Rosa Jimenez adds homemade guava jam to a batch of pastelitos at Babalu’s Cuban Cuisine Jan. 24. “We wanted to open a Mexican restaurant,” Jimenez said. “There’s way too many in Fort Collins, so what I decided to do is to go through all of the restaurants that we have in town and see if there was anything that was being offered as far as traditional Cuban, and there wasn’t.”
