THIS NOVEMBER, DISCUSSIONS ABOUT MEN’S HEALTH TAKE CENTRE STAGE. IN HONOUR OF MOVEMBER, WE ASKED SOME OF SOUTH AFRICA’S LEADING MALE CELEBRITIES TO SHARE THEIR THOUGHTS ON WHAT IT MEANS TO BE A MODERN MAN TODAY – ONE WHO LEADS WITH STRENGTH, VULNERABILITY AND PURPOSE.
CHRISTOPHER JAFTHA:
“I think he’s someone who has traded the idea of being ‘macho’ for being mature. He can change a tyre, but he can also change his mind. He’s self-aware enough to do his skincare, but still eats biltong as if it were a food group. He leads with kindness, listens more than he talks (most days) and knows that vulnerability doesn’t make him weak; it makes him Wi-Fi compatible.”


JARRAD RICKETTS: “For me, the modern man is someone who redefines strength through vulnerability and selfawareness. It’s no longer about having all the answers or fitting into outdated stereotypes – it’s about being conscious of your mental health, owning your emotions and encouraging others to do the same without shame. SIV NGESI: “As a man/human, you have failed at life if you can’t do these simple things: learn and unlearn and if a percentage of your earnings doesn’t go back to people who can never repay you. The modern man shows up even when he isn’t required to; he will be there to make things better. He doesn’t just support a (sports) team because everyone in the room supports that team.”
SMASH AFRIKA: “It’s a man who is considerate, a man pushing culture, leaving it better than they found it, always making sure that they empower themselves skill-wise and do their internal work. A man who knows that there is a place for everybody in society. A principled man, who has strong values and knows where he is going and that he needs a community and God.”

I see myself more as a storyteller. The first story I shared on stage was about Mr Bruintjies, a character I created, who was interviewed by a news presenter at a crime scene in Mitchell’s Plain. It was a favourite story of mine for years.
BIGGEST “OOPS” MOMENT DURING A LIVE SHOW?
I was talking to a guy in the front row about why he was wearing such a bright shirt. He wasn’t happy with the chat and I later found out that he was a critic sent to review the show.
COMEDY IN ONE WORD?
Happy.
FAVOURITE HIDDEN GEM IN SOUTH AFRICA?
My room! It’s private, fun, lekker and happy, and it houses my LP collection and record player.

Fe w South African comedians balance heart, humour, and honesty quite like Schalk Bezuidenhout. With his signature moustache, colourful jerseys, and perfectly awkward charm, Schalk has become a voice of authenticity – unafraid to laugh through life’s highs and heartbreaks.

Honestly, I think it’s a great initiative. It’s one of those small but powerful reminders that spark conversations. When someone who’s never had a moustache suddenly grows one, you can’t help but notice – and that’s the point. In my case, though, I just like having a moustache! Without it, I look about 12 years old… but with grey hair. Not a great combo. So, Movember or not, the ’stache stays.

MENTAL HEALTH?
Absolutely. Comedy is like a jalapeño popper wrapped in bacon – the bacon is the joke, but there’s something real and spicy inside. Standing around a braai telling your mates you’re feeling anxious doesn’t come easily. But if you can hide vulnerability within humour, people listen – and they laugh. That laughter makes it a little lighter already.
YOU’VE ALWAYS BEEN OPEN AND HONEST ON STAGE. HOW DO YOU BALANCE HUMOUR WITH VULNERABILITY?
For me, it all comes down to one rule: is it funny? If it’s funny, you can talk about nearly anything. But if it doesn’t land, it can cause more harm than good. I also swear a lot less now – not because I’m becoming holy, but because I realised swearing can be a crutch. These days, my shows are “family-ish friendly”. Maybe not for a 10-year-old, but a 14-year-old could probably handle it.
WHAT MESSAGE WOULD YOU LIKE TO SHARE WITH SOUTH AFRICAN MEN?
Go to therapy, and don’t wait for something to break before you do. There’s this stigma that therapy means something’s wrong with you, but it’s also about celebrating what’s right. Sometimes I leave my therapist’s office, realising my life isn’t as forked as I thought. And that’s worth every cent.
YOUR COMEDY HAS EVOLVED OVER THE YEARS. HOW WOULD YOU DESCRIBE YOUR GROWTH?
Your audience grows with you. Some people have been with me from the start; others drifted off and came back – it’s like reconnecting with old friends. I’ve found more balance between being edgy and relatable. I still want people to feel challenged, but comfortable enough to bring their teenage kid.

