PUBLISHER’S LETTER

March and April bring warmer weather, blooming flowers, and springtime holidays; March with St. Patrick’s Day and April with Easter. I remember as a child always making sure to wear green on St. Patrick’s Day to avoid being pinched. I’m not sure why that was a thing back then, but there you go with crazy kids. Easter reminds us of Jesus and how lucky we are to have such a generous Savior who died for our sins only to rise again and defeat death. My Mom would always dress me up in frilly dresses and patent shoes for church. My Grandma would say that the flowers would always bloom for Easter to celebrate the Risen King. How lucky we are indeed!

Baseball was a huge part of our family year-round for many years, but it is historically a spring sport. My son, Zane, played and my husband, Brian, volunteered as a coach for the Lexington Dixie Youth and a USSSA travel team for nearly 10 years combined. To say that it is “all-consuming” is not an understatement as I remember endless weekends sitting with my daughter, McKayla, on fold-up chairs anxiously awaiting the outcome. Some of the friends we made are still friends today and we appreciate the experiences that were granted to our family. It is no small wonder that baseball is such a popular sport. You get as much as you give.

April also marks Brian and I's 23rd wedding anniversary! I can’t believe I’ve put up with him for that long (LOL—just teasing honey!). Seriously though, I am not shy about telling the world that he is the better part of me. I am so truly blessed to be able to call him mine and am grateful for all that he brings to my life and our family. Happy anniversary Baby! I love you!

You don’t have to be Irish to get in on the St. Patrick’s Day festivities! There are so many fun and crazy ways to honor the day, satisfy your cravings, and make some lasting memories. America initially embraced St. Patrick’s Day in 1762 with a parade in New York City. Today, we commemorate the day with authentic Irish food and brews, parades, pageants, live music, and pub parties. There are many traditions that the entire family can take part in to make the holiday special, both here in Lexington County and beyond. Be sure to cover your body in green attire so that you will be invisible to the mischievous, pinching leprechauns!

Town of Lexington’s Shamrock Festival

Whether you are planning on taking your furbaby for a stroll around town, participating in family-friendly festivities, or going out for corned beef and cabbage with friends on Saturday, March 9th, we have a complete day of fun planned for you! Get started at the Icehouse Pavilion with the Shamrock Festival Kids Zone beginning at 10:30 am. Fashion trends are constantly evolving; every generation has its approach to flair and finesse. If you drive down the roads of Lexington County and look around, on any day of the week and any month of the year, you will probably see kids playing baseball. Some play in their yard, some in a local schoolyard, and others on one of the dozens

From a young age children learn the importance of discipline, perseverance, and teamwork from baseball. They experience the thrill of victory and the disappointment of defeat. Baseball teaches them to handle pressure, make split-second decisions, and adapt to changing circumstances. These skills go beyond the playing field and are invaluable in all aspects of life.

It’s easy to get started — as there is no shortage of opportunities to play baseball in the Midlands. Almost every community (Lexington, Gilbert,

Midland, Cayce West Columbia, Pineview, and Gaston, just to name a few) has a Dixie Youth Baseball franchise and it’s easy to get started. In Irmo, there are other options such as S.O.A.R., a faith-based sports organization, as well as a Little League franchise. There are also dozens of independent teams that participate in the U.S. Specialty Sport Association (USSSA), otherwise known as “travel ball.”

Like many families, we started young with Dixie Youth, with T-ball for those 6 and under. It doesn’t resemble baseball really, but it’s very entertaining if you don’t take yourself too seriously. Then on to Coaches Pitch, my favorite, and where it starts to resemble the sport you know. Then comes the competitive worlds of Minors (9/10), Ozone (11/12), and Dixie Boys (13/14). Dixie Youth is a great way to get started in baseball at any age. It runs each year from February-May. If you’re worried about committing to 3-4 afternoons a week to baseball, look into “fall ball” options that are less time-consuming.

For those looking for more competition, these years are often spent at USSSA tournaments, where the time and financial commitment trend upward along with the competition and (typically) coaching prowess. In this world, baseball is life — 12 months a year — and your weekends are no longer yours. It’s a commitment for the entire family.

There are dozens of local teams with different age groups, but typically you end up seeing the same kids and the same families throughout the years. It can lead to some amazing relationships and friendships — for the players, their siblings, and their parents. I still closely follow the lives of young people who played with my sons; it delights me to see their successes in academics, athletics, and the working world.

