The panoramic moorland, stunning coastline and charming villages of North Yorkshire are the backdrop for an uplifting film following the adventures of three children and their donkeys in a chase across the North York Moors. This spring, we’re reflecting on The Runaways, a Moors-based feature film starring Mark Addy and Tara Fitzgerald. Elysia Fryer gets the lowdown with director and Yorkshire man, Richard Heap… GETTING TO KNOW YOU >> Title Film Director Where is home? Sheffield Three reasons you love where you live? Its proximity to the Peak District, its village feel and the fact that my wife and kids live here too. THE DAY JOB >> What do you do for a living? Write and answer emails! A day in the life of you? At the moment, my life is dominated by trying to distribute and sell my feature film, The Runaways. Once I’ve fought my way through a tonne of emails, I’ll try and fit in a sneaky late afternoon trip to the climbing wall. Occasionally I edit or shoot footage for other people which makes for a nice change.

Any ongoing or upcoming projects we should know about? The Runaways follows the adventures of three children and their donkeys in a chase across the North York Moors. It stars Mark Addy, Tara Fitzgerald and recent BAFTA winner, Molly Windsor. Mark Addy plays father to a family that run the local donkey ride on Whitby seafront. When tragedy befalls the family, his three screen children run away. The subsequent adventure tests their sibling bonds and love. There are plenty of amusing scraps, but heart-breaking moments, too. And of course, the scenery doesn’t look too bad either! I have a couple of kids and had started to feel an itch to do an old school adventure film after getting tired of seeing animations and felt there was an opportunity to do a live action film. In 2014, I got a job filming a coast-to-coast bike ride, pedalling east from Whitehaven. Being quite athletic, the journey wasn’t too arduous but when we finally reached Tynemouth and saw the sea again, I was profoundly moved. It was an uplifting, slightly transcendental moment. Afterwards I thought how powerful this feeling would be if the journey truly meant something. This was the seed of the idea that became The Runaways. I used Whitby as the setting because of its distinct character and familiarity - a consequence of many trips to the area with my young family. To dive deep into the area was truly fantastic. It took me to new places but also meant I engaged with the local people more. For instance, when we were hunting pub locations in Whitby, we made time to go to the Elsinore folk night. It was really inspiring and as a consequence, many of the musicians came to perform in the film. Similarly, the guardian of the Levisham Estate, Robin Mackley, was a wonderful help. Scouting his land with his dogs was a joy and he appears in the film in his favourite tractor. In the end we filmed at 37 different locations across the region including Rosedale Abbey, Hartoft Rigg,

Sutton Bank, Skelton Tower, the Mulgrave Estate and Whitby Abbey. What does downtime mean to you? Listening to my boy laughing with his friends while he plays computer games. LESSONS IN LIFE >> What did you want to be when you were growing up? A maths teacher. I would have been terrible! What is the most important lesson life has taught you? Don’t be afraid to follow whims. Get the best actors. Put more water in mortar than you think. What is your greatest fear? I already feel slight sorrow at the thought of my kids leaving home. Is that a fear? If not, then confined spaces. Which living person do you most admire most and why? Anybody who works in the care industry. LUXE LIVING >> What is top of your bucket list? I’d love to walk the Annapurna Circuit in Nepal. What is your most treasured possession? My immune system. What does the weekend mean to you? Sport. I’m terribly addicted to physical activity, so I play tennis at the community club or go climbing with friends. There is

usually a walk in the Peaks, too. A memorable holiday? I once did a three-month climbing trip up the west coast of America with friends. That was pretty amazing. Best dress? I have a favourite orange T-shirt with a screen print of an old Nikon camera on it. Who would be your top three dinner guests? My dad - and then two from George Melly, Frank Sinatra or Barbara Streisand. He loved the three of them and it’d be a real treat for him. The last place you ate? The Inn on the Square in Keswick. The last book you read? A Month in the Country by JL Carr. Set in Yorkshire, it’s about a man recuperating from the trenches of WW1. The last thing you listened to? Crushing by Ex:Re. The last thing you watched? I caught a bit of the second series of Killing Eve with my daughter the other day. While I had been a bit indifferent about them doing a second series, it turned out to be a delight. And finally, your three luxe things in life? A good mattress, a pair of prescription Ray Bans and a nice coffee. therunaways.film

Avoid the rush

Investing your ISA allowance early in the tax year can prove rewarding in the long term

The traditional last-minute dash saw UK savers rush to beat the tax year-end deadline to invest their ISA allowance. Human nature dictates that we are often only prompted to act when faced with a deadline, particularly when it’s a ‘use it or lose it’ opportunity such as the annual ISA allowance. But there are many reasons why it makes sense to invest in an ISA earlier in the tax year, instead. Perhaps most obvious is the peace of mind that comes from getting ahead with your ISA planning and avoiding any end-of-year panic. It also makes things simpler, as you don’t need to worry about any more tax returns for your investments once they’re held inside an ISA. However, what’s most important is to remember that investing is a long-term game; the longer you leave your money invested, the greater the chance of achieving better returns. Investing your ISA allowance at the start of the tax year gives your money the opportunity to grow for up to an extra 12 months. Of course, you are not guaranteed to do better by investing earlier, but by doing so you can get your money working harder for longer in two ways. The sooner you use your ISA allowance, the greater the potential tax benefit because your investment is sheltered from Capital Gains Tax and Income Tax for longer. Similarly, your investment has more chance to benefit from compound interest – what Albert Einstein reportedly referred to as the ‘eighth wonder of the world’. In the long term, the opportunity to make gains on the gains you have already made can make a big difference to your future wealth. Taking steps to minimise the impact of tax on your wealth should be a year-round activity, not something that we only think about in the last few weeks of the tax year. Whether through investing a lump sum or by setting up regular savings, making an early start with your ISA plans is one way to shelter more of your money from HMRC. The value of an ISA with St. James’s Place will be directly linked to the performance of the funds selected and may fall as well as rise. You may get back less than you invested. The favourable tax treatment of ISAs may not be maintained in the future and is subject to changes in legislation.

Eating... A tasty, easy spring supper of Italian-style steak, sweet pepper and Parmigiano-Reggiano salad. 300g baby new potatoes 250g British beef rump steak 3 tbsp olive oil 1 lemon, zest 2 garlic cloves, peeled and bashed 3 large rosemary sprigs 2 tbsp balsamic vinegar 90g wild rocket 12-16 peppadew sweet piquante peppers 25g shaved Parmigiano-Reggiano Boil the potatoes and season and fry the steak to your liking, before removing from the pan to rest. “If you look good, you feel good – and then you are unstoppable,” says personal stylist Rhona Langan. Elysia Fryer checks in to talk style, Spanish influence and today’s social pressures, over tapas in Harrogate

Finding your fashion Whether it’s a Hollywood star, an Insta-famous fashion figure or a royal role model, we all have our own style icons for various reasons. In today’s ‘click and fix it’ world, we don’t fall short of inspiration to look and feel fantastic. The problem, however, is how we take those tips from the wider world and implement them into our own lives. Personally, I think I know what I’m looking for when I shop. I know which colours I am drawn to. But I have never actually sat down with an expert and defined my wardrobe, my style and my ‘best neutrals’. In search of inspiring female figures doing good things in the fashion world, I stumbled across the lovely Rhona Langan – a personal stylist and colour analysis expert based in Harrogate. A lightbulb moment over 12 years encouraged Rhona to take the plunge, leaving her life in Croydon for a slow and steady life in glorious Yorkshire. All in the bid to pursue a passion project as a qualified fashion stylist. Shortly after, Style Illuminated was born. “I have always loved fashion,” says Rhona. “As a child, I would pour over historical fashion books. I loved to visit stately homes and follow fashion through the ages.” A childhood craze which she didn’t shake off in her teenage years, Rhona’s love of all things fashion only grew with age. “I studied Spanish at university in Scotland,” she recalls as we sit down for tapas at La Feria in Harrogate. “And here we are, tucking into tapas in my favourite Spanish restaurant. How apt!” she laughs. “Much of what I do comes down to Spanish influence – hence the ‘camino stories’ on my website. In Spain, a ‘camino’ is a path, a journey, an adventure.

