resort Is a Go-To Meeting Place

I

t’s Russell Davis’ job to plan a reunion, of sorts, every summer for a “family” of 650 or more people. As the executive vice president of the Home Builders Association of Alabama, he’s responsible for planning the group’s annual meeting in July. And for more than 30 years, he’s chosen Hilton Sandestin Beach Golf Resort & Spa to host the gathering. “The facilities match up really well with the needs of our people and the members I work for,” he says. “We’re very much a familyfriendly event with lots of kids. In the old days, the bunk beds were a wonderful way for folks to bring family and the kids to bring more kids. With the addition of the Spa Tower, it just made it the perfect venue for us, and we’ve really enjoyed it for a long, long time.” Several groups have made the resort their meeting headquarters for decades, and Directer of Events Jon Lovett swears it’s the “two B’s” — bunk beds and the beach — that initially lure them to Hilton Sandestin Beach and keep them coming back year after year.

The resort’s 15-floor Emerald Tower has 400 spacious rooms that include a bunk bed sleeping area (with its own media center!) which is in the room but far enough away to give everybody a bit of privacy. “The beach, of course, is the biggest seller of them all,” Lovett says. “And it’s right outside your balcony.” Taking those few steps to the emerald water and sugar-sand beaches is a treat, but the three pools, abundant food outlets and banquet choices, plus Kids Krew and other children’s activities make the resort a great place to stay again … and again. “Everything they need is right here. Whether it’s the restaurants or the rooms, the shuttle to The Village of Baytowne Wharf and all the other hotel amenities, there really is no reason to leave once they get here,” Lovett says. “So many times, people say ‘renting this car is the biggest waste of money because we’ve never had to leave here in the last four or five days.’” Event planners say the camaraderie of a meeting or convention is improved with the rooms, meeting space and activities consolidated in one place, says Regional Sales Manager Joann Hargrove.

“When they leave their meeting or event, they’re not dispersing in all different directions,” she explains. “They’re still under this one roof and they’re still out by the pool, they’re still hanging out at the beach or in the lounge area — so they gain that extra bit of networking you don’t find at some of the other destination resorts.” Hilton Sandestin Beach’s staff works hard to make sure that, even though a group may return year after year, their gathering’s experience is always changing for the better. That could mean the ownership’s investment into expansion and upgrades to the property itself, as well as creative approaches to activities and amenities. “We’ve had bonfires, fireworks, sandcastle-building contests, carnivals, tattoos, face painting, hair extenders — basically anything we can come up with, we’ll try it,” says the Home Builders’ Davis. “We don’t want it the same every year. We’re not going to let it get stale, and the staff helps us make sure that doesn’t happen.” While the focus is often on fun activities for children, Hargrove knows Serenity by the sea Spa is sure to delight the moms. “As they say,

“We have contracts with the hotel through the next three years. I’m not saying we’ll never go anywhere else, but we’re perfectly happy coming to Hilton Sandestin Beach every year. Our members have high expectations, and they meet or exceed them every time. As long as that keeps happening, I think it’s good for everyone.” — RUSSELL DAVIS, EXECUTIVE VICE PRESIDENT OF THE HOME BUILDERS ASSOCIATION OF ALABAMA

ELLEN CORNELL

Hilton Sandestin Beach is an exquisite setting for meetings. Attendees can find anything they want on the resort’s property.

‘If Momma is happy, everyone is happy,’” she says with a grin. Davis says he has worked with Hargrove for more than 20 years and has long-term relationships with other staff members. “We’re more than just professionals dealing with each other. We’re friends. It makes a difference.” And while he watched his children spend happy summer weeks at Hilton Sandestin Beach, he’s looking forward to doing the same with his grandchildren. “We have contracts with the hotel through the next three years. I’m not saying we’ll never go anywhere else, but we’re perfectly happy coming to Hilton Sandestin Beach every year,” he says. “Our members have high expectations, and they meet or exceed them every time. A GUEST’S REFLECTIONS

A guest reflects on her many stays at Hilton Sandestin Beach. She has never had a complaint about her room and rarely leaves the property once she arrives.

