WENDY CRAUL Executive Assistant to the General Manager, 10 years on the job

WHAT LED YOU TO THE HOSPITALITY INDUSTRY? I moved to the Emerald Coast from Clearwater, Florida. My family has ties to the hospitality industry locally.

DESCRIBE A TYPICAL WORKDAY. As an administrative assistant, no two days are the same here. I work with guests through guest assistance and I direct their communications to the appropriate parties. If there are special requests with our Hilton HHonors Members, whether it’s an anniversary or a specific celebration, I help assist with those, as well as donation requests from the community through the donation committee. WHAT’S THE BIGGEST TRIUMPH YOU’VE HAD HERE? Completing 10 years with the company and meeting the challenges of the position. I want to make our guests happy and make sure they come back, whether they are here for a conference or vacation, two days or a week. We want everybody to have a good experience.

WHAT’S SOMETHING FEW PEOPLE KNOW ABOUT YOU? I volunteer 12–15 hours a week with my therapy service dog — a long-haired miniature dachshund — Gretchen. We visit retirement centers, children’s hospitals and we get special invitations to work with special needs children. She’s really my angel. She’s 4 years old now, but we started doing this when she was 8 months old. It’s fascinating to watch her go up and down the halls at retirement centers in people’s wheelchairs. People tell me she’s my “Goose,” referring to the characters — Goose and Maverick from the movie “Top Gun.”

WHAT ACCOMPLISHMENT ARE YOU MOST PROUD OF? It’s building

relationships with long-time guests. They’ll invite us to their homes, weddings and other events. It’s long-lasting friendships that I really cherish, because I’ve gotten to see their children grow up over the years. We get hugs and cards from these people, and they are really happy to see us when they come here.

Make a footprint in the sand, step outside and relax. It’s paradise, so the attraction is the beach.

HOW DO YOU SPEND YOUR FREE TIME? WHAT’S YOUR FAVORITE HOBBY? My favorite hobby is gardening. I have potted flowers, rose bushes and gardenia bushes. Gretchen and I spend lots of time out there running around, gardening and chasing lizards. My mother was a wonderful gardener and that’s where my interest came from.

WHAT’S THE BEST ADVICE YOU’VE EVER BEEN GIVEN? It came from my parents. They told me how to order my priorities: faith, family and friends.

WHAT’S THE BIGGEST CHANGE YOU’VE SEEN DURING YOUR TIME AT HILTON SANDESTIN BEACH? It’s been the renovations. The management company and our owners really invest in the property and the team. You come to work every day and everything is bright and new. This is really important to our guests and you really take pride in it. HILTONSANDESTINBEACH.COM

PHYLLIS MOEN Engineering Assistant, 13 years on the job DESCRIBE THE TYPICAL WORKDAY. I come in and double-check all of the area air conditioners and plan out the AC schedule, and maintaining the smooth operations of that system requires a big part of my morning. I also do a little bit of work for accounting because all of the invoices that come in for anything we’re doing on-property — from repairs in the rooms to supply orders for the bar — all come across my desk, and I have to code them. I also answer any questions regarding room maintenance from guests as well as from hotel team members. I can get asked anything from, “Can I get the TV fixed?” to “What color paint is on the walls?” I’ve even been asked about where we get our furniture.

DESCRIBE THE MOST UNIQUE REQUEST YOU’VE RECEIVED AT HILTON SANDESTIN BEACH. I’ve been asked for the building plans for the bunk beds

that are in the Emerald Tower, and I was able to provide those. The guest wanted to put them in her children’s rooms at home. She called later to tell us that the plans were a success and that the kids just loved them, so they feel like they’re at the hotel all the time now.

WHAT’S YOUR FAVORITE HOBBY? I just took up paddleboarding. I’m not very good at it yet, but I really do enjoy it. A lot of my favorite memories are fishing with my dad out on Campbell Lake. I still love getting out on the water to go deep-sea fishing and things like that.

