LETTER from

THE EDITOR

I

’ve spent several holiday seasons visiting other cities (all wonderful cities), but most of my life in New York during the holidays; I firmly believe that there is nowhere in the world like New York City in December. The air smells like festivity. The mood feels like hope. The people, the stores, the lights, the energy—it all amounts to a palpable and beautiful sense of happiness, enjoyment, and holiday spirit. I can’t get enough. My mom and I have a holiday tradition that we’ve kept since as long as I can remember, spending an entire day devoted to enjoying the season in the city. We begin our day at the holiday market at Grand Central, followed by a visit to Macy’s for a peek at Santa (he IS the real one), a stop at Lord & Taylor to admire their windows, and a leisurely stroll down Fifth Avenue for window shopping, actual shopping, and of course picture-taking at the Rock Center tree. We love this day, and we’ll never get over that feeling. Many years involve including tea at the Plaza in our tradition. Oftentimes we’re joined by family members, eating scones and sweets and taking in the holiday spirit of the Plaza’s Palm Court, which epitomizes the season and the city. So this is one of the major reasons I was so incredibly excited to feature Chef Todd English and his Todd English Food Hall at the iconic Plaza for our December cover story. It couldn’t be a better fit. Beyond that, I’ve enjoyed Chef Todd’s food for many,

many years, and when I’ve been lucky enough to meet him in the past, he’s always been such a charismatic, engaging presence. His food is amazing, of course, but beyond that, he’s just a really great person. I’m thrilled that he’s joined the Resident cover story family—and the fact that it’s for our December holiday issue makes it that much more perfect. In addition to the interview with Chef Todd, inside you’ll find our Holiday Gift Guide, which really just turned out to be my personal wish-list. So if anyone’s looking for a last-minute gift for me (no pressure), just look inside these pages and pick something. Anything. I want it all—and I hope you will too. This truly is my favorite time of year in New York City, when I wouldn’t want to be anywhere else or with anyone else other than my friends and family (including my Resident family). As the holidays get under way and the year officially comes to an end, I want to thank everyone who’s welcomed me back to the magazine and embraced my role here, and I want to wish everyone a very happy, healthy, safe, and joyous holiday season in this great city that we are lucky enough to call home.

The tradition of lighting a Christmas tree at Rockefeller Center has been around for over 70 years. The tree continues to stand as a symbol of hope—from the Great Depression, when workers lined up beneath it to collect their paychecks, to the winter after September 11th, when people of all backgrounds gathered to witness the transformation of the tree into red, white, and blue. The tree will remain on display through January 6, 2016.

Join the celebration of the Jewish Festival of Lights at New York’s Grand Army Plaza—the boundary between the city and Central Park inspired by Paris’ majestic Place de la Concorde—and watch as a 32-foot, 4,000-pound menorah is lit day by day, candle by candle. A similar event—one featuring live music and hot latkes—will take place at the Grand Army Plaza in Brooklyn.

Serena Williams looked stunning in a sheer black dress at the recent 2015 Glamour Women of The Year Awards at Carnegie Hall. The tennis ace was joined at the awards ceremony by ballerina Misty Copeland, the U.S. Women’s soccer team, and many other prestigious guests.

Copeland was honored during the ceremony as “the showstopper” for her accomplishments with American Ballet Theatre, by becoming the first African American principal dancer earlier this year. Actresses Uzo Aduba and Viola Davis were also in the house. Shortly after celebrating the release of her new film Trumbo at Villagio on the Park, with A-listers Brian Cranston, Robert Wuhl, and Diane Lane, Helen Mirren requested her own bottle of the Bollinger SPECTRE Limited-Edition champagne at the James Bond Spectre film screening postparty at the Lion.

According to real estate sources, comedienne Amy Schumer has put her apartment on the Upper West Side on the market with an asking price of a little over $2 million. Although Schumer often referred to her one-bedroom pad on the fifth floor of a walk-up building as a “shoe box,” it is actually a penthouse with views of Central Park and the Museum of Natural History.

In the interview, Emily said her dad “used to be one way, and then he marries a model…,” referring to Ostrosky. Observers at Ralph Lauren’s posh boite said the Sterns looked like a happy couple out on a Friday night.

Will Smith hit the red carpet recently for a screening of his new movie Concussion at the Sony Screening Room in the Big Apple. The Oscar nominee was joined at the event by his co-stars David Morse and special guests including Usher, Hill Harper, and Cuba Gooding Jr. In a recent interview, Smith said that being a “football dad” made it tough for him to tackle the role of Dr. Bennett Omalu, the brilliant forensic neuropathologist who made the first discovery of CTE, a football-related brain trauma.

Waltz’s compelling villain gives this action movie its evil depth, and because Bond’s newly developed and boring conscience doesn’t allow him to kill Waltz, it opens the door for him to return and for Craig to exit the greatest movie franchise extant. Waltz said, “I consider Bond movies to be an extension of popular theater, a kind of modern mythology.” Craig, who tends to over-intellectualize the world’s favorite spy, stated, “He’s very lonely. There’s a great sadness. He’s sleeping with all these beautiful women but then they leave and it’s…sad. And as a man gets older it’s not a good look.” Perhaps it’s time for a younger 007 who will relish the role as it was originally written.

NYC STREET STYLE By Karen Loftus

Trends and Threads Seen on the City Streets

Yes,Yes Nanette!

Jet Set & Ready

NY-based designer Nanette Lepore is expanding her brand. Look out for sunnies, swimsuits, and perfume, among other items, under Nanette’s high fashion umbrella. In the interim, step out in high style in her Girls Club Cape ($598). It’s a triple-trend threat with its pop of color, vintage nod, and on-trend shape. Be prepared to turn every urban head swinging into your next event. Available in black, at the best boutiques in the city and online.

NY-based Nicole Parker King turned her jet-setting life into a jet-setting business. The former L’Oreal creative director came back to NY after a three-year stint in Delhi. She returned with her hot hubby, the Australian diplomat, in tow. In true NY form, King launched her business, Jet Set Candy, upon arrival. The high-end travel charms have had the travel-savvy swooning ever since. This is the perfect, fashion-forward stocking stuffer. Impress your boss and yourself with a NY or global charm at Jet Set Candy’s mini shop at Grand Central Terminal or online. Hamptons Planner ($198) Chrysler Building Charm ($198), NYC High Life Pendant ($238).

Viva La Eva If you’re looking to put a pocket on it, Eva Varro has two pieces that deliver ten-fold on the fashion and comfort front. We know we can’t walk around the city streets in our pj’s, but if you’re craving comfort and couture this holiday season, Eva Varro’s Wide Leg Pocket Jumpsuit ($195) & Necktie Pocket Long Dress ($195) are just the fashion ticket. These easy pieces travel far and wide and go well with your signature style and bold accessories. Win-win!

City Satchel

Unlike LA, where it’s all about the almighty auto, in NY, your efficiency is only as good as your bag. The bag of choice is dependent upon your schedule, and vice versa. A good fix to throw in the mix is the rugged crossover— a bag that can be thrown down when running around, can carry a small office, and will practically double as a personal pop-up shop. Thule’s Covert Satchel ($149) can keep your virtual office organized, will coyly handle camera needs, and can carry evening or overnight options when on the run. Covert it is.

All Hale the Bob

Serious Booty!

The celeb set have been stepping out in the SoCal-based brand Hale Bob for years. The line has been seen on both coasts and around the globe. From Mrs. Clooney to Lady Crawford and now newlywed Sofia Vergara, it’s a fashion-fave for those who love silky, sexy, feminine and flowy dresses and blouses with a twist. The brown Liana Wrap Top ($187) with winter-worthy earth tone hues is perfect for office politics or after hour antics.

Sorel has been kicking some serious booty in the winter weather shoe and boot department for a while now. Every time I turn my wind-whipped head to admire a fashion-forward boot, it’s a Sorel. So this season, if looking for a wedge, go for Sorel’s Joan of Arctic Wedge ($240). If there’s snow, sleet, and rain, you can still step out in style while walking through slush in their Medina Rain Heel Boot ($225). Now bring on the weather.

Flower Power

Classic Cashmere

I’ve never been much for flowers with fashion. I have friends that live in a garden of floral fashion. Me? Not so much. But Cynthia Rowley managed to make me beg to differ with myself. In Rowley’s Jacquard A-Line Skirt ($275), with the power of flower and just enough edge with that pop of purple, you will want to reconsider your own flower ban. I did.

Red is a classic any time of year, and so is LL Bean’s Classic Cashmere Crewneck ($99). The fiery red is just the pop of color you need for a mid-winter pick-me-up and just the punch to offset your basic black. It’s also pitch-perfect for any holiday occasion, including eggnogging. Now, if you want to dive deeper into the sweater pool, LL Bean has an endless array of options, from cardigans to turtles and wraps. You’re all set for Après-ski season.

ART BASEL MIAMI IS HOT!

