ow I guess is as good a time as any to resolve an issue and move on with our lives.

Afterall, we have been through so much this year that we should get all of the controversies behind us and try to live in peace in 2021. Here is the issue: What about putting sweet potato in gumbo? Even more controversial: How about adding potato salad?

There are some people in this world who have never heard of positioning an orangecolored tuber in the gumbo bowl. Those folks are deprived. While a gumbo simmers on the stove, creating a spicy, peppery and salty flavor; the oven should be hosting a pan of browning Louisiana sweet potatoes. Just the baking experience is worth the effort.

There are few finer fragrances than that of a spud being transformed into a delicacy. The kitchen is perfumed by a caramelized aroma.

When the gumbo is served, over rice, the proper thing to do is to position a peeled sweet potato into the mix so that the spoon can slice slivers of it as you eat. The sweetness complements the spicy richness of the soup creating a flavor cornucopia unique to the Louisiana experience.

My gumbo preference is chicken and sausage thickened with okra, but I would not turn away a steamy bowl of seafood gumbo with crab claws hanging over the edge. (I do not approve of mixing gumbos with meat and seafood, but here too I would pivot if necessary.)

Those of you who sample the gumbo and sweet potato combination for the first time will want to thank me, but you should hold the praise until trying the other variation, potato salad in gumbo. This practice is not as widespread as the others but has been common to St. Martin Parish, which is also known for being the site of the Evangeline Oak. Evangeline, had she been non-fiction, was Acadian, but one theory is that the potato salad is a reflection of German influence in an area that is — so to speak — a cultural gumbo. The Germans who settled along the river parishes added their own spices and sausages to Louisiana dishes — such as andouille — plus a spoonful of potato salad. Unlike the sweet potato, a potato salad can be tangy, sweet or both. It adds a whole new repertoire of flavors.

We should add that we have known of people putting a boiled egg in a gumbo, but we pretended that we didn’t see it.

Our cover theme this issue is about comfort food. While such food can be, I guess, comforting, not all of it necessarily healthy, but sweet potatoes do well in the nutrition test. They are supposedly a good source of Vitamins C and B6 and are also packed with potassium and magnesium.

We wish they could also assure world peace, but we will leave that up to the Tabasco sauce.

Staying Alive Even one basic CPR class can mean the difference between life and death

In a time when everyone’s concerned about their immune systems, mandarins are an excellent source of vitamins C and A, which will help strengthen your immune system.

However, enjoy them in moderation: mandarins and other oranges are acidic and can cause stomach distress if overdone.

n a life-threatening emergency, seconds matter. When it’s a loved one or friend who’s unresponsive, it can be all too easy to freeze in shock and fear. However, with simple CPR training, you can save a life.

Daniel Daire, nurse practitioner at Baton Rouge General Medical Center, said the best way to learn CPR is to take a course. The good news is even one class (yes, just a single class on a single day) can give you the knowledge and confidence necessary to save lives.

If you’ve never taken a CPR class, there are still some basics to think about should you find yourself amidst a life-threatening emergency. Daire said the first thing to do is to call 911 or have someone else call 911. Even if your CPR is successful in distributing blood to the person’s vital organs, they will still need professional medical attention to survive.

Once you’ve called 911, make sure your surroundings are safe. For example, if it’s outdoors, a person who suddenly collapsed may have stepped on a downed power line. You can’t help anyone if you end up dead or seriously injured yourself.

The Red Cross’ instructions for CPR are as follows: place your hands one on top of the other in the middle of the person’s chest. Use your body weight to help give compressions at least two inches deep at a rate of at least 100 compressions per minute. A University of Illinois College of Medicine at Peoria study found that thinking of the Bee Gees’ hit “Stayin’ Alive” helped people find the right speed for compressions (do it for every “ah” in the “ah ah ah ah” in “Stayin’ Alive”).

Daire said if CPR is administered within one to two minutes of the initial incident, the survival rate improves. He said the more people who have CPR training, the more lives will be saved. Some day, one of those lives might be one of your friends or family.