I had the privilege of volunteering as a coach for our children and dozens of other young people. No matter what age or what level your child is playing, I suggest you look into volunteering on or off the field. Coaching has an impact beyond the technical aspects of the game. It is an opportunity to teach sportsmanship, respect, and the importance of hard work. Through coaching, we not only shape baseball abilities, but also character; volunteer coaches get those same rewards, and none of these organizations can exist without generous volunteers.

If your children stick with it through the formative years, one day you will suddenly find yourself with your middle-schooler at a high school for B-team tryouts.

Baseball is more than just a sport.

It is a journey that eventually leads to the bittersweet experience of watching baseball careers come to an end. It’s the last lesson of overcoming defeat this great game teaches us.

Celebrating Easter

Easter is an important holy day in many Christian religions. According to the Bible, Christ was crucified on Good Friday, buried for three days, and was resurrected on Easter Sunday. The celebrated day is referred to as a “moveable feast” as it does not fall on a specific date within the Gregorian or Julian calendars; it is observed on the first Sunday after the first full moon following the spring equinox. Since the first day of spring will be on March 19th following the full moon on March 25th, Easter 2024 will be observed on Sunday, March 31st.

Most people agree that spring connotes new life and opportunity--a chance to begin again. Nature offers new flowers, clusters of green leaves on bare limbs, and the sounds of birds returning from their winter homes. As winter and its dormant hues of gray and brown make their departure, vibrant shades of raw, bright beauty begin to emerge; highly anticipated warmth and extended sunlight are imminent.

The idea of Easter eggs is found in many cultures as a sign of birth. In Italy, where

both sets of my grandparents originated, eggs are a symbol of fertility and rebirth during spring. Every year my grandmother baked each of her ten grandchildren a hand-shaped Easter doll cookie. She adorned each doll with a hard-boiled egg pressed into its stomach and cradled in gentle dough arms. The dolls were probably close to nine inches tall and lasted for days while we ate one limb at a time. My cousin, Stephen, was the only boy among us and his cookie sported a bowtie fashioned with raisins instead of an egg. I never understood why, and I never asked. We hid our dolls from one another, lest one come up missing an arm from a crafty sibling. The dolls were an unforgettable treat for all of us. A large hand-crafted, dark chocolate egg filled with coconut cream from our favorite town chocolatier was the favored surprise in our Easter baskets. I loved the dark chocolate egg; my sister preferred the white chocolate variety, which solved many potential arguments.

My mother always dressed her girls "to the nines" for our Easter Mass at St. Patrick’s Catholic Church. My grandmother, a professional seamstress, usually made our outfits and we posed in front of our house in “Southern” New Jersey, crowned in Easter bonnet glory. Once outside, we inhaled the perfume of newly emergent crocuses, tulips, and daffodils. Hyacinths and snowdrops were the first to break through the thawed ground, scattered with remnants of weeks-old snowfall, and there were hints of my mother’s faithful pussy willows revealing themselves by the fence.

Our church had removed the dark red velvet veils that covered the statues during Lent, the six weeks of fasting and abstinence leading up to Easter. Those of us who had given up chocolate as our penance were ready for chocolate Easter eggs. The church smelled of fresh lilies, their delicate white, trumpet-shaped petals decorating the altar and statues. We celebrated new life and rebirth with our neighbors and friends together at Easter Mass as had our parents and their parents before them. No matter the religious culture, Easter symbolizes hope and new beginnings. An American writer, journalist and naturalist Harold Borland said, “No winter lasts forever; no spring skips its turn.”

Tax Tips

For some, it’s the most wonderful time of the year, but for others it’s that dreaded time again. While some will see green others will be crying red. However, have no fear, we have some information that may help you get through this painful process a little bit easier.

First, rejoice, we are all the same age. Beginning in 2020, the age limit was removed for traditional and Roth IRA contributions. For 2023, the max IRA contribution limit is $6,500 for under 50 and $7,500 for 50 or older. This means people still have a chance to put retirement money away for 2023. Just remember, you or your spouse must have earned income for 2023 to contribute, and deductibility depends on multiple factors. However, after rejuvenating ourselves with an IRA contribution it’s time to check for some of those coveted tax credits.