FEATURE

family

WHAT’S HOT

By Claire Gilbertsen

A

rt Basel in Miami opens the first week in December, providing a fantastic excuse to escape to South Beach for some warmer weather for a few days. From December 3rd to December 6th, curators, artists, art buyers, museum directors, and art appreciators from all over will flock to Miami to see the masterpieces of all varieties. The world’s top galleries will present the work of their top artists at the fair, including wellestablished galleries, historically important works, as well as emerging artists and experimental artwork to watch. The show is divided into nine themed sectors to organize the content. The main exhibition hall features artwork of a variety of mediums: Paintings, sculptures, installations, photographs, and films; and the large-scale installations and sculptures will be found in the Public sector, set in Collins Park and open to the public. There will also be several talks

featuring fascinating lineups of experts and art connoisseurs from around the globe. The Conversations series begins with the Premiere Artist talk, featuring artists Trevor Paglen and Jenny Holzer, on the first day of the fair. It’s no surprise that one of the most anticipated exhibits will be by the New York based artist Nari Ward, whose survey exhibition “Sun Splashed” features an eclectic mix of found objects. As art continues to occupy and further explore digital mediums, the London gallery Pilar Corrias will feature three different and important video artists and will be a great booth to stop by. Another noteworthy artist whose work incorporates technology in a unique way is Daniel Keller, represented by Berlin gallery Kraupa-Tuscany Zeidler. Finally, the compelling modern art and photography by African artists at the Stevenson Gallery is a must-see, hailing all the way from South Africa. There’s so much to see at the gallery booths inside the convention center, but don’t forget to enjoy art alfresco while you’re in lovely Miami! Specifically, there will be 27 magnificent installation pieces in Public, the outdoor sector of the show. Artist Sam Falls has created the “Healing Pavilion,” using crystals and gemstones, such as amethyst and jasper, to

36 • Resident December 2015

positively affect occupants. Another stunning outdoor feature is SoundScape Park, designed by Frank Gehry, where video art projects onto a 7,000 square-foot screen and surround sound plays through a state-of-the-art system. Be sure to stake your claim to one of the provided ground pillows in SoundScape Park to hear the sound art of Mariele Neudecker, whose Figure of 8 (a work created from peaceful noises in a rainforest in Ecuador) will play at 6 pm the first night of Art Basel Miami. Tickets may be purchased on site, or, to avoid lines, ordered online through the Art Basel website: artbasel.com. With so much culture to take in and so many marvelous parties to attend, Art Basel is a fabulous whirlwind of an experience. (This year, our very own Editor-in-Chief Pamela Jacobs plans to attend, and will be reporting back in the next issue of Resident!)

NEW SHOWS THE THEATER SEASON TAKES OFF: FIVE ON THE BOARDS

FEATURE

family

WHAT’S HOT

By Barry Bassis

James Earl Jones and Cicely Tyson in The Gin Game. Photo by Joan Marcus.

T

he revival of The Gin Game at the Golden Theater is one production that theater lovers should not miss. The 1978 Pulitzer Prize-winning two-character play by D.L. Coburn is set on the back porch of a dilapidated nursing home. The two elderly characters, Weller Martin and Fonsia Dorsey, are basically discarded like the junk surrounding them. To pass the time, Weller offers to teach Fonsia to play gin rummy. Much of the humor is contained in their repartee as she turns the tables on him. The underlying sadness of their situation is revealed in the course of their games. That these subtle performances are being given by Jones at 84 and Tyson at 90 is amazing. Leonard Foglia’s direction is praiseworthy.

On Your Feet!, the bio of Gloria and Emilio Estevan at the Marquis Theatre, is a singing and dancing treat, with a pulsating score by the Estevans and lively choreography by Sergio Trujillo. The script by Alexander Dinelaris travels through some well-trodden paths: The artists finding their sound and then struggling to find an audience. The twist here is that their fight was not to be pigeonholed into the Spanish language market and the script also deals with the plight of Cuban immigrants. Gloria’s father is first shown as a soldier in the U.S. Army and later bedridden with a terminal disease. Most of the drama in the second act deals with the traffic accident that almost ended Gloria’s career. Ana Villafane was born to play Gloria. Josh Segarra is credible as Emilio, though Elisio Roman as Gloria’s father has a better singing voice. Andrea Burns is superb as Gloria’s mother. Mark this down as another hit for director Jerry Mitchell. Emile Zola’s novel Therese Raquin was a forerunner of those steamy James Cain adultery/murder stories, such as Double Indemnity and The Postman Always Rings Twice. Like those works, Zola’s cries out for a film noir approach. Unfortunately, the Roundabout’s production at Studio 54, directed by Evan Cabnet from Helen Edmundson‘s script, looks and sounds like “Masterpiece Theater,” complete with British accents. Beowulf Borrit’s set and Keith Parham‘s lighting are beautiful, as is the leading lady, Keira Knightley, but–despite her obvious talent–this is the wrong vehicle. A heavy breathing melodrama, it often evokes titters at inappropriate moments. Nevertheless, as

38 • Resident December 2015

the husband/victim’s mother, Judith Light creates another indelible portrait.

Trip of Love is a singing and dancing valentine to the 60s, the turbulent time of assassinations, the Vietnam War, the Civil Rights Movement, and the British Invasion (okay, the last one was peaceful). The results are mixed, ranging from great songs to some duds. At least there’s no script into which the musical numbers are dropped. Director/choreographer/creator James Walski does better with the trivial material (like a witty takeoff on beach blanket movies) than with the meaningful songs. His worst idea is having the excellent Laurie Wells sing Jacques Brel’s “Ne Me Quitte Pas” while two men in back of her are stripping to their underwear. After that, the guys put on uniforms, as if the Vietnam War is the reason they are leaving. (Is it a menage-a-trois? At least that’s French). The other standout in the cast is Dionne Figgins, who sings and dances a hot version of “These Boots are Made for Walkin.’” Keira Knightley and Judith Light in Therese Raquin. Photo by Joan Marcus.

At the beginning of Sylvia, a middle-aged man named Greg (Matthew Broderick) finds a cute blonde in Central Park and brings her home, to the dismay of his wife Kate. The title character is played by Annaleigh Ashford and she is a dog, albeit one that often speaks to the audience and sometimes to the characters on stage. Much of the time she acts like a canine, causing embarrassment, as when she buries her nose in a visitor’s crotch. While her doggy ways irritate Kate, Greg becomes obsessed with the animal. In fact, his professional life and marriage both seem at risk. Versatile Robert Sella plays a man, a woman, and a marriage counselor of indeterminate gender. Julie White is fine in the un-showy role of Kate and Broderick is still in his Leo Bloom mode. A.R. Gurney’s script and Daniel Sullivan’s direction provide a steady stream of laughs. Ashford won a Tony last season and may be a contender again with her delightful doggy act.

CHEF TODD ENGLISH AND HIS EMPIRE

With an international Food Hall and restaurants around the globe, the celebrity chef continues to conquer the culinary world.

in the room. Pamela Jacobs: Here’s a little known fact about you: You actually went to college on a baseball scholarship. Did you ever think you’d play professionally, or was being a chef always the plan? Todd English: Becoming a chef was never a plan, actually, because back then, it was not a profession that most people sought after. I always loved to cook, though, ever since I was a kid, and even had a garden of my own since I was a teenager. I grew up watching my Italian mother and Julia Child, and was always fascinated and passionate about cooking. PJ: When you first started cooking professionally, where did your influences come from? Were there specific places you’d been and/or other chefs that were significant to you from very early on?

efore international food markets and culinary halls starting popping up throughout the city, the Todd English Food Hall opened in The Plaza, New York’s most iconic hotel. With it, it brought a unique, unprecedented approach to dining in New York City, and more of the world’s best food to one of the world’s best hotels.

B

from the Culinary Institute of America with honors, apprentice in Italy, and become the Executive Chef of a restaurant in Cambridge, Massachusetts at the age of 25. After that, the accolades and awards poured in—including being named one of People Magazine’s 50 Most Beautiful People in 2001. It’s been quite the ride for Chef Todd English, and it’s still going at lightning speed.

Of course a concept this grand couldn’t be brought to us by just any chef. It required the experience and prestige unique to one man—the chef named the James Beard Foundation’s National Rising Star Chef in 1991 and Bon Appetit’s Restaurateur of the Year a decade later; the owner of restaurants and brands spanning the globe, including Olives from Vegas to Abu Dhabi, Figs from Boston to Palm Beach and Kuwait, and culinary concepts at Walt Disney World, on Cunard’s Queen Mary 2, and in three major U.S. airports.

