h i l e n o t e v e ry o n e regularly experiences ultra fine dining, everyone will have dinner out somewhere, either at a restaurant or a family member’s home. It’s good to remember that having good manners and table etiquette applies to everyone. Class and style are not limited by income. The world is full of people with no money and lots of class; the world is also just as full of people with no class and lots of money. There may be one chance to make a positive first impression, so those table manners really do matter. Epicurious.com, a culinary Web site, and Protocol Training Services, New York City’s leader in etiquette training, offers

Europeans use a two-step method; Americans use a four-step crossover. Both are acceptable. The two-step places the knife in the right hand, fork in the left. Never eat shellfish if the shell does not open during cooking. Lift both halves and separate each clam by pulling it out by its neck. Discard the neck sheath and, holding it by the neck, dip it first into a cup of broth and then into melted butter. Eat it in one bite. Pile empty shells on a second plate. Drinking the cup of broth is acceptable Mussels cooked in a soup-like sauce should be extracted with a seafood fork. Or eat it right from the half shell along with its juice. The extra broth can be sopped up with fork-speared bread or eaten with a spoon as a soup. Fried clams, oysters, scallops or shrimps can be eaten with a fork. n