It’s evolving. There’s more diversity in voices and styles, and people are starting to treat comedy like a real art form. That keeps us all on our toes.

FORGET THE SMALL TALK – THIS NOVEMBER, JOHANNESBURG’S MARKET THEATRE TURNS THE BUZZ OF CLIPPERS INTO THE HEARTBEAT OF MEN’S STORIES WITH BARBER SHOP CHRONICLES.
They say men don’t talk. But if that’s true, they’ve never spent an afternoon in a barbershop. Between jokes about bald patches and debates on fatherhood, the barber’s chair has long been an unofficial therapy couch – a place where vulnerability is masked by laughter and wisdom is shared one haircut at a time.
This November, Johannesburg’s Market Theatre transforms into the ultimate men’s lounge, minus the leather armchairs and cigar smoke, but packed with conversation, culture, and connection.
From 6 to 30 November 2025, Barber Shop Chronicles makes its African debut, delivering heart and sharp one-liners that cut deeper than any pair of scissors.
“This play confronts and refutes the repeated lies that men don’t create platforms to talk, making a strong case for the unconventionality of men’s gathering,” says director Sibusiso Mamba.
SIX BARBERSHOPS, ONE DAY, ENDLESS STORIES
Written by Nigerian-born British playwright Inua Ellams and directed by Mamba, the play links six barbershops across London, Johannesburg, Harare, Kampala, Lagos and Accra. Throughout a single day, the hum of clippers becomes the rhythm of conversation as laughter intertwines with reflection and identity.
“These barbershops serve as sanctuaries where men gather not just for haircuts but for camaraderie, debate, and solace,” explains Ellams. “The play explores identity, fatherhood, history, relationships, culture, race and masculinity. It also offers a poignant and humorous exploration of the African diaspora experience.”

teasing and storytelling. The barber isn’t just cutting hair; he’s shaping moments of honesty and release.
“These are spaces where men share truths they might never speak elsewhere,” Ellams notes.

As the most-capped Springbok in history, Eben Etzebeth’s career has spanned eras, united generations, and delivered back-to-back Rugby World Cup victories. Yet beneath the bruises and battle scars lies a story of humility, resolve, and heart. That story unfolds in his memoir, Unlocked.
“It is never just a game. Not when you’re wearing a Springbok jersey. Not when failure ruins thousands of carefully planned parties and makes men weep and gnash their teeth,” writes Eben Etzebeth in his memoir.
Born in Goodwood, Cape Town, Etzebeth grew up without luxury. His path was defined by mettle and purpose. Rugby was not only a dream but a compass that channelled his energy into something greater.
By the time he first pulled on the Western Province jersey, his talent was undeniable. He was not simply another lock; he was a force to be reckoned with.
“If you’re wondering where my grit and desire came from, other than the Etzebeth genes, you don’t have to look much further than my brother [Ryen],” writes Etzebeth.
When he made his Springbok debut in 2012, the mood shifted. South Africa had found its next enforcer. But his real power was not only physical. It came from his mind – his ability to read the moment, to push or hold, to lead when it mattered most.
“Bryan, Jean… A pause… and Eben. I tried to hide the tears – Springbok locks aren’t really meant to cry.”
Etzebeth writes how, even as a boy, his dream was clear. “When I was very young, I had a list of goals written on my bedroom door in chalk, and one of them was to become a Springbok. I must have been one of the biggest Springbok fans in South Africa.”
Over the years, Etzebeth’s reputation has grown beyond the sport. Feared by opponents, loved by teammates, and respected across the rugby world, he remains grounded and loyal off the field. Unlocked captures that duality – the warrior and the man.
The book reaches beyond trophies and statistics. It explores the pressure, the pain and the psychology of carrying a nation’s hopes. Etzebeth is candid about criticism, injuries and controversies that have shaped him.