It’s no wonder, then, that we were more than a little excited to have the chance to sit down with English at his buzzing Todd English Food Hall and chat about his past, present, and future, while watching the charismatic man charm everyone

This man, of course, is Chef Todd English, and he proved—most definitely—to be the right man for the job. To make just one restaurant in New York a lasting success is a challenge to say the least; to build a culinary empire around the globe and curate a food hall with nine diverse food stations that lives up to The Plaza’s reputation and serves countless New Yorkers and tourists every day is a whole other level of success. But Todd English is no ordinary chef. His first job in a professional kitchen was at the age of 15, after which he went on to graduate

TE: From early on, I have always been incredibly passionate about traveling. I love to learn and experience new things from different cultures, which has played a huge part in what influences my culinary decisions. I take what I learn from each travel experience and try to put my own spin on it when I recreate the dish in my kitchen. I find it very important to maintain the origin of the dish, while enhancing and altering the flavors. I was also fortunate to be able to work with Julia Child when I moved to Boston, and she was truly an inspiration. PJ: Now you have restaurants all over the world—Vegas, Mexico, the Bahamas, throughout Florida and Massachusetts, and even Dubai. What unites them all, and makes them—no matter where they are or what they serve— unique to you and your brand? TE: I like to cook with a lot of flavor and love, and I want to always create a warm and fun dining experience. I always try to respect the authenticity of the international dishes on the menu, as well as adding a modern touch—essentially, a spin of the common classics using indigenous and seasonal ingredients. PJ: Of course, some of the most beloved of your restaurants (and certainly for our readers) are here in New York. Is cooking for New Yorkers different than for diners in any other places in the world? TE: New York is known for the amazing culinary variety it has. In this one city, you find the best cuisines from all over the world. When cooking for New Yorkers, it is incredibly important to be innovative and open to evolving with the times. Producing quality food is my main priority—no matter what state or country it is in—but New Yorkers have very high expectations (and rightfully so), so it is important to ensure we live up to that standard at all times. PJ: Are there certain stations in the Todd Eng-

lish Food Hall—or specific dishes within the nine stations—that are personal favorites of yours? TE: I don’t eat pasta like I used to, but a good plate of spaghetti will always be a favorite of mine. I take great pride in all of our dishes from the different stations, but with my Italian heritage, the pasta station is definitely one that I hold close to my heart. PJ: The Todd English Food Hall is an incredible culinary experience, and must have been a huge undertaking. How long had you been thinking about doing something like this, and how did it first come about? TE: The TE Food Hall was something I dreamt about for more than a decade, as I spent a lot of time traveling in Asia and Europe, and wondered why these types of markets did not exist in America. When the owners of The Plaza asked me to look at the space, I proposed the idea of a food hall market like I had seen in many places throughout the world—but one with an American sensibility. PJ: The Plaza is a classic, iconic New York institution. Did that play a big factor when coming up with specific plans for this concept? Meaning, do you think different choices would have been made had it been located somewhere else? TE: It may have been a bit different if the location was, let’s say, Brooklyn—or even Midtown. But in keeping with the classic style of The Plaza, we wanted the Food Hall to reflect the same timeless elegance and design. PJ: I’ve seen you give cooking demos several times, and you always seem to really enjoy it. Does that play a big role in who you are as a chef and a personality—teaching others and passing on your love of food? TE: Yes, certainly. I’ve always loved the theater of cooking and teaching and spreading the gospel of good food. PJ: It seems like you’ve done literally everything a professional chef can do: Restaurants around the world, television, multiple cookbooks, numerous charities, and an international Food Hall in what’s arguably New York City’s best hotel. Is there anything you’ve yet to do that we can expect from you? TE: I would like to continue in the education of food—especially the future of food and our health. We are what we eat, and so inevitably, I see chefs being involved in the well-being of everyone as much as doctors are.

THE HOLIDAYS AT THE TODD ENGLISH FOOD HALL Designed by renowned architect Jeffrey Beers, with mosaic marble floors and dramatic dimensions, the Todd English Food Hall is a European-inspired specialty food market that’s, at its core, purely New York. It combines the best flavors and dishes of the world—with nine different food stations—with the sense of community that exemplifies this city, and offers something delicious for everyone. In addition to food favorites ranging from dumplings to oysters and tacos, there’s a 3,500-square-foot private dining room that can accommodate up to 175 people and features interactive chefs’ “action stations” for an immersive, all-encompassing edible experience (perfect for a holiday soirée). There’s also a grab-and-go market with items hand-chosen by Chef Todd English. This holiday season, the Todd English Food Hall will be offering special holiday menus. The Christmas Eve menu features such offerings as Butternut Lobster Bisque, Holiday Flatbread, and Crabmeat Stuffed Sole (with green bean “casserole”); the Christmas Day menu includes Traditional Country Pate, Rolled Ribeye “English Butcher” Style, and more. Around the City With his businesses in the heart of midtown Manhattan, naturally Chef Todd sometimes needs to escape the hustle and bustle. Where to? The West Village, SoHo, and Nolita for the many “great little cafes and restaurants, unique shops and boutiques, and cool little cocktail lounges.”

Out On the Town When not in the kitchen of one of his New York City establishments, or making the Todd English Food Hall run like a well-oiled machine, where does Chef Todd like to let loose? Among other downtown haunts, he counts Employees Only on Hudson Street as one of his faves. “It’s a

On Thanksgiving, “Antipasti starts around 11 in the morning,” he laughs, “with artichokes, caponata, the works. Then we roll into the lasagna course, then into the turkey and traditional foods. By 8:00, we’re about ready to pop.”

Everyone wants to know where a star chef eats when he’s not in his own kitchen. While this chef certainly has many favorites, he says, “I love what the guys are doing at Carbone. They’ve got a bunch of great things, actually. Dirty French is another really good one.”

Holiday Traditions It’s all about family for the chef during the holiday season. “The holidays are usually spent at my mother’s house up in Maine, on the water,” he points out. “That’s the Italian

And for Christmas, they begin the holiday with the traditional Feast of the Seven Fishes on Christmas Eve, followed, of course, by a whole other feast the next day. So who does the cooking? “Everybody,” he says. “My daughter Isabelle cooks—all my kids cook now. We all pitch in.”

The iconic Fairmont San Francisco

I

n 1907, one of the best cities in the word—San Francisco—got even better, when The Fairmont San Francisco opened its doors. Holding court high on Nob Hill, the new grand dame forever changed the landscape of San Francisco and the hospitality industry in general. Just 40 miles north of the City by the Bay, Fairmont Sonoma Mission Inn & Spa became an instant icon as well upon its opening, bringing an entirely new level of luxury to one of the most beautiful regions on earth. Following an extensive multi-million dollar renovation just two years ago, the beloved resort became even more spectacular.

Fairmont within a stone’s throw of all of the city’s main destinations, but it also happens to be the only spot where each of the city’s cable car lines meet. From the moment you enter its sprawling lobby, you’ll see that Fairmont San Francisco is something special. With the “jewel box”inspired rooms and suites in the original Main Building and the sophisticated design and jaw-dropping views of those in the Tower Building, the 591 rooms and suites are the perfect combination of contemporary elegance

When you combine these two Fairmont legends into one trip, you get a truly one-ofa-kind vacation of a lifetime.

Fairmont San Francisco From its opening over 100 years ago—giving birth to the Fairmont brand—to its hosting the UN Charter Draft in 1945, and its role in music history (Tony Bennett first sang “I Left My Heart in San Francisco” in the hotel’s famous Venetian Room), the Fairmont San Francisco has always been what legends are made of. It’s rumored that JFK first laid eyes on Marilyn in the Penthouse Suite. Today, the historic elegance remains, but with every modern luxury a traveler could wish for. The location, of course, can’t be beat— with priceless views to match. Not only is the

Of course each room and accommodation type features every bit of comfort any guest could hope for, from plush robes and pillow-top mattresses to inspired and inspiring design details—right down to the crown-shaped backs of the in-room seating, meant to remind guests of the hotel’s Nob Hill location. The Penthouse Suite (the aforementioned rumored location of the JFK/Marilyn introduction) is, quite possibly, the most spectacular suite I have ever seen. In addition to President Kennedy,

one of the most famous and beloved of the Fairmont San Francisco’s onsite offerings is the Tonga Room & Hurricane Bar (perhaps my second favorite spot in the entire city, after that Penthouse Suite terrace). Having opened in 1945 as one of the country’s first tiki bars (think kitschy but oh-so-glam), the Tonga Room is pure fun: Tribal wall coverings, bamboo tables, and giant drinks in coconuts. But that’s just the beginning; the tropical tiki palace is complete with a lagoon pool with a floating stage that moves throughout the night, on which an orchestra plays, and actual thunder and rainstorms (no umbrella necessary), much to the delight of Fairmont guests, San Francisco tourists, and local residents.

At $18,000 per night, it’s one of the most expensive night’s sleeps in the world—but also the most exquisite.

WHAT’S HOT

Prince Charles of Wales, Mick Jagger, Nat King Cole, Elton John, and Queen Beatrix of the Netherlands are just some of the notable names to have stayed in it. And while the 6,000-squarefoot masterpiece of luxury has been aweinspiring since it was created in the 20s, today, following a complete restoration in 2009, the beauty is beyond belief—and the value is a staggering $20 million.

