Having undergone many reincarnations since its inception as a Cobb & Co Staging post in 1872, this latest version of the former iconic Wellers, is nothing short of exceptional.

With a collective vision to create a multi-functional meeting place, where the community come to celebrate all those special moments in life with food, wine and family, local owners Steve Gist, Craig Jones and Gregory Anderson have ensured the history of this local treasure have not been overwritten but enhanced.

From selecting a menu based on local produce, beer and wine to serving meals on locally spun crockery, every detail of this revival is centered around one common theme. Community. “We wanted to keep that connection and create a space that the community loves to come to and supports the locals,” shares Steve.

Perfectly positioned in Kangaroo Ground, the trio engaged renowned ‘Mills Gorman Architects’, who have done many a fit out in the ‘Paris end of Collins Street’, to bring city style to this country classic. The result? Highend yet homely. Managed by local

Venue Manager Jake Robb, who also happens to be “the nicest person you have ever met”, paired with an exquisite Italian style menu created by Head Chef Christopher Lillico, it is no wonder Fondata 1872 has built a reputation for delicious food, exceptional service and warm atmosphere.

Having worked in kitchens across Europe and Italy, Chris’s passion and finesse for Italian cuisine can be tasted in every mouthful. Regularly updating the menu using seasonal local produce in the style of Nona, locals have ensured some dishes are here to stay. Such as the hand-made pan-fried pumpkin, sage and walnut gnocchi. Or the signature melt in your mouth 12-hour slow cooked lamb shoulder served with chargrilled broccolini and garlic yoghurt.

All served Thursday through Sunday ‘a la carte’ style within a unique array of intimate to large indoor and outdoor spaces. Indoors, dine by the historic fireplace in the main dining room, sip on locally brewed beer poured from copper taps in the rustic bar, or enjoy a more intimate affair in the charming Wellers room or private Terrace.

Outside, look out over the sunshine laden rolling hills of Kangaroo Ground; the freshly laid lawn the picture-perfect spot for an outdoor wedding ceremony, a game of quoits or kids chasey. Savor an afternoon cocktail under the newly covered alfresco or visit the cottage garden, lined with vines which have

been cared for by two generations of the same local family, providing the quintessential place to mingle the night away.

In the hands of local owners and staff who “go above and beyond in making someone’s day or moment really special”, there is no end to the type of celebration or event that can be housed within this special space. And with more plans in place to expand their offering even further, this original Cobb & Co Staging Post is serving the community more than ever.

T

his pair may have perfected an Australian Dry Gin, but there is nothing dry about these two locals. Chris Cameron, the meticulous and masterful Gin Maker, and Marcus Hansen, the mischievous and mindful investor, make up two thirds of Naught Gin. The other third? Their breathtaking 800-litre custom built copper pot still named Abigail imported from Germany, that takes pride of place in their Eltham distillery.

“The stars aligned for us meeting, and all the people who shared in our vision to make it a reality” share the business partners.

Although, their coming together may have been serendipitous, having spent a morning with this playful pair, their success is not by chance.

“We vowed to make a real crack at making the best gin, the best bar, using the best ingredients and equipment.” Shares Marcus.

And having been selected as one of Australia’s Top 10 Gins for 2020 by the Gin Queen; Australia’s most influential website dedicated to all things Gin, they have done exactly that.

A self-proclaimed perfectionist, Chris spent years and over 300 distillations

crafting, refining, and perfecting each ingredient down to the decimal point.

Classified as a contemporary dry gin, “Naught is the sum of all its parts” shares Chris. Bursting with the best of local and imported ingredients, including fresh juniper, bright citrus, toasted wattle seed and warming star anise, all finding perfect balance in a base of pure wheat spirit. It is the unconventional complexity and precision of each ingredient that make Naught so distinct yet approachable, so refined yet playful.

Being lovers of sharing a good story, plans are in full ‘swig’ to open a high-end gin bar in their Eltham distillery. The pair have engaged Studio Y to design the space, who specialize in creating ‘bespoke spatial experiences that are a potent mixture of constructive imagination and playful practicality’. Which could not be more perfectly aligned with Naught’s ethos of Playfully Wicked. Distinctly Elegant.