“I lived in Galicia, North West Spain, for some time, teaching in secondary schools as part of my degree. “Black and purple dominated my wardrobe in those days, and when I arrived in Spain, I was shocked to see so many bright colours. I was way out of my comfort zone, but as I settled into life in Spain, I was enjoying experimenting with style.” It wasn’t just the flamenco colours that inspired Rhona to ‘find her fashion’, it was the Spanish lifestyle, too. “As people, they are so well put together,” she says. “They don’t spend their fortunes on homes and cars – they often rent tiny flats and keep their funds for fun, food and fashion.

Revamp, revamp, revamp! “The single best thing anyone can do when it comes to sustainability, is to keep their own things for longer. Rework and restyle what you’ve already got so it keeps its space in your wardrobe, without missing out on key trends.”

Find local fashion swaps “There are lots of great fashion swap events you can get involved in. You take your eight pieces of clothing and come away with eight new pieces. It’s a really nice, social evening for lovers of fashion.”

FEEL-GOOD FASHION Spanish people look fabulous, enjoy life and really own it – and I was totally inspired by that way of life.” Rhona’s return to the UK saw a move to Harrods’ fashion department as she entered the world she was always so fascinated with. Fast-forward through marriage, children and several training courses, and Rhona’s path led her to North Yorkshire, where, little did she know, her own personal styling journey was waiting in the wings. “It was a hobby to begin with, but when I moved up north it really transpired. “Fashion is a wonderful thing, you know. It’s amazing how it can alter people’s feelings

changing. And once you’ve cracked it, it’s a wonderful thing!” Fashion isn’t just about sticking to catwalk styles and rolling with current trends, Rhona tells me. It’s about finding your ‘you’, mixing it with new-season style and having the confidence and courage to enjoy it. “There are so many ways in which we can experiment with fashion; and once we’ve got our confidence back, we’re unstoppable.” The ‘This is what 50 looks like’ campaign was, for Rhona, all about homing in on a mass of people who have the money to invest in new wardrobes, but don’t quite know how to reinvent themselves as they transition into the next stage of life.

and completely change their outlook on life.” Swapping city life for village living was quite the challenge, Rhona tells me – but a move she will always look back on as a career defining moment. “We set up home in Spofforth and I felt like I’d been beamed up. It was like therapy. Although, I do remember going to a party in an asparagus field near Harewood and thinking, ‘I can’t quite believe I’m here, in my wellies!’ “But everybody was so friendly and I was enjoying the slower pace of life. It suited me perfectly. I got involved in community work in the village and started to feel a little bit Vicar of Dibley,” she laughs. Rhona started her Yorkshire fashion journey at Phase Eight in Harrogate, which tied in with the launch of the brand’s personal styling service. “I got to travel all over the UK, which was fabulous,” she explains. “And I appeared in the Daily Mail as part of the ‘This is what 50 looks like’ campaign.” The campaign was linked to the ‘silver-andsassy’ movement in over 50s fashion. An initiative encouraging women to be loud and proud; to be grey, gorgeous and full of mid-life optimism. “As you get older, your skin dulls down, your eyes soften a little and your body starts to change. And with all of that, so does your style. “The Daily Mail campaign was all about using high-street fashion to lift and shift the aspirations of mid-life ladies. “You don’t have to be a ‘beige lady’ when you hit 50,” says Rhona. “It’s about adjusting your wardrobe to work with how your body and lifestyle is

“It felt very empowering for me, as a midlifer who had gone through two divorces, moved halfway up the country and had been a single mum for years. “That was three years ago now, and was one of the events that, in turn, gave me the confidence to take the plunge and launch my own business. “It then snowballed into this huge, exciting movement, and here I am, styling with a smile. “I feel like 2020 is my year – and it just shows you that you can do it at any age. I’m 54 and it’s the best I’ve ever felt!” From adventures in Spain and training with the best of the best at Harrods, to Phase Eight styling and mid-life inspiration, Rhona was ready to take the fashion world into her own hands. Style Illuminated is about empowering women to look and feel fabulous. Rhona’s guidance gives courage and confidence to clients who feel a little lost. “My job is to get the outside to reflect the inside. I like to focus on identity and personality, then the fashion follows,” she explains. “I have a lot of mid-life clients, but also ladies in their 30s who have loved fashion in the past but have lost their sense of style because life is running away with them. That’s where I step in… my job is to reignite the light between you, your wardrobe and your sense of style. It’s all to do with confidence and wellbeing.” In a world where we’re all exposed to the pressures of social media, celebrity culture and the expectations that come with how we should feel, act and look, it’s refreshing to see a businesswoman focusing on the feel-good aspect of fashion.

“My work isn’t just about body shape and colouring. The fundamentals are found in who you are as a person and how you feel in your skin. “Once we’ve established your ‘you’, we can move on to the fun stuff. I always start with colour,” says Rhona. “Your colour match is based on eye colour, skin tone and hair. Once you’ve got your base tone - or your ‘best neutrals’ - we work with the seasons to find your colour match, be it bold brights or soft, muted hues. “In the same way that people believe in horoscopes, I have found that the palettes relate to personality characteristics, too. “I think autumns are quite deep thinking and quite solid – they analyse and are quite careful. Winters are quite dramatic – a lot of really bright colours and strong contrasts. Springs are social butterflies – a bit like a Gemini. And summers are very ladylike – all of those very pale pastels, quite demure. “I think it does all connect. It’s really interesting.” To establish colour and style, and to break the ice a little, Rhona starts with a ‘celebrity style icon’ quiz. She guides me through the main ‘looks’. It instantly adds sparkle to your eyes. It’s a very powerful tool.” Conscious shopping is a hot topic at the moment, and something Rhona and I discuss in great detail. People want to buy the right clothes and want to be as sustainable as possible when rejigging their wardrobes as the seasons come and go.

“We all need to buy less and make it last forever, which is another great reason for having your colour match, because you’re not going to waste money on clothes,” says Rhona. “Once we’ve established your colour, the next step is body shape. I help with the tips and tricks to play up the best bits and create a harmonious whole.” Though spring feels like the perfect time to renew your wardrobe, styling doesn’t always have to move with the seasons, Rhona tells me. “It’s best to work on your wardrobe when you’re having a transitional time in life,” she explains. “More and more people are buying clothes that work all year round. You’ll see people wearing a midi-dress with a polo neck underneath and biker boots in the winter; but then come summer, they’re styling it with strappy sandals or espadrilles. It’s called ‘clever fashion’. “I think the whole fashion industry is going to change in terms of collections. It used to be that collections would come out every few months, but I think it’s going to be more transitional now. It’s much more sustainable too.” Not only will you learn a thing or two about current trends, a session with Rhona will help you establish a sense of inner and outer style. Using handcrafted, gemstone designs, SALOME celebrates strong women and their stories; and is based on the ethos of donating 10% of all sales to charities supporting marginalised women across the world, helping them to achieve a brighter future. We find out more… HOW DID YOU GET STARTED IN JEWELLERY DESIGN? I used to work at the Guggenheim and have always been inspired by art, architecture, and jewellery design. I was making the jewellery for myself and the first time I made jewellery for anyone else was for my wedding. It was my absolute dream to start my own brand and it finally happened in 2016! I am happy to get to do what I love every single day. FOR THOSE WHO ARE NEW TO SALOME, WHAT IS THE STORY BEHIND THE BRAND? After years of designing the jewellery, I started the brand in 2016 in my Blaydon studio. I named it after my mom - she was

I was 34 at that time, while my girls were seven, four and one. It really felt like a fresh start. It was both terrifying and freeing at the same time – I finally could do things I was too afraid to do back at home. I felt empowered as I had nothing to lose. I started working on my dream and SALOME was born.