The Ndlovu Youth Choir has turned Queen’s iconic anthem into a lively celebration of South African culture.

WARM-UP (PRE-WORKOUT PREP)
To get started, you’ll need a dynamic warm-up to prepare your muscles for action. Perform each exercise for 20 repetitions:

MOST COMMON
THE MALE CANCER YOU’RE IGNORING

WHEN IT COMES TO PROSTATE HEALTH, MOST MEN PREFER TO AVOID THE TOPIC ALTOGETHER. HOWEVER, A BIT OF KNOWLEDGE (AND A GOOD DOSE OF EARLY SCREENING) COULD QUITE LITERALLY SAVE YOUR LIFE.
Prostate cancer is the most common cancer among men in South Africa, second only to skin cancer, with one in eight men likely to be diagnosed in their lifetime. Yet, alarmingly, many men are not undergoing regular screening, missing out on the advantages of early detection and treatment.
“BUT I FEEL FINE…”
One of the most challenging aspects of prostate cancer is that it often shows no noticeable symptoms in its early stages, explains Dr Amit Kalpee, a urologist at Netcare Christiaan Barnard Memorial Hospital. “So, it’s critical that early detection through screening is encouraged.”
Dr Steven Cornish, a urologist at Netcare Sunninghill Hospital, supports this view.
“By the time advanced symptoms like swollen lymph nodes, leg weakness, and weight loss appear, it may be too late for curative treatment.” As the cancer progresses, symptoms begin to
appear, but they often overlap with a much less serious yet very common condition called benign prostatic hyperplasia (BPH). We’re talking about difficulty starting or stopping urination, a weak stream, and frequent trips to the loo at night.
“Other symptoms that could indicate advanced prostate cancer would be blood in the urine and pain in the lower back, hip, or pelvis,” Dr Kalpee adds.
Because these symptoms are so similar, you can’t rely on them alone to distinguish between the conditions. “It is difficult to differentiate between prostate cancer and BPH on symptoms alone,” he explains. “Clinical examination with a digital rectal examination and a blood test to check Prostate-Specific Antigen (PSA) is key to making a diagnosis.”
PSA is a protein produced by normal and malignant cells in the prostate gland, which can indicate prostate cancer risk.
WHO’S MOST AT RISK?
Alarmingly, statistics show that black African men are 60% more likely to develop prostate cancer than other population groups. So why is this? The answer is twofold. The first is socio-economic. The sad truth is that many black African men lack access to medical care, including regular screening, and if you aren’t screened, you aren’t treated in time. The second is genetics: research indicates that black African men have higher levels of PSA in the blood.
When it comes to prostate cancer, Dr Kalpee explains that there are generally two main variants:
• Aggressive forms that develop in men in their 40s or 50s are often associated with a strong family history. These are relatively rare but require close attention.
• Slower-growing types that manifest later in life, usually around age 70, and tend to progress gradually.
“Studies locally and internationally show that a family history (father and/or brother) and being of African heritage (as explained above) place you at a higher risk,” Dr Kalpee notes. Lifestyle factors such as a high-fat diet, lack of exercise, smoking, and being overweight can also increase your chances.
Dr Cornish emphasises that genetics is essential beyond just male relatives: “Men with a family history of prostate cancer or female relatives with breast or ovarian cancer have an increased genetic risk and require earlier or more frequent screening.”

Prostate screening is quick, simple, and potentially lifesaving. Dr Cornish highlights, “To improve prostate cancer outcomes across all communities, we need men to have open conversations with their doctors about screening. PSA levels can indicate various prostate-related issues, including an enlarged prostate, infection

