CONFIDENCE ON THE RISE
Confidence is returning to the market, driven in part by growing speculation around a potential interest rate cut at the next Reserve Bank meeting. Buyers are reading the signals and responding with optimism, which is translating into healthy enquiry levels and solid attendance at open for inspections.

LINGUINI WITH PRAWNS & NDUJA CRUMB

Tucked away in Malvern’s backstreets, LULU is an Italian-inspired restaurant known for handmade pizza and pasta. This prawn linguini with nduja crumb dish captures the focus on quality, simplicity, and seasonal flavour, perfect to recreate at home.
INGREDIENTS
Pasta:
200g Tipo 00 flour
200g semolina
3 eggs
6g squid ink
12.5ml water
Nduja Crumb:
3–4 slices white bread
2 tbsp nduja
METHOD
Pasta Dough:
1. Mix the flour and semolina in a large bowl. Tip onto a flat surface and create a well in the centre.
2. Crack the eggs into the well. Whisk gently, then gradually incorporate the flour until a batter forms.
3. Knead the dough until smooth (about 5 minutes). Wrap and refrigerate for 20 minutes.
Prawns:
1. Butterfly and devein the prawns. Rinse in cold water and strain.
2. Marinate with garlic, chilli, parsley, and olive oil. Cover and refrigerate.
Nduja Crumb:
1. Blitz the bread into coarse breadcrumbs using a food processor.
2. Toast in a non-stick pan with nduja over medium-low heat, stirring constantly for 5 minutes until golden and fragrant. Set aside.
Prawns:
200g prawn cutlets (peeled and deveined)
2 tbsp minced garlic
1 tbsp minced shallots
½ red chilli, finely chopped
10g dill, chopped
10g parsley, chopped
10 cherry tomatoes, halved
½ lemon, juiced
Olive oil (for marinating and cooking)
Preparing the Linguini:
1. Remove dough from fridge and cut into quarters.
2. Lightly flour one piece and flatten by hand.
3. Set pasta machine to setting 0 or 1. Roll dough through, fold in half, and repeat 5 times.
4. Reduce thickness one setting at a time, rolling through each step. Dust with flour as needed.
5. Stop at setting 5 or 6 (1–2mm thick).
6. Dust both sides, fold into thirds, and cut into 3–4mm wide strips.
7. Unfold and dust linguini to prevent sticking.
8. Rest on a floured surface for 10–15 minutes.
Assembling the Dish:
1. Boil a pot of salted water.
2. In a pan, sauté ½ tbsp garlic, 1 tbsp shallots, and cherry tomatoes in olive oil over medium-high heat.
3. Add 6–7 marinated prawns and cook briefly, then deglaze with 50ml white wine. Lower the heat slightly.
4. Cook pasta for 3–4 minutes in boiling water. Reserve some pasta water.
5. Add cooked pasta to the prawn pan with a splash of pasta water. Increase the heat and toss to combine.
6. Add dill, parsley, lemon juice, and 20g butter. Toss until coated and glossy.
To Serve:
1. Plate pasta onto hot dishes. Garnish generously with nduja crumb and a drizzle of olive oil.

independently means this Urus handles like a Lamborghini, not an SUV.
This is a hyper SUV that deserves the hype being both meaner and greener at the same time. This hybrid powertrain approach has already shown its potential in the Lamborghini V8 hybrid Temerario supercar and V12 hybrid Revuelto hypercar. The instantaneous torque and response is also perfectly suited to an SUV – especially one designed with performance at its core.
This updated Urus also has multiple aerodynamic and technological updates to make it an even more compelling drive.