When the night calls for more sophistication, there’s the ornately domed Laurel Court Restaurant & Bar, which also delivers a delicious breakfast and renowned afternoon tea.

h, Kauai. Nicknamed the “Garden Isle” because it’s arguably the lushest of the Hawaiian Islands, this tropical paradise boasts great weather, gorgeous scenery (only 3% of the land area has been developed for commercial and residential use, leaving 97% pristine and perfect for exploration) and of course, plenty to do and see. Kauai has seven distinct microclimates, from the desert-like west to the tropical rainforest interior. The island boasts nine golf courses, five of which are ranked as the top 15 courses in the state. There are over 45 white sand beaches (more per coastline mile than any other Hawaiian island), including Poipu Beach, which continually ranks as one of the best in the world. Plus, Kauai has the

The island’s dramatic landscape—from the crater of Mt. Waialeale to Waimea Canyon, to the spectacularly rugged Napali Coast—is best captured from above. Since many of the most beautiful places on Kauai are inaccessible by car, a helicopter is the perfect way to see the Garden Island, with rolling hills and valleys

2. Blue Lagoon Hanalei River & Bay Tour (Kayak Kauai) There are plenty of kayak tours to be had, but what’s really nice about this tour is that it combines river and ocean kayaking on the North Shore. Plus, there’s a beach stop for a picnic lunch and some swimming and snorkeling time (we saw turtles while in the water, which was an added bonus). There were coconut bras and grass skirts. So I wasn’t really sure what to expect with the Sheraton’s version. I couldn’t have been more pleasantly surprised. levate your trip of a lifetime with a stay at the Sumaq Machu Picchu Hotel, the only 5-star property at Machu Picchu located at the base of the ruins along the banks of the Vilcanota River. The Sumaq Machu Picchu Hotel was well worth every minute of the long trip it took to reach my final destination. After a delayed flight from New York City to Lima, I felt as though I was thrown into an episode of the Amazing Race as I barely made my connecting flight into the city of Cusco, followed by a two-hour bus ride through Andean mountains, only to barely catch a train for an additional two-hour ride to Machu Picchu. Finally arriving and thoroughly exhausted, the hotel offered an immediate feeling of tranquility and warmth from the friendly Peruvian people. The hotel’s newly renovated design was themed

around the Andean cross, Chakana, symbolizing the four elements of nature—evident in the lobby, hallways, and 60 guestrooms; and as I entered my room, the soothing sounds of the river’s rushing waters outside my balcony immediately created a sense of place. While Machu Picchu is the main reason for the visit, a stay at the hotel only enhances your immersion into the Andean culture. The hotel offers Peruvian cooking demonstrations along with Pisco tastings and traditional ceremonies led by a local Shaman. The hotel’s commitment to sustainability, verified by the Rainforest Alliance, touches on social, economic, and environmental issues. Their fine dining restaurant, Qunuq, serves fresh ceviche and local Peruvian dishes within a 5-star environment. Guests can also enjoy a traditional cooking experience called Pachamanca, a Peruvian dish baked in the earth with hot stones. Panchamanca

has its roots from the southern and central regions of Peru, and normally includes potatoes, fava beans, lamb, pork, and chicken. The hotel provides tours up to Machu Picchu (via a 15-minute bus ride) along with ecological walks. This hotel is about location! It’s walking distance from the train station and the heart of the quaint town of Aquas Calientas, where you can buy everything and anything alpaca. Additionally, being located only one block from the bus stop to Machu Picchu means that upon returning from a long day exploring the ruins, you’ll not only enjoy being dropped off directly in front of the hotel, but you’ll be that much closer to your next Pisco Sour. In short, the Sumaq Machu Picchu Hotel provides a luxurious and modern stay in an ancient land.

Exploring History and Rieslings

The Cosmopolitan Frankfurt skyline

The Vineyard at Lohrberg

any travelers think that Frankfurt am Main is just a commercial hub—but a recent trip to the Frankfurt RhineMain area revealed a wealth of history and culture, making it an ideal place for family vacations. The skyline bears such a resemblance to New York’s that the city has been called “Main-iihattan.” Our guide said that Frankfurt is considered the most American city in Germany, which is perhaps why I felt so at home there.

M

crisis, Germany is in the forefront of nations welcoming those seeking asylum.

Afterward, we took a boat trip on the River Main, past Frankfurt’s seven bridges.

Our first hotel stay in the area was in the centrally-located Fleming’s Deluxe Hotel. The name comes from the fact that the hotel chain was started by Ian Fleming’s chauffeur. One unusual feature is an original working Paternoster—an elevator that is in constant motion; you hop on and hop off. Needless to say, I took the elevator with the buttons.

We started the next day with an excursion to Lohrberg, the only remaining vineyard within the city borders of Frankfurt, where we tasted the local Apple Wine. All around us were activities for groups of schoolchildren. Lunch was served at an outdoor table at the scenic Lohrberg Schänke.

Frankfurt is the birthplace of Johann Wolfgang von Goethe, so naturally there is a statue of him. It is also the city where Anne Frank was born and where Oskar Schindler lived, and the Jewish Holocaust Remembrance Wall contains the names of Holocaust victims from the area; there are similar memorials in other cities. Germans are justifiably proud of their cultural contributions, but also admit their dark past. Significantly, in the current refugee

After settling in, we enjoyed a walking tour through the Town Hall Square. The Helaba Bank Tower offers panoramic views of the city. We had dinner at Frohsein restaurant (a delicious Wiener Schnitzel: Breaded and fried veal cutlet). I had my first taste of a Hugo cocktail, a popular drink in Germany that I liked so much that our guide suggested I open a Hugo bar in New York. (It is made with Prosecco, fresh mint, and elderflower syrup).

Frankfurt has more than 60 museums and galleries; 16 are located near the river (Museumsufer). With time for only one, we chose the Städel Museum. It is Germany’s oldest museum foundation with a collection covering 700 years of European art. There is a room of Max Beckmann’s paintings, including one of a synagogue in Frankfurt. A temporary exhibition of Hogarth’s prints was of particular interest, since I had just seen Stravinsky’s opera, “The Rake’s Progress,” which was based on some of these prints. On our third day, we drove to the capital city of Hesse region and a well-known spa town, Wiesbaden. From there, we took a picturesque cruise on the Rhine River, passing by a number of vineyards that produce Riesling wines before we reached Rüdesheim.

The Saalburg Roman Fort

One of our most interesting side-trips was to the Eberbach Abbey, a former Cistercian monastery which was founded in the 12th century. At its height, the Abbey had 100 monks and more than 200 lay brothers living and working there. The picturesque Abbey (where (continued...)

To Stay:

In Wiesbaden, we stayed at the luxurious Hotel Oranien. Then, we dined overlooking the town at the Opelbad Restaurant. The Romans had conquered the area and the former Roman outpost, Saalburg, conveys what life was like there about 2,000 years ago. The fort is part of the Limes, a UNESCO World Heritage site. A lesson in archery made clear that if I had lived during that era, I would have gone hungry. I didn’t that day because we had lunch at the Landgasthof restaurant, where German Emperor William I used to dine. Our timing was perfect for our visit to the delightful town of Seligenstadt. Once every four years, there is a traditional “Geleitsfest,” during which townspeople of all ages dress up and parade in the costumes of their ancestors, with horses and donkeys. At the end of the procession, there is a ceremony at which a city official recites a script and then drinks wine from a massive spoon called a “Löffeltrunk.” We were assured that there were no special effects; he was really imbibing all that alcohol. The open-air museum of the state of Hesse, Hessenpark, offers another trip into history, perfect for families with children. Visitors can learn about more than 400 years of rural life by stepping into houses with their original furnishings or attend craft and farming technique presentations. There are also craftspeople working and selling their wares. Bad Homburg boasts of its “champagne air,” and its mineral waters attracted royalty, including the German Emperor Kaiser Wilhelm II. You

are still treated like royalty at the Steigenberger Hotel. A visit to the elegant casino (built in the 19th century) confirmed that I had no more aptitude for gambling than archery. However, I did not lose at dinner. The on-site restaurant Le Blanc features a high quality fusion menu. There is a glass partition, so you can see the gamblers on the other side. Of particular interest to me was the free outdoor performance of A Midsummer Night’s Dream in German that was going on right outside the casino. During our stay in the region, there were arts events all over. While our tight schedule didn’t give us time for a concert, we did manage to sneak into a classical pianist’s rehearsal. As a reminder that Germans love their beer, we visited Glaabs Brauerei, the oldest brewery in the region. Founded in 1744, it still utilizes the traditional method of open fermentation. Since our departure time was approaching, we traveled to the very modern Hilton Frankfurt Airport. We had our farewell dinner (and my last Hugo) at Käfer’s Bistro Restaurant in Departure Hall B. Then, we spent the night in style at the luxurious Hilton Frankfurt Airport Hotel. I had previously stayed at the Hilton Airport Hotel in Copenhagen, and these are great places to stay when you’re getting on or off a flight. You just roll off your plane or out of bed and the terminal is nearby. From New York, flights are direct to Frankfurt on Lufthansa. Think of it: In about the same time it takes to sit through a Wagner opera, you can be in Germany.

Surrounding the lake are walking paths and parks in which to lie down and relax or take a boat ride for a tour of the lake. One thing that is a “must-see” is the Live at Sunset concert series in the summer months. If the Hamptons had a venue, this would be it. The arena, located just outside the city and tucked behind farmland, is relatively small compared to others, but it’s pure luxury all the way. Here you can enjoy mainstream performers while experiencing not only a remarkable sunset, but also an evening cocktail or two.

Swissôtel Metropole Geneva was something much more on the grand scale. Built in the 1850s, you can feel the magnificence of this landmark building with views overlooking Lake Geneva. I had anticipated more of a traditional look and feel with my room, but instead was very pleasantly surprised. The room was updated and contemporary but not overly modern. The first thing I noticed was the incredible view of Lake Geneva behind the two French doors and decorative balcony. The second thing I noticed was there was no television—but instead a large,

almost 10-foot mirror. I thought about it for a minute and wondered if I actually minded there was no TV. Then I found a remote. Puzzled, I started pressing the on/off button and aiming it aimlessly around the room. Soon enough, there it was. The television was hidden in the mirror. As you enter the room, one thing you can’t miss is the shower. Surrounded by glass—so your view of the lake is never obstructed—the shower is more like a personal spa than just a shower. With its built-in rain and steam features, they may, in fact, have to drag you out of the room. Metropole’s Gusto Restaurant offers modern Italian cuisine, which changes by the season and offers outdoor terrace dining in the warmer months—perfect for breakfast. The Mirror Bar, opposite the lobby, is a great spot to relax and enjoy light dishes and drinks. In the evening, 5 Lounge on the roof is the place to be. With its exceptional views, you can enjoy top-notch cocktails while watching the city light come alive. Swissôtel Metropole really has the perfect location. Across the street sits a park that lines the

lake. After having closed out 5 Lounge, I decided to grab a glass of Riesling and take a stroll along the lake. To my surprise, the park was bustling with people. Some having midnight picnics, some playing cards, and others, like me, just taking a stroll along the lake. It seems any time of year is a great time to visit both Geneva and Zurich. The temperature can easily get up in the 90s in the summer, and you can still see the snowcapped Alps in the distance. Come winter, both cities are transformed into winter wonderlands. Finally, another special thing I noted was how Swissôtel is connected with the community. We had the opportunity to visit a farm in Wagan an der Aare, a small rural area between Zurich and Geneva. This is where Swissotel gets its Purovel essential distilled oils for its spas. They are very rooted with the local economy, and do everything possible to help sustain that relationship and maintain their rich cultural heritage. So very Swiss, indeed.