The Red Cross and other organizations provide CPR instruction across the country. But even if you don’t get around to taking that class, it’s always better to try CPR in an emergency.

“Any kind of intervention is better than nothing,” Daire said. n

I

llumination is a delicate thing. Like collaboration, it can take intentionality, an understanding of the environment and a sharp eye to make it most effective.

Lafayette’s Boonies Design + Fabrication knows a lot about light and creativity — their hand-cut, customwelded and powder-coated chain candlesticks embody both. Available in deep blue and warm pink colorways, and three sizes, the candlesticks are selling throughout North America.

Founded in 2016 by Justin Roy and Jayna Anderson, Boonies is a husband-and-wife team. The couple eloped to the Ozarks in September. They began making furniture together after about two months of dating.

Roy, who grew up in Youngsville but moved to Los Angeles to be a professional skateboarder, was building sets for the film industry when he met Anderson, who was working in local parks. Together they began working on furniture and art together while living in the desert outside of Palm Springs.

“I do think California continues to inspire us,” Anderson says. “I feel like my aesthetic is much more SoCal than East Coast.”

The couple returned to live near Roy’s family in south Louisiana and soak in the slower pace of life they grew to love in the desert far from Hollywood.

As collaborators, Roy is process-oriented, while Anderson prefers thinking big picture. Her motivation is to reach the finished vision.

Boonies’ sunbeam plant stand began as a wall hanging in Anderson’s head. After the first was completed out of scrap she just had lying around, Roy was looking at it and turned it sideways. He suggested it could be a plant stand.

You’ve been described as ‘Swamp Hippies.’

What inspired that nickname and what makes it ring true?

Justin has this long wild hair and heavy laid-back vibe about him. My hair is arguably just as wild, and I’m usually doused in some mix-matched rainbow outfit. We stick out a bit. A lot of people will ask us if we are hippies, which makes me laugh. We were never sure how to answer the question, so when my friend from Philly called us ‘Swamp Hippies’ we decided to embrace it.

“We have very different viewpoints,” Anderson says.

“A lot of our creativity comes from one of us looking at the other’s idea and saying ‘Well, what about this?’

The candlesticks began as a dichotomous design in Anderson’s sketchbook: A rigid, masculine chain in a hyper-feminine color, crowned in light.

Though she laughs at the thought of pink being her favorite color — it’s far from it — the blushing hue has proven to be the most popular shade for the candlesticks.

The couple’s products are available in 50 shops nationally and in Canada, including in Louisiana at Genterie Supply Co. in Lafayette, and Three Threads in West Monroe.

They recently completed a custom shelving system for Lafayette’s latest farm-to-table hotspot Scratch Farm Kitchen.

Once a Boonies piece arrives in a buyer’s home or business, the final step of collaboration begins.

work vary from location to location, of course, and Anderson appreciates the uniqueness of her connection to customers more and more.

“I love seeing our candlesticks and plant stands in homes, and I’m constantly surprised by what people have done with them,” Anderson says. “I know personally, I really get excited about the styling and creativity these can spark.”

A veteran glass blower and herbalist — she has her own line of beauty and wellness products called 5th Dimension Herbs — Anderson keeps centered by continually creating.

“It’s easy today to live above your shoulders and get stuck in your head.

But when you make something with your hands it pulls you back into your body and connects you with the Earth.” n

What is the most challenging aspect of design for you?

Sometimes the most challenging aspect of design isn’t coming up with the idea but nailing down the execution. Especially, we when step outside of our comfort zone to create a challenging design. Making the initial drawings and 3D renderings is the easy part. Bringing those designs into a physical form is where things can get tricky!

re you tired of staying home watching the news? Do you need something uplifting? Try art. While COVID-19 has disrupted the schedules of art galleries and museums, Louisiana has several fascinating outdoor art spaces open to the public. They range from a small garden in Chauvin, dedicated to the artwork of a single, enigmatic artist to a nationally acclaimed sculpture garden in New Orleans with artwork by many of the world’s best known contemporary artists.

For a good autumn walk, here are a few suggestions.

