According to the Environmental Protection Agency blog, “Between Thanksgiving and New Year’s Day, American household waste increases by more than 25 percent. Trash cans full of holiday food waste, shopping bags, bows and ribbons, packaging, and wrapping paper contribute an additional 1 million tons a week to our landfills.” Reducing waste can cut down greenhouse gas emissions, helps conserve our natural resources and has positive effects for future generations. Here are a few terrific holiday gift wrap alternatives so you can help the environment (and have a bit of family fun at the same time). Wrap away, but don’t be wasteful It’s fun to watch everyone’s eyes light up at the sight of gaily wrapped surprises. But in just minutes, the wrapping is torn off; the bows are 24 — November 29, 2018

These recipes make it easy to elevate everyone’s palate, serve up delightfully delicious goodies to serve guests or give as gifts. Bacon, Baked Brie and Cranberry Holiday Melts 24 multigrain crackers 24 small slices brie cheese 1/4 cup prepared cranberry sauce 2 slices bacon, cooked and crumbled Heat broiler to high and position rack in center of oven. Arrange crackers in single layer on foil-lined baking sheet. Top each cracker with slice of brie, 1/2 teaspoon cranberry sauce and sprinkle of bacon. Broil 1-2 minutes, or until cheese is melted. For vegetarian option, substitute chopped hickory-smoked almonds or pecans for bacon. Party Poppers 8 ounces pitted dates 4 ounces brie cheese 6 ounces slivered almonds 1 1/2 pounds 34 — November 29, 2018

French-Style Marinated Cheese 6 ounces semi-hard cheese or hickory smoked cheese 2 ounces black or green olives 1 small leek, bulb only (or small shallot) 1 tablespoon fresh oregano or tarragon (or equivalent dried) 1 teaspoon green or black peppercorns 2 sprigs fresh thyme (or equivalent dried) 1 clove garlic 2 tablespoons white wine vinegar 4 tablespoons extra-virgin olive oil 1 glass canning jar Cube cheese and thinly slice olives and leek. Finely chop oregano and peppercorns, and finely mince thyme and garlic. HOLIDAY MAGIC
To make marinade: Whisk vinegar with oil, oregano, peppercorns, thyme and garlic. Layer cheese, olives and leeks inside jar. Cover with marinade and seal tightly. Place jar in refrigerator to marinate 1 day. For best results, use within 3 days. Holiday Deviled Eggs 6 eggs 1/8 teaspoon salt 1//8 teaspoon pepper 1 teaspoon white vinegar 1 teaspoon mustard 1/4 cup mayonnaise 1 cup shredded cheese Topping options: Paprika Parsley Bacon Shredded cheese Cooked crab meat Scallions Boil large pot of water. Carefully add eggs and boil on high 2 minutes then simmer 13 minutes. While eggs cook, chop parsley and scallions, if desired. Once eggs are cooked, transfer to bowl of ice water; cool 8-10 minutes. Traditional Hanukkah treats always have a place on the table t will soon be time to feast on some luscious, crispy potato latkes. In fact, why not put a new twist on the latke tradition and fry up a bunch of different versions and judge which type is the best – sort of a “Latke Top Chef”? Traditional Latkes Makes approximately 12 palm-sized latkes 4 medium potatoes 1 medium onion 2 eggs 1/2 cup matzah meal (flour or bread crumbs can be substituted) 1 teaspoon baking powder 1 teaspoon each salt and black pepper (more or less to taste) Vegetable oil Shred the potatoes and onion into a large bowl. Press out all excess liquid. Add eggs and mix well. Add matzah meal gradually while mixing until the batter is doughy, not too dry. (you may not need the whole amount, 36 — November 29, 2018
depending on how well you drained the veggies). Add the baking powder, salt and pepper and mix well. Heat about 1/2 inch of oil to medium-high heat. Form the batter into thin patties about the size of your palm. Fry batter in oil. Be patient: this takes time, and too much flipping will burn the outside without cooking the inside. Flip when the bottom is golden brown. Place finished latkes on paper towels to drain. Sweet Potato Latkes 1 pound sweet potatoes, peeled and coarsely grated 2 scallions, finely chopped 1/3 cup all-purpose flour 2 large eggs, lightly beaten 1 teaspoon salt 1/2 teaspoon black pepper 3/4 cup vegetable oil Stir together potatoes, scallions, flour, eggs, salt, and pepper. Heat oil in a deep 12-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 4, spoon 1/8 cup potato mixture per latke into oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate HOLIDAY MAGIC
and cook until golden, about 1 1/2 minutes on each side. Transfer latkes with spatula to paper towels to drain. Butternut Squash Latkes 2 cups grated russet potatoes 4 cups grated butternut squash 1 small onion, grated 2 eggs ¼ cup matzah meal (or flour) 2 teaspoons salt Pinch of black pepper 1 teaspoon baking powder 4 tablespoons fresh dill, chopped Vegetable oil for frying Place the grated potato, squash and onion in a bowl. Mix in the eggs, matzah meal (or flour), salt, pepper, baking powder and dill. Let sit 10 minutes to thicken. While the mixture is resting, fill a pan ½-inch deep with vegetable oil. Heat until mixture is hot, but not smoking (a good test is dropping a bit of latke batter in the pan — if it sizzles, it’s ready). With a tablespoon, carefully scoop the latke batter into the oil. Fry for 1 minute on each side and transfer to a paper towel-lined plate. Let cool for 2 to 3 minutes and serve immediately with sour cream and applesauce. HERALD COMMUNITY NEWSPAPERS

en brown consistency place a smear of the crimini mushrooms blended into seasoned (sprinkle in lightly some grated Romano cheese, granulated garlic and a dash of black pepper) ricotta on top of your cutlets then lightly cover with the shredded mozzarella cheese. Baked in oven at 400 F for about 8-10 minutes until cheese melts evenly and ricotta is nice and hot. While the chicken bakes, prepare the sauce. Pour the heavy cream, mushrooms, roux (a 50-50 split of congealed flour and butter) pureed fresh tomatoes, oregano, basil and parsley into your sauté pan. Stir intermittingly. Serve with the sauce poured over the finished chicken. Serves 4-5 people.