Tax credits reduce the tax you owe dollar for dollar. While some credits are non-refundable, basically one’s income taxes owed can’t go below 0, some credits are refundable. A refundable tax credit is a credit you can get as a refund even if you don't owe any tax according to the IRS. Therefore, you might get more back than you think, but you won’t know unless you file. Now that you have decided to file the most important part is deductions.

Deductions reduce how much of your income is subject to tax. Most people will take the standard deduction which increases for inflation each year and makes filing a sinch. However, some of us will be lucky enough to itemize. Itemized deductions are specific types of expenses the taxpayer incurred that may reduce taxable income. These are also referred to as “below-the-line” deductions. However, there are also “above the line” deductions. Eligible taxpayers can claim these regardless of whether they itemize or take the standard deduction so everybody wins.

How to Care for Hares

When choosing a pet, it is a good idea to consider the amount of time, space, money, and attention you are willing to invest. Kittens and puppies make wonderful “furbabies”; however, if you are searching for a pet that is more low maintenance, but also cute, soft, and interactive, a fluffy, floppy-eared bunny may be just right for your lifestyle.

Brandon Fulmer, owner of Southern Gems Rabbitry in Pelion, has been raising, handling, and showing rabbits for over 12 years. She started very young, “I begged my parents for a pair of New Zealand bunnies when I was just 4 years old, and they obliged. However, I learned a hard lesson and had to visit the ER due to a finger bite that broke a vein.” Luckily that painful episode did not reduce her love for rabbits but taught her to approach and handle them in a different manner. Brandon, also a Lead Interventionist for Lexington School District 1, recommends that a child be at least 5 years old and somewhat emotionally mature before buying a rabbit.

“Some bunnies are full of energy and crave interaction; others are shy and prefer to relax in a quiet environment. That is why it’s a great idea to spend quality moments with a rabbit (or any pet) before adopting, if possible.” Brandon has worked with Arabian show horses and many types of elite livestock within

professional, competitive realms as well as amateur, educational sessions. Her knowledge and expertise have produced awards in several Best Show of Breeds and Best Opposite Sex categories— she was 10th out of United States rabbit raisers in 2021! Here are a few more of her tips:

• Research first—dispel myths about rabbits (iceberg lettuce causes digestive problems).

• Do not feed your rabbit alfalfa--rabbit feed products are rich in alfalfa, and overuse causes kidney damage.

• Never pick up a rabbit by the neck--this separates skin from muscle which could be painful and promotes flabby skin.

• Scoop up rabbits with confidence, strength, and support--rabbits are afraid of heights.

• For bunnies who do not enjoy being held--flip it over gently, support the spine, and keep it on its back until it is calm. Place your hands on its feet to reduce the risk of being scratched.

• Basic initial accessories: a cage away from other animals, water dispenser/bowl, suitable bedding if preferred (pine is best), and Timothy hay or a similar horse quality Coastal Bermuda.

Easter- Italian(ish) Style

Food is arguably the most paramount element of any Italian holiday, and Easter is no exception. This edition features selections from local restaurants and our very own designer to enlighten our tastebuds with Italian flair. We hope you enjoy this tidbit of culture infused with all the blessings of Easter.

Easter Bread

Submitted by: Peter Kapihe, O’Hara’s

INGREDIENTS:

2 1/4 tsp. instant yeast

1 1/4 c. warm milk

Pinch of salt

1/3 c. room temperature butter

2 eggs lightly beaten

1/2 c. sugar

3 1/2 to 4 1/2 c. flour

1 egg wash (1 egg, beaten with 1 teaspoon of water)

6 uncooked dyed eggs Sprinkles

DIRECTIONS:

1. Mix yeast, milk, salt, butter, eggs, and sugar in a large bowl.

2. Add 2 cups of flour, beat smooth with paddle attachment; add remaining flour slowly on low speed, just until dough forms.

3. Using a dough hook attachment, knead on low speed until smooth and elastic (may be kneaded by hand), adding flour as needed.

4. Transfer to an oiled bowl, turn once to coat both sides. Cover tightly with wrap; allow dough to rise in a warm, draft-free place, about 1 hour.

5. Line a large baking sheet with parchment paper or silicone liner. Punch the dough down, divide into 12 pieces (3.5 oz.); roll each piece into a 14-inch rope.