or prostate cancer. Higher PSA levels mean there is something worth investigating – it doesn’t automatically mean cancer.”
WHEN TO BEGIN SCREENING:
Men should begin prostate screening between the ages of 45 and 50. Those at higher risk (including black men and those with a close family history) should start earlier, from age 40.
Frequency depends on individual risk and previous PSA results, continuing until roughly the last 10 years of life.
“The need for regular screening starting in a man’s 40s is tied to the observation that prostate cancer appears to be occurring earlier in succeeding generations,” says Dr Cornish. “Even the more aggressive cancers, though a small percentage, are often detected in younger men. Screening may truly be lifesaving.”
For men who may feel hesitant about visiting a doctor right away, there are now home selftesting kits for prostate health. These kits usually measure PSA levels from a small blood sample taken at home and sent to a certified lab for analysis.
Though self-testing kits cannot replace professional assessment, they can serve as a helpful initial step for men hesitant to visit a doctor. If your PSA level is high, it is essential to consult a urologist promptly for confirmation and guidance.
“Treatment has certainly evolved,” says Dr Kalpee. “We now have approaches that prolong life and improve quality of life. Options include surgery (particularly robot-assisted procedures), radiation therapy (including brachytherapy), hormone therapy, chemotherapy, and, for slower-growing cancers, active surveillance.”
Active surveillance is a deliberate approach where cancer is monitored closely rather than treated immediately.
“This gives men time to consider their options and ask questions. Prostate cancer usually progresses more slowly than cancers like lung or liver, so early diagnosis gives men a choice,” Dr Cornish explains.
WHAT YOU CAN DO RIGHT NOW
There are practical steps men can take to lower their risk and improve outcomes:
• Eat a diet low in red meat and rich in fruits and vegetables
• Exercise regularly
• Don’t smoke
• Limit alcohol
• Reduce stress
• Get checked regularly
Dr Cornish encourages men to initiate conversations with loved ones as well: “As men, we never know when this common male cancer could strike, but we can prepare for better outcomes by making screening part of our health routine and helping to protect our loved ones through these important conversations with the men in our families.” IB

Hello again, it’s me, the Inbound SA driver. My week-long drive with the Omoda C5 1.5T 230T Lux X was exceptional. Listen, some cars you simply drive, and others have a way of driving you.
NICE TO MEET YOU
The moment I approached the C5, I was captivated. Its diamond-pattern grille combined with T-shaped LED daytime running lights gives it a futuristic yet mischievous appearance. The sloping roofline and bold curves suggest speed even while stationary, while the 18-inch alloys subtly convey authority.
And then there’s the colour options; mine is sleek metallic grey. It’s one of those cars that makes people glance twice, maybe even thrice. There’s confidence in its stance and a nearly playful flirtation in the way the golden sunlight catches its curves.
POWER THAT WHISPERS
I opened the bonnet to reveal the 1.5-litre turbocharged engine. It delivers 115kW of eager power and 230Nm of torque, all sent through a silky CVT (continuously variable transmission). Over my week of testing, I realised the C5 isn’t shy about performance. It slips into effortless acceleration, whether in Sport or Eco mode.

It’s not a bruiser, but it has just enough bite to keep your interest, and the steering is precise enough that you feel connected to every bend in the road.
A CABIN THAT SEDUCES
Step inside, and the C5 continues to enchant. Two 10.25-inch HD screens command the dashboard, providing smooth infotainment and navigation controls. The design is minimal yet lavish, with leather seats that cocoon you like a lover’s embrace and 64-colour ambient lighting that sets the perfect mood for every journey, day or night. Every detail feels intentional.
One of my favourite features? The panoramic sunroof. There’s something about being drenched in sunlight or stargazing on late-night drives that turns ordinary journeys into moments of luxury. Open it, and suddenly the cabin feels more spacious, freeing and vibrant. It’s the kind of detail that makes you want to take detours, to enjoy the wind and sunshine.

At R426 000, the Omoda fits within the premium compact SUV segment. When considering its technology, comfort and undeniable appeal, it appears to be a worthwhile investment. This is one of those cars where the price not only covers metal and wheels but also the driving experience.

In the curated landscape of Pretoria’s Silver Lakes Golf Estate, Askara Haus makes a different kind of statement. It is a declaration of place. A boutique hotel where the raw concrete, soaring volumes and framed vistas create a uniquely South African sanctuary.
For its architect, Liana Els-Bull of Design Trilogy, the project was an exercise in listening, with the site itself becoming the primary author.
“The corner stand, with its sweeping views over the fairways, was an undeniable catalyst,” Liana explains. “The architecture had to harness that dialogue between the building and the landscape.” The result is a powerful composition of off-shutter concrete boxes and glazed planes that appear to rise from the terrain.

