It is my distinct pleasure to welcome you to the very first issue of Resto, a concept created to serve the very people that make and constitute our beautiful city.

Having lived in the UK for over 30 years and having raised a lovely cross cultured British Mauritian family, food has been a paramount factor. We are blessed to live in such a cosmopolitan city, full of crosscultured cuisine across a boundary of economic levels.

As with any new publication, changes occur for the better over time. As we grow and attract a following through print and social media, we will develop areas of our publication to bring you, the reader, a publication that provides entertainment, humour, good journalism and a comprehensive guide to the preferred places to eat.

It was with this passion and love for food that the team behind Resto was formed. In our inaugural issue, you will find a mixture of restaurant listing guides mixed with fascinating stories concerning the food we eat. From the history of cuisine such as Turkish and its subsequent roots in the Ottoman Empire, to the history of gastronomy.

Miss England Carina Tyrell takes time out of her busy schedule to discuss the importance of healthy eating. Other sections include reviews, theatre and entertainment in the local North London area as well as a whole host of adverts from supporting restaurateurs.

Drawing from my extensive publishing history at local level – many local business owners will still remember me as the advertising manager of the Haringey Advertiser for almost a decade back in the eighties - we realize the importance of small and medium size

STILL REIGNING SUPREME AFTER 40 YEARS Situated in the affluent area of Aldermans Hill in Palmers Green, Dipali restaurant has been a regular feature of the area. It had been over 5 years since the last time I dined at the bistro and I was intrigued to see how the cuisine had changed if at all.

For starters and for two people, we started with the usual veg and meat Samosas (small but nice), Raja Chingri Butterfly prawns (delicately spiced and fried traditional) and Chotpoti (chickpea fusion).

Efficiently served by friendly staff, the starters were appetizing with a boisterous taste, although limited in portion. For the mains, we opted for a combination of dishes to share. The Tandoori Mixed grill

consisting of a variety of favorites including chicken, sheek kebab, lamb and chicken tikka was served with piping hot naan bread. We complimented this with house biriyani rice special, Bombay Aloo (spiced potatoes) and the traditional Tarka Dall, which provided a lovely contrast to the spice of the mixed grill.

The restaurant certainly has not lost its style for cooking over the years and has maintained a strong local following. A touch on the pricey side, Dipali restaurant offers delicious tasting dishes.

Turkish by Nature

Synonymous with fast food culture, and typecast by connotations of late night post drink up food that brings satisfaction when desperately needed, Turkish kebab houses and cuisine have become a foundation stone of London culture.

Interestingly, much debate has occurred over the years as to the exact positioning of Turkish food on the culinary scale. Considered by connoisseurs as the third best cuisine behind French and Chinese, a strong historical value underpins this traditional form of eating as I found out to my testament.

After spending a few hours with a few friends walking up and down Green Lanes in North London (arguably the capital of Turkish food culture in London), a clearer picture emerged to me of the fascinating history of the dishes after speaking to a number of local staff and chefs.

With diversity in abundance, a dozen customers could quite easily venture into an authentic traditional restaurant and have truly contrasting food experiences.

Apart from the flagship kebabs and charcoal grills, a host of delicacies await the eager mind. The aroma of rice and slow cooking tender stews fuse the air with delicacies such as Uzbek pilaf (rice with lamb and vegetables) and Patlicanli pilav (rice with eggplant). Traditional pastries alongside soups, contrasting fresh salads and indigenous condiments provide food indulgence. Combine that to a variety of your favorite choice of grilled meat and you have a sumptuous feast.

Talking to one particular Turkish chef who resembled Che Cuevara and cooked and spoke with a similar disposition, I was informed as to

the uniqueness of the palette and fusion of history that signifies Turkey. “Turkish food presents incredible variations of delicious tastes because of the ingredients,” he said with a heavy broken accent.

Influenced largely by the Ottoman Empire which itself is a fusion of Central Asian, Caucasian, Middle Eastern, Mediterranean and Balkan cultures. The multinational and multilingual empire spread from the Black Sea to North Africa and from Arabia to the Balkans, with Constantinople (modern day Istanbul) standing proudly as its cosmopolitan capital. This continental span became the source of Persian, Arab, Balkan, North African, Slavic and Central Asian influences subsequently effecting the development of Turkish cuisine, as is evident in today’s menu.

Research dating back to the seventeenth century suggest that Istanbul was one of the largest food centres of the time going through an estimated 250 tons of baked bread daily; 18,000 cattle each month; in excess of 2000 ships sailing to The Golden Horn annually and 130 courses served on one Banquet alone.

“When we talk about Turkish food, we are talking about a big field of food with a rich history that use to cover an area from the Middle East to North Africa and part of Europe which incorporates different ethnic culinary cultures”, another chef said to me.

As a consequence of market forces, Turkish food in London will forever be typecast “fast” and “convenient”- partly due to logistics and media portrayal. Yet the wonders of this cuisine from a historical perspective, brings a depth of pleasure drawing inspiration from the multifaceted cultures it represents.

Capital grows London-wide Situated in Edmonton, and part of a growing chain of trendy Turkish restaurants in London, I was intrigued to find out and test the euphoria surrounding Capital Restaurant and its Ottoman inspired cuisine with mixes of East and Western traditions.

The spacious location meant a busy classy atmosphere with birthday parties and family dining filling the warm atmosphere.

Staff was ultra friendly in a TGI fashion. The food, I must say, was true to its initial statements of bringing you a traditional taste of Turkish cuisine. Opting for the Aubergine kebab, which was a mixture of sliced aubergine and minced lamb skewers grilled served with salad and the special Chicken Tava, which was marinated chicken roasted in a clay pot with tomato, onions, garlic and spices. Chaudhry’s Asian Buffet a real hit in North London Having opened their new restaurant in Edmonton, I was intrigued to find out how the buffet concept worked within the field of Indian cuisine. Would quality and taste be at the expense of quantity? Or would it prove to be a fine balance giving us the consumer wonderful choice? Situated inside a modern spacious environment with a subtle Asian feel from the ambience, I was pleasantly surprised by the restaurant and its buffet theme.

Dishes were visibly laid out and implored you to try. The starters was crisp and warm, satisfactory standard with a decent taste. The seekh kebab was nice but tested my resistance to chili. Mains consisted of a combination of chicken and mutton Biryani (soft tender and subtly fragranced), chicken breast Karahi curry (probably their best dish), chicken korma curry, Tandoori chicken (arguably second best dish), Puri, Naan and local condiments including salad and sauces. Depending on what day you go, dishes are subject to change but should be of a satisfactory tasty nature. If any dish were not available, the friendly staff on offer would ask one of the in-house chefs to prepare it for your pleasure, which was a nice touch.

All in all for a buffet Indian concept, a good attempt with tasty food, clean standards and nice hospitality - mid range prices.