WHAT ACCOMPLISHMENT ARE YOU MOST PROUD OF? I got my bachelor’s in project management at the age of 51. It took me two years. I was getting up at 5 a.m. to go to work, and then after work I would go straight to school for classes that ended at 9 p.m. Then I stayed up until midnight studying and getting homework done.

WHAT’S THE BIGGEST CHANGE YOU’VE SEEN DURING YOUR TIME AT HILTON SANDESTIN BEACH? I’ve seen this place completely ripped apart for the renovations and then put back together to be even bigger and more beautiful.

WHAT’S THE BEST ADVICE YOU’VE EVER BEEN GIVEN? My dad used to tell me to let my conscience be my guide. He also said that when you find something that you enjoy, you’ll never work a day in your life. That’s what I live by. I think: Does it feel right? If it does, then go with it.

WHAT IS YOUR FAVORITE HILTON SANDESTIN BEACH TRADITION? My family and I celebrate Thanksgiving here every year with the Thanksgiving buffet. It gives us the time to be together as a family instead of someone having to be in the kitchen doing all the cooking. The company also hosts a Christmas party every year for the employees and their families, and that’s always a lot of fun. HILTONSANDESTINBEACH.COM

REJUVENATION Serenity by the sea Spa focuses on holistic health

S

pas have traditionally been considered a luxury, places frequented only by those with the financial means and leisurely schedules to allow such indulgence. But in recent years the spa industry has been given a whole new sense of purpose. It has been remade into something with a far greater focus than pure pampering and extravagance. Of course, the desire to be cared for and swept away into a sea of calm and relaxation hasn’t changed, but there’s a new approach to true rejuvenation. The spa industry is now honing in on the beauty of holistic health. “People are becoming more aware of their need to truly take care of themselves, and so they’re really beginning to embrace going to the spa as a part of that healthier lifestyle,” said Shanelle Lucas, director of spa services for Serenity by the sea Spa at Hilton Sandestin Beach. Serenity by the sea Spa features a salon equipped with hairstyling and makeup chairs, and a lounge-like manicure and pedicure room. But it also boasts everything else that one might imagine is necessary to create a complete health, wellness and beauty experience. Sixteen treatment rooms offer services ranging from facials and body wraps to waxing and massages. Each space provides calm serenity and undeniable elegance. The spa also features separate men’s and women’s areas, each of which come equipped with locker room facilities, a heated whirlpool spa, sauna, steam room and a luxurious lounge stocked with an array of refreshing drinks and snacks. The men can wind down in front of their very own big-screen television, or wake up their senses with

a bracing drench in the cold-plunge shower. The ladies, meanwhile, can cozy up in a comfortable recliner or the “zero gravity” chairs found in the women’s relaxation rooms. Such extensive services and amenities are the result of recent renovations at Serenity, which included an expansion of the spa’s state-of-the-art fitness center. The center is open 24-7 for Hilton

Sandestin Beach guests and spa members — it is also available to spa guests on the day of their treatment. The fitness center features Precor cardio machines and weight training machines. If you want to take your health and wellness goals to the next level, the fitness center offers personal training, a wide range of fitness classes and personal consultations with its on-staff nutritional expert.

The vehicle you choose to explore the Emerald Coast is completely up to you, whether you want to hike, kayak, canoe or paddleboard. The state park system is the perfect place to start your adventure. There are countless parks to explore within a relatively short drive: Topsail Hill Preserve State Park, Deer Lake State Park and Eden Gardens State Park in Santa Rosa Beach, Grayton Beach State Park and Ponce de Leon Springs State Park in Ponce de Leon. INDULGENCE Seagar’s defines elegance