I spent the day here being pampered and I thought I was at the Golden Door or Rancho Le Puerta. Town & Country named it one of the Top 15 Spas in the World and Condé Nast has given it numerous rankings, including the Readers Choice Award as one of the Top 25 Spas in the World. The Eau Zone’s Relaxation Lounge with luxurious spa cabanas allows for total sensory escape. Among the spa’s services, I recommend the Scrub & Polish Bar that allows you to choose from a dozen formulas, and of course there is a full service beauty salon. You’ll be in heaven at Eau Spa. Other amenities here include Har-tru tennis courts, two swimming pools, and a varied menu of activities for the whole family. Or why not create your own rock band in the hotel’s state-of-the-art DJ studio, or dance in Coast, the young adult social space? Artisanal Fromagerie & Bistro New Chef, Classic Favorites By Elizabeth Darwen with asparagus, frites, garlic, and thyme with brown butter. Gluten-free diners may also feast on Artisanal’s new Beet Quinoa Burger with arugula, balsamic yogurt, and tomato on a poppy seed bun.

With the new menu, Chef Creger, formerly of Le Cirque and Grandisca, keeps the classic French dishes Artisanal is best-known for, but adds his flair, using epicurean ingredients such as black and white truffles, Wagyu beef, quail eggs, and caviar to enhance them. Guests can now enjoy new hors d’oeuvres and fondue options, including the new Truffle Fondue, which features Artisanal’s signature threecheese blend with black truffles folded in to the mixture and white truffles shaved on top. Also new to the menu are an array of delicious grilled cheese sandwiches, including their signature five-cheese blend, named “Best in New York” by Time Out Magazine. Additionally, diners will enjoy decadent entrees, including a 32-ounce Waygu tomahawk ribeye served

Loyal diners at this Park Avenue institution need not worry—traditional menu items that are customer favorites will remain on the menu. Artisanal’s well-known macaroni and cheese is still on the menu, featuring its classic cheese blend. Additionally, the restaurant has its signature lobster bisque, served with crème fraiche and a caviar profiterole, and the Dover sole with crushed fingerling potatoes, spinach, fennel, and brown butter. As has always been the case, all breads and pastries served at Artisanal are baked in-house, including hamburger buns, baguettes, and five types of bread (including gluten-free options), all of which are made fresh for every customer.

fter leading the kitchen at Bobby Van’s Steakhouse, Chef Christopher Miller is launching Four Cuts Steakhouse.

A Brooklyn native, Chef Miller has over 20 years of experience. Upon receiving his culinary degree from the University of Washington, Chef Miller took his first positions at Mortimer’s and Ben Benson’s Steakhouse. After working in those esteemed restaurants, he became the Executive Chef of Bobby Van’s, a position he held for over 13 years where he developed a reputation in New York as the “steak whisperer.” Four Cuts, named after the four traditional cuts of steak—the ribeye, the strip, the tenderloin, and the t-bone—will offer diners traditional steakhouse cuisine in an intimate setting. The operation of the restaurant will be led by its General Manager Rodolphe Siffredi, who most recently worked as a steakhouse consultant for both Desmond’s Steakhouse and Parca Prime Steakhouse.

88 • Resident December 2015

Four Cuts’ space in the Sutton Place neighborhood was completely re-designed by C3D Architecture, which set out to create a unique look for the Four Cuts space by combining the sleek look of modern design with rustic elements associated with traditional steakhouses, creating an elegant, welcoming dining room. In addition, Marlaina Deppe of Novo Arts has provided a special wall garden, which has been installed on the columns in the main dining room. Franco Lucic of LMF Group designed the walnut wood paneling featured on the restaurant’s walls and on its columns, which accentuate the wall gardens. Along with the wall gardens and wood paneling, there will be custom artworks for guests to admire on the walls of the restaurant. When guests sit down for dinner, they are able to enjoy a wealth of traditional steakhouse classics from Executive Chef Christopher Miller’s menu. Working side-by-side with Chef Miller will be Sous Chef Joaquin Linares, formerly of

Wolfgang’s Steakhouse and Benjamin Steakhouse. Diners may start their meals with Four Cuts’ signature Seafood Platter which includes jumbo lump crab meat and shrimp served with cocktail sauce, lemon, and mustard. For a main course, guests may enjoy signature steak cuts such as the 28 day aged Prime NY Sirloin Steak. If you are looking for a decadent, romantic meal for two, Four Cuts serves a Porterhouse for Two or More served with your choice of sauces, including cherry peppers and onions, barolo wine, truffle butter, or Chef M’s Signature secret sauce. In addition to steak fare, Chef Miller will be serving his signature “blackboard” specials including veal chop with a grilled apple jack gastrique with sautéed wild mushrooms and Red Snapper sautéed with a beurre blanc burnoise over a vegetable hash.

Broadway Like You’ve Never Seen It Before

tarting November 19th, there’s a new show on Broadway, and it doesn’t include a complex story line or piercing vocals— in fact, nothing at all that is typically associated with a Broadway performance. Think instead visual paradoxes, hair-rising illusions, and stunts that take adrenaline levels to new highs.

The Anti-Conjuror (Dan Sperry) specializes in shock illusions, and he has appeared on America’s Got Talent, FOX’s World Magic Awards, and TLC’s Cake Boss. The Deceptionist (James More) easily fools with his high-speed trickery; he has performed live for several large audiences, including Britain’s Got Talent. He amazes audiences with his ability to make objects dissolve into thin air, but he wins them over with his sharp and inclusive humor, his demeanor on stage. And this quality gives Hobson a unique comedian-magician angle for the winning combination. We got the chance to speak with Hobson about his favorite onstage illusions, his humble beginnings, and the future of entertainment. Here’s what he had to say. Olia Golovkina: Do you see yourself as more of a comedian or a magician?

RD

JH: Well, I saw a magician when I was very young and I decided right then, ‘You know what? That’s what I want to do for the rest of my life,’ and I never looked back. I’ve just been living a dream. Heck, I don’t even know what else to do! I think if I didn’t do my magic or comedy, I’d probably be homeless.

OG: Wow. So what drives you? JH: Being an only child, I grew up fast, and I knew that the life that my family had I didn’t want to have for myself. The 80’s came around, where Detroit sort of lost its prestige as the auto-maker, and I could tell that the city was quite depressed, my family was quite depressed, and so I delved into magic as an escapism…I just took it upon myself and practiced every

OG: What was the name of the magician that you saw? JH: His name was Wally Wilson and he was a Detroit police officer who went to schools and performed a magic show with the message of safety involved for the kids…well, I saw this guy [when I was young]–I didn’t know who it was, I didn’t know his name, didn’t remember anything—then in later years I was friends with this magician…and I didn’t put the two and two together that he was the same guy…it’s just a weird thing. I knew the guy but didn’t know that was the guy who started me on my magic career. And I wish I would have known and did my math and figured it out and thanked him before he died.

JH: Well it was a natural progression of things because, to educate magicians at the time when I was a child, you couldn’t just look on the internet, obviously, you had to find books that were buried in libraries. And, ironically, magic is the second-most written-about hobby in the world—hobby in the professional world, Jeff Hobson - The Trickster second only to photography—but the books on magic are 95 percent underground, and they’re self-published, privately-published, and passed around in the day, three to four hours a day after school, and trade. So I started reading these books and next thing, one show leads to another, and next next thing, when I was 11 I did my first show. I thing, I’m 15 years on the Vegas strip and now charged ten cents per person. [Laughs] I made on Broadway for my second season. a dollar ten that day, I had to split it with my partner, who I wanted to do the show with, so OG: So being part of [an ensemble] production we both made, you know, 55 cents, that was like the Illusionists versus doing your own show, do you like one over the other? a big deal.

JH: Sure, sure. And then at age 12 I got offered five dollars to do a birthday party…one show led to the next show, then I started doing family shows and birthday parties and family events

OG: Is there one trick or one magic performance that you would never want to divulge any information about? JH: Well, the best thing that I believe I’m skillful at—and I’m probably best known for after the curtain comes down—is my ability to steal people’s belongings and then give it back to them afterwards. Being from Detroit, I’m just a natural thief [laughs]…especially stealing people’s watches. And there’s nothing better for me. My entertainment, when I perform, is to look at people’s faces with their jaw dropped and eyes bulging and the shock that they see me give their watch back and they didn’t know it was missing. I just love that. I just relish it. It doesn’t get better than that, every night. OG: And for you, do you see yourself going in a new direction [with your magic] in the future?