DID IT COME ABOUT AND WHAT WAS THE INSPIRATION BEHIND IT? The SW collection was the first ever design collaboration for SALOME. Featuring pearl and goldstone, it was a huge success and I couldn’t be happier about working together with Stephanie. Too often, we see practitioners choosing money over their patients’ welfare, filling lips, wrinkles and more beyond their needs, just to put their patients’ money in their own pockets What this ultimately leads to is an influx of patients who are left with a face that no longer looks natural - and will never go back to the way it was. Going to great lengths Newcastle’s historic City Baths have reopened, offering the city’s fitness fans and spa-lovers a place to kick-back, pump some iron and make a splash. Jessica Laing takes a tour…

Newcastle is home to many legendary landmarks; St Nicholas Cathedral, Newcastle Castle and Town Wall, Grey’s Monument and, of course, the mighty Tyne Bridge, to name a few. All of which stand tall and proud - and hold a special place in the hearts of locals. And now, another iconic city centre site is firmly back on the map and reopening its famous doors, following a mighty £7.5 million makeover. Newcastle City Baths has been enjoyed by generations of Geordies since it opened back in 1928. Back then, hundreds of half-naked Tynesiders flocked to its soothing, steamy waters to relax, socialise and wash away the day. In its later years, it became a place of pilgrimage for the city’s swimmers, before closing to the public in 2014. Fast-forward to the present day, though, and as we dive head-first into a brand new decade, the Grade II listed venue has been brought back to life - only this time as a marvellous, modern-day spa and leisure destination, fit

for 21st century use. Venture inside and you’ll discover a thoughtful blend of old and new; modern facilities and slick, state-of-the-art equipment, complemented by charming original features. It’s what Fusion Lifestyle, the charity behind the revamp, intended. Together with a collection of specialists, including local architectural firm, Napper Architects, and leisure design and construction firm, Createability, they’ve worked hard to sensitively restore the building and give it a brand new look - while salvaging as many of the building’s original features as possible. Things like ornate 1920s pool tiles, beautiful terrazzo flooring and wood-panelled changing rooms. The result? A cutting-edge revival that celebrates the Baths’ unique heritage and character. “We have worked on listed buildings before, but nothing of this magnificent scale,” says Ian Cotgrave, managing director at Createability. “More than £1 million was spent on work in the background alone. Everything we did had to be architecturally sympathetic, so, wherever possible,

original materials were re-used. “We have more than 20 years’ experience working alongside leisure trusts, including Fusion, redeveloping and refurbishing old leisure venues, but this has to be one of the most exciting projects we have worked on to date. “When we spotted the campaign to save the building, we were keen to take on the project and help ensure that its precious history was retained,” adds Anthony Cawley, Director of Operations at Fusion Lifestyle. “We worked closely with the local authority’s conservation officer to ensure that we kept works true to the original building design, while also incorporating modern touches to ensure that it meets the demands of today’s customers.” Take a tour and you’ll discover a raft of top-notch facilities to explore and enjoy - all of which are suited to everyone from yogis and gym bunnies, to keen swimmers and those partial to a Swedish massage or two. STAY CENTRED

Finding space

It seems that right now, more than ever, there are so many things going on that impact the sanctity of our lives as we know them - in politics, economics, health, the environment and more Everywhere we look, both globally and domestically, there is change, flux and uncertainty. At worst, this can trigger us into states of anxiety, fear and disconnection. When the macro environment feels like this, it can be easy for us to feel overwhelmed and out of control. As much as it’s true that there is a huge amount we can’t impact directly, it’s also true that we can develop ways of being - and things of doing - that support us in building capacity to hold the complexity around and within us. Here are some ideas on how you might stay centred and sanguine in the eye of the storm… Come back to your body Our body is way more than the vehicle that simply carries our head to places – it is the source of so much more. Embodiment practices bring us out of our thinking minds and connect us more deeply to the truth of the here and now, to our own sense of reality and to each other. So, move, walk, run, jump, dance, do yoga, do sports and play. Anything that allows you to experience freedom in your body. To be at one with your breath will strengthen your nervous system and enable you to experience more calm, too. Get to nature Yes, nature is always changing. And Mother Earth is shouting loudly at us to wake up and pay attention. But on some level, nature is also a constant. As long as we walk the earth, there will be trees and wind and hills and rivers. Spending time in nature is remarkably comforting and enlivening - it connects us simultaneously with the big picture and the tiny things in life too, inviting us to calm down, wake up and gain perspective. So, get to it as often as you possibly can – especially when things feel tough. Find stillness We can only be in our centre if we know it and have a relationship with it, so developing practices that bring us in to stillness and quiet, in our own company, are critical, particularly in tumultuous times. Yes, I know neither are easy and life can take over, but even a few minutes a day of quiet time - with a cup of tea, watching the birds, or even simply feeling your feet on the floor as you breathe – will, after a few weeks, make the biggest difference to how you experience the quality of your day-to-day life. Seek support Find places and spaces in which there are people with whom you can speak your truth. Not to have it fixed or solved, but to have it witnessed and acknowledged. Be selective about what you consume Stay plugged in, stay educated and stay informed - but choose wisely. Most importantly, stay connected to yourself, to others and to the world around you. Little moments The ‘E’ word: an ABC guide to exam preparation

Exam. How does the word make you feel? Do you have a sinking feeling in your stomach or are you one of the few who thrived on the pressure? Exam season is in full swing and you are probably wondering how best to support your child. Firstly, we have to be incredibly understanding and develop a thick skin! When children are under pressure, their behaviour can become erratic because they don’t understand their reactions to stress. When they have knowledge, they feel in control. That is why I explain that a small amount of stress is actually good. It’s our brain’s way of motivating us to take on challenges and be in a peak mental state. However, when stress levels increase for long periods of time, it can become a problem. Students often tell me they feel sick and light-headed prior to testing, or their breathing becomes shallow and their heart beats faster. This is all completely normal because the fear centre in their brain (amygdala) perceives the exam as a threat and it triggers their ‘fight/flight/freeze’ response. Their brain is telling them to either run out of the exam hall (flight), scream (fight) or have a mind blank (freeze). The amygdala can actually ‘hijack’ the thinking part of the brain and disable it. This is not what our children need just before taking an exam. So, what can they do? They can learn to self-regulate and you can teach them. This is my ‘ABC’ guide to exam preparation... A – Help your child acknowledge and accept the emotions and the physical sensations they are experiencing. Support them in naming the specific emotion (e.g. frustration, anxiety, anger) and identifying their tense muscles or butterflies in the tummy. These uncomfortable feelings will pass when the stressful event is over. B – Model how to take slow breaths from the abdomen. Ask them to interlock their hands over their tummy and feel it expand as they inhale and soften as they exhale. Conscious, deep breathing is one of the quickest ways to calm down as it stimulates our parasympathetic

nervous system (relaxation response). C – Offer your children some mindfulness activities. This could be mindful colouring, gentle yoga, massage or listening to soft instrumental music. The track ‘Weightless’ by Marconi Union has been scientifically proven to reduce anxiety. Getting a burst of vitamin D by connecting with nature has been shown to have positive effects on a restless brain. Try not to over-schedule your kids; they need a break. Finally, limiting screen-time is an absolute must as the blue light emitted from devices suppresses melatonin. Make sure your children are getting good quality sleep, lots of water and a nutritious diet - especially in the lead up to exams. But please remember, exams only test your child on a very narrow criteria; they don’t assess creativity, kindness and courage. ON THE HOOF with Deborah Smith The days are finally drawing out and it’s the perfect time to make plans for the late spring and summer season…

The horses are fit and full of beans, and I have some super new kit for the season ahead! I’m over the moon to have taken delivery of two stunning dressage bridles from Issi Russell (IR Bridles), who makes some of the finest leatherwork. Being a Master Bridle Maker, which is a new category set up recently by the Society of Master Saddlers to reflect the growing demand for bridle specialists, I asked Issi how she got into such a niche market in the first place. “I was a typical horse-mad child, but growing up in central London there were scant places to ride. “I started weekly lessons at the age of 10 and was always fascinated by the tack. I started making miniature pieces of tack for my model horses and when the time came to decide what to do after school, I went to Cordwainer’s College in Hackney, which offers the only full-time saddlery course in the UK. “We went along to an open evening and quite by chance managed to attend the Annual Saddlery Competition the following week, which got me hooked. “I spent a year studying stud management and realised it was missing the creative aspect, so enrolled on the Cordwainer’s Diploma in September 2000, which had now moved to Capel Manor College in Enfield. I also completed the HND in Saddlery

Technology and then got my apprenticeship with Laurence Pearman at Stroud Saddlery. “Fast forward a few years, I became a Master Saddler in 2008 having not only entered the Annual Saddlery Competition but won a number of prizes over the years - on my own and as a team with apprentices. “In 2004 I designed and made the first curved padded headpiece bridle, which has now become the IR Bridle. “I specialised in bridles mainly due to supply and demand whilst employed, but I was also finding working on saddles increasingly difficult on my hands because I was diagnosed with mixed connective tissue disease. “I became self-employed in 2014 and have continued to develop the product. According to the Office for National Statistics, a child born in the UK has a one in three chance of living to 100. That’s an increase of 28 years for a woman born in 1951 and 33 years for a man. These survival rates, amazingly, are projected to increase at an average of around ten years for each future generation. While these advancements in life expectancy are to be celebrated, they pose a set of unique problems for us all. How do we best plan for extended life, post working age, for both ourselves and our families? Without a doubt, a pension is one of the most critical provisions we can make for our future. Employee auto-enrolment in pension schemes has raised the number of people saving for their retirement; however, it fails to equip consumers with the tools to make decisions at retirement. Freedoms introduced in 2015 brought more choice and options available than ever before to pension holders. This means making the right choice is more confusing for savers. According to research from the Association of British Insurers, a third of savers who accessed their pensions via drawdown for the first time between April and September 2018 didn’t seek financial advice before doing so.

