March is the start of the annual Hidden Meadows Community Foundation fundraising campaign, and WE NEED YOU! 2024 was a busy year for the Foundation and Hidden Meadows residents, with a full schedule of community and public events. In addition to traditional activities like the Fourth of July Parade, Toys for Tots gift collection, Trunk or Treat, and the Turkey Trot, we held the third annual Spring Carnival (Kid’s Fair) and our second annual Vintage Car Show.

Additionally, we awarded scholarships to six deserving local students and continued maintenance activities on the Mountain Meadow median.

Supers approve property tax allocation for Deer Springs

By DAVID ROSS At Tuesday’s Board of Supervisors meeting the board—following the lead of 5th District Supervisor Jim Desmond, gave the final approval to a transfer of property tax revenues from County and increasing the property tax allocations for the Valley Center and Deer Springs fire protection districts.

The vote was 3-1, with Terra Lawson-Remer voting no.

Last October the board looked at several options for increasing financial resources to the Deer Springs Fire Protection District and the Valley Center Fire Protection District (VCFPD) to provide for additional fire protection and emergency response services.

The board directed the Chief Administrative Officer to pursue an increase in the DSFPD and VCFPD property tax allocation to 6%, effective Fiscal Year 2025-26. Previously Valley Center and Deer Springs had received 2% of the 1% of property taxes collected locally.

Last December the boards of both Valley Center and Deer Springs districts held hearings on how their intend to using the additional tax funding.

Tuesday’s resolution was the final one required by the Board of Supervisors to satisfy the specific requirements in California Government Code Section 99.02 for a transferring agency to increase the property tax allocations for Deer Springs and Valley Center from approximately 2% to 6% effective Fiscal Year 2025-26.

Once again, we’re trying to minimize our paper consumption on our annual solicitation and only inserting donation packets in one month’s publication of the Hidden Meadows News (April) as opposed to three months as we had done in the past (Mar/Apr/May). We hope providing one envelope won’t diminish your generosity and ask you to be sure and to look for the donation envelope in the April edition of the paper.

North County Health and Wellness Fair will be held March 13 The Escondido Chamber of Commerce, in conjunction with the County of San Diego and Neighborhood Healthcare, is hosting the 2nd annual Body, Mind and Business Wellness Fair on Thursday March 13.

The event will be held at the North Inland Live Well Center at 649 W. Mission Avenue in Escondido from 5-7 p.m.

The free event will provide opportunities for guests to meet and hear from local businesses on topics such as financial wellness, health, and fitness, and sample food from healthy food restaurants.

Selected vendor businesses will provide presentations on wellness topics and share resources to improve health and wellness. County Supervisor Desmond’s local office representatives will provide information on county sponsored programs for community residents. All San Diego county residents are invited to attend.

Neighborhood Healthcare is the title sponsor of this year’s event, however, opportunities are still available for sponsorships, and for business vendors.

pests. Jim, a native Arizona ranch boy, has spent a career building and running pest control businesses and currently focuses on his first love, which is how to protect our gardens from varmints.

It seems the big four include moles, voles, ground squirrels and Pocket Gophers. Jim says that Moles are only a problem in heavily water-saturated places, and he has only had one mole call in the last 15 years. Voles are almost equally rare. The key differences between moles and voles lie in their appearance, behavior and diet (key to the gardeners’ distrust of the critters). Moles have large, paddle-like front paws designed for digging and small beady eyes. Voles look more like typical rodents, with rounded faces, visible ears, and normal-sized eyes. Moles spend almost their entire lives underground in complex tunnel systems, rarely coming to the surface. Voles live both above and below ground, creating surface runways through grass and shallow burrows. They’re social animals that live in colonies. Moles are insectivores, feeding mainly on earthworms, grubs, and other soil invertebrates where Voles are herbivores, eating plants, roots, bark, seeds, and bulbs.

They can cause significant damage to gardens by eating plant roots and bark.