6. Twist two ropes to form a "braid", join the ends to loop into a circle while pinching tips together and place on sheet. Repeat with remaining dough ropes; cover. Allow the dough to rise again until nearly doubled, about 1 more hour.

7. Preheat oven to 350°F; brush the tops of the "nests" with egg wash, then top with sprinkles. Place one egg in the center, pressing lightly to secure.

8. Bake 20 to 25 minutes, until golden brown; remove from oven and cool on a rack.

*Note: This recipe makes 6 mini rounds and can be frozen in advance; serve warm or at room temperature. The eggs will be cooked to a soft boil and can be eaten by cracking and dipping the bread.

Steak a Pizzaiolo

INGREDIENTS

2 lb. top round beef steak, cut into thin strips

1 jar marinara sauce

Olive oil, as needed

1/2 white or yellow onion, minced

3 cloves garlic

1 tbsp. oregano

1/4 tsp. black pepper

DIRECTIONS:

1. Cover the bottom of a deep frying pan with olive oil, sauté minced onions and garlic.

2. Add the steak strips and braise, adding oregano and pepper and marinara sauce.

3. Simmer together for at least 1 1/2 hours until the meat is tender.

Enjoy!

Note: Steak a Pizzaiolo (steak in the manner of a pizza-maker) is an Italian meat dish that is suitable for week night dinner or a holiday meal. Traditionally a Neapolitan recipe (Naples), it is often used as a topper for pasta or vegetable dishes.

Pasta Carbonara

INGREDIENTS

1 lb. thick sliced bacon, chopped (You can of course use Pancetta but this time I went with American bacon! )

1/4 c. or more olive oil

1 yellow onion, chopped

2 cloves garlic, chopped or sliced

1 bag frozen peas

4 egg yolks

3/4 c. pecoriono romano or parmesan cheese Salt and pepper to taste Italian parsley, chopped (optional)

1 lb. pasta of your choice (I recommend, Spaghetti or Bucatini/Perciatelli) (pictured was homemade pasta... but that's another recipe)

DIRECTIONS

1. Cook bacon until crisp, remove bacon, set aside and discard most of the grease.

2. In the same pan add olive oil, sautee onions & garlic until translucent. Stir in peas.

3. Boil pasta, strain and add back to pasta pot.

4. Add the onions, garlic, and bacon to the pasta. Stir well, add more oil if necessary. Should be enough to coat.

5. Mix the egg yolks with the cheese, to combine, then stir into the pasta mixture. Combine well!

6. Add salt and pepper to taste. Sprinkle on some extra cheese. Add chopped parsley to garnish (optional).

Mangia!

Note: Add cream if you like a creamier dish.

Who needs a “Do-Over”?

On that first Easter morning 2,000 years ago, there were many people present who desperately needed a “do-over.” Peter, one of Jesus’ best friends, was back in his fishing boat lamenting how he could have been so cowardly when he denied even knowing Jesus on the night he was arrested. Pontius Pilate, the Roman Governor of Jerusalem, was still tormented by the look on Jesus’ face as he had Him mercilessly flogged and ultimately sent away to be crucified. Pilate had publicly washed his hands in front of the masses trying to prove he was not guilty of this murder, but that futile act had done nothing to remove the guilt. Then there was Barabbas, an insurrectionist and convicted murderer who was in the “right place at the right time” when he was fully pardoned by Pilate so that Jesus could be crucified in his place. By Easter morning the euphoria of his good fortune had worn off and he found himself in a graveyard contemplating how such a righteous man was brutally mocked and killed while he walked away scot-free.

On that very first Easter morning these three men, and many more, found themselves confused and distraught. Life had become dark and depressing and they all desperately needed a “do-over”, a reset that would somehow bring new hope into their lives. And this is exactly what God delivered when He resurrected Jesus from the grave. This display of God’s power solidified His great mercy towards sinful men. It also provided a pathway to new life and absolute forgiveness for a lying Peter, a cowardly Pilate, and a murderous Barabbas. Peter accepted this offer of forgiveness and it radically changed his life. As for Pilate and Barabbas, we must assume they contemplated the offer, but ultimately walked away and chose to live with the guilt, a truly tragic choice.

So, what about you? Have you contemplated the offer? It is still open today and it continues to radically transform the lives of those who humbly receive it. If you need to receive it, make this Easter season the one that brings to you new life and absolute forgiveness.