For those with and without a pension pot, I’ve found one commonality throughout my 20 year-long career in financial advice: a general lack of understanding about the options available for later-life planning. There’s a number of reasons for this: little or no financial planning education and awareness of the options available, regular changes in policy, limited trust in pension schemes, and limited accessibility to quality financial advice on the high street. Most UK banks require customers to have a minimum investment of between £50,000 and £250,000 before they offer them face-to-face advice. These banks have drawn back the limited support they previously provided, choosing instead to invest in digital advice channels.

The society has been a part of the North East for more than 150 years. Over the past 25 years it has donated to good causes throughout the region and continues to invest in its 31-strong branch network. It’s of great pride to me that the society makes these investments at a time when I read so many headlines about communities losing their local bank branches, forcing them to travel further to find the support they need. Wheels in motion In a sport that takes him from the French Alps and Middle Eastern deserts, to routes bypassing the Great Wall of China, a thrilling home fixture is something very special, says current British National Road Race Champion, Ben Swift. He chats to Elysia Fryer about his cycling journey, overcoming setbacks and returning to his home county...

Ben’s cycling story has taken him from teenage racing at Mossley Cycle Racing Team, to the 2008 Beijing Olympics, the 2012 UCI Track Cycling World Championships in Melbourne and more recently the 2019 British National Road Race Championships. 2019 was quite the test for the champ, but 2020 is already shaping up to be a success - a success in which he hopes to build on following the Tour de Yorkshire race. “2020 has started much better than 2019 did, that’s for sure,” says Ben. “I‘ve had my best winter of training - possibly the best I’ve had in my entire career. It has been really consistent, I’ve had no problems, no injuries, and I finished last season pretty well, too. I was able to have a good break and now I’m back in the best form I have been in. “It’s a shame races have been cancelled due to the current state of affairs, and obviously we don’t know how long we will be unable to race for, but I’ve been really happy with my year so far, and I’m still hopeful for a successful Tour de Yorkshire, whenever it may be.” Despite recent happenings, now is a promising time for the 32-year-old pro and it comes as >>

a relief after spending some time in intensive care following a Tour de France training crash in Tenerife last February. But set backs only encourage success - and that’s certainly what’s on his mind as we head into spring/summer fixtures. “It was a pretty scary time,” Ben explains. “At first, I don’t think I really appreciated how serious the crash and subsequent injuries were. We were halfway up a mountain in Tenerife, just me and Geraint Thomas. “Our coach, Conor Taylor, took me straight to hospital. If I’d not been taken straight away it could have been quite ugly. “I was in intensive care for five days, then on a ward for four days. As soon as I got home I was straight in to see specialists and get second opinions. “Since then, I’ve been surrounded by the best support staff at Team INEOS. I worked closely with Conor, the team’s doctors and physios, and I have actually come out stronger.” Four months later, Ben was crowned British

Living proof that professional sport comes with its fair share of highs and lows. “It was a mix of so many emotions,” Ben recalls. “The crash was one thing, and then I missed some of my big targets on the back of it. “It was just another test in my career, I guess. I’ve had a few and it felt like, ‘oh, here we go again’, so winning the Nationals was pretty special. “I’ve been close a number of times over the years, so to finally have that jersey is just amazing. Representing your country as

national champion, it doesn’t get much better than that. It definitely gives you an extra bit of motivation.” With the British Nationals jersey in the bag, there’s never been a better time for Ben to head for home roads and tackle the Tour de Yorkshire - a race he has some not-sopositive experiences in. “The Tour de Yorkshire is very special,” smiles Ben. “And all we can wish for is to get the date back in the diary and work towards another exciting fixture as it has become a very important event for the sport. “Unfortunately I don’t have too many great memories of it. I broke my shoulder racing it once and the only other time I raced it, I was recovering from a broken back. This year, hopefully, with the form that I’ve shown in the early season, plus having the national bands on for extra motivation, I can put on a strong performance.” Ben is flying high in the cycling world, but he understands the challenge at stake. Like many races, the Tour de Yorkshire has its demands, the infamous ‘Shibden Wall’ in West Yorkshire, being one of them. “The Shibden Wall is back, but I’m ready to tackle it. It will be a great race, it always is. It’s certainly one of the best and most entertaining in our calendar. “I’m preparing for the Tour de Yorkshire by trying to hold my form, gain some endurance and remain patient.” For a homegrown Yorkshire lad, it’s a breath of fresh air to be swapping busy international schedules for some time on home soil, and to be involved in such a celebrated sporting event is something quite special. “We get to travel to some amazing places with the sport, and sadly we don’t always get to take it all in,” says Ben. “But there are not many jobs that take you to the Alps and the Pyrenees, then to the deserts in the Middle East, then past the Great Wall in China. “But that being said, it’s a fantastic thing to know that among all of these amazing places across the globe, Yorkshire is on the map as a cycling hotspot, too. “When the Tour de Yorkshire came about it was super exciting for the county and the sport itself. “Everyone has seen how enthusiastic the crowds are, and the public really do get behind it. I’ve travelled far and wide for my

job, but it makes me feel really proud to look at the support and think, ‘that’s my county putting on such a spectacle!’ “I couldn’t have ever imagined it when I was a kid. It’s one thing training on familiar roads, but to be able to actually race on home turf is a really surreal experience. “Most of our racing is done on the continent, so it’s very hard for friends and family to come along and support us. “But the Tour de Yorkshire is such a fantastic experience that we can share with friends

and family. It’s really quite special. The buzz around the region just adds to that as well.” The wonderful thing about the Tour de Yorkshire is, yes, it’s a thrilling event for cycling enthusiasts, but it is also a fantastic community event, and a great way to see the county in all its beauty. It also helps to spread the word and encourage new people into the sport. There’s no better place to get out on the open roads, and there’s never been a better time to do so! “Born and bred in Yorkshire, I am really proud of this event and it’s a great way to showcase what our county has to offer,” says Ben. “I’d encourage both locals and visitors to enjoy the diverse countryside and all of the county’s fantastic attractions, the museums, the castles and the ruins. “We’ve got a lot of pretty spectacular parks too,” he adds. “The Yorkshire Wildlife Park and the Yorkshire Sculpture Park are two of my favourites. Then you have to try and watch the race on one of the best climbs – I’d go for the Shibden Wall, on Stage Three. It is quite challenging and will be an exciting watch to the say the least. It comes close to the finish line of Stage Three, so the racing will be full gas.” Well into his twelfth professional season, the track and road racing cyclist is celebrating one of the most successful periods in his career. When he’s not racing the world, he spends his time at home with family in Yorkshire. “We’re on the road so much, so it’s nice to switch off and relax at home - when we can. “And the Tour de Yorkshire is the perfect opportunity for me to enjoy a bit of ‘home’ time with family and friends - while still taking part in the sport I love.” letour.yorkshire.com

In full bloom Beautiful blooms, breathtaking views, bustling venues. Wynyard Hall’s glorious Gardens are springing into action once again, says the Estate’s Managing Director, Allison Antonopoulos... It’s been five years since The Gardens opened at Wynyard Hall. What developments have been made since the official opening? The first phase of The Gardens development was the Rose Garden, which opened in August 2015. The Rose Garden is filled with over 3,000 David Austen Roses and was recently named by David Austen as one of his top three rose gardens in the UK. It also houses the Farm Shop & Café, which serves local artisan food and drink. The second phase of The Gardens’ development was The Edible Garden, which opened in September 2016 and now supplies the kitchens at Wynyard Hall with a bounty of fruit and veg all year round. The Edible Garden is also home to The Glasshouse, a beautiful Victorian-inspired glass structure brimming with beautiful gifts and homeware. In early 2018 we started to restore the temple structures around the Woodland Walk path, which opened to the public later that year along with The Wild Garden. 2019 was a great year for The Gardens. With the full development being used for the first time, it attracted around 70,000 visitors. How have you enjoyed watching The Gardens grow? The Gardens get better every year and take on a completely different look each season. From late spring to autumn, The Gardens are at their best, though with the Woodland Walk now open there’s plenty to see and do all year round. It’s a real family destination.