OG: So you went to his show and you started doing [magic] on your own and then eventually you started doing your own shows?

OG: That is a big deal! The first profits!

as opposed to doing my own one-man thing. And it’s less pressure when there’s more people in a show…When you’re doing a one-man show, you’re it for an hour plus, for an hour and a half. And you have to be on constantly so it’s a little more difficult.

JH: Actually, because we [magicians] all know each other, it’s a family thing. It’s fun to be backstage. We’ll have poker games after the late show. Some nights we’ll get together as a family, we’ll go out to breakfast together…so I do prefer going with other people I suppose,

JH: I am the last of the baby boomers. The baby boomers just started to retire just in the past few years, and they’re going to be continuing to retire for the next twenty or so. And I believe that there is a huge gap in what is now the entertainment industry for those baby boomers…in the past few years more channels opened up on television that show retro-television… because I think a lot of people realize that entertainment was classic at a certain point in time, when we had Johnny Carson and those sorts of things. And a lot of people— those baby boomers—are now missing that nostalgia…so if I had to say, I would love to do television, and I would love to do something retro for the boomers, and I think I’d be good at it. So that would probably be my goal I think. That or writing my own one-man show for Broadway and traveling in the theater circuit. OG: About the Illusionists , is there something that you could tell our readers— something that they would never guess about the show—that they would see if they attend the performance? JH: Well, I’ll tell you this…when we were on Broadway last time, we got feedback pretty often saying, ‘We had no idea. This is so much better than what we expected. We weren’t expecting all of this type of magic. We were expecting the old-fashioned girl-in-the-boxcut-in-half sort of thing,’ but we don’t even do anything like that…so I would say: Expect the unexpected.

for the next two years. And by the time I was 16 I was traveling around the United States and doing shows. So by the time I graduated high school I was actually making more money than my father.

Jeff Hobson: I suppose I was a class clown since I could remember. As a young child I always wanted to get the laughs and do the jokes, and then eventually I learned magic a few years after that. I guess I’m a natural-born clown and then magician second.

This drunken spontaneity occurs in The Lounge, a cozy hidden venue in the Theater District with over 9,000 books covering the walls, allowing audience members to bring a book and take one home. The middle of the space is a beautiful red stage entirely made up of books, and there’s a bar built into an 11-foot bookcase. This is the perfect must-see place to bring someone special for a holiday night out. For those audience members looking for an extra-special (and sauced) evening, for $500 an audience member can become king of the night. The king receives a bottle of Moet & Chandon Champagne, handmade chocolates, caviar, two premium cocktails, and executive decision-making powers throughout the performance. If someone hasn’t purchased this

With its completely unique brand of entertainment, an anything-can-happen vibe, and actors so talented Shakespeare himself would approve, this show is the perfect choice for a carefree and laughter-filled evening, and is a great idea for a holiday date night. Instead of choosing between being cultured and being hammered, here you get a little bit of both. Meeker’s recent National Arts Club exhibition featured one chandelier made of repurposed glass marijuana pipes that he called a “Bongolier.” “It was just kind of a goofy thing,” he laughs. “I thought it was kind of a fun way to repurpose glass pipes; rather than using them, we were making something kind of great out of them.” Meeker is also a well-known lighting designer whose company is regularly commissioned for White House state dinners, and whose clients have included the Clintons, Robert De Niro, Michael Douglas and Katherine Zeta Jones, and Joan Rivers, who gave him one of his first high-profile jobs when she hired him to light her daughter’s extravagant Dr. Zhivago-themed wedding at the Plaza Hotel in 1997.

Eating Healthy •for the Holidays ••

H

oliday time can be difficult, with lots of temptations and calorie-laden feasts. Between the holiday sweets lying around the office, preparing the holiday meals, and then attending the holiday parties and dinners, it seems almost impossible to avoid putting on holiday weight. But, just because you’re trying to eat healthfully, doesn’t mean that you need to avoid the festivities or accept the extra pounds. With a little planning, it is possible to maintain your weight during the holiday season. • Watch your portions! Divide your plate in half. Fill one half with vegetables. Divide the remaining half of your plate in half again. Fill one part with lean protein and the remaining part with the starch at the meal. • Prioritize. Holiday meals usually have lots of foods that you will find appealing. But are there foods that specifically define the holiday for you, i.e., candied yams or honey glazed ham? Pass on the usual calorically expensive fare like chips and dip, and opt for the holiday specific food as your treat at the meal. • Slow it down. Decrease your speed of eating It takes 15-20 minutes for your stomach to stretch and send a signal to your brain that says you are full. If you eat too fast you will eat too much and that leads to “eating to pain”. At that point you know you overdid it. Tip: do not “pre-load” your fork; you can even try to eat with your non-dominant hand. Also, conversation is calorie free! Talk to the people around you. If the holiday party is buffet style, don’t rush straight for the food table. Greet your friends and family, and settle in before even looking at the food. Remember, these meals tend to be long.

By Glen Tobias, MS, RD, CSSD

Rather than inhaling your food and then going back for more, try to make your plate last the whole meal. • Avoid skipping meals. Though we are sometimes tempted to “save calories,” this tactic can lead to overeating. Eat prior to the big meal. Eat a regular breakfast and lunch, then eat something right before you go to dinner. Now the “battery” on your will-power will be fully charged. If you go into the meal too hungry you will eat faster and longer. So prevent yourself from getting too hungry—do not save up the calories by not eating all day. • Dessert is not a meal. It is a supplement to the end of a balanced meal. Try to choose the fruit or sorbet option. If that dense chocolate cake is calling your name, take a small piece, but then stop. It is ok to treat yourself (as long as it is in moderation), and there is no point in feeling guilty when you are eating something you love. Just remind yourself that there will be even more holiday eating. • Increase exercise. Since you will be eating more during the holidays, increase your physical activity. Go out for a stroll after a big meal, or hit up an exercise class the morning before a holiday dinner. • Watch what you’re drinking. Don’t waste your calories on beverages. Avoid sodas and juices, and beware of alcohol. Alcohol not only contains empty calories, but it can also further stimulate the appetite. A good alternative is some sparkling water with a citrus twist–sparkling water has zero calories. • “Calorically Cheapen” your meal. There are no “good” or “bad” foods. People always say foods like cheesecake are bad…I say it is delicious, but expensive. Everyone

understands money and high calorie foods are “expensive” and low calorie foods are “cheap.” Now when you are making your mashed potatoes, use skim milk instead of half and half…you just “calorically cheapened” that dish. If you are going to eat a piece of pie…forget the a la mode and you just “calorically cheapened” that dessert. This will not only help minimize the damage but also help prevent you from feeling deprived. • Be a healthy host. If you’re making the meal, provide some healthy alternatives, such as baked sweet potatoes instead of candied yams. At the start of the meal, pass the food around once and then place the serving dishes on a side table. This way, you will be less likely to mindlessly take more food during the meal. And don’t forget, you can send home leftovers with your guests. (If you are not the host, but the dinner is pot-luck, bring a healthy dish that you know you can eat, like a big salad or a raw veggie platter with a yogurt or cottage cheese-based dip). • Maintain. Thanksgiving through New Years is a very difficult time. Don’t expect to lose weight during this time period or you may be in for disappointment. Try focusing your efforts on maintaining your weight during the holidays and be determined on enjoying your time with your friends and family If you have any questions during these hectic weeks, please contact me at:

If we don’t exercise and massage our face, facial muscles become weak, tense and flabby, facial skin becomes dull and sagging.” She says facial muscles need to “work” – to lift, expand, contract and receive lifegiving oxygen in order to stay healthy, fit and beautiful. By merging the science of skin therapy with the art of healing energy, Liliya ensures every client leaving his or her facial looks good and feels great. Am I a Candidate for PRP (Platelet Rich Plasma) Treatment? By Roxana Kerns, M.D. Platelet Rich Plasma injections constitute rejuvenation or regenerative treatments that take advantage of your body’s natural healing principles. The injected PRP directly affects the dermis or injected area as growth factors and specific proteins extracted from your own blood, encourage natural collagen production as well as the growth of additional tissue to support the underlying structures of the skin. The main advantage of PRP injections is the speed by which treatment can be completed. Because the typical treatment can be completed in about an hour, PRP treatment is considered a “walk-in” procedure. Patients come into the office, receive their injections, and return to their daily routine right away. Any swelling and facial discomfort is moderate depending on the injected area and subsides within 24 to 72 hours.

What is PRP? PRP is a small amount of blood (1-2 tubes) drowned from the patient and placed into a special centrifuge. The centrifuge separates out red blood cells, white blood cells, platelets, growth factors and protein. The entire centrifuge process only takes 5 to 15 minutes.

The PRP rejuvenation process uses cells from your own body in order to encourage natural tissue production. They can be manipulated in order to become any sort of tissue the patient desires (Collagen, Bone, Cartilage, Ligaments). Platelets are known to release factors that respond to tissue injury, where they initiate and promote healing. So why would someone choose PRP? Because growth factors in PRP are believed to provide much better results because of their ability to grow new tissue.