T

here’s no identity crisis at Seagar’s Prime Steaks & Seafood. The menu here leaves no question that this elegant dining venue knows exactly what it is: an American steakhouse down to its very marrow. “We stay true to that concept, because that’s what we are, an American, New York-style steakhouse,” said Chef Dan Vargo, the master who mans the kitchen at Seagar’s. “It’s classic food, prepared with the very best seasonal ingredients that we source locally. We know our product, and we know where it comes from. We build relationships with the farms and the fishermen, and that’s truly essential to what we do here.” Those ingredients form the foundation of Seagar’s menu. Each dish is dictated not simply by season, but also by the quality and flavor of every product that comes through the kitchen. “We don’t bend or compromise on anything,” Vargo insists. “If it’s not the very best it can be, I send it back, because I refuse to serve my guests anything that isn’t up to that standard.” From the prime cuts of beef seared on the grills in the open-air kitchen to the tomatoes used in the salads, each and every component of each and every dish is chosen with care. But for Vargo and his staff, it is a level of detail that their guests deserve and a crucial ingredient in creating a truly unforgettable experience. “Seagar’s is the definition of indulgence and elegance. It is unhurried luxury, with decadent food and a level of service that is unmatched,” he said. Vargo possesses an undeniable understanding of the strengths and the subtleties of the ingredients he takes in hand. He spent years studying under some of the best chefs in the industry. He learned well how to conceptualize a dish that builds a depth of flavor and highlights and complements each element as a necessity, rather than an afterthought. Even though he may consider that his style adheres to the classic American steakhouse, Vargo doesn’t rely on the classics to carry the plate. He uses the style as a starting point from which he examines possible avenues that are, as yet, unexplored. “I’ve lost count of how many notebooks I’ve filled with ideas for new recipes and new menus,” he said. “I spend about a day and a half creating a menu, simply starting with a list of what’s in season. That is a basis for me, not only as a way to begin compiling flavor profiles and creating complementary pairings, but also in my process of finding a way to do something that will set us apart. “Seagar’s has an inherent style and a type of cuisine that is familiar, but we go beyond that to achieve something that is unique, something that people will remember,” Vargo said. “Every plate we serve to our guests is a new opportunity to create a lasting memory.” This is a recipe richly seasoned with passion, and that is one of the key ingredients that keep his diners hungry for more. KIDS KREW Staff ensures that the fun stays fresh

N

aturally enough, in its role as a family-oriented vacation haven, Hilton Sandestin Beach Golf Resort & Spa appeals not only to the adults who visit the property, but also to their more junior guests. In fact, these pint-sized visitors keep the resort a fun place to be, inspiring the very talented team that comprises the Kids Krew program to create a wide range of engaging, themed activities. Kids who come for a vacation at Hilton Sandestin Beach put down the electronics and stay for the fun. And fun is never short in supply. True, the Kids Krew space is equipped with some of the latest techie toys and video games, but so rarely are they used that their presence could easily be forgotten. Here, face-to-face interaction and real-time, hands-on creativity overcome wireless devices, rendering them almost obsolete in a way that is rare and refreshing. Crayons and markers occupy fingers that have become accustomed to swiping smoothly over touch-sensitive screens. Real superhero capes replace virtual ones, billowing behind tiny bodies as they whiz through the hotel, fully engaged in the successful completion of the mission at hand.

“We try to stay away from getting buried in screen time here,” says recreations manager Alex Rowe, who has worked at Hilton Sandestin Beach for 13 years. “We think outside the box and keep the kids doing things that are creative and really interactive, and we’ve set the bar high.” Hilton Sandestin Beach guests between the ages of 5 and 12 can participate in the daily Kids Krew activities as well as Kids Night Out and Midnight Madness, both of which free up some evening and late-night time for parents to steal a few hours away for themselves. Were those parents to become a fly on one of the brightly colored walls of what could certainly be considered a kids-only zone, however,