Kenny Hill Sculpture Garden, 5337 Bayouside Dr., Chauvin. Along Bayou Petit Caillou sits a remarkable sculpture garden built by the mysterious bricklayer Kenny Hill. Here larger-than-life concrete angels and monuments rise from the banks of the bayou like some apocalyptic Biblical struggle between damnation, redemption and salvation. Hill showed up in Chauvin in the late 1980s to work at local construction sites. Over the next decade, he built his garden. Then one day in January 2000, he walked away, never again to be seen in Chauvin. Now operated by Nicholls State University, the garden is open daily and admission is free.

Located in City Park, the New Orleans Museum of Art’s Sydney and Walda Besthoff Sculpture Garden features 90 world-class artworks spread out in a picturesque 11-acre floral landscape. The nearby Helis Foundation Enrique Alférez Sculpture Garden is dedicated to magnificent work by the Mexican-born sculptor who for over a half-century created graceful statuary for gardens and buildings throughout New Orleans. In addition, the park is filled with his artwork created for the Works Progress Administration during the Great Depression. Louisiana Capitol, Baton Rouge. The city’s best sculpture garden is not a sculpture garden at all but the State Capitol built in 1931-1932 by Governor Huey Long. Monumental statues and a bas-relief frieze sculpted across the skyscraper’s façade — executed by prominent mid-20th century American artists including Louisiana’s Angela Gregory and Juanita Gonzales — depict various aspects of Louisiana’s culture and history. At the top of the stairs, step inside to see the spectacular Memorial Hall filled with statues of historical figures, murals, bas-relief artwork and Italian red marble walls.

Across from the Capitol lies the pleasantly landscaped Capitol Garden with its imposing 12-foot statue of Huey Long by New York sculptor Charles Keck. With outstretched arms, “The Kingfish” faces forever his beloved capitol. Literally, for his tomb lies below the statue.

Although you have to search for them, downtown Baton Rouge has several outdoor sites with impressive artworks. Be sure to visit Galvez Plaza and River Center Plaza to see works by the acclaimed Californiabased Po Shu Wang, Louisiana artist Frank Hayden, Croatian-American Ivan Mestrovic, and New Orleans physician-sculptor Arthur Silverman. With these and other art sites, the city has greatly improved the downtown experience.

Magic on the Bayou Mesmerized by its history and surroundings, Margaret Schexnayder found a home for herself and her business at Bon Paquet

T

hree years ago, having sold her house in Covington, Margaret Schexnayder perused the internet for a new home in the wee hours of the morning. A 200-hundred-year old Slidell property situated on a bayou with moss-draped oaks, a setting reminiscent of Bayou Lafourche where she grew up, spoke to her soul and she immediately made an appointment to view it.

“I saw it the next morning,” says Schexnayder. “I was bright and early and the agent hadn’t arrived yet, but to my surprise the owner was here. Without knowing anything about me, he instantly handed me the key.”

The owner, a direct descendant of the original family that built the house (which is known as Bon Paquet), recognized Schexnayder not only as a fellow Louisianian with French heritage but someone who fully appreciated the historic landmark house (one of the oldest in St. Tammany).

Bon Paquet is located in Bon Fouca, a small fishing town that was originally the site of an Indian village.

Through his family, Anatole Cousin acquired the land and built the house in 1829 with brick and lumber that the Cousin family produced on the property and floated by schooner across Lake Pontchartrain to sell in New Orleans.

There is a salt house on the property and clay pits where the Native Americans taught the Cousins how to make clay bricks. On any given day, Schexnayder might see a turtle bury its eggs, watch and feed birds, or canoe along the bayou, which is lined with broken bricks thrown overboard as damaged goods, a visual

record of the Cousin family, which became the wealthiest in St. Tammany, traveling up and down the bayou.

Bon Paquet is now home to Marpho, the custom chandelier collection that Schexnayder started with her business partner Julie McLellen. The two met when Schexnayder owned Le Foret, a restaurant in New Orleans’ CBD, and bonded over a shared love of travel, antiques and found objects.

