Exciting times AFTER SHOWCASING AT CHELSEA, SHEFFIELD-BASED GARDEN DESIGNER LEE BESTALL WILL RETURN NORTH TO TAKE CENTRE STAGE AT CHATSWORTH HAVING PREPARED ONE OF EIGHT SHOW GARDENS. ardens may be peaceful places to unwind, but as RHS Chelsea Flower Show award-winning garden designer, Lee Bestall has found, planning and creating them is far from relaxing – and he wouldn’t have it any other way. Lee and his team are currently preparing a garden for the first-ever RHS Chatsworth Flower Show, as well as another for the

Chelsea Flower Show just two weeks before. “It’s insane really because we’re at Chelsea too, so we’re putting ourselves under a lot of pressure to deliver it,” confirms Lee. “I’m the only garden designer in the country to be doing both shows, but I’m looking forward to bringing some high-quality horticulture to the north of England because the RHS has typically been southern-based.

“We’ve already got Harlow Carr in Harrogate, but now they’ve just unveiled the new RHS Garden Bridgewater, which will be open in a couple of years, so it’s moving north and it’s really exciting to have the opportunity to show people what possibilities there are. “I went to the Chatsworth Show for the first time last year and was amazed by the

scale of it and the atmosphere. It’s on our doorstep, so I’d be mad not to do Chatsworth.” Lee will be creating the Experience Peak District & Derbyshire Garden, one of eight show gardens to be presented at Chatsworth. The garden will be a celebration of the stately homes and gardens of Derbyshire, and with his business, Lee Bestall & Co being based on the grounds of the Renishaw estate, he and his team are perfectly placed to bring these elements into their work. “The design is very simple and based on an Italianate layout. The gardens of most big houses are quite formal, so I felt that it had to have that formality to it. “We’re bringing a statue from Renishaw. It’s a piece of 17th century artwork that they are loaning to us for the focal point and then we’re going to have lots of lovely herbaceous planting. It’s quite colourful. It will look quite modern, so we’re not trying to replicate a piece of Derbyshire – you can go to any stately home to see that. “I’ll also be messing about with perspective because one of the things that happens when you go into Derbyshire is this change in your state of mind. People go to the countryside for no other reason than to

relax and change their personal inner state so the garden is about escaping to a place that will make you feel better, that is more peaceful and straight lines do that – well, they certainly do for me. “The garden [at Renishaw] has a small wall in it, which is a bit like a ha-ha, that’s almost like an infinity swimming pool. When you look over it, the view almost comes closer and the reason they put those in, was to allow cattle and sheep to graze the land, but not get into the garden. “So there’ll be a mini ha-ha in there and we’ve got some lovely rusty old estate fencing, some kind of native British trees – we’ve got three of those that are quite big, and then under those, we’ve got some cows. These cows are three different sizes, so again, we’re messing with the perspective.” The installation at Chatsworth will also be a nod to revolutionary Derbyshire figures such as Sir George Sitwell, who once lived at Renishaw, and the grand ideas that never came to be. It is said that when Sitwell looked out at the cows grazing in his garden in winter, he found them boring, so he commissioned several artists to try to paint them. However, the artists all gave up because

