I fell into a job at the Daily Telegraph working in their call centre. I had to cold call people and sell them yearly subscriptions to the paper. It was a tough sell but I stayed for two years as I enjoyed speaking to the public every day. I also loved the buzz of making a sale!

After two successful years at the paper but with no opportunity to progress further, I started seeking new roles within sales. The ossobuco is cooked slow and at low heat and finished with "gremolata", a simple mix of parsley, lemon zest and anchovies.

Lightly drench the ossobuco (veal) slices in flour and shake off the excess. Push the onions on to one side of the pot and place the meat in the free space. Let it sear for 3 minutes per side.

4. Deglaze with the wine and let it evaporate stirring the rice for about 3 minutes. Add 1⁄2 cup warm stock; cook, stirring, until absorbed. Add the marrow and continue adding stock, 1⁄2 cup at a time; let it absorb before adding more.

5. Once the rice is tender and creamy, (about 30 minutes), turn off the heat.

Add the grated Parmesan and mix well to combine and season to taste. At this point your meat should have rested for at least 15 minutes. Top it with the gremolata and serve with the risotto.

Pre-heat the oven to 180°C. Drape the pastry sheet over a large shallow flan dish and prick the base with a fork. Trim the edges and set aside.

2. Add the butter and sugar to a food processor and whizz until pale and creamy. Next add

Place the peach halves on top (cut side down) and press them down lightly, before dotting any gaps with raspberries, making sure they are pushed into the mixture.

4. Scatter with the flaked almonds then bake in the oven for 35-40 minutes or until set and golden.