Marpho’s one-of-a-kind chandelier creations combine traditional styles with natural elements like cut quartz, Italian coral, amethyst, yellow jade and shells.

Schexnayder and McLellan hope to expand into other decorative wares as well.

Originally, the house was comprised of only two or three rooms with walls of exposed brick. Over time, rooms were added, plaster was used to cover the brick, and other changes were made. When water from hurricane Katrina damaged the walls, the plaster was completely removed in one room and partially removed elsewhere, creating the kind of peeling Old World patina often seen in the French Quarter.

Schexnayder fell in love with the house’s high ceilings, wood floors and porches and knew they were simpatico with the things she collects when traveling.

Antiques, art and artifacts from native cultures are now harmoniously layered against the rustic authenticity of the house.

“One of the rooms in my home is filled with Aboriginal art, African artifacts, Mayan, Pre Columbian and European treasures,” says Schexnayder, who not surprisingly sees a connection between the house and the scenery around it.

“There are so many layers in the swamp, lots of formation and transformation, always evolving and surrendering,” she says. “Everything is a seed, a portal to creativity.” n

Rhonda Findley would prefer that you not refer to the cheese dip served at her Bywater restaurant, Luna Libre, as “queso.” ¶ “I’m from Arkansas, I’ve spent a lifetime traveling to Texas and I live in Louisiana. I’m not serving queso; I’m serving cheese dip,” Findley said. ¶ Together, she and Chef John Cannon are winning over their mostly local crowd with a style of comfort food that Findley calls “Ark-La-Tex-Mex.” ¶ During Findley’s childhood in Little Rock, Arkansas, her mom would often take Rhonda and her three sisters on road trips to nearby Rose City, where they would linger over hours-long lunches at a Tex-Mex restaurant called Mexico Chiquito. Rhonda came to associate crunchy tacos, cheese enchiladas, guacamole salad and cheese dip with those afternoons. ¶ “This cheese dip is like a gateway to my childhood,” Findley said. “I can close my eyes and be back at Mexico Chiquito with my mom and sisters, if it’s done right.”

Luna Libre’s Ark-La-Tex Cheese Dip 1 pound American cheese (not Velveeta), cut into cubes 2 cups milk 1 stick of butter 4 tablespoons allpurpose flour 1 teaspoon hot paprika 1 teaspoon Mexican chili powder 1 teaspoon freshly ground cumin

1 teaspoon cumin seeds 1 teaspoon hot pepper sauce 1 teaspoon cayenne pepper ½ teaspoon garlic powder 1 teaspoon fresh minced garlic 1 tablespoon ketchup dash of salt

Make a light brown roux with the butter and flour. Cook for about three minutes, stirring constantly to ensure flour is cooked thoroughly. Add remaining ingredients except for cheese and milk. Stir continuously to incorporate ingredients and release flavors. Slowly add milk and stir until lumps disappear. Slowly add cheese chunks, allowing the cheese to melt before adding more. Melt all cheese and stir. If the dip thickens, loosen with milk.

Adjust seasonings to your taste. If you prefer more spice, just add more cayenne and chili powder. Serve with warm, crispy tortilla chips.

At Luna Libre, Findley serves a version of this dip called “The Stewart,” which includes Ark-La-Tex-Mex style taco meat and fresh guacamole stirred into the dip.

2 tablespoons soy sauce 2 teaspoons Worcestershire sauce

Rinse two cups of rice under cool water. Place the rinsed rice and 3½ cups water in a rice cooker and cook. Shape the ground beef into four uniform patties. Heat olive oil in a cast iron skillet over medium-high heat. Add the patties and sear for four minutes on each side. Remove patties and set aside.

Sauté cremini mushroom and onion in the same skillet and set aside for gravy. Using the same skillet, reduce heat to medium-low. Add flour and butter to the skillet and cook for 1-2 minutes, stirring continuously. Add ¼ cup beef broth to the skillet and stir to combine. Add the remaining beef broth, soy sauce and Worcestershire sauce. Cook until thickened, about five minutes. Season with salt and pepper to taste. Add in your sautéed mushrooms and onion.