the cows wouldn’t stay still long enough. Lee is therefore using modern technology to make Sitwell’s vision come true, only using artificial cows. Having started preparing all these elements months ago, it’s an ambitious project, but one thing’s for sure, the show garden at Chatsworth is going to be a sight to behold. But don’t worry if you miss it – after the show, Lee and his team will be transferring the garden to a similar plot in the gardens at Renishaw. It’s been a rollercoaster career for Lee Bestall, who started helping his grandfather plant potatoes at the tender age of four, but whose gardening career only really took off in 2005 when he won a place on BBC’s Gardening School – the garden world’s answer to The Apprentice – but the Sheffieldbased designer says he wouldn’t change a thing. “I don’t regret anything that I’ve done. It’s made me who I am and has given me confidence. Its overarching theme is ‘design revolutionaries’, a celebration of the creative genius of gardeners and garden designers from the past and the talent, ideas and conceptual thinking of today’s green-fingered generation. The show will surprise and delight with exciting categories including FreeForm, providing a platform for designers to showcase their ground-breaking designs. A striking reconstruction of Joseph Paxton’s magnificent Great Conservatory will also be the spectacular setting for breathtaking plant displays in the form of mini plant worlds themed around habitats such as woodland, Mediterranean and jungle. The RHS Chatsworth Flower Show also welcomes headline partner Wedgwood, which reunites the two British institutions after more than two centuries. Wedgwood will also work with up-and-coming, multiaward-winning designer Sam Ovens, known for contemporary, innovative and environmentally sustainable designs, to create a Show Garden at the show. The RHS Garden for a Changing Climate The RHS show feature is RHS Garden for a Changing Climate by Andy Clayden, Dr Ross Cameron of Sheffield University and RHS Scientist Eleanor Webster. Built by Killingley, their design presents two different scenarios for a small suburban garden: ‘now’ and the ‘future’ – 2100 – when our climate will become increasingly warmer and drier in summer, but also more turbulent with intense, sometimes unpredictable heavy showers. Walking between these two scenarios, visitors will learn about the RHS report Gardening in a Changing Climate, to be published in April, and the science that underpins the selection of plants that are able to cope with this new environment.

A garden inspired by the life-cycle of a quarry, drawing attention to the habitat created by quarry sites. Cruse Bereavement Care: A time for everything, by Neil Sutcliffe.

Great Conservatory The Floral Marquee takes inspiration from Joseph Paxton’s Great Conservatory at Chatsworth, which housed brilliantly coloured flowers, exotic palms and aquatic plants. The conservatory, the largest glass building in England when it was constructed in 1840, was demolished in 1920. Using innovative technology, a giant 14-metre high dome will form the centrepiece of the floral marquee, taking inspiration from the shape of this long-lost glasshouse. At its centre will be an impressive art installation brought to us by Darryl Moore and Adolfo Harrison of CityScapes. An exhibition will tell the story of Paxton and his achievements, including the story of the dwarf banana (Musa cavendishii) from which most commercially grown bananas derive.

Marquees FreeForm Gardens This is an entirely new, unjudged category of gardens introduced for RHS Chatsworth, which encourages freedom of expression and celebrates the connection between plants, sculpture, art and people. The FreeForm Gardens include Pic ‘n’ Mix by Tony Heywood and Alison Condie, who will create a dark and surreal garden portrait of Chatsworth, where the fake, real and synthetic collide in a modern-day garden grotesque. The Brewin Dolphin Garden, by leading designer Jo Thompson, is a spectacular celebration of the landscape of the 1,000-acre Chatsworth Estate and the elegance and beauty of Chatsworth House. Central to the design is an imposing sculpture that will sweep through the space. The student-led project Path of Least Resistance by Francesca Tomany and Zuzanna Golczyk will highlight the strength and versatility of plants found on post-industrial urban wastelands, with four large sculptures made of reclaimed metal. Behind the Scenes by Barbara Negretti and Elisa Tomat, focuses on the important contribution of a gardener’s manual work in every successful garden and will include two giant hands made of hay, planting an oak tree.

Two conventional floral marquees, each 2,400m2, will form wings on either side of the conservatory and contain 76 displays by leading nurseries and growers. Comprising three special areas of interest – connoisseur (selling curious, collectible and intriguing plants), cut flower garden and edibles – as well as the traditional stand layout.

Community gardening There will be a strong community aspect to the show, with schools competing to create bug hotels, an outdoor classroom with drop-in-sessions on everything from making botanical ice-cream to art classes and floral workshops, and a ‘perfect for pollinator’ container competition inviting community groups to create butterfly and bee-friendly plant containers. A brand-new category for the RHS will also be a well dressing competition (find out more on the following pages), providing a new platform for this famed and wellloved local custom, which will be judged by public vote.

