INGREDIENTS (for 4 persons)

4 sheets puff pastry 4 eggs 50 g mature grated cheese 2 tablespoons chopped shallots 50 g finely chopped bacon 2 tablespoons oregano 2 tablespoons Greek yoghurt Salt & pepper

For more egg recipes: www.mmmeggies.nl When in Cyprus, spoiled for choice when ordering, just order a meze: 10 to 20 varied individual dishes. Small plates with a variety of delicacies. But in Cyprus small dishes isn’t a small affair! Cypriot sausages, grilled fish, eggplant, grilled halloumi, olives and small egg quiches! Egg mini quiches – a very easy recipe!

Preparation:

1. Preheat the oven at 210°C.

2. Whisk the eggs firmly. Make sure you do until the eggs are fluffy (this will make your quiches light and fluffy!).

3. After a few minutes add the yoghurt, cheese, chopped shallots, bacon, oregano and salt and pepper to taste. Mix everything together and let it rest.

4. Meanwhile butter 4 small oven dishes and place a sheet of puff pastry in each.

5. Fill the pastry with your egg mixture.

6. Place in the pre-heated oven and bake for about 20 to 25 minutes.