In another skillet, heat 2 teaspoons olive oil over medium-high/high. Crack the eggs into the pan and fry for 3-4 minutes, until the whites are cooked through. The yolks should remain loose.

Place a large circle cookie cutter on a plate. Fill with cooked rice. Remove the cookie cutter.

Place a cooked patty on top of the rice, ladle gravy over the top and top with two fried eggs. Garnish with green onions.

Sione Maumalanga Sione Maumalanga, chef-owner of Ono Hawaiian Grill food truck, moved from the Kingdom of Tonga to Hawaii when he was 11 years old. He clearly recalls the afternoon when his brother brought home plate lunches from Rainbow Drive-In in Waikiki. That day, Maumalanga experienced his first loco moco and, as a result, his first “kanak attack.” ¶ “Basically, a ‘kanak attack’ happens when you’ve eaten so much that you need to go to sleep immediately,” Maumalanga said. “I remember eating the macaroni salad with the gravy, then digging into the burger patty and egg. After that, I was out like a light.”¶ Twentyfive years later, loco moco is the top-selling item on Maumalanga’s menu. Ono Hawaiian Grill mostly serves customers in Shreveport and Bossier City, but Hawaiian expats frequently drive up from Fort Polk and Baton Rouge for a taste of home.

Beginning in the 1920s, cafeterias proliferated across the South. As chains like Baton Rouge-based Piccadilly established dominance, it became increasingly rare to find a mom-and-pop cafeteria thriving, as many once had, on Main Street or the courthouse square. If Piccadilly thought that they could move into New Iberia — where Victor’s Cafeteria has set the standard for home-style cooking since 1969 — they had another thing coming. ¶ “They knocked us down pretty good for a minute,” said Victor Huckaby, who co-owns Victor’s Cafeteria with his wife, Catherine. “But they’re long gone, and we’re still open.” ¶ The staying power of Victor’s Cafeteria is a testament to the old-fashioned home cooking that the restaurant serves. The lunch menu generally includes a mix of Southern and Cajun staples like fried chicken, shrimp and okra gumbo and stuffed bell peppers. ¶ “To have somebody come in and say: ‘Man, I haven’t tasted food like this since my grandparents were alive,’ that’s why we do it,” Victor said.

Canned or frozen biscuits are not recommended for this recipe. You’ve gotta make the biscuits to truly make the pot pie.

Combine the flour and baking powder in a medium-sized mixing bowl. Using the large holes of a box grater, grate the butter into the flour mixture. Using a fork, work the butter into the flour until the flour looks like large crumbs.

Add the Jiffy mix directly into the flour mixture along with the seasoning blend.

Add the egg and buttermilk. Using the same fork, gently mix together into a sticky ball, adding 1-2 additional tablespoons of buttermilk, if needed.

Remove the dough from the bowl, place on a floured work surface, and let rest 15 minutes. Dust dough ball with flour and gently knead until it becomes smooth, about 90 seconds. Roll out the dough to ½-inch thickness and, using a two-inch biscuit cutter, cut biscuits. Place biscuits touching one another on a baking sheet and bake on middle oven rack at 400 F for 15 minutes.

Old-Fashioned Chicken Pot Pie Boil a 3- to 3 ½-pound chicken in seasoned water until cooked. Allow to cool, debone and chop into bite-sized pieces (you may substitute a roasted chicken from the supermarket, just make sure you have three pounds of whole chicken — one pound of chicken will equal one cup of chopped chicken) and set aside. Cook mixed vegetables according to package directions, drain and set aside.

In a large Dutch oven, melt butter over medium heat. Add the seasoning blend and chopped garlic. Sauté until onions are soft. Add all-purpose flour all at once, stirring until completely blended, thick and golden brown. Add Creole seasoning and stir until incorporated. Bring to a simmer and add the chopped chicken and cooked vegetables. Fold in fresh-cut onion tops and flat leaf parsley.

Serve in one large serving bowl, topped with biscuits.