You’ve been at the heart of The Gardens since they launched in 2015. Where did you find your inspiration? Inspiration for the Rose Garden came from my father, but the vision for the Farm Shop and The Glasshouse came from regular visits to Daylesford, Petersham Nurseries and farm shops in and around Harrogate. It was my father’s vision, but I had the pleasure of designing it with our landscape gardeners, Alistair Baldwin and the team at Wynyard. Our unique selection of roses is one of the best in the country and is an amazing place to visit.

What introductions have been made to the Garden Café? We have just launched a new menu in the Farm Shop & Cafè. We also have a fixed daily menu offering homemade hot dishes. The Sunday carvery is proving very popular among The Garden and wider Estate visitors, too. What can you tell us about the sustainable business plan for The Gardens, The Glasshouse and the wider estate? The main aim of most of our commercial activities is to sustain this fabulous historic asset and wider parkland. We have restored The Gardens to their former glory, but this comes at a huge cost. A team of gardeners work all year round to maintain our high quality standards. What will visitors find in The Gardens this spring? We have recently opened a Superworm Trail along the Woodland Walk. My space... I’ve just given my living room a fresh new look and I’m so happy with the transformation. I’ve always thought that painting was one of the most transformative things that you can do to a room, but we’ve just had Amtico flooring fitted and I’m now a total convert. It feels so fresh and clean. I’ve also had a good de-clutter, resulting in a more minimal aesthetic. I chose a soft white paint for both the walls and woodwork and it looks super fresh - perfect as spring approaches.

Where do we start? @ellie_gracelangton via Instagram A: New builds are great blank canvasses for decorating, but knowing where to start can feel quite daunting. One of the big challenges is injecting personality into a new build, as the rooms can feel quite boxy. Don’t be afraid to decorate. Adding colour, pattern and wall art is a great way to start and to bring a space to life. New builds lack original features, but you could replicate this to add character by adding moulding to one or more walls, installing coving, a fireplace, or even building a faux chimney breast. Finally, add lots of texture using cushions, rugs and open shelving.

H OT P R O P E RT Y A North East couple transform their historic Edwardian home into a cool, Scandi-style pad with the help of BoConcept’s fabulous furniture… THE LOWDOWN >> Richard Wingfield and Paul Marshall bought their home in the spring of 2018. The busy pair were on the hunt for a relatively ‘finished’ property, as opposed to a ‘doer-upper’ that needed some TLC, but fell at the first hurdle when they surrendered to Kenliworth House’s charms within seconds of their first viewing. Built in 1911, the Edwardian family home is situated in the small coastal town of Monkseaton, a ten-minute drive from picturesque Tynemouth. Renovations began almost immediately, helping to turn a slightly scruffy semi, which hadn’t been decorated since the 60s and 70s, into a super stylish pad. The pair and their beloved pooch, Cooper, officially moved in during the summer of 2018. THE TRANSFORMATION >> Richard and Paul envisioned a hip home with heaps of personality. Longing for eclectic Scandi-style design with bold Palm Springs-meets-Copenhagen vibes, they set

their sights on BoConcept’s unique, Danish-inspired furniture to help bring their vision to life. The pair treated the entire home to a top-to-bottom makeover, including their three bedrooms. The day-room-and-kitchen and front living room, however, take centre stage and best show off the couple’s impeccable taste - and some of BoConcept’s most iconic pieces. To retain the property’s traditional character, Richard and Paul decided to keep some original features, including stained glass doors and windows, which can be found throughout the property, and the living room’s large bay window and beautiful ornate ceiling with original cornicing. Elsewhere, it was out with the old and in with the new. Gas fires were ripped out and replaced with contemporary stoves, while the unsightly 1970s carpets and oldfashioned kitchen headed for the skip. Sadly, the pair couldn’t hold on to the kitchen’s teak wood panelled wall (which the home’s original owner polished religiously for decades), as walls were knocked down and modern, on-trend Crittall windows and

doors, which open out to a south-facing garden, were fitted. Once installed, they completely transformed the space, allowing for open-plan living and tons of natural light to flood in. Over in the living room, the statement fire surround you see now was actually sourced on eBay for just £20. Fortunately, thanks to old markings on the wall, the couple were able to find one that matched the same size as the original. THE RESULTS >> Inspired by the intimate gentleman’s clubs of years gone by, the front living room is a purposely dark and inviting escape. Painted in a deliciously-moody shade of navy (Blue Hicks, to be exact - the same colour as the original BT Tower Restaurant in London), the walls cocoon you and the soft furnishings create a relaxed aesthetic throughout. BoConcept pulled it out of the bag in terms of Scandi-style furniture; the oversized and uber-comfy Mezzo sofa, in plush green velvet, commands attention and contrasts with the leather footstool - which also doubles up as a coffee table - really well. Complete with a zingy yellow floor lamp to add a bright splash of colour, BoConcept’s grey Imola chair, draped in teal and

turquoise textiles, a vintage drinks cabinet, bold artwork and cheeky accessories, it’s a personality-packed room that demands cosy, chilled-out evenings in front of the TV with a tipple or two. The day-room-and-kitchen, on the other hand, is bright, airy and functional somewhere for Richard and Paul to eat, work, entertain and kick-back in the warm sunlight during the summer months, when the Crittall doors are always open. The space oozes strong Scandi vibes and was modelled on Room 606 in The Radisson Hotel in Copenhagen, with a colour scheme of teak, green and blue. The white tiled fireplace-meets-feature-wall, dusty blue Reno chair by BoConcept, teak wood sideboard, which offers tons of storage space, and walnut kitchen doors to match, are all stand-out features. The kitchen/dining space, painted in dark grey, is home to a simple white dining table, which can be extended, surrounded by Adelaide chairs from BoConcept. Jessica Laing taps into her inner Willy Wonka at Newcastle’s School of Chocolate, La Chocolatrice…

Sweet success Oh chocolate, how I love thee. Whether in the form of bars, truffles, thins, buttons, spread, cake, biscuit or ice cream, you make life just that little bit sweeter - on good days, bad days, big days and all the other days in between. Zoe Rutter shares my passion for it. The twenty-something is a self-confessed chocaholic and has had a love affair with the stuff since childhood, during which her grandfather would treat her to a bar of Cadbury’s every time they saw each other. “He’d tell me to savour every mouthful and not share even a single square with anyone else,” she says with a grin. “I was hooked at a very young age. There’s just something so joyful about chocolate. It’s the ultimate ‘happy food’. Hand someone a slice of chocolate fudge cake, or a triple chocolate cookie, and they’re your best friend. Life feels better, even for just a few moments.” After studying French at university, she moved to the land of ooh-la-la, where she worked as an au pair for a family in Paris. In between teaching the children English, she threw herself into patisserie courses and chocolate-making workshops to learn everything she could about the craft. It only cemented her love for the humble cocoa bean and, soon, she found herself putting her new-found skills to the test by making tempting treats for the children every afternoon. Watching their little faces light up with glee every time a truffle or square of dark chocolate passed their lips would later inspire her to open her very own ‘school of

chocolate’ in her native North East. La Chocolatrice - which translates to ‘the female chocolate maker’ in French - opened its doors just a few months ago on Newcastle’s Westgate Road.