they might rethink their own plans and beg to be allowed in on all the fun. For kids who come here year after year, keeping things new, fresh and appealing is a daunting task but one that Alex and her recreation staff seem to achieve with effortless ease. If it’s on-trend, the Kids Krew team has it on their radar, and they find a way to make it happen. It comes naturally to them as people who love children and gain so much fulfillment from creating an unforgettable experience for guests. “People will come and seek me out to tell me how much fun their kids had in the program, and that means a lot,” Alex says. That’s precisely why this team does what it does, and what keeps the group of creatives in the recreation department stimulated to keep things constantly changing. Whether they’re planning a beachside blowout for Independence Day weekend or giving out instructions for the day’s Caped Crusader mission, making fun memories is their No.1 goal. “People appreciate that effort, and it’s part of what keeps them coming back.” Because of that commitment to keep their repeat guests excited, there is no set “curriculum.” Instead, there’s a steady stream of surprises in store for the kids to discover and enjoy. Kids Krew is, indeed, all about the kids, and the kids appreciate that, from year to year, they’re not playing off the same old script. Kids’ programs are provided Memorial Day through Labor Day, with private event bookings available. Kids Krew is offered daily from 9:30 a.m.–1:30 p.m., and Kids Night Out programs run daily from 6–10 p.m. Midnight Madness continues from 10 p.m. until midnight. But before you plan your fishing adventure, you’ll have to decide whether you want to fish inshore or offshore.

INSHORE FISHING

When you fish inshore, you’ll be on a smaller boat and in shallow waters, typically within a few miles of the shore. Some anglers will take to their kayaks or paddleboards for an inshore adventure. While inshore fishing, the tackle tends to be lighter and the types of fish targeted and favored locations such as grass flats, piers and jetties, differ from offshore wrecks and reefs. Inshore anglers often

target black snapper, flounder, redfish and speckled trout.

OFFSHORE FISHING

When you head offshore to fish, you’ll generally be heading out many miles from shore (sometimes between 20-50 miles) and fishing in water of more than 100 feet in depth. Trips range anywhere from six to eight hours to as long as 72 hours depending on the type of fish you are seeking. The tackle used offshore is more heavy duty and the hunt for fish relies on radar and sonar technology. Offshore fishing usually targets larger species of fish including marlin, amberjack, tuna, wahoo, shark and reef fishes including grouper and red snapper. Whether you decide to fish inshore or offshore, you’ll be sure to enjoy a day on the water and the camaraderie of your family or friends. We all want to reel in a monster catch and brag about it, but that’s not always the case, so just remember, they’ll never know whether you really caught that 100-pound tuna or if it’s just a fish tale. EMPLOYEE Q&A the night before. I do any baking that needs to be done for them as well as any scheduled functions. I can end up having to make anywhere between 12 to 24 cheesecakes in a single batch and 12 to 60 for a batch of Key Lime pies. And I make dozens and dozens of cookies, so it can seem a little insane.

WHAT IS THE MOST UNIQUE REQUEST YOU’VE RECEIVED AT HILTON SANDESTIN BEACH? Two come to mind. One was a helicopter cake for a VIP, so of course I wanted it to be absolutely over the top. I wanted to make it “hover” over the table, instead of just sitting it on a cake plate or something like that. So, I had engineering make a Plexiglas stand that was angled and had lights in it. It was definitely over the top. Another cake was made to look like Ganesha, an Indian god with the head of an elephant and multiple arms. The entire cake was gold, and it looked amazing.

WHAT’S SOMETHING FEW PEOPLE KNOW ABOUT YOU? As a teenager I lived in Seattle on Al Capone’s old boat. It was an 85-footer, built in 1926. My father found it listed for sale in one of those boater’s magazines and he sold the house and we moved onto the boat. After he bought it, we converted its interior into a living space. My dad chartered it out and we did dinner cruises around the city. I absolutely loved it.

WHAT’S THE BEST ADVICE YOU’VE EVER BEEN GIVEN?

There was only one problem. It turns out that I don’t like straight lines. I went to a job fair and ended up getting a job at a hotel. While I was working there, I watched things in the kitchen. spent seven years working in a historic hotel down in St. Petersburg and that’s where I did my schooling, right there on the job. I absorbed it all up like a sponge because I really enjoyed it.