FORMER STATE DEPARTMENT OF HEALTH ASSISTANT SECRETARY DR. ALEX BILLIOUX’S BATTLE AGAINST COVID-19

W

hen the news mentions the “novel coronavirus”, sometimes the “novel” part isn’t emphasized enough. It means COVID-19 is completely new, something the world has never seen before. In the fight against it, doctors and government officials alike have scrambled to simultaneously learn as much about this new virus as possible while giving the public the most accurate information at hand in a manner average people can understand. In Louisiana, Dr. Alex Billioux, the former assistant secretary for the Louisiana Department of Health’s Office of Public Health, was at the forefront of these efforts until he resigned from the LDH at the end of September.

Dr. Billioux said the key to successful communication with the public is honesty and transparency. Messages shouldn’t be overplayed. They should be delivered in a scientific but accessible manner. When situations change, officials must be forthright and open with people about why things changed and what we know now.

“We don’t ever want to lose our credibility,” Dr. Billioux said.

he most obvious example involves the messaging regarding masks. At first, many public health officials questioned the efficacy of masks. Some, including Dr. Anthony Fauci, director of the National Institute of Allergy and Infectious Diseases, feared a public run on masks would make them less available for medical professionals. However, the medical community eventually learned masks can at reduce the likelihood of an infected person spreading that virus to others. An uninfected person may not receive 100% reliable protection from a mask, but an infected person can greatly reduce the likelihood of spreading it to others by wearing one.

Dr. Billioux said the last point is important because COVID-19’s properties make it well suited to spread like wildfire around the globe. Many people with COVID-19 experience either no symptoms or mild symptoms. Dr. Billioux said even people who eventually have symptoms shed the most virus approximately 48 hours before symptoms and 48 hours after the start of symptoms. The old advice of “if you feel sick, stay home” is insufficient in preventing the spread of COVID-19 (although you should absolutely still stay home if you have COVID-19 symptoms). Many people spread the virus without ever knowing they’re sick. This is why mask use is important.

Dr. Billioux said another key component in containing COVID-19 is contact tracing and isolating infected citizens. Contact tracing cannot be done without adequate testing. At press time, there are still problems with test results taking days, and in some cases weeks, to get back to patients. Dr. Billioux said anyone who gets tested should isolate until they get their results. If you get tested, then see others for three days, and find out you tested positive, then that means you’ve exposed other people to COVID-19 for three days.

To help with testing, Louisiana Governor John Bel Edwards recently entered a pact with the governors of Maryland, Massachusetts, Michigan, Ohio and Virginia to order three million rapid antigen tests. Dr. Billioux said this agreement lets companies know there is a market for these tests and there are financial incentives to make them.

Dr. Billioux said these antigen tests can reduce the aforementioned wait times from test to result. Doing so helps reduce future spread and allows those who test positive to receive appropriate treatment quicker. Even if these tests aren’t quite as accurate as the PCR tests (polymerase chain reaction), they will still catch most COVID cases and they will catch the patients who are shedding the most virus. They will still be very helpful in limiting COVID-19 spread. These tests will also make testing more accessible for Louisiana residents.

2020 has been a trying year around the world, full of fear and uncertainty.

It is easy to feel hopeless and overwhelmed. However, Dr. Billioux advocates for “cautious optimism.”

“The entire world is focused on trying to address this virus,” Dr. Billioux said.

“I have every reason to believe we will have breakthroughs.”

While Dr. Billioux believes the scientific and medical communities will make important strides in the battle against the coronavirus, he said Americans should

expect mask wearing to be a part of life even after vaccines are available. It may never become a permanent part of our culture the way it is in parts of Asia, but it will remain a part of it for the foreseeable future.

“Masks are going to be around for a while,” Dr. Billioux said.

Dr. Billioux also emphasized that even if the state and the country experience additional surges or outbreaks, it is not reason to despair. He said New Orleans is proof of that. Cases skyrocketed in the Crescent City in late March and early April, but steadily dropped in the ensuing weeks. If New Orleans was able to turn things around once, there’s no reason it couldn’t turn things around again. The same is true anywhere else.

“We can really control this thing with something as simple as wearing masks and being more careful about who we see and when we go out,” Dr. Billioux said.