The big focus of interest in our area is on ground squirrels and pocket gophers. Using the same criteria, ground squirrels have large, visible eyes, small, rounded ears, and long furry tails. They look like typical squirrels but are stockier, with bodies adapted for ground living. Ground squirrels are active during daylight hours and are often seen sit-

ting upright watching for predators. They’re social animals that live in colonies and communicate with various calls. Ground squirrel burrows have multiple large, visible entrance holes (2-4 inches in diameter) with dirt scattered around them. Ground squirrels primarily eat seeds, nuts, grains, and green vegetation.

Pocket gophers have small eyes, tiny external ears, and large front teeth that are visible even when their mouth is closed. They have distinctive fur-lined cheek pouches for carrying food and nesting material. Their tails are short and nearly hairless. Pocket gophers are rarely seen as they spend almost all their time underground. They’re solitary and highly territorial, with each gopher maintaining its own burrow system up to 40-50 feet in length. Pocket gopher burrows have crescent or horseshoe-shaped mounds with the entrance hole usually plugged. They create deeper, more extensive tunnel systems. Pocket gophers are primarily herbivorous, feeding on roots, tubers, and other underground plant parts. They sometimes pull plants down into their burrows from below so watch out for disappearing agaves!

The group had an endless array of questions for Jim and in his avuncular style, he entertained the group on the topic of how to best get rid of these pesky squirrels and gophers when they cause property damage and garden problems. The session ended with a 10-question quiz about pocket gophers with the winner getting a discount coupon for Jim’s pest services. “Last House” - by Jessica Shattuck - fiction In 1953 Bet and Nick Taylor appear to be the average American couple....but they’re not. They have settled in a small town with their two children: Katherine and Harry. As a WWII veteran and a lawyer, Nick is able to comfortably provide for his family.

One of their possessions is a get-away cabin in the woods of Vermont called the Last House. There is not much in the early 60s that disturbs them.... but that all changes.

By 1968 the political environment in the world has started to stir up the establishment. A new generation has emerged with new ideas. Vietnam, the assassination of Martin Luther King and President Kennedy, and American’s dependence on foreign oil all fuel the fires of the protest marches on college campuses and city streets.

When the Taylor children get caught up in the protest marches, tragedy strikes and Harry is killed in an explosion. The family is forced to look back and wonder if the choices they made at that time were the right ones. Could they have avoided the circumstances that led to the tragedy of losing their son?

You will have to decide the answer to that question.

The second speaker was the host, Faraj Tavangari, who shared an informative PowerPoint on hydroponic gardening for growing tomatoes and other vegetables. It’s a complex process with some important learning steps but ultimately can be a great way to fill your vegetable larder with high output produce that uses 90% less water than vegetables grown in soil. Hydroponic growing systems are resource efficient (water, nutrients and space) and give the grower more control over the growing environment and faster growth times which produces higher quality produce with less environmental impact. Faraj ended with a quick tour of both his hydroponic and soil-based vegetable garden to give the lecture a real-world edge.

Meanwhile, Yasuko, helped by several members, including Melisa Mitchell, Pat Tanabe and Bonnie Metzger, set out a sumptuous and exotic lunch of samosas (triangular pastry filled with spiced potatoes, peas and chicken) served with cilantro/mint chutney and raita (yoghurt and cucumber) sauce, along with crispy chicken biryani rice. Dessert included Valentine Day cupcakes and delicious mini pecan pies. No one went home hungry, and everyone also took home newly imprinted Hidden Meadows Garden Club Tshirts to advance the club presence around our local hilltops.

Hawthorne Country Store celebrates Chicktopia, March 8 Hawthorne Country Store hosts its annual spring Chick Day on Saturday, March 8, 9 a.m. to 5 p.m. in Escondido, Fallbrook, and Santee. This annual celebration will host more than 100 varieties of baby poultry. It is a great way to learn about raising a home flock of backyard chickens. Hundreds of families typically attend each year.

“More and more families are finding that chickens are pets that come with great benefits, such as producing protein, creating fertilizer, and recycling waste,” says Heather Thelen, owner of Hawthorne Country Store. “We are excited to once again bring this popular event to our communities Escondido, Fallbrook and Santee]and share all our chicken knowledge.”