When to consider PRP treatment? PRP Can be used in skin rejuvenation or as a regenerative tool as follows: • Replace the old fashioned “Facelift”. Facelift or Rhytidectomy ( wrinkle excision in greek) is a cosmetic procedure to restore a youthful looking face. A traditional facelift is a surgical procedure performed by a plastic surgeon under anesthesia. To perform this procedure, the surgeon makes a number of incisions

at the hairline and around the ears. The procedure carries with it a certain amount of risk including infection and an unexpected final appearance. Rather invasive with the potential for severe downtime and complications, surgical facelift is transitioned by aesthetic physicians like Dr. Roxana Kerns, into less invasive facelift procedures, including PRP, Fat and Stem Cell injections.

treatments.

• Treat deep wrinkles unresponsive to Botox Cosmetic or as a natural alternative for patients who would not consider relaxants. The best results with PRP ( and Botox Cosmetic or Dysport or Xeomin) are for wrinkles, dark circles and saggy eyes. Other qualifying wrinkles are of the forehead, smile lines and upper lip wrinkles.

At Orchid Aesthetics Medical Spa in New York City we use SELPHYL AUTOLOGOUS FIBRIN AND PLATELET SYSTEM, an advanced technology for safe and rapid preparation of PRP.

PRP and Fat injections are facial rejuvenating procedures with the effect of a nonsurgical facelift.

• Neck wrinkles are most often forgotten and resistive to dermal fillers or Botox. PRP can be a qualifying youthful restorative tool in treating transverse deep neck wrinkles.

PRP and autologous Fat injections are different because these are considerably less invasive. These also do not involve traumatizing the underlying facial tissue. If you are considering a facelift procedure, we encourage you to contact Dr. Roxana Kerns of Orchid Aesthetics to get all the information. We believe that less invasive PRP or autologous Fat rejuvenation is preferable over traditional facelift surgery. We would love the opportunity

• Saggy and wrinkled hands can be treated with PRP or combination of PRP and dermal fillers to restore natural and youthful looking hands. •Platelet Rich Plasma injections have been proven very efficacious in treating osteoarthritis of the Knee, acute ligament injuries, ankle or shoulder sprain. What to expect the day of the treatment During a limited office visit, doctor Kerns will review treatment options and indications, after which a small amount of blood is collected as for any routine test. The tube(s) are spun into a centrifuge to separate blood and platelets. The PRP is ready for use according to clinical requirements.

Are there any side effects? PRP preparation by SELPHYL utilizes no animal or foreign components so there are no risks for an allergic or adverse reaction.

Facial Rejuvenation

For a Holistic Approach, Consider your Dentist First

••

By Dr. Jyoti Srivastava

R

ejuvenation is a word heard often when it comes to our overall health and appearance. But how do we look at facial rejuvenation from a holistic standpoint? At our practice, EastSide Dental Medicine, we always take a complete approach to oral and health care. And when doing any restorative or reconstructive work, we approach the patient in a holistic manner as well. We approach both with the end result of making our patients healthy and beautiful while applying cutting-edge solutions.

Having facial rejuvenation done in the hands of a qualified dentist has the advantage of being twofold: Addressing anti-aging in the face while creating a more youthful smile. As we know, when we age the teeth can yellow, wear down, and even shift. No anti-aging fillers, topicals, or injections will allow for a truly youthful appearance if the teeth are worn down, chipped, stained or yellowing. Also, dental and facial procedures can often be done combined in one visit, saving the patient time and money.

Often when considering facial rejuvenation utilizing BOTOX or fillers, the first thought is to go to a dermatologist, spa, or plastic surgeon’s office. But where does the role of the dentist weigh in? Dentists know facial and head anatomy better than most health professionals. And aesthetic dentistry is, in essence, facial rejuvenation, when one thinks of smile design or a smile makeover as a total package. Facial rejuvenation’s goal is to bring a youthful appearance to the face while reconstructing and enhancing the mouth in a natural and beautiful way.

BOTOX is a wonderful solution for softening lines and wrinkles in the face and relaxing the “number 11” furrow in the brow, and dermal fillers add volume back into the face that is naturally lost during the aging process. Working with dentists, some of the areas that can be addressed are jowls, laugh lines (also known as nasolabial fold), loss of lip and cheek volume, and neck wrinkling.

108 • Resident December 2015

These two treatments work beautifully and naturally in a dental setting when performing reconstructive and restorative procedures.

Considering a dental practice to perform these procedures while creating a smile makeover is quite natural, as a prosthodontist knows facial anatomy intrinsically. The facial rejuvenation packages can combine whitening, Invisalign, and veneers, in combination with BOTOX and dermal fillers, for an exceptional and true enhancement of the facial appearance. So why not explore the advantages of combining a beautiful smile with the latest in facial anti-aging treatments? Contact our practice for more information on how facial rejuvenation—combining the best in aesthetic dentistry—would be a wonderful post-summer lift.

An Honest Conversation About Laser Hair Removal ••

W

LLA: The truth is that it can be a painful procedure—but it’s definitely bearable. It’s not painless, but it becomes comfortable over time. Usually by taking an ibuprofen or aspirin prior to the treatment you should be fine.

LLA: The duration of the procedure depends on the size of the treated area. A small area of the body can be as short as a couple minutes, while a medium area can take up to 15 minutes, and a large area can take up to a one hour. RM: How does someone know if laser is the right choice for them?

LLA: Absolutely! More and more men receive laser hair removal every year, and realize the importance of caring for their appearance. RM: Is laser hair removal actually permanent?

wine & dine CAN’T MISS BUZZ

LLA: No—the body is always producing hair. However, the laser treatment can reduce the amount of hair that your body produces by 85-95%. The elements that contribute to the efficacy and longevity include working with the right laser for someone’s skin type, the right duration between sessions for each area of the body, and the right technician. Hair growth can be affected by hormones, stress, certain medications, and other factors. Treating areas that aren’t right for laser treatment—such a light hair—can actually increase hair growth. This is why it’s important to test your skin, find the right level of laser, and the right technician.

LAST WORD

LLA: Honesty is the best policy. You need to make sure that you trust your laser hair removal technician, and that, most importantly, your technician is licensed. As far as the actual procedure, every single treatment can be different based on each person’s hair. Make sure you ask your technician to find the right amount of energy of the laser for your skin type, hair color, and thickness of the hair. Lastly, ask others who have gone through the experience for their opinions. Check the latest

WHAT’S HOT

However, it’s important to remember that performing laser hair removal is not without its challenges; not just anyone should perform it—those seeking it should only trust their delicate parts to an expert.

Lital Lev-Ary: Laser treatment is the process of eliminating hair through a series of sessions—usually six to eight treatments. The treatment itself is repeated because the hair grows in different time patterns and increments. To successfully stop the production of the hair follicle, we must use the laser over the targeted area three to four times.

hen the temperatures start dropping, New Yorkers immediately begin heading to warmer climates— particularly during the holiday season. While one of the main beauty priorities for a winter vacation is the proper resort wear, another equally important—albeit less frequently discussed—is hair removal. After all, bandeau tops and bikini bottoms require hair-free body parts. One of the most widely practiced and effective means of removing unwanted hair— and certainly one of the methods that lasts the longest—is laser hair removal. It’s been commercially available for well over two decades, but in recent years has become extremely advanced.

Cedra Pharmacy Health and Wellness as it Should Be •

our approach to health and wellness should be holistic, all-encompassing, and unique to your needs. It shouldn’t be one-size-fits-all, nor should it be taken lightly. With that in mind, one of New York City’s most unique and remarkable businesses exists solely to bring an unprecedented, highly personalized approach to health, wellness, beauty, and personal care. Upon first approach, Cedra Pharmacy looks like a high-end, Upper East Side boutique with exceptional design. But beyond that, it goes much further, offering thoughtful service, a wealth of hard-to-find health and beauty products, in-house nutritionists, and personalized service from health professionals who have extensive experience in medicine, hospital pharmacies, nutritional training, and the cosmetics industry. The focus and goal behind it all is clear: Owner Mazen Karnaby founded Cedra Pharmacy in 2014 with the sole purpose of providing an antidote to the modern pharmacy. Karnaby—through this innovative approach—goes back to the former days of healthcare, when it was about people, not corporations and transactions.

They provide expansive support between doctor’s visits and beyond, so customers can feel confident about their treatment— not confused. Cedra’s pharmacists and specialists help clients design a customized treatment plan, will monitor their health over time, and supplement with over-the-counter treatments to complement their prescription medications. It’s like having a personal healthcare consultant. Based on their exceptional knowledge and experience, their experts will recommend treatments, supplements, and behavioral modifications customized to your specific experience. Perhaps most unique, Cedra Pharmacy offers memberships of different levels— all equating to personalized, conciergelike service, with benefits that include: 24-hour emergency support, personal

training, one-on-one at-home nutrition consultations, door-to-door limo ser vice to doctors’ appointments, custom monthly massages, discounts on in-store purchases, refill synchronization, and much, much more. Additionally, much unlike today’s highly corporate, impersonal on-every-corner drug stores, Cedra—with their extreme knowledge of a range of diseases, disorders, and specialties—offers complete, caring support throughout a patient’s care and treatment, whether it means monitoring specific medications, recommending supplements, alleviating pain, minimizing stress, or simply making you feel better about the way you look—or all of the above. The fact is, healthcare in general has moved far away from where it was decades ago; it’s become a business of money and anonymity. Cedra Pharmacy brings the care back, realizing you are an individual with unique needs. They treat customers with respect, dignity, and honesty, and have changed the way their customers look at health and wellness.

