Officina Gastronomica Italiana’s signature ‘Red Cow’ Ravioli by Chef Gabriele Coniglio offers a refined take on a northern Italian classic, with delicate hand-made pasta parcels filled with a velvety fondue of 36-month-aged Vacche Rosse parmesan — produced from a rare heritage ‘Red Cow’ breed native to Emilia Romagna — and finished simply with golden brown butter, crisp sage and drops of 12-yearaged balsamic.
Serves: 5
INGREDIENTS
Pasta Filling
250g Vacche Rosse Parmesan, finely grated
250g full cream milk
3 egg yolks
50g plain flour
Pasta Dough
500g 00 flour
230g whole egg (approx. 4 eggs)
Sauce & Garnish
60g unsalted butter
5 sage leaves
1 stem lemon thyme
Aged balsamic vinegar, to drizzle
Parmesan, finely grated to serve
METHOD
1. Prepare the Dough
Place the flour onto a clean work surface and create a well in the centre. Add the eggs and gently incorporate using a fork, gradually drawing in flour from the edges until a dough begins to form. Knead for 8–10 minutes until smooth and elastic. Shape into a ball, cover, and allow to rest at room temperature for 30 minutes.
2. Make the Filling
Warm the milk in a saucepan over low heat until it reaches a gentle simmer. Slowly whisk in the flour, followed by the egg yolks one at a time. Add the grated parmesan and continue cooking for a further five minutes until thick and creamy. Transfer to a container, cover, and allow to cool completely.
3. Assemble the Ravioli
Roll the rested dough through a pasta machine, working from the widest to the thinnest setting. Lay the sheets onto a lightly floured surface and trim into long rectangles. Spoon teaspoons of filling along the lower half, spacing each approximately 5cm apart. Fold the sheet over and press firmly around each parcel to seal. Cut into rounds.
2. Cook & Finish
Cook the ravioli in salted boiling water for approximately three minutes, or until they float. Meanwhile, melt the butter in a large pan over medium heat and add the sage leaves. Cook until the butter turns golden and the sage becomes crisp. Add the cooked ravioli and toss gently to coat. Serve finished with grated parmesan, a drizzle of aged balsamic and a sprinkle of lemon thyme.

STUDIO Y
We spoke to Yaron Kanor, Studio Y’s Creative Director, about the thinking behind the Melbourne-based studio’s approach to hospitality and retail design. Founded in 2012, Studio Y is an award-winning practice known for creating spaces that feel good, not just look good: welcoming, lived in, and full of character.



What core philosophy guides your approach to design, and how has it evolved since the studio began?
Studio Y’s work has always been driven by purpose. We begin by listening and deeply understanding the client, the brand, and the people who will live or work in the space. From there, the big idea emerges. It’s never recycled. It is always specific to the story in front of us. What has stayed constant is our belief that spaces should feel good, not just look good. Over time, our work has become more refined, narrative-driven, and collaborative. But at its core, the goal remains the same: creating spaces with emotional resonance that people remember long after they leave.
How do you uncover the story or intention that will shape the final experience of a space?
After listening to a client’s stories and understanding their brand, we study the site, its history, constraints, and quirks. Once the narrative is clear, we move into spatial planning, where concept and function need to lock in together. Flow, transitions, customer journeys, and operational needs must align so the experience feels effortless. By the time we layer in materiality and detail, the space already knows what it wants to be.
Rodd & Gunn’s new four-level Melbourne flagship is a milestone for both the brand and Studio Y. What drew you to this project, and what vision did you set from the outset?
What drew us to this project was the challenge. Rodd & Gunn is a wellestablished retail brand, and introducing hospitality at this scale required absolute clarity. Neither experience could be compromised. They needed to elevate each other and form a cohesive, seamless journey. We set a vision built on layered discovery, where each level offers something distinct, a shift in mood and purpose, yet still sits within the same narrative: retail, dining, bar, lounge.
What were the biggest design considerations in creating cohesion across four distinct levels?
The building’s art deco heritage gave us a strong design spine, which we carried through the joinery motifs, lighting language, and material palette. Historic cues ensured every level felt connected without enforcing uniformity. Wherever we could retain or expose original elements, we did, revealing layers that created continuity as you move vertically through the space.
What did the Rodd & Gunn flagship teach you, either about the building, the brand, or your own design practice, that will influence Studio Y’s future work?
Even after more than 300 projects, there is always something new to learn. The project reinforced the value of a client who brings a clear vision yet trusts the design process enough to let us fully explore it, creating space for genuine collaboration. It also affirmed our methodology: a defined process does not restrict creativity; it protects it. What we will carry forward is a renewed respect for the dialogue between brand, heritage and experience. When those elements are aligned, the result is a space that feels both grounded and elevated, and that is a direction we will continue to pursue. ■

Ahead of the Guide Dogs Victoria Community Fair 2026 on Saturday, April 18, we asked the team what visitors can expect on the day and why community support matters. Here’s what they shared about the Heart Behind the Harness, and why the day makes a difference.

What can visitors expect from the day overall, and what do you most want people to experience at the Fair?
The Guide Dogs Victoria Community Fair is a celebration of dogs, people and purpose. Visitors can expect a vibrant day filled with puppies, live dog demonstrations, food trucks, market stalls, children’s activities and rare behind-the-scenes access to our Kew Campus. It’s relaxed, welcoming and designed for everyone, from families and dog lovers to long-time supporters and those discovering us for the first time. It’s also an opportunity for the community to stand behind access, mobility and the freedom for all Victorians to move safely through the world. These things don’t just happen. They exist because people choose to show up and support them.
Which activities or moments tend to be the biggest crowd favourites, and what’s new or especially exciting for 2026?
Our live dog demonstrations are always a highlight. Watching our incredible dogs navigate real-world scenarios alongside their trainers is inspiring and often deeply moving. You can also enjoy free eye and hearing checks, try puppy yoga, learn to braille, play blind tennis, and step into experiences that help you better understand the world from another person’s perspective. This year, we’re shining a light on the full spectrum of our work. You’ll meet Guide Dogs, Wellbeing Dogs, PTSD Dogs and other specially trained companions. When you buy a ticket, you’re helping support the care, expertise and community that make this work possible.
Can you share what people will see in the live dog demonstrations and how these moments help the community better understand the impact of Guide Dogs?
Visitors will see our dogs working side by side with their trainers, navigating obstacles, responding to directional cues and demonstrating the focus and skill required to safely guide someone living with blindness or low vision. People quickly realise this isn’t instinct. It’s expertise. Behind every step is a carefully structured two-year journey, from breeding and early development, through puppy raising, advanced mobility training and precise matching with the right client.
Beyond buying a ticket and turning up, what are the best ways the community can get involved after the event?
There are so many meaningful ways to become part of the Guide Dogs Victoria community. You can volunteer your time, open your home as a puppy raiser, take part in community fundraising campaigns, become a regular donor, or explore corporate partnerships that champion accessibility and expand life-changing support across Victoria. ■