HMWSG Galentine’s Dinner: A Night of Love, Laughter, and Delicious Food

By Pat Tanabe / Resident Valentine’s Day is often celebrated with a romantic partner, but the Hidden Meadows Women’s Social Group, honored women’s friendship with their Galentine’s Dinner on February 13th. Galentine’s Day came into existence from a 2010 episode of the comedy show Parks and Recreation.

Co-hosted by the dynamic duo Maria Templeton and Diana Procter, the event was a wonderful celebration of women, food, and the spirit of camaraderie.

A Beautifully Decorated Setting As guests entered Maria’s home, they were greeted by tables that radiated the galentine spirit. Maria and Diana spared no detail in creating an inviting atmo-

sphere, with Valentine-themed decorations adorning every corner. The table itself was a feast for the eyes, with Valentine garlands transformed into charming napkin rings around red napkins and a number of red flowering potted plants as centerpieces. Bouqets of red balloons decorated the room, adding a playful and festive vibe to the night. The finishing touches included heart-shaped or -decorated plates and snack cups.

A Fun and Interactive Cooking Demonstration One of the evening's standout moments was the interactive cooking demonstration. Maria shared her culinary skills by teaching the guests how to prepare delicious Mexican rice. As she prepared the dish, everyone eagerly jotted down notes on heart-decorated recipe cards and pencils. The demonstration was both fun

The dinner itself was a culinary delight. The menu included heartshaped quesadillas, which added a whimsical twist to a classic favorite. DIY tacos filled with shredded chicken and a variety of tasty toppings allowed each guest to build their ideal taco, with zesty salsa, creamy guacamole and/or lettuce and cheese. The tacos were complemented by perfectly seasoned refried beans and mexican rice, adding a savory and comforting touch to the meal.

Guests also contributed salads and desserts. Highlights included rich, fudgy brownie bites, a beautifully prepared apple tarte tatin, and a tangy-sweet lemon curd blueberry cake that perfectly balanced the savory meal.

A Celebration of Friendship Throughout the evening, laughter and conversation filled the air as women gathered to celebrate their bond of friendship. Thanks to the thoughtful planning and generous hospitality of Maria Templeton and Diana Procter, the Hidden Meadows Women’s Social Group’s Galentine’s Dinner was an unforgettable night filled with delicious food, heartfelt moments, and a whole lot of love. It was the perfect occasion to celebrate the amazing women in our neighborhood, who make our lives richer, funnier, and more fulfilling.

By JIM DESMOND It’s extremely concerning how the insurance crisis in California is impacting our communities. Many homeowners are finding themselves without coverage or facing skyrocketing premiums due to the policies implemented by the Insurance Commissioner’s office.

Last week, I wrote a letter to Insurance Commissioner Ricardo Lara, urging him to take immediate action to fix the mess that has been made. This issue is leaving countless residents vulnerable, especially as wildfires become more frequent and severe.

taurant opened in1980 – so 2025 marks their 45th year in business!

The Golden Egg Omelet House is known for its warm hospitality and great service. We experienced this first-hand as Karla, our waitress was warm and welcoming.

Clearly the staff love to work at this restaurant, as noted in a 2016 San Diego Union Tribune article - John Lovett remarked that the children of past employees now work at the restaurant! Karleen, the owner, was unable to join us for lunch, but she made sure we were

In addition to the standard sandwiches (beef, corned beef, grilled cheese, tuna salad, egg salad BLT), there are “Very Special Sandwiches which includes a variety of melts (mushroom, tuna and chicken), other hot sandwiches (Reuben, French dip and hot beef) as well as cold sandwich combinations. There are also hamburgers and a patty melt, and salads complete the lunch menu.

But that’s not all. The Lovetts have also curated a separate menu that features potato casseroles— like Minnesota’s beloved “hotdish.”