DESCRIBE A TYPICAL WORKDAY. Bakers’ hours begin really early and start anywhere from 2 a.m. to 6 a.m. When I come in, I check the restaurants at the various outlets to see what they used

Take one thing at a time. In a kitchen, there are always high expectations, and there’s always a really high demand placed on your food, your performance, your quality and your attitude. With the sheer volume of a production line, all of that can make things overwhelming. But my wife always says to me, “Do one thing at a time. You’ll get through it.”

WHAT IS YOUR FAVORITE HILTON SANDESTIN BEACH TRADITION? Owners’ weekend in early spring, when all the owners come to the hotel. It’s fun, because it is really a chance for us chefs to show off. There is a big welcoming reception, and we make big centerpieces with really ornate sugar work and chocolate art. We really get to create things that aren’t on the typical work schedule.

WHAT LED YOU TO THE HOSPITALITY INDUSTRY? I really think I’ve always been in it. I remember waiting tables when I was 16 years old at a little café inside a grocery store. I got into the management side here in 1999 at Barefoot’s, and I’ve been in event planning since 2006.

DESCRIBE A TYPICAL WORKDAY. It doesn’t necessarily start the same way every day. As an event manager, we work so many different accounts, so it’s phone calls and emails, pre-plans, event orders. These are the normal daily activities, but when you get them done depends on the day. Some of the accounts are longstanding and some new, some of them are very big and others as small as 10; they are all very different. It’s really all about planning though, as some people want to plan six months ahead and others want to plan on their way to the airport. You just have to be really flexible and available for people when they need you.

DESCRIBE THE MOST UNIQUE REQUEST YOU’VE RECEIVED AT HILTON SANDESTIN BEACH? We once had a Halloween party for a group that took me two days to decorate one of our conference rooms. It was a Vegas-y theme, with black and red decor, smoke machines and a DJ from Vegas. It was a good time.

WHAT’S THE BIGGEST TRIUMPH YOU’VE HAD HERE? I’ve worked my way up from being a bartender to being the director of events. I grew up in a farming community in South Dakota where the work ethic was drilled into me, so I don’t mind working hard and putting in the long hours. Hard work does pay off.

WHAT’S SOMETHING FEW PEOPLE KNOW ABOUT YOU? I collect antiques. I’m always looking to rescue things. I like things that have a story behind them — something that has history. I’ve been collecting antiques since 2002, and I go out whenever I can to collect new items. I remember going to yard sales with my mom and collecting things. It’s a great memory.

WHAT ACCOMPLISHMENT ARE YOU MOST PROUD OF? My son. He really is a great young man, and he’s working here now (beach services). I’m also proud of the fact I’ve been here for 18 years now. That’s a long time with one company.

IF A GUEST ASKS YOU WHAT DO THE LOCALS DO, WHAT IS YOUR RESPONSE? I tell them to do what this place is meant for, which is to relax. Everything has gotten so fast over the years and people don’t take time to slow down. Take a moment, turn your phone off and go sit on the beach.

A GUEST’S REFLECTIONS The following letter was received by Frank Flautt, co-owner of Sandcastle Resort of Sandestin, from a long-time visitor to the resort. Ms. Schroeder’s comments, like those of many others, attest to the fact that the resort, for generations, has been a destination for all seasons and all stations in life. 96 HILTON SANDESTIN BEACH 2017

I have had your card on my desk for nearly a month now, really wanting to take the time to write you an old-fashioned letter, something you could save and show the staff, perhaps. I wanted to tell you that your resort has been my favorite place on the planet for over 28 years now. I have been coming there almost every year for the MS Bar Convention. Since about 2006, I have discovered that October is the perfect time to visit your little piece of paradise, so we never miss that first weekend in the fall. I brought my sons, who are now 30 and 28, when I had to order a crib. I hauled 10 kids at a time down there for several years, getting several rooms. The happiest times of our lives were spent there, although I will confess that we were pretty much kicked out when I brought my oldest with his fraternity buddies and they, let’s just say, made a little mess in their room. I came there while I was caring for my dying husband in March of 2005. I took a few days off of nursing duty to regain my strength to face what would be the two most difficult months of my life. I cried there. I prayed there. I came home ready to face the unthinkable. Then I came again following Hurricane Katrina, in January, to once again try to lift my spirits after losing everything to that horrible storm. It was where I wanted to be, even though it was January. But the sun came out again and I brought my new love there in 2007. He proposed to me on the deck overlooking your beautiful Gulf front in July of 2010. We were married on your beach on Oct. 2, 2010, just us and the officiant with our close friends, your pool bar staff, cheering us on. At 2 a.m. that morning, we were asked to evacuate our room because the resort was on fire.