“The arrival sequence is crucial,” notes Liana. “You move from the solidity of the exterior into a double-volume lobby that immediately lifts the spirit, offering a glimpse through to the courtyard and beyond. It’s a moment of compression and release.”

One of the most striking moves is the positioning of the first-floor guest rooms, set parallel to the golf course to maximise the panorama, while the ground floor responds to the street. This creates a dynamic tension: a building that is both firmly grounded and reaching toward the view.
This conscious departure from the estate’s more traditional vernacular is central to the hotel’s identity.
“The statement is one of authenticity,” says Liana. “We chose to respond to Pretoria’s light and climate with material honesty: concrete for thermal mass, steel for its economy and strength, glass for connection. This isn’t a style imposed from outside; it’s a direct response to context.”
THE JOURNEY THROUGH SPACE
Volume and light guide movement effortlessly. A floating staircase, with its delicate timber screen and transparent balustrade, draws the eye upward – a light counterpoint to the building’s robust core.
Corridors are not mere passageways but curated galleries, with openings that frame alternating views of a zen-inspired courtyard or the expansive greens of the golf course. The structure itself is celebrated, not concealed; exposed steel portal

“The relationship is one of simultaneity,” Liana clarifies. “From the beginning, the shell was a sculptural framework that demanded integration, not just decoration.”

My recent flight with Lift from Cape Town to Johannesburg, and back, reminded me of what true South African hospitality feels like. From seamless online check-in and simple seat selection to the warm smiles of the cabin crew, every part reflected careful service and a genuine sense of local pride.
Boarding was swift, the flight took off on time and I was pleasantly surprised by the comfort, legroom and cleanliness of my seat near the back of the aircraft. Shortly after take-off, the crew started the in-flight service. While many passengers chose the signature cookie, I opted for the fruit-and-nut snack – a small but appreciated alternative that perfectly suited my healthconscious lifestyle.
What impressed me most was the crew’s natural rapport with frequent flyers. Their warmth and familiarity, combined with professionalism, created an atmosphere that felt both friendly and
polished – like being welcomed by friends who also happen to run a tight ship.
The return flight from Johannesburg was just as smooth but brought an unexpected blessing. With a sore knee, I booked an emergency row seat and was lucky to have the whole row to myself. It let me stretch out and lift my leg – a simple comfort that made all the difference. Whether by chance or Lift’s quiet attention to passengers, I felt truly looked after.
The highlight, however, came as we landed in Cape Town. The cabin filled with the uplifting sounds of Zolani Mahola’s theme song for Lift, “Lift Me Higher”, a tune that evoked a sense of homecoming, peace and joy.

With roots dating back to the 1700s, Penhill is rich in history. The farm’s oldest homestead – built with mud bricks, poplar beams, and thatch – still stands today, complete with its original bakoond (outdoor oven). It remains the oldest dwelling in the Nuy Valley, serving as a tangible reminder of a lasting legacy preserved across 700ha of private farmland.
For our family of four, a weekend at Penhill was more than just an escape; it was a refreshing breath of tranquillity. We stayed at Pepper Tree Cottage, a luxurious yet cosy retreat where comfort blends with elegance amidst nature. Upon arrival, we were warmly greeted by executive chef and duty manager Kaylin Govender, whose thoughtful hospitality became a memorable part of our stay.

Waking up each morning to the sounds of birdsong and mountain views, we felt utterly disconnected from the rush of everyday life. The weekend carried special significance: I celebrated my birthday on 26 September, followed by my son’s the next day. Penhill offered the perfect setting to commemorate our milestones in style.
OUR WEEKEND AT A GLANCE FRIDAY
After check-in, a guided tour highlighted the farm’s beauty. That evening, we gathered for a birthday dinner prepared by Chef Kaylin – a refined à la carte experience that set the tone for the days ahead.
SATURDAY
A hearty English breakfast gave us energy for a relaxed day. By late morning, we headed to a picnic by the dam, where a basket filled with delights awaited us, enjoyed in the open air. In the afternoon, a family favourite unfolded – a hands-on pizza-making class with Chef Kay. His friendly manner and humour made the experience enjoyable, culminating in rustic pizzas that we shared happily.
SUNDAY
Our final morning was spent enjoying a hearty breakfast and engaging in extended conversations, hesitant to leave the peacefulness of Pepper Tree Cottage.