What is a hotdish? It's a complete meal that typically contains meat, vegetables, starch, and creamy sauce or cream soup. The potato casseroles are named after various states, oddly, there is no potato casserole named Minnesota. There are twelve different potato casseroles –

one is a New York Style (including Italian sausage, marinara sauce, olives, etc.) and another is a California Style (including broccoli, ham, tomatoes, hollandaise sauce).

‘Girls just wanna have brunch!’

By: E.M. Trivoli / Resident February can be fickle. Some days (like last week!) it’s cold and constantly raining. Other days are 100% gorgeous; warm and sunny. Yesterday was just like that when we (the Hidden Meadows Women’s Social Group) met up at TERI: Campus of Life, in San Marcos.

It was a nice little daytime group: Lisa, Laurie, Linda, Vickie, Dawn, Danielle, Michelle and EV. We also welcomed a new person! Maria, originally from Rochester, New York, just moved to our community. Many of us can relate to the sometimes challenging feeling of making a move, meeting new people and trying to feel at home; that’s where joining a group like ours really shines.

TERI (an acronym for Training, Education, and Resource Institute) is on a 20-acre spread along Deer Springs Road among the rolling hills of the Twin Oaks Valley. Over the past few decades it’s grown a lot, yet remained focused on its original goal: to improve the quality of life for children and adults with developmental and learning disabilities, and to change the way the world sees them, allowing for inclusion within the community.

One way TERI does this is by running an inviting food and beverage place called Common Grounds Café & Coffee Bar. Seated on their spacious, east-facing patio, I’m pretty sure I could see Mountain Meadow

The daytime menu has a nice variety of salads, sandwiches and breakfast items; plus sweet treats and a full coffee & smoothie bar. Overwhelmingly, we were super impressed by how good the food was. Around our table there was a breakfast burrito, cinnamon roll, egg-cheese bagel, avocado toast, turkey club and Cubano sandwiches, a parfait, and very fresh salads. All big hits!

A few of us had been to TERI before, in early evening. And once our version of winter is finished, the early evening menu and live entertainment on the patio will be back. (Sidenote: one of our members, Robin, has a musical group that often performs at TERI. I learned yesterday that Laurie is her sister. Who knew? Everyone but me.)

Monthly lunches (or brunches!) are just one of the many social events enjoyed by members of the Hidden Meadows Women’s Social Group. We also get together for Evening Socials at different homes, Mexican Train and Poker Nights, Mah Jong and more. As I was saying to Maria, when you’re in our group there’s always something to do, someone to chat with and great food and drinks to be had.

Established in 2019, the gallery has quickly become a beloved institution, showcasing the diverse talents of local artists and fostering a deep appreciation for the arts.

The inception of the Valley Center Art Gallery was driven by a group of passionate art enthusiasts, including founding members Barbara Scharnau and Gloria Warren. They recognized the need for a dedicated space to celebrate and promote the creative endeavors of the community.

Despite not having a building to call “home” throughout all these years, the gallery has persevered and currently shares space with the Valley Center Public Library. This collaboration has enabled the gallery to host countless exhibitions, workshops, and events, providing a platform for both emerging and established artists to share their work with the public.

Dear Commissioner Lara, I’m writing to express my deep concern about the current state of fire insurance coverage in California.

Many residents in my district and across the state are being left vulnerable and uninsured due to the policies under your jurisdiction.

The regulatory decisions you’ve overseen have driven major insurance providers out of the market or forced them to drastically reduce coverage in high-risk areas. This has left thousands of Californians with no choice but to rely on the FAIR Plan, which offers limited coverage at extremely high rates. For example, when State Farm dropped approximately 1,600 policies in Pacific Palisades before the recent devastating fires, many homeowners were left unprotected. Now, I’m reading that the California Fair Plan is on the brink of insolvency, due to fires in Los Angeles.

The temporary moratoriums you issued on policy cancellations after disasters are simply a short-term fix.

Homeowners need long-term, sustainable solutions, not just yearly delays that fail to encourage insurers to return to the market or expand their offerings.