Passers-by won’t miss its whimsical window displays which, so far, have taken on stunning Valentine’s Day and Easter themes. They do a wonderful job of luring you in to a magical, Parisian-themed world of chocolate-making. “What first drew me to the building was its curved glass front and railings - it reminded me of the old chocolate shops I used to visit in France,” says Zoe. “Inside, I wanted to create a fun space, with a feminine edge. I wanted it to look ‘pretty’ and inviting. It’s why you’ll find pink walls, florals and sparkling chandeliers. A cold, steel kitchen was out of the question.” Being creative and getting your hands dirty is the name of the game during Zoe’s intimate and fun-packed workshops, which can host between three and 10 chocolatelovers and last anywhere from 90 minutes to two hours. Perfect for groups of friends and family looking to celebrate, or perhaps just pick up a few new recipes, tips and tricks, they take

place around a giant granite table and centre around decadent handmade truffles, luxury chocolate flakes and chocolate thins - or ‘crisps’. You can even mix up your own vegan creations and create your very own bespoke chocolate bars. Experimenting with flavours and textures is encouraged - as is licking the bowl - and you take home everything you make. During my visit we add orange, vanilla and freeze-dried raspberries to our truffles and make our very own version of mint chocolate thins - which, to my surprise and delight, taste even better than After Eights. “If you’re working with, eating and selling chocolate every day, like I am, it needs to be best quality,” says Zoe. “Ours has only five ingredients: cocoa mass, cocoa powder, cocoa butter, sugar and vanilla. It’s as pure as you can get and, taste-wise, sits right in the middle of milk and dark. “It’s smooth and creamy, but still rich. The flavour lingers in the mouth for a lot longer

DREAMY DELIGHTS than the cheap chocolate you’ll find at the supermarket. It’s more luxurious and far more satisfying.” As we chat, I learn how to fold double cream into pools of melted chocolate until thick and glossy. I take great pleasure in drizzling it all over the table in front of me, before scraping it into flakes as it dries and sets. I discover how to roll my own fudgey truffles and ‘drop’ them from a height, into cocoa powder, like a pro. Zoe is on hand to make sure everything is measured out exactly, but as she enthuses, it’s not really about the mathematics at La Chocolatrice. It’s about using your hands, spoons and palette knives and getting stuck in with the mixing, stirring and decorating. It’s about immersing yourself in the sweet smells - the kind that make your eyes roll with delight - and enjoying those allimportant taste tests along the way. As the weeks go by, the busier Zoe becomes - but this young and ambitious entrepreneur isn’t complaining. Even after single-handedly hosting 24 workshops in the space of just seven days. “The interest and support I’ve received, in such a short space of time, is overwhelming. I feel like I never stop, but I’m loving every single moment,” she says.

“People often ask me if I ever become sick of the sight of chocolate, but I honestly feel like I’m living the dream. “Running La Chocolatrice means I get to combine my two greatest loves - chocolate and teaching - and I’ve met some really fantastic people along the way. “I also sell my own produce - everything from bars to buttons, to lollies and pearls - which is another really fun part of the job. I always dreamt of having my very own chocolate shop - and now it’s a reality. “I’m not expecting every person who walks through the doors to leave an expert chocolatier. I just want everyone to enjoy themselves and have the best, most memorable, experience. If I’ve done that, then I’ve succeeded. Everything else is just a bonus.” My verdict? La Chocolatrice’s courses are perfect for creative chocolate-addicts and budding chocolatiers alike, packed with plenty of hands-on fun and technical chat, should you want it. Zoe is a charming host - and teacher - and you walk out the door feeling like you really learned a thing or two, with bags of indulgent homemade goodies you can be proud of - and that would put Willy Wonka to shame. FOOD MATTERS with chef Michael Wignall… New spaces, seasonal picks and tasty travels for our new culinary columnist… serene landscaped garden, decorated with stone artworks, and you feel as though you are leaving the hustle and bustle of London and instantly relax. ON MY PLATE >> We are entering into one of the most exciting seasons – spring! We’ve enjoyed French white asparagus, which is sadly coming to an end. A favourite on the menu has been fermented Yorkshire garlic, wild garlic emulsion, poached and barbequed white asparagus, hen of the woods mushroom, dashi foam and winter truffle. But now we see French green asparagus and it won’t be long before the English starts. I love asparagus, it’s so versatile and has such a distinctive flavour. Yorkshire rhubarb is also coming to an end and we are now developing a dish using gariguette strawberries. These French strawberries are super sweet and aromatic - and great in dessert dishes! MY WORLD >> We’re delighted to have completed the first phase of our refurbishments. January saw a small army of the area’s finest tradesmen create our new, open bar area, as well as carry out long overdue, essential maintenance works to this amazing building. We reopened the new doors to the Angel in early February and it’s been wonderful to welcome so many guests to our refurbished space. Many of this wonderful building’s original features are still here to welcome you, with the addition of a new fireplace to warm you up when April showers arrive. So, come on in and enjoy a local beer or a refreshing glass of wine at our wonderful new bar, which has been beautifully crafted by our neighbourhood joiner, from the most amazing local oak tree.

light, caramel colour, add a little more sugar and stir thoroughly. Repeat until all the sugar has been caramelised. Keep the pan on the heat, add the butter in small amounts at a time, whisking continuously. Once all the butter has been incorporated, pour it onto a lined tray into circles ready for your portions. Leave to cool and then put away in an airtight container.

Salted caramel… Ingredients 180g double cream 1/2 vanilla (pod and seeds) 120g butter 275g caster sugar Salt to taste Method Place the sugar into a pan and cover with water. Mix thoroughly and place on to the stove until golden brown in colour. In the meantime, add the double cream and vanilla into another pan and put to the side of the stove, just so it warms through. Once the sugar has caramelised enough, slowly pour the cream into the sugar, whisking continuously. After all the cream has been added, add the butter little by little, still whisking. Once the butter has been incorporated, add the salt. Leave to cool.

Vanilla ice cream… Ingredients 518g whole milk 6g vanilla (seeds and pod) 30g egg yolk 60g caster sugar 40g milk powder 35g glucose powder 4g stab 2000 (or any ice cream stabiliser – this isn’t essential, it just gives it a nice texture)

To prepare the pears… Ingredients 2 x Angelys pears Method Peel and cut in half vertically. Trim to size using a circular cutter, cut away stem and scoop out the core. Trim the rounded edge so that it is flat.

MY FOOD TRAVELS >> It’s hard to find the time to dine out at the moment, so, on a recent 24-hour trip to London, I managed to fit in lunch and dinner at two restaurants. The first was Tom Aiken’s new opening, Muse. We took the whole kitchen team with us on a day off, so they could experience Tom’s food, which I have long admired. The menus at Muse have

been inspired by nostalgia and the pivotal moments and key people from Tom’s personal life and career. It was an exceptional meal, thoroughly enjoyed by the whole team. For dinner, we dined at my favourite restaurant, The Greenhouse, which is tucked away in Mayfair. I have been so many times and everything about the restaurant just seems to get better and better. The food is exquisite and the service some of the very best. You enter through a

Ingredients 250g caster sugar 110g butter For the glaze 100g malt extract 75g tea Method In a large, heavy-bottomed pan, put enough sugar to cover the bottom and place over the heat. Once all the sugar has turned a

Method Place the milk and vanilla into a pan, put on the stove to start heating up. Once hot, add milk powder, glucose powder and stab 2000 to the milk. Bring this to the boil. In a separate bowl, whisk the sugar and the yolks until fully combined. Pour some of the milk mixture over the yolks and sugar whilst whisking. Pour the yolks and sugar back into the pan with the rest of the milk mixture and place back onto the heat. Cook this for a few minutes to cook the egg yolks. Put into a container, cling film and chill overnight to infuse the vanilla flavour. Strain the mixture then freeze for at least 24 hours. Churn the mixture in an ice cream churner to serve. TO ASSEMBLE >> Line a small tart tin with greaseproof paper. Place the caramel disc and the pear flat side down and cover with puff pastry. Cook for 25 minutes (180°C, fan 3) with a tray on top to flatten them, then cook for a further 5 minutes without the tray. Turn the tatin upside down, coat with the excess caramel and leave to sit for 2 minutes. Serve with vanilla ice cream and salted caramel. angelhetton.co.uk

French fancy >> Bouchard Père & Fils: Dating back to 1731, Bouchard Père & Fils is one of the oldest and most famous estates in Burgundy. Its wines have medicated kings and inspired emperors! With that much quality, we’ve picked out three of the best…

Braised ham hock pressing, pineapple relish, soft boiled quail’s egg & pease pudding >> Serves up to 10

Ingredients 4 x ham hocks 150g x liliput capers 4tbsp x wholegrain mustard 100g x flat leaf parsley 8 x bronze leaf gelatine sheets 1 x pineapple 1 x red pepper 1 x punnet quail’s eggs 250g x yellow split peas 4 x shallots 100g x unsalted butter 3 x cloves garlic Mixed spice Mustard seeds White wine vinegar Sugar Pressing Place ham hocks in a large pan. Add some chopped onion, carrot and celery. Cover with water and slowly simmer for 3-4 hours until the ham falls off the bone. Remove ham, reserving the liquid and then pick off the bone. Bring 700ml of cooking liquid to the boil and dissolve the gelatine in it. In a large bowl add the ham, chopped parsley,

‘La Vignée’ Bourgogne, 2017 capers and wholegrain mustard. Pour over the stock and gently mix. Carefully place into a terrine mould lined with clingfilm and press overnight in the fridge to set. Pineapple relish Remove skin from the pineapple. Dice the pineapple flesh and red pepper as small as possible. Place in a pan and add the mixed spice, mustard seeds, white wine vinegar and sugar. Slowly cook until the liquid has evaporated. Cool in the fridge. Pease pudding In a pan, add the yellow split peas, butter, garlic, shallots and about 1 litre of stock. Slowly simmer until peas are soft. Blitz in a food processor and pass through a sieve. Cool in the fridge.