Sir, I have to apologize for our hot, hot, honeymoon — LOL. But, yes, we were married the day Barefoot’s burned. I am enclosing a photo of Marcel signing our pre-nuptial agreement — an official document — being witnessed by Steve the Bartender. He almost married us by the power vested in him by the Florida Bartenders’ Association, but at the last minute, we got a real preacher. Ha! I know hundreds of people have probably shared similar stories with you, and I could go on for pages and pages and pages. But the main point of the letter, sir, is to tell you how absolutely perfect your resort is and how perfectly well trained your staff is. I have known Trish since the early 1990s. Now, Steve, Tish and Sean. They hug us when they see us! We love them all. One of the things that surprises me about your hotel is that no matter how crazy busy it is there, everything is still perfect. I have always been amazed that housekeeping does their job perfectly, as well as the front desk, all departments. Things run just as well when the hotel is at maximum capacity as it does when there is hardly anyone there, like in January. And that chili dog at the pool bar. Well, I just have no words. I can imagine that people find things to complain about, and I would suppose you hear a lot of that. Please just know that your hotel, you and your staff are always in my prayers. I really don’t know what I would do without what has become my sanctuary, my home away from home. If I ever win the lottery, I would like the Presidential Suite, please, permanently. GENERATIONS OF TRADITION At Hilton Sandestin Beach, the more things change, the more they stay the same — thankfully

D

o you remember your first trip to Hilton Sandestin Beach? Maybe it was so long ago the details have blurred together amid countless sunsets, lapping tides and family sandcastles. Or perhaps this is your first visit, and you’re still processing the unparalleled beauty of this piece of land. No matter how many times you’ve come here, we’d be willing to bet that the things you love most about this place have remained constant. And that’s truly the essence of Hilton Sandestin Beach: always looking forward, but preserving the traditions that make us special. In the beginning, we couldn’t have anticipated the tradition that Hilton Sandestin Beach would become for our loyal guests, though it could be said that our hotel was built on a tradition of its own — literally. Since we opened over 30 years ago, we’ve welcomed hundreds of thousands of guests. Some of those guests came our very first year, and have returned each year since. Many brought their young children, who have since grown up to have families of their own, and have now passed the tradition of Hilton Sandestin Beach to their children. We’ve proudly watched as visitors have struck up lifelong friendships with other guests, each year back becoming its own “extended family reunion.” And for couples, the tradition sometimes begins with falling in love here or even choosing us as the setting for their wedding, growing into a place they return to time after time. Many of our valued employees have been with us for more than 20 years — some since the day we opened. And the tradition continues in our own family, with the original owners passing the legacy of Hilton Sandestin Beach down to their children. But maintaining traditions doesn’t mean resisting change. While not all things at Hilton Sandestin Beach have stayed the same, others are, and will always be, exactly how you remember them. Take our pristine beach. Over the last several years we’ve invested to protect our dunes and preserve our shores — not only nurturing the health of our unique ecosystem, but ensuring that the beach

remains just as it is in your memories. Our rooms have also undergone many upgrades and modernizations over the years. Sweeping improvements to our heating, cooling and mechanical systems have drastically reduced our energy footprint. As passionate as we are about keeping traditions, we also believe that positive change benefits all of our visitors and our world. What brings people back year after year is personal to every guest.