I have had the pleasure of being acquainted with Hilton Sandestin Beach Golf Resort & Spa since 1994. My job entails much travel and attending or organizing health care conferences in the Panhandle of Florida — most of which are held at Hilton Sandestin Beach. My stays at this particular Hilton are too numerous to count. Most summers I have between five to seven visits — some to include 13 consecutive days in a row. I cannot say enough about Hilton Sandestin Beach. I always have a personal greeting when I enter the property off of Highway 98. Even though I know my stay is work related, it is as if I have entered another world — my stress level drops immediately. Beginning with Valet Service, Bell Service and front desk check in I am treated like a member of the Hilton Sandestin Beach Family. It is never surprising to get a hug from my favorite guy at the concierge desk or a personal greeting from the general manager, Gary Brielmeyer, or the managers on duty. They are never too busy to stop and chat, give me a very warm welcome and always ask if I needed anything. This part is just the beginning. There have been visits that I have actually had Valet park my car and not seen it again until I departed. There is no need to leave this property. The on-site restaurants are awesome — Sandcastles, the lounge menu, my personal favorite Barefoot’s, The Coffee Shop with awesome pastries and Picnix with pizza and ice cream as well as in-room dining. Seagar’s Prime Steaks & Seafood located in the lower lobby is a wonderful four diamond restaurant for entertaining clients and closing contracts. Oh and did I mention the breakfast buffet — absolutely amazing!! I always reserve one of the poolside cabanas for entertaining clients during downtime from the conferences. It’s my way of keeping my clients close to me and enjoying a great poolside lunch or beverage. Tiffany and Nena are most accommodating along with the team on beachside making sure your beach chair rentals are perfect. Back to my room, I have to say I have never in all these years had any complaints with my room. The housekeeping staff is always close by in case you need anything extra. When attending conferences, Adam is most accommodating to the organizations hosting the conference. The event planners are wonderful and never disappointing. Even the ladies in the gift shop are always so friendly and helpful. If they do not have what you need, they will find it. A great way to really relax during your stay is a visit to Serenity by the sea spa — this is an amazing spa experience. I feel like I could go on forever about Hilton Sandestin Beach! It is five star, no doubt about it!

Welcome to the Family ... And to the Families, Welcome

Those are the memories that last a lifetime, and this is the place where families create lasting memories.

Guests make family memories whether they venture to Hilton Sandestin Beach for a traditional leisure vacation or something else entirely. We host many conferences and events throughout the year and it’s common for meeting planners and attendees to bring their family with them to enjoy the resort while the conference is in session. Work and play are natural allies on our property — with everything in one place, meeting attendees can feel

confident their family is safe, and very entertained, throughout the day. It’s not a coincidence. The family experience is engrained in our culture from the top down. In fact, ownership of Hilton Sandestin Beach has been passed from our original owners down to their own children. Beyond that, our staff is a family of its own. We want this place to be just as special to you and yours as it has always been to us. Many of our valued employees have been with us for more than 20 years — some since the day we opened. We spend holidays together, we laugh and cry together — we even watched a total solar eclipse on our pool deck together last year!

Like any family, ours has grown over the years.

Families who return to our resort time and time again have become an extension of our own. Like the Peugeot family, who has been visiting Hilton Sandestin Beach since the mid-90s for family vacations and weekend getaways. They’ve become close friends with our staff, and beloved members of our Hilton Sandestin Beach family. And there are more like them — our staff has seen many children grow up through the years, returning to the resort each year a few inches taller and ready to explore another part of the property.

We’re also honored to be part of the biggest moments in many families lives. We’ve seen brides and grooms who came here as children return to the resort for their own wedding. We have the privilege of being part of these special moments in the lives of our extended family — we are truly honored and we thank you for that. Whether we’re meeting you for the first time, or have had the pleasure of knowing you for years, welcome to Hilton Sandestin Beach. May 2018 be full of precious and heartwarming family memories.

hat is it about Hilton Sandestin Beach that brings families back to our shores time and time again? Maybe it’s our kid-friendly accommodations and Kids Krew programming. Or the variety of beach activities we offer, coupled with treats for Mom and Dad at Serenity by the sea Spa and Seagar’s Prime Steaks & Seafood. The amenities are amazing — don’t get us wrong — but we’d argue it’s something else entirely. Families are drawn to Hilton Sandestin Beach because this place is a natural memory-maker. A Hilton Sandestin Beach vacation is not just about the activities you scheduled or the excursions you took part in. It’s about the little moments you couldn’t have possibly planned — a startling splash followed by a giggle, a look of wonder on a child’s face as they watch a sunset over the water, a tap on the shoulder before bed and a whisper asking: “Can we come back next year?”