ACTIVITIES AND ADVENTURES
Beyond relaxation, Penhill offers plenty of adventure. Mountain biking, hiking, tennis and kayaking on the dam provide activities for both families and thrill-seekers. For us, kayaking brought the most laughter, especially when my husband capsized on his first try before finding his rhythm. These moments of fun created memories as lasting as the views.

HOSPITALITY WITH HEART
What made our stay truly memorable wasn’t just the beautiful surroundings but also Chef Kaylin’s thoughtful gestures. The celebratory cake he unexpectedly brought us, along with the warm atmosphere at each meal, highlighted Penhill’s spirit: genuine, generous, and unforgettable. The activities planned for our family were personalised, never generic, seamlessly blending relaxation with subtle adventure.
A PLACE TO RETURN TO
Penhill Farm is more than just a destination; it’s an experience, a unique mix of natural beauty, refined comfort, and heartfelt hospitality. WHAT FLAVOUR PHILOSOPHY WILL YOU BE BRINGING INTO THE KITCHEN?
My flavour philosophy is a journey through my diverse heritage – Durban Indian, North Indian, and KZN Zulu. I aim to create a harmonious blend of spices, techniques and fresh local ingredients, much like the essence of Durban curry. It’s about celebrating this cultural amalgamation on a plate.
THE PROTEA RESTAURANT SERVES HOTEL GUESTS, WHILE THE HIGHLINE ATTRACTS THE CITY; HOW WILL YOU BALANCE THESE TWO WORLDS?
To appeal to both international hotel guests at The Protea and local city diners at The Highline, a two-pronged approach will be used. The Protea
will feature a sophisticated menu with global influences, including functional and fusion flavours, refined spices, and elegant plantbased options. The Highline will offer a more casual, trend-forward experience featuring globally inspired street food, gourmet tapas, and interactive dining elements. This strategy provides distinct experiences for each audience while maintaining a consistent commitment to quality and creativity.
IF JOHANNESBURG COULD BE SUMMED UP IN ONE DISH, HOW WOULD YOU SERVE IT ON A PLATE?
My dish for Johannesburg would be a deconstructed and elevated bunny chow. This iconic street food was born from the Indian communities of Durban, and my version would bring its powerful story and flavours to a fine-
dining plate. Instead of a simple hollowed loaf, I would serve a rich, intensely flavoured Durban curry using lamb. The curry would be prepared using slow-cooking methods from North Indian cuisine to build a more complex, layered flavour profile, with a final drizzle of a spiced ghee to finish. A delicate mini-brioche loaf, toasted and stuffed with the fragrant lamb curry representing the heart of the “bunny” but with a more refined touch. A vibrant, cooling raita with a hint of cumin and cucumber provides a gentle counterpoint to the heat of the curry. At the same time, a small, crisp samosa-inspired fritter, filled with seasoned potatoes and peas, adds texture and a touch of street-food nostalgia.
This dish celebrates the journey of a humble meal from the streets to a sophisticated table, echoing Johannesburg’s rise from a mining town to a bustling, multicultural city.