The Holiday Season’s Must-Have Apps • •

By Shana Schlossberg

The holidays are upon us and most of us are looking forward to going home and spending time with friends and family. The challenge, however, is that many of us will have to endure hours at airport departures gate listening to flight delay announcements. Should you find yourself sitting on the floor by your gate bored senseless, download the Gate Guru app and see if there are any interesting things close by; in most cases it will recommend restaurants, though occasionally you may come across a yoga or meditation room, or other fun surprises. Should the delay be longer than a few hours, check out the Hotel Tonight app and see if you can find a good deal on a hotel room nearby.

Virtual Santa

Going home also means that you need to find gifts for each member of the family, and knowing what would make every single relative happy can prove to be a challenge. Check out the Christmas Gift Finder app, which allows you to enter a gender and age and instantly receive some gift ideas. For bargain hunters, Shop Savvy allows you to find deals before heading to the store. Once there, you can scan and store items and compare prices from other stores. Then there’s the EZBZ app, where you can ask local businesses to send you ideas in real time on gifts they recommend.

As they drive around the Hamptons, LiLi warns of pedestrians in the crosswalks and deer up ahead. She enjoys accompanying Pat on errands (including picking up gifts and prizes for “Play for Pink” for the past several years) and especially loves outdoor events. Pat is on the benefit committee of “Play for Pink,” and every Spring LiLi goes with her to Hampton Hills Golf & Country Club, where The Play For Pink Breast Cancer Golf Tournament—which benefits The Breast Cancer Research Foundation, founded by Evelyn Lauder in 1993—will be held on June 16, 2016 for the 17th consecutive year. It’s the largest ladies golf tournament in the Hamptons, and of course LiLi and Lulu will be there, to meet and greet. Success in marketing depends in great part on being noticed and being remarkable. LiLi does a splendid job of supporting that role— and sometimes starring in it. She regularly appears on Pat’s social media pages, including Facebook and Instagram (Patricia Stein Redin). Just one look at that face and you’ll see why she’s the beloved Montauk princess.

I

n this month’s column, it’s my pleasure to introduce my friend Pat Redin and her Chow Chow, LiLi. Pat, her husband Eric, and LiLi live in Montauk Manor, a condominium/hotel in Montauk, where LiLi rules the roost.

In the early years of their marriage, Pat and Eric lived in Gramercy Park, both of them working at Madison Avenue advertising agencies. After several years, they moved to Long Island and had two children, son Connor and daughter Maris. In 2005, after 18 successful years as Senior Vice President of Sales for a marketing company, Pat launched R2MP Ltd., with the mission of providing marketing and production services to a broad range of clients, from Montauk to Manhattan and beyond, their primary focus being on program management and identifying project cost-savings for a major communications company. The dramatic shift from being mostly on the road as a salesperson to working remotely

allowed Pat to adopt Yogi Bear, a male Chow mix from a rescue organization. The experience with Yogi was so rewarding that, in the span of 13 years, Gigi, LiLi, and finally Teddy (all Chow rescues) joined the Redin pack. LiLi, at 14 months, was the puppy of the group, yet quickly assumed the Alpha role.

Pat & LiLi can be reached at (631) 940-5700 or via e-mail: PRedin@R2MPLtd.com

Now, at eight years old, LiLi is Pat’s only pup, as well as her full-time office mate. They like to spend time together in the Manor’s majestic lobby, relax on the patio, and lounge by the pool while Pat works on her laptop. LiLi has become a bit of a local celebrity, and is quite the conversation starter. “She looks like a lion,” people often say. And of course, the usual, “Does she shed?” Yes, she does! All year long, in fact—but frequent brushings keep her beautiful. When the work day wraps up, Pat and LiLi like to head out to the Manor’s western lawn, where Pat takes photos of the often magnificent sunsets over Fort Pond Ray, while LiLi chases birds and bunnies off the grounds, and takes long walks

BISCAYNE BEACH

Looking for a second-home beach getaway? Two Roads Development is building Biscayne Beach, a luxury 399-unit condominium tower currently being developed that, once completed, will “bring the beach to the city”. This 52-story bayfront highrise currently under construction is expected to be finished in 2016.

Biscayne Bay has impeccable views that speak for themselves. This condo development will also be introducing downtown Miami’s first private members-only Beach Club on Biscayne Bay, an elevated man-made sandy beach complete with private cabanas, premium amenities, and bayside piers for swimming, kayaking, paddle boarding, and more. “Beach chic” designs for the project’s common area amenity spaces, Beach Club level, and exclusive residences are being designed by world-renowned interior designer Thom Felicia.

EIGHTY SEVEN PARK

Terra, the development group behind some of Miami’s most significant real estate projects, has a lot to look forward to for 2016. Their newest project, Eighty Seven Park, is located just up the coast in North Beach at 8701 Collins Avenue. Eighty Seven Park will be a 70-unit beachfront condo designed by Renzo Piano, located on the edge of parkland and the Atlantic Ocean, “where park meets the ocean”. Eighty Seven Park creates a fresh dialogue with the vibrant community of Miami Beach, featuring elegant homes—or villas in the sky—that speak of light and air, designed by an architect with a poetic touch. It’s an elemental approach, bringing together architecture, design, and the natural landscape. With the swimming pool and blue ocean, along with the exquisite views, the future of Eighty Seven Park looks very bright.

CENTRO If you’re looking for city living but with warmer temperatures, Newgard Development Group is currently building Centro, a 37-story loft-style tower in the middle of downtown Miami’s central business district. The 352-unit condo project is attracting buyers with a cosmopolitan New York lifestyle because of location, proximity to transit links, and urban density; it’s also one of the first condos to be built in Miami without an on-site parking garage. This condo is the perfect place to make you feel right at home with its New York feel and lifestyle, but without the unbearable New York cold winter months.

Where Historic Restoration Meets Modern Living

The Beacon •••

T

he Beacon, a residential community built on one of the highest points in Jersey City near its vibrant downtown district, is inarguably unique—in its history, its architectural distinction, its scope of amenities, and its unparalleled offering of outdoor open space. The amenity package alone is so broad and vast it belies the gated community’s urban setting. There’s Overlook Park, a 45,000 square-foot, landscaped oasis offering grills and seating areas against the panoramic backdrop of the Manhattan skyline and New York Harbor; an additional two-acre park with children’s playground and organic garden spaces, and expansive dog runs for the resident canines. There’s more: 24-7 state-of-the-art fitness centers, meticulously restored Art Deco theatres with oversized screens, children’s playrooms, high-floor Sky Lounges, WiFi in common areas and landscaped courtyards with fire pits. Residents also engage in Yoga classes, Spin classes, children’s music classes, holiday events and assorted food truck festivals—all while enjoying majestic views in every direction including Liberty State Park, the Statue of Liberty and Manhattan’s iconic skyline. Additional community amenities include on-site garage parking, 24-hour Community Concierge, and

Smart Key controlled access. The Beacon’s ornate buildings are icons themselves—restored to recapture the dramatic architectural details and historic grandeur of their Art Deco-era origins. Today, six buildings are completed, their marble walls, terrazzo floors, etched glass, gilded beams and moldings, and bronze chandeliers gleaming as they did over 75 years ago. Inside the newly-created rental residences, the look is modern and chic. Studios, one- and two-bedroom apartments feature high ceiling heights and gourmet chef’s kitchens with granite countertops, stainless steel appliances and garbage disposals. Elegant baths are adorned with cultured marble vanity tops, tile floors and glass shower doors. Each residence also offers central heating and air conditioning and individual washers and dryers. Individuality and a broad range of options reign supreme at The Beacon. Paramount, which like all of the Beacon buildings is named after a famous theatre, rises 23 stories and features some of the most dramatic spaces and distinctive architectural elements found within the residential collection. Its voluminous two-story lobby—with 12 marble columns and a grand stairwell of white and gray marble that leads to a spacious marble-trimmed mezzanine—has been featured in several movies including The

Imposters and Quiz Show as well as in Avril Lavigne’s music video for the song “Hot”. Tower, a 15-story, 128-unit building, is 100% smoke free and pet free and includes a landscaped Zen Garden with comfortable seating and fire pit, and a 15th-floor Sky Lounge in its amenity offering. The recentlylaunched Criterion features 271 luxury apartments, a beautifully-adorned lobby, and its own suite of amenities tailored to today’s urban professionals. The wide assortment of floor plans, views, amenities and aesthetics has enabled developer Building and Land Technology (BLT) to deliver a modern, urban lifestyle experience at The Beacon that caters to every need and indulgence. The developer’s commitment to service is further demonstrated through exclusive transportation benefits to Beacon residents, including high-frequency courtesy shuttle service to the Grove Street and Exchange Place PATH/Ferry Stations. Beacon residents also enjoy proximity to Jersey City’s vibrant downtown district which is celebrated for its comprehensive public transportation system, including numerous NY Waterway Ferry terminals and PATH stations offering convenient service to Manhattan, as well as NJ Transit Light Rail and accessibility to the Holland and Lincoln Tunnels. The area is also flourishing with new restaurants, cafes, coffee houses and cultural attractions. In addition, the new Citi Bike Jersey City bike sharing program includes a station at The Beacon. It is one of 35 stations city wide that houses 350 bikes to provide a new, environmentally friendly, healthy and affordable 24/7 transportation option for Jersey City.
