Creative Crossroads at Country My

In a groundbreaking collaboration between the National Gallery of Victoria (NGV) and Country Road, the Country Road + NGV First Nations Commissions advance the recognition and platforming of emerging Australian First Nations artists and designers. This national, biennial mentorship and exhibition program, now open at The Ian Potter Centre: NGV Australia until 4 August, unites eight emerging First Nations artists with renowned industry mentors across the eight Australian states and territories.

Initiated by the NGV and supported by Country Road, this partnership celebrates the intergenerational transfer of knowledge and the storytelling inherent within First Nations communities. Each mentor, chosen for their expertise and standing within the art and design sectors, nominates an artist to guide through the creation of ambitious new works. These works, spanning disciplines from weaving and textiles to installation and painting, respond to the poignant theme of ‘My Country’ and coincide with Country Road’s milestone 50th anniversary.

The commission series acknowledges the creative relationships between artists and their mentors. It amplifies First Nations art and design in Australia, ensuring that these narratives and knowledge systems are celebrated and preserved for future generations. The inclusion of these commissioned works in the NGV Collection enhances the Gallery’s significant holdings of Australian First Nations art and design, establishing a vital legacy.

Tony Ellwood AM, Director of NGV, highlighted the uniqueness of the mentorship format, which offers emerging artists a careerdefining opportunity to work under the guidance of an established mentor. ‘We’re grateful for the support of Country Road for this important new initiative. This mentorship program has enabled NGV to cultivate important new relationships with First Nations practitioners across the country. With the eight works entering the NGV Collection, this commission will enhance our ability to represent and profile our rich and diverse Indigenous communities,’ said Ellwood.

Mya Tiger at Hotel Esplanade 11 The Esplanade, St Kilda

Cantonese hotspot Mya Tiger at the iconic Hotel Esplanade in St Kilda shares their signature dish, Ginger Chicken Dumplings.

Ingredients Method

Dumpling skin

500 g all-purpose flour

10 g salt

250 ml boiled water

Chicken dumpling filling

500 g chicken mince

25 g finely chopped ginger

25 g sugar

15 g salt

15 g chicken stock powder

10 g ground white pepper

10 g potato starch

50 ml iced water

50 ml neutral oil

Chilli oil sauce

500 g chilli powder (no seeds)

50 g ground Sichuan peppercorns

10 g ground star anise

10 g ground cinnamon

30 g minced garlic

1 L hot oil

100 ml black vinegar

100 ml soy sauce

Crispy skin base

900 ml neutral oil

100 g all-purpose flour

400 ml water

Dumpling skin

Start by mixing flour and salt in a bowl.

Use a wooden spoon to stir the flour while gradually adding water 1/3 at a time, allowing the flour to absorb the water. The mixture should slowly turn lumpy.

Knead the dough in the bowl to bring all the lumps together into one mass. If the dough does not come together, add water one teaspoon at a time until it does. Note: The dough should not be sticky.

Transfer the dough to a hard work surface. (We recommend using a Silpat.) Knead the dough for 2 minutes until it is smooth and elastic.

Let it rest for at least 15 minutes and up to 2 hours. After resting, cut the dough into 4 equal pieces. Roll each section into a 1-inch-thick log, then cut it into 8 equal pieces. Shape each piece into a rounded disc. Lightly flour the top and bottom of the disc.

Use a floured rolling pin to roll out the disc further. Holding the flattened disc gently, use the rolling pin to press out the outer edges of the disc. Roll back and forth, continuing to rotate the disc until all edges are pressed out to your desired thickness.

Note: Your dumpling skin should not be too thin, as it needs to hold the filling without breaking.

Add flour as necessary to prevent the dough from sticking and tearing – The final skin should be between 3 and 4 inches long.

Chicken dumpling filling

Mix chicken mince, ginger, sugar, salt, and chicken stock powder in a kitchen mixer and whisk on low speed.

Slowly add the iced water to the mixture, followed by the oil.

Add the potato starch and mix until well combined.

Chilli oil sauce

Mix all spices, garlic, and chili powder in a heatproof bowl.

Pour hot oil over the mixture to release the aroma.

Once the oil cools to room temperature, season with black vinegar and soy sauce.

NB: It is important to follow the sauce instructions step by step and let the oil cool down slightly before adding wet ingredients. Adding them too early can cause the hot oil to splatter, which may lead to burns.

Crispy skin base

Add all ingredients into a bowl and mix well. Transfer into a squeeze bottle for easy service.

To Serve

Boil dumplings until cooked (approximately 3-4 minutes), then set aside and ensure they are well-drained.

Add a thin layer of batter to the bottom of a hot non-stick pan, enough to cover the base, and immediately place dumplings on top.

Cook for approximately 1 minute until the batter turns a nice golden brown.

Flip the dumplings straight from the pan to the plate so that the base is on top.

Add chilli sauce to the bottom of the plate or on the side, whichever you prefer.

Note: The reason we use a non-stick pan is to avoid hot oil in the pan when flipping it onto the plate.

These dumplings are perfect for steaming or pan-frying and can be prepared up to 24 hours in advance. They can be kept in the freezer for up to 2 weeks but are best when eaten fresh. If you prefer steamed dumplings, just add them to your steamer for 5 minutes over a rolling boil.

Electrifying Victoria

The Victorian Government's recent legislation requiring homes to switch from gas to electric power is a significant step in the journey toward sustainability and environmental preservation.

This policy shows a commitment to reducing carbon emissions and aligns with global efforts to combat climate change by embracing cleaner, greener energy sources. As Victoria aims for an all-electric future, homeowners are now faced with both the challenge and opportunity to transition their households accordingly.

Electricity, generated from renewable resources like solar, wind, and hydro, enhances home efficiency, reduces energy costs, improves indoor air quality, and makes living more affordable and environmentally conscious.

The prohibition of new gas connections is a critical move to curb fossil gas use and emissions while avoiding costly gas infrastructure through the Gas Substitution Roadmap (GSR). The Victorian Government has set ambitious targets to significantly reduce emissions, aiming for a 75-80% reduction by 2035 and reaching net zero by 2045. With approximately 80% of Victorian households currently using gas for essential services like cooking, heating, and hot water, the transition away from gas appliances presents a daunting task but also a crucial step towards sustainability.

Homeowners can navigate this transition through energy audits, upgrading to electric heating and cooling systems, and replacing gas appliances with electric alternatives. Electric heat pumps offer

efficient heating and cooling, while kitchens will see the replacement of gas stoves with induction cooktops, providing safer and more precise cooking methods.

Homeowners are also encouraged to integrate solar panels into their homes. Solar power not only cuts electricity costs but also diminishes reliance on the grid, allowing for a more autonomous and environmentally friendly energy solution.

The government is actively working with gas appliance manufacturers and the construction sector to facilitate the transition from gas to electricity as the primary energy source for Victorian households. New homes will be equipped exclusively with electric appliances, adopting electric solutions for heating, cooling, and cooking to pave the way for a greener and more sustainable future.

This new legislation from the Victorian Government encourages homeowners to contribute to a sustainable future. Although the transition requires an initial investment and a willingness to adapt to new technologies, the long-term benefits of lower energy costs, enhanced home efficiency, and a reduced carbon footprint offer substantial rewards. By adopting electric solutions and renewable energy, Victorian homeowners can contribute to a greener planet, ensuring a liveable, sustainable world for future generations. ■