To avoid predictable hotel dining, I plan to fuse fresh, local ingredients with international flavours and culinary trends.
This strategy involves using new global ingredients and techniques, exploring sophisticated plant-based options, incorporating functional foods for health benefits and creating multi-sensory experiences to offer diners a memorable sense of cultural adventure.
WHICH SIGNATURE DISH OF YOURS SHOULD DINERS TRY FIRST?
Diners should look out for a reimagined take on the classic bunny chow.
PLANT-BASED, VEGETARIAN, GLUTENFREE... HOW DO YOU MAKE THESE DISHES STAND OUT RATHER THAN JUST TICK BOXES?
By designing them to be vibrant and flavourful in their own right, never as an afterthought.
That means:
• Focusing on fresh, seasonal ingredients to ensure natural flavour and colour.
• Using spices and herbs to build complex, layered flavour profiles.
• Exploring innovative cooking methods –grilling, roasting, fermenting – to create exciting textures and presentations.
THERE IS A BIG DRIVE FOR SUSTAINABILITY. WHAT IS YOUR TAKE ON THIS?
In my kitchen, sustainability means minimising food waste: this involves precise inventory management, thoughtful menu planning, portion control and creative use of scraps and leftovers.
Responsible sourcing prioritises local, organic, and ethically produced ingredients whenever possible. Energy efficiency means implementing innovative kitchen practices.
THE HIGHLINE OFFERS SKYLINE VIEWS. HOW DO YOU CREATE A MENU THAT COMPLEMENTS THE SETTING?
The menu for The Highline will complement the panoramic skyline views by providing light and elegant dishes, focusing on dishes that are visually appealing and easy to enjoy in a relaxed setting. Vibrant colours and textures incorporate ingredients and plating styles that enhance the experience and reflect the dynamic city below. Sharing plates and small bites encourages a social and interactive dining experience that matches the lively ambience.
A YEAR FROM NOW, WHAT WOULD SUCCESS AT COURTYARD HOTEL WATERFALL CITY LOOK LIKE TO YOU?
Success would be seeing both The Protea and The Highline become recognised dining destinations in Johannesburg. It means having a happy, motivated team that is constantly learning and growing under my guidance. Most importantly, it means consistently delighting guests with innovative, flavourful dishes that celebrate South African heritage while resonating with an international audience.
OFF-DUTY, WHAT’S YOUR GO-TO COMFORT DISH WHEN NO ONE’S WATCHING?
When I’m off-duty and no one’s watching, I retreat to the comforting flavours of a slowcooked Durban-style biryani. It’s not a quick meal, but the methodical process of layering fragrant basmati rice with tender, spice-infused lamb is a form of meditation for me. The result is a pot full of deep, aromatic flavour – earthy from the spices, sweet from the caramelised onions and tangy from the yoghurt. It’s a complete meal in itself, full of warmth and history and it always reminds me of my mother’s cooking. IB

FUSS-FREE BACON & FETA FRITTATA

Serves: 4
INGREDIENTS
• 150g bacon, diced
• 1 tablespoon olive oil
• 2 handfuls (about 100g) baby spinach, finely chopped
• 6 eggs, lightly whisked
• 1 cup full cream milk
• ½ cup feta (crumbled) or soft goat’s milk cheese, or cheddar, grated
• salt & black pepper, to taste
To serve:
• salad greens, dressed

METHOD
1. Preheat the oven to 190°C.
2. Fry the bacon in a little olive oil in a mediumsized ovenproof pan for 3–4 minutes, or until it is lightly golden. Stir in the spinach until it wilts.
3. Beat the eggs and milk together and pour into the pan. Add the cheese and seasoning.
4. Bake for 20 minutes, or until golden. Remove from the oven, let it cool slightly, then serve.

VARIATIONS
• Use slivers of smoked salmon instead of bacon, which will also shorten the cooking time, as you only need to wilt the spinach before baking.
• Divide the mixture among the holes of a muffin tray to make a tasty snack or lunchbox filler.

TUNA AVO AIOLI BAGEL TOASTS

INGREDIENTS
• 60ml mayonnaise
• 1 garlic clove, crushed
• 170g tin tuna, drained
• 1½ avocados, thinly sliced
• zest and juice of ½ lemon
• 2 bagels, cut open
• avocado or olive oil for cooking
• 45ml capers
• salt & freshly ground black pepper
METHOD
1. Blitz together the mayonnaise, garlic, tuna, ½ avocado and lemon zest and juice to taste, until smooth.
2. Pack the bagels, cut side up, on a roasting tray and drizzle with oil. Toast under a hot grill for about 3 minutes or until crisp on one side.
3. Heat a splash of oil in a small frying pan on high and fry the capers for about 30 seconds or until crisp. Drain on a paper towel.
4. Spread the toasted bagels generously with the tuna aioli. Layer with the remaining avocado slices, seasoned lightly with salt and freshly ground black pepper. Finish with a scatter of capers.
5. Serve immediately for the best texture and flavour.

Optional: Garnish with thinly sliced red onion mixed with a squeeze of lemon juice, lemon rings and baby herbs.
