Si ne rien ne prédestinait, a priori, cette modeste demeure du quartier Riad Zitoun à devenir un jour un hôtel de charme réputé et l’un des fleurons de la gastronomie marocaine à Marrakech, son nom n’en laissait-il pas moins entrevoir la promesse d’un avenir radieux pour qui saurait deviner les splendeurs de la belle endormie. Entre Shéhérazade et Cendrillon, l’histoire, en quelque sorte, d’une triste masure ayant patiemment attendu que 2 bonnes fées viennent révéler le merveilleux palais des 1001 nuits dissimulé sous ses hardes de pierre.

riad est totalement isolé des bruits provenant de Riad Zitoun Lakdim, la rue commerçante qui relie la place Jemaa El Fna au Mellah, le quartier juif de la médina de Marrakech.

Riad Zitoun ne compte pas à l’époque parmi les quartiers les plus prisés de la médina, tels que Mouassine ou Bab Ksours où les européens investissent déjà depuis plusieurs années dans des riads de prestige. C’est néanmoins un quartier commerçant, très agréable de jour comme de nuit, et chargé en outre d’une longue tradition d’accueil. C’est en effet ici que, dès les années 60/70, les premiers hôtels de Marrakech voient le jour, permettant aux hippies et autres globe-trotters de trouver à se loger lors de ce qui ressemble alors davantage à des voyages initiatiques en terre orientale qu’aux séjours touristiques que nous connaissons aujourd’hui.

Un emplacement privilégié, à deux pas de la célèbre place Jemaa El Fna Lorsque la créatrice Isabelle Aubry et son mari, le photographe Ludovic Antoine, visitent pour la 1ère fois la propriété à la fin de l’année 2001, le coup de foudre est immédiat. Certes la maison – ou « les » maisons pour être tout à fait exact – est alors dans un triste état, mais son potentiel n’en est pas moins évident.

La rue Riad Zitoun Lakdim est également un site chargé d’histoire puisqu’elle est l’une des toutes premières artères de la médina à avoir été tracées, comme en attestent les plus anciennes archives disponibles. Ainsi, dès le 12e siècle, alors que la ville n’existe encore que sous une forme embryonnaire, la rue est déjà présente, axe unique reliant la grande place du marché à la kasbah récemment créée. Aussi, si les documents administratifs font remonter l’origine de Dar Errabh au 18e siècle, son âge réel est-il donc probablement beaucoup plus ancien, son origine remontant sans doute, sous une forme ou sous une autre, aux premières heures de Marrakech.

L’emplacement en particulier est tout à fait exceptionnel. Non seulement la célèbre place Jemaa El Fna, inscrite au Patrimoine Mondial de l’Unesco et phare du tourisme à Marrakech, est-elle là, toute proche – un avantage inestimable – mais les lieux sont en plus miraculeusement à l’abri des nuisances que l’on peut redouter de la proximité immédiate d’un site aussi fréquenté : blotti au fond de Derb Chaâbane, une minuscule impasse, le

At first sight, you could not predict that a modest building in the Riad Zitoun area would one day become a famous luxury hotel and a flagship of Moroccan gastronomy in Marrakesh. Yet the name of the house would sound promising to its beholders who saw in it a sleeping beauty.. We are somehow reminded of a setting in Sheherazade or the story of Cinderella where we find a derelict house patiently waiting for two fairies to reveal a marvellous palace of the Thousand and One Nights, hidden under the barren stones.

a highly frequented tourist site. It was tucked away at the bottom of Derb Chaabane, a small dead end street which keeps the Riad away from the noise of the busy Riad Zitoun Ladkim street connecting Jemaa El Fna to the Mellah, the Jewish district of Marrakesh’s medina.

At the time they discovered the building, Riad Zitoun was not listed among the best rated neighbourhoods in the medina, such as Mouassine or Bab Ksour where some Europeans had already invested in prestigious Riads for several years. Yet it was, night and day, a very pleasant and traditionally welcoming neighbourhood. In the late 1960s and 1970s, the first Marrakesh hotels appeared right there, providing accommodation for hippies and their followers during their first trips to the Orient, one could view them as rites of passage, a very different experience from present day tourism.

A perfect location just a few steps away from the famous Jemaa el Fna square Isabelle Aubry, an artist, and her husband Ludovic Antoine, a photographer, first visited the property at the end of 2001. It was love at first sight. Of course the house - or more precisely the houses – were in a deplorable state, but they saw potential in the dwellings.

Riad Zitoun Ladkim is a truly historic street, since it was one of the first main thoroughfares connecting the market square to the newly created kasbah in the medina; it dates back to the 12th century when the city itself barely existed, as shown in the most ancient archives. Thus, if administrative documents allow us to trace the origin of Dar Errabh (the house in question) to the 18th century, the actual age of the building is probably much older and it undoubtedly belongs to the early days of Marrakesh.

Firstly, the location was absolutely unique. Not only because the famed Jemaa El Fna square, a UNESCO World Heritage-listed site and world famous tourist destination, was at a stone’s throw - a priceless advantage - but also the Riad was miraculously protected from the usual nuisance of

TATIN DE POISSON AUX LENTILLES, POTIRON ET GRAINES DE SESAME Une création originale du Monceau qui est désormais devenue un grand classique. Une recette raffinée qui allie mieux que toute autre les saveurs de l’Orient et de l’Occident.

TATIN PIE WITH FISH AND LENTILS, PUMPKIN AND SESAME SEEDS

POUR 4 PERSONNES 500 gr de poisson blanc 200 gr de lentilles 300 gr de potiron 1 cc de cumin 1 cc de gingembre 1 cc de paprika Sel et poivre Huile d’olive

Here we have an original recipe conceived at Le Monceau, which has turned into a classic. It is a refined combination of Western and Oriental flavours.

500 gr white fish 200 gr lentils 300 gr pumpkin 1 teaspoon cumin 1 teaspoon ginger 1 teaspoon paprika Salt and pepper Olive oil Preparation of the fish

Couper le poisson en morceaux et le faire revenir dans une poêle avec 3 cs d’huile d’olive ; ajouter sel et poivre ; cuire 15 mn et réserver.

Cut the fish in pieces and toss it in a pan with 3 tablespoons of olive oil.

Simmer 20 mn and reserve.

Preparation of the lentils

Faire cuire les lentilles dans 1,5 l d’eau bouillante ; une fois cuites, égoutter les lentilles, Incorporer les épices ; saler ; réserver.

Cook the lentils in 1.5 liters of boiling water.

Once they are ready, drain them and add the spices, salt and pepper. Reserve.

Preparation of the pumpkin

Déposer le potiron coupé en gros morceaux dans une sauteuse ; ajouter 2 cs d’huile d’olive, une pincée de cumin, sel et poivre ; laisser cuire à feu doux jusqu’à réduction complète.

Cut the pumpkin into big chunks and put it in a skillet with 2 tablespoons of olive oil, a pinch of cumin, salt and pepper.

Simmer slowly and let reduce.