Nuits-Saint-Georges is said to be the wine prescribed for Louis XIV by his doctors. With berry fruit and clove spices, this wine is well-rounded and balanced with enough structure to be put away for a few years and only get better. A medicine I would definitely prescribe!

Gevrey-Chambertin, 2016 Quail’s egg Fill a pan with water, add about 100ml of white wine vinegar and bring to the boil. Add the eggs for two minutes and 20 seconds. Remove eggs, cool in iced water then carefully peel. To serve... Slice the terrine and arrange carefully on a plate with the other elements. Garnish with some nice mixed leaves and enjoy.

The concept behind the small-but-mighty business is deliciously simple: bring your own container (or pick up one of their donated glass jars), fill it up with goodies, pop it on the scales, and pay - quite literally by the kilo. It’s a fuss-free ‘take-what-you-need’ approach that not only enables savvy shoppers to show the environment some love, but also save some pennies, while

picking up their kitchen cupboard essentials. “Our hope is that, rather than falling victim to discounts and deals in the supermarket aisles, our customers just take what works for them and their households. “We also want customers to enjoy themselves when they’re here and realise that shopping in this new way isn’t all that complicated,” adds Rachel. “The scales, the scoops, the spouts, the jars, the whole ‘eco-friendly’ thing… we understand that it can all be a bit intimidating. But we try and create a fun and relaxed experience for everyone - and we’re definitely not the preachy types.” The decision to open the doors of their own eco-friendly base was an easy one for Jackie and Rachael. Both women have long been passionate plastic-free activists - and they know what it takes to run a successful business, too. Jackie spent 30 years running her own interior design and soft furnishing company,

while Rachel still runs her own sock-making business, A Woven Plane, with an old friend. Together, they design and make socks for women, using chemical-free yarn. All of their packaging, from mailbags to wrapping paper, is recycled. “Joining forces to do something like this just made sense,” says Rachel, a thirtysomething yummy mummy, who, after years of living as a London lawyer, now resides in her native Tynemouth with her other half and baby son, Jasper. “Not only do we share a love for the environment, we both have entrepreneurial drive and experience - which has really helped us get the business off the ground. “Oh, and we both hate the supermarket - I suppose that played a big part in it too,” she laughs, looking to her mum with a grin. “Don’t get me started on the supermarket,” says Jackie, her head in her hands. “We won’t lie, neither of us live a completely plastic-free lifestyle. And yes, sometimes you can’t help but go out of convenience. Recently, I went for the first time in about eight months. I was there out of pure necessity - but I hated every minute of it. “But, when and where possible, we do everything we can to make sure that we use as little plastic as possible. “This means buying our fruit and veg from our greengrocer and bread from our local bakery. Small swaps that make a big difference. “And now, thanks to Buy The Kilo, we have somewhere to go for our grains, nuts, flour, sugar, vinegar, dried fruit, pasta, cereal, spices and oils - things we used to rely on the supermarket for,” says Jackie. With support from The Business Factory in North Shields, advice from fellow refill store owners and help from their local council, who pointed the pair towards their premises in Tynemouth Metro station, Buy The Kilo opened its doors in early 2019. Jackie and Rachel have spent the last year making a name for themselves, taking on more staff, building a loyal customer base and adding to their offering. “We now have around 320 products in the shop,” says Jackie. “Mostly food, of course, but we also sell eco-friendly, natural and vegan bits and bobs. Things like soap, shower gel and deodorant, face cloths, steel straws, cotton pads, reusable coffee cups and even suncream. “The business is still in its infancy, but we’re delighted with how things are going. This first year has been a bit of whirlwind to be honest. “People have really taken to it. Including the local kids, who, armed with their pocket money, will burst through the doors after school. They roll up their sleeves and get

stuck in. We’ve had to buy a little stool so that they can reach the scales. “Then you have those in their twenties, thirties and beyond, who are really tuned in to the whole sustainable living thing. More and more people, more families, are actively pursuing a more eco-friendly lifestyle - and it’s great to see.” Alongside kegs of olive oil, jars of rice and containers abundant with pumpkin seeds, customers will also spot a charming art gallery towards the back of the shop. It’s where Jackie and other local artists showcase their colourful, crafty creations all of which centre around plastic use and the environment. “Art is another passion of mine,” says Jackie. “About ten years ago, I decided to return to education to do a fine art degree. I studied part-time at Tyne Met College and did my final year at Northumbria University. I absolutely loved it. “We decided to set up our own art exhibition programme as its ethos really complements Buy The Kilo’s - they go hand in hand - and we hope to keep it going for as long as possible.” Looking to the future, Jackie and Rachel plan on hosting a variety of eco-friendly in-store workshops and talks with local do-gooders. The aim, they tell me, is to help build relationships and share as much knowledge as possible. “There are so many skilled and interesting people living at the coast and in other parts of the region,” says Rachel. “People who are doing great things for our planet. We want our customers to be inspired to take a leaf out of their book.” As I make my final scoops (a bag of coffee grounds and a jar of 100% natural shower gel on this occasion), talk turns to the rise in refill shops across the region. Head to the likes of Jesmond, Seaham, Hexham, Darlington and Stokesley and you’ll find shops similar to Buy The Kilo. Good for the planet, but not so great for business, surely? “It might sound strange, but we’re glad there are more places like Buy The Kilo cropping up,” says Jackie. “We don’t see the other stores as competition - we see them as our neighbours. We’re all part of the same community. One of things I love most about food is its power to bring people together. Breaking bread - sharing a meal - is one of the most communal and binding things we, as humans, can do. And it feels even better when it’s done in fabulous surroundings. Our latest supper club served up plenty of feel-good, convivial vibes, with Seaham Hall as the backdrop. Myself and a handful of lucky guests settled in for what would be an evening of memorable conversation, plenty of laughter and unforgettable food. From the get-go, it was clear we were in good hands. Turns out, not only are Seaham Hall’s team of chefs culinary geniuses, they’re master menu-makers, too, who really know their flavours and textures. They did a stunning job, carefully crafting us the most exquisite line-up of well-thought-out dishes, resulting in a fabulous feast with finesse and flair from start to finish. The tempting tasting menu took us on a culinary journey through six sensational courses - each one a pleasing plate of goodness, shining a light on the finest, seasonal produce right here on our doorstep. Think best-of-British meat from the surrounding countryside, aged and salted for extra tenderness, and fresh, just-caught finds from the North Sea. All accompanied by sensational sauces and sides to keep our tastebuds on their toes. For the non meat-eaters in the room, it was a celebration of earthy, end-of-season root veg, vibrant leafy greens,

fragrant herbs, nuts and mild, milky cheese. All in the deliciously-serene surroundings of The Garden Room - one of the hotel’s most coveted events spaces. Created with intimate dinners, private gatherings and drinks receptions in mind, the space is an effortlessly-glamorous corner of the five-star hotel, boasting panoramic views of its grand grounds. Beef and celeriac kicked off our foodie adventure. We could have been served a slab of steak, but what came instead was tartare. The meat - in this case Longhorn beef - had been salt-aged, which meant a melt-in-the-mouth texture. It was joined by pickled mushrooms, a helping of caviar and a slice of sweet brioche toast, which had been fried in beef fat until crisp. The charred celeriac had been cooked over embers for a smoky flavour, topped off with woody mushrooms, toasted hazelnuts and lovage. Earthy, outdoorsy, foraged flavours at their best. In between, the carnivores among us devoured blushing cuts of Yorkshire venison, served with heritage beetroot and radicchio that had been glazed in wild garlic vinegar. Unfussy flavours and vibrant colours on one mighty plate. The seafood stood out too; Craster kipper, whipped until lighter than air, plump, hand-dived scallops from the Isle of Mull, and Lindisfarne oysters doused in aged elderflower vinegar sauce for a sweet and salty tang. The vegetarians, meanwhile, enjoyed grilled cabbage, elderflower butter and herbs, followed by pillowy ricotta gnocchi, roasted beetroot and creamy Cornish gouda.