The 39-year-old Billioux is a native of Greenville, South Carolina. He first came to Louisiana as an undergraduate at Northwestern State University in Natchitoches.

He has an M.D. from Johns Hopkins University and a Ph.D in clinical medicine from the University of Oxford. The combination of intellectual challenge and rewarding interpersonal relationships is what attracted him to medicine and what keeps it exciting.

“It’s problem solving to make someone feel better,” Dr. Billioux said.

When Dr. Billioux is not practicing medicine, he enjoys being with his family (he is the proud father of two daughters).

It is his love of spending time with his family that led him to announce his resignation in September. According to a farewell letter to the Office of Public Health (OPH), Dr. Billioux left his position to spend more time with them.

“Our families know how important our work and mission is to us and we owe it to them in return to recognize that taking care of our own health and being there for them is our deepest felt priority,” Dr. Billioux wrote. “… My own family has made sacrifices and faced challenges while the demands on OPH and me grew steadily. I believe that I need to honor those sacrifices and prioritize those who matter most to me in this world.”

“We completely understand and respect his decision, but we are really sad,” said Aly Neel, communications director for the LDH. In his letter, Dr. Billioux wrote of his OPH tenure with pride and affection for his colleagues. “My time at OPH has been nothing short of transformative for me.” n

ane syrup, once known as New Orleans syrup, is a product particularly associated with Louisiana. Historically, it was a sweetener made on small family farms by grinding sugarcane and boiling down the juice to make syrup. During World War I, the government encouraged the use of cane syrup and molasses as part of a voluntary sugar rationing program, but the widespread marketing of Karo in the 20th century led to the dominance of corn syrup as a liquid sweetener. It is one of the great southern ironies that pecan pie, as regional a dish as one could imagine, is usually prepared with syrup made from corn grown in the Midwest instead of cane syrup, which is made in the South.

Remove skillet from oven, pour hot oil into batter and whisk to combine. Pour batter in skillet and return to oven. Bake until a toothpick inserted in the center comes out clean, about 15 minutes.

There are other producers of cane syrup, but the principal one is the C.S. Steen Syrup Mill in Abbeville.

According to the company’s website, Steen’s got its start in 1910, when the founder salvaged his cane crop from an early winter freeze by making syrup.

Cane syrup is used as a table syrup and in a variety of baked goods, including gâteau de sirop, the Cajun syrup cake. It can also be used in savory dishes and is particularly good with fresh or smoked pork.

This month’s recipes utilize cane syrup in a variety of ways. Several recipes for gingerbread appeared in the the first American cookbook, published in 1796, and two early Louisiana cookbooks, both published in 1885, continued the tradition. The variety of gingerbreads and the ingredients from which they are made are truly staggering. My version, made with cane syrup, spices and coffee, is a dense, strongly flavored cake that is at its best when thinly sliced, spread with softened butter and enjoyed with a cup of black coffee.

The recipe for pecan pie is fairly traditional except for the use of cane syrup in place of the usual corn syrup. When there’s no pecan pie, a satisfying dessert, snack or breakfast can be put together with cornbread, butter and cane syrup. This recipe, made in a cast iron skillet, produces cornbread with a dark brown crust that bakes in 15 minutes.

Cane syrup goes well with pork, as in the recipe for boneless pork chops served on a bed of arugula and drizzled with a vinaigrette of olive oil, cane vinegar and cane syrup. This simple dish has the added advantage of being quick to prepare. n

salt in mixing bowl. Cut butter into small pieces and mix into flour with a pastry blender, two knives or your fingers until mixture is like coarse meal with pea-sized clumps of butter. Add water, one tablespoon at a time, until dough begins to come together. Turn out onto a lightly floured surface, knead a few times, form into a disc and wrap in plastic wrap. Refrigerate for at least an hour before proceeding.

crust and fit into a 9-inch pie pan.

Trim off excess and fashion edge as desired.

a wire whisk until well mixed. Add brown sugar, cane syrup, vanilla, salt and melted butter and whisk to combine. Stir in pecans. Pour filling into crust and place on a rack in the lower third of oven. Reduce heat to 325 F and bake until filling is set and crust has browned, about 40 minutes. Cool pie on a wire rack.