Dessert - which came in the form of two sweet courses brought new meaning to the word delicious. For many, the devishly-dark Tanzanian chocolate, served with Tahitian vanilla ice cream and delicate crisps made from yesterday’s sourdough, stole the show. For others, the mini calvados-glazed apple tarts, paired with silky vanilla cream and a spoonful of sorbet, made out of Granny Smith skin, was the ideal ending. As for our fish and seafood, we serve whatever the day boats on the north coast give us. “When it comes to flavours and textures, we like to stay close to the rule of ‘what grows together, goes together’. This means working with wild, in-season foods from the land as much as possible. We also preserve as much as we can. Savouring the seasons WITH KAREN PHILLIPS goes down the sides of the egg. Sprinkle with the remaining cheese and bake for five minutes at 200C, then turn the oven down to 175C and bake for another 8-10 minutes, or until the tops are golden. Eat with lovely homemade chutney.

RICH PICKINGS FROM THE GARDEN >> New season’s herbs start to appear in abundance: chives, sorrel, hyssop and lovage make a welcome difference to spring recipes. Wild garlic growing down by the stream is paired with spinach and any excess leaves are blanched and frozen in ice cubes trays to add a garlicky hit to scones and tarts throughout the year. Both Swiss chard and spinach from the veg plot need using up quickly since they’ll both go to seed (bolt) in June.

Step into spring with alfresco food and a flourish of flowers in the garden and is a versatile accompaniment to so many dishes. Easter is that moveable feast, sometimes appearing in late March and other times staying out in the wings until late April. This year, it takes centre stage smack in the middle of April and often coincides with warm sunshine and the hint of summer to come. So, why not make the most of the Bank Holidays in April and May with some outdoor dining, or an impromptu picnic at the park? A wonderful friend keeps me up to date with new cookbooks and the most recent, ‘Sour’ by Mark Diacono, has become a trusted companion in the kitchen for intriguing recipes and inspiration. His sourdough toast topped with labneh, roasted grapes and strawberry sambal is a taste sensation. I’ve made labneh for years, when a milk intolerance (which is happily in the past now) forced me to find alternatives to cream. Labneh can be sweet when made with icing sugar and cinnamon, or savoury (as in this recipe), when mixed with salt and crushed garlic. I’ve always used sheep or goat’s yogurt since it’s more digestible. Simply mix the yogurt with garlic and salt, then pop into a muslin lined sieve to drain overnight. It makes a simple cream cheese alternative. The strawberry sambal is flavoured with spicy chillies and garlic

CHEESY QUAIL EGG MUFFINS >> We run a gluten-free baking course and the comment most elicited from attendees is ‘nobody would realise these cakes, biscuits and muffins are gluten-free!’ Our last course had me experimenting with what to take on a picnic for gluten-free friends. This recipe makes 12 mini muffins or 6 large muffins, in which case a small hen’s egg can be used instead of the quail’s egg. Ingredients • 5 tbsp extra virgin olive oil • 2 tbsp butter melted and cooled • 1 large egg • 284ml pot of buttermilk • 250g gluten-free plain flour • 1 tsp baking powder • 1 tsp bicarbonate of soda • 150g grated Parmesan cheese • 1/2 tsp sea salt • 1 tbsp chopped chives • 6 slices Prosciutto, chopped into small pieces • 12 quails’ eggs, hard-boiled and peeled Method Preheat the oven to 200C. Line a muffin tin with cases.

Sieve the flour, baking powder, bicarbonate of soda and salt together. Whisk the oil, melted butter, egg and buttermilk together in a bowl, then add the sieved flour mixture to it and stir gently with a wooden spoon. Add the chopped prosciutto, chives and all but three tbsp of grated parmesan (reserve that for topping the muffins). Do not overmix, otherwise the muffins will be tough. Add a spoon of the mix to the muffin cases and then top with a quail’s egg (or small hen’s egg if you are making large muffins). Cover with the rest of the muffin mix, ensuring it

It’s full steam ahead in the spring garden. As soon as soil temperatures exceed 7 degrees, sowing of all veg seeds can begin in earnest. Early potatoes can be planted with a thick layer of mulch over the tops and then earthed up, or even covered with fleece, should any late frost be predicted. Any rhubarb that was forced this year can be given a welcome feed with organic manure or a proprietary liquid feed. Rhubarb should only be forced every three years, so look out for any of this year’s stock being sold off cheaply after winter to up your rhubarb plants to at least three.

Made you look Bob Arora sets off on a BMW roadtrip in the bold new M135i...

My first BMW was a 3 Series. Having previously owned Japanese cars, I was used to my car being very reliable. All of the cars I owned had class-leading warranties, but they were extremely dull and boring to drive. Having owned my fair share of Japan’s finest, I thought it was time to try something new. My options were the Mercedes 190, the Audi 80 or, my favourite, the BMW 3 Series. With no internet, I had to buy the Auto Trader magazine and I checked the Newcastle Journal every Saturday. After much investigation, I stumbled across a white 316i. It certainly wasn’t the best 3 Series, but it was in budget and it was my entry into the brand. The first thing I remember was how well put

together the car felt. It was very quiet to drive on the motorway and it was fantastic to throw into corners. Once I had the BMW bug, I worked my way up the range, and it was impossible for me to go back to a Japanese car again. In 2004, BMW decided to launch a competitor to the hugely successful VW Golf and the 1-Series was launched. In-keeping with BMW tradition, it was also rear-wheel drive. The 1-Series helped bring new customers to the brand. In 2013 the car was given a revamp and the coupe and convertible models were now called the 2 Series. Last year, BMW decided to totally redesign the 1 Series. The latest car not only boasts a sporty new look, but it is front-wheel drive, which is a first for the company. Well, it is if you don’t include the MINI.

The car I’m driving is the new M135i, which is actually fitted with X-Drive. This is BMW’s version of Audi’s Quattro System. Like Audi’s system, 50% of the power is sent to the rear but, unlike the M5, it can’t be switched off to make the car rear-wheel drive, unfortunately. The first thing you can’t but help notice is the bold new grill; it is very imposing when you see the car coming up behind you. The M-Division designers have done a great job; from the beautiful alloy wheels, to the sporty front and rear bumpers, the car looks absolutely amazing. It’s not at all cheap, but priced at £36k, it’s around the same price as its competitors. The 135i I’m test driving is actually a 2LT 4-cylinder engine rather than a 6-cylinder, but the engine still sounds great and it is now more economical than the outgoing model. The car gets to 60mph in 4.8 seconds and its top speed is 155mph. Thanks to the car now being front-wheel drive, it actually has more head and legroom for passengers in the rear. Boot space has also been increased over the outgoing model and it also gets an electric tailgate, for the first time. The car’s interior just screams quality; from the beautiful sporty seats, to the switchgear and buttons. They all feel and look great. There is plenty of room to stow away phones and bottles of water. The dash is still angled towards the driver and the infotainment screen still dominates the middle of the dash. BMW have used the same speedo and rev counter previously seen in more expensive models in the range. In my opinion, BMW’s iDrive system is still the best system - it is so user-friendly. The car’s interior is light years ahead of the outgoing model. The new Alexa-type assistant is certainly worth a mention. Simply say “hey BMW” followed by your request and the car can increase the temperature, put on your heated seat and

change the radio station, for example. The car also comes complete with Apple CarPlay and gesture control. The latest 1 Series has quite a few driver aids, including active cruise control. The car also keeps you in line should you stray over the white lines in the road. Parking assist takes all of the guess work out of tricky maneuvers and another great feature is reverse assistant. For example, if you’ve parked up and you have to go back for whatever reason, it remembers your route and it reverses you back. This most probably doesn’t sound very impressive on paper, but it’s a great toy to use and a brilliant party trick. I’ve really enjoyed driving this car. The new design turns heads everywhere you go, especially in this beautiful M3 style, colour blue. If you’re looking for something slightly different from the class leading Golf, I’d definitely take the drive to Durham to see Richard and his brilliant team who’ll be delighted to help you get the right 1 Series for you.