Makes 8 servings.

Add 1 tablespoon olive oil to a large skillet and place over medium-high heat. Combine remaining olive oil, vinegar and cane syrup in a bowl or measuring cup and whisk to combine. Add pork to skillet and cook until browned, then turn and brown other side. Place each chop on top of arugula. Whisk vinaigrette again, add to hot skillet, scraping up any brown bits, and drizzle over the pork and arugula.

Socially Distant Autumn is the perfect time to visit Chicot State Park and the Louisiana Arboretum

s we head into fall, and the heat abates, thoughts turn to the outdoors. What better place to enjoy the cool, refreshing weather than Louisiana’s state parks?

Smack dab in the center of the state lie two gems, Chicot State Park and the Louisiana Arboretum, both located north of Ville Platte and bordering the expansive Lake Chicot. The state park offers day use, cabins and camping opportunities, fishing and boating and miles of trails for hiking and biking. The Louisiana Arboretum, established in 1961 and the oldest state-supported arboretum in the country, offers several trails throughout its 600 acres, and a varied ecosystem to enjoy.

The combination of the two make for an excellent weekend getaway, a sporting outing or a safe accommodation for family reunions, special events — even holiday celebrations.

Chicot State Park came into the Louisiana park system in 1939 after the Civilian Conservation Corps developed the area for recreational use. About the same time, Louisiana naturalist and author Caroline Dormon, who helped create the state’s Kisatchie National Forest, envisioned a state arboretum to be used for environmental education.

In the late 1950s, retired Ville Platte principal J.D. “Prof” Lafleur made a presentation at a State Park and Recreation Commission Board meeting, describing the remarkable trees growing in Chicot and A.G. “Sudie” Lawton, a board member, passed that information on to her friend Dormon.

“That’s when they carved a little bit out of Chicot to build the Arboretum,” said Louisiana Arboretum Naturalist Kim Hollier.

Today, the Arboretum is located at 1300 Sudie Lawton Lane with the Caroline Dormon Lodge at its heart.

More than 6,400 acres make up the rolling hills of Chicot State Park with the placid waters of Lake Chicot at its core. Fishermen reel in largemouth bass, bluegill and crappie, among other fish, and there are three boat launches on the lake, as well as boat rentals.

Park accommodations include deluxe cabins, lodges that sleep up to 14, a group camp for 52 and both primitive and improved campsites. Camping discounts are given to veterans, first responders and America the Beautiful Senior Pass holders.

Park trails include 20 miles of hiking and mountain biking trails, one of which encircles the lake, and an 8-mile canoe trail.

For those looking for a relaxing day trip, day-use park fees are only $3 per person and admission is free to seniors and children 3 and under. Enter at the park entrance off LA Highway 3042 where it’s only a short drive to the lake and a long boardwalk that takes visitors above its water to enjoy fishing or bird watching. Between the entrance and the lake lies a playground area with picnic tables, a splash pad and a kids’ hiking trail, perfect for families.

The Louisiana State Arboretum provides visitors with 5.5 miles of its own trails, most beneath a forest canopy with many of the plants and trees labeled.

the Arboretum’s Nature Center, from the park (by fee) or at the old Arboretum entrance off Highway 3042 that doesn’t require an admission cost. Two trails, the Walker Terrace Trail at the old entrance and the Bald Cypress Trail near the Nature Center, which ends at Lake Chicot, are handicap accessible.

Safety measures are in place at both sites and some regularly scheduled events may be postponed or cancelled due to the pandemic. It’s imperative to check either the state park website or the individual park Facebook pages for updates. Arboretum programming, which is normally ongoing this time of year, has been impacted by COVID-19 and some of the Nature Center’s interactive displays — the ones visitors touch — have been closed. Naturalists are still offering guided canoe trips on the lake in small groups, however.

“We’ll take visitors out on the lake and talk about the trees and animals,” said Hollier.

Guided hikes may return this winter, she added, but in small groups. n