More to see at the show With the River Derwent running through the centre of the showground, a series of bridges will link both sides of the show. A bridge designed by museum and exhibition designer Mathew Saxon will take the form of an historic Palladian bridge and as visitors enter they will be taken on a floral journey by local celebrity florist Jonathan Moseley. In the Artisan Kitchen Theatre, there will be an exciting programme of demonstrations from food historians, local Michelin chefs, published cooks and food bloggers, including culinary historian Ivan Day, chocolatier Shelly Preston, and award-winning baker Emmanuel Hadjiandreou. The School of Artisan Food will be working with local Social Enterprise Rhubarb Farm, who use therapeutic organic horticulture to develop skills, confidence and employability and improve health and well-being for vulnerable people. In celebration of local rural crafts, RHS Chatsworth Flower Show will also be offering a range of ‘have-a-go’ demonstrations. This will range from dry-stone walling, willow weaving, basket making and lathe turning. Future crafters will also demonstrate how these traditional crafts can be used to create modern less conventional pieces, in keeping with the theme of the show.

ell dressing (also once known as well flowering) is an ageold summer custom unique to the Peak District and Derbyshire, which is thought to date back to Roman and Celtic times when communities would dress wells to give thanks for fresh water supplies. Nowadays, the tradition continues in scores of towns and villages between May and September, when everyone from schoolchildren to grandparents pitches in to create living art installations made from flower petals and other natural materials. And this year, five local groups, in partnership with The Royal Horticultural Society, will showcase their well dressing skills at the first RHS Chatsworth Flower Show, giving visitors the opportunity

to vote for their favourite. Ashford Women’s Institute, Buxton Well Dressing, Burton Closes Hall & Bakewell AJ Welldressing, Chesterfield Town Pump Group and Tideswell Well Dressers will be working to create beautiful designs in natural materials such as flower petals, leaves and seeds to display at the show. They will be drawing inspiration from the Derbyshire landscape and great innovators in design such as Sir Joseph Paxton and Lancelot ‘Capability Brown’, both of whom had a significant impact on the magnificent 1,000-acre Chatsworth Estate. Stunning Gardens, Revolutionary Gardeners Designers: Pauline Clark, Christine Gould and Claire Millard The Buxton display will show three pictures created using traditional well dressing techniques with natural materials such as flower petals, leaves and seeds. The design reflects the links between Chatsworth House and the town of Buxton and the story of garden design and innovation. This will be illustrated with pictures showing the Joseph Paxton Palm House at Chatsworth, The Pavilion Gardens in Buxton, designed by Edward Milner, who was Joseph Paxton’s apprentice, and a modern take on the Chatsworth Rock Garden designed by Dan Pearson, a gold medal-winning garden shown at the RHS Chelsea Flower Show.

Ashford WI Well Dressing Designer: Caryl Heath

AWN Pugin – A Master of Gothic Revival

This well dressing will be made of natural materials including stone, shell, leaves and flower petals pressed into a bed of clay inside a wooden frame. The frame is soaked in the river for a week to help keep the clay moist and thus preserve leaves and flower petals. The design focuses on designers’ local and non-local, past and present representing engineering, architecture, garden design, sculpture, dress design and household objects to showcase the talents of the county of Derbyshire and of the United Kingdom.

Designer: Sue Hudson Bakewell’s entry into the RHS Chatsworth Flower Show focuses on one of the town’s oldest buildings – Burton Closes Hall, which now operates as a care home owned by Hill Care Group. Burton Closes Hall has retained the majority of its original features after it was finished in 1848 by architect Augustus Pugin, known for designing the interior of the Palace of Westminster, incorporated many of his gothic revival stylings into the building. The exhibit displays an overall picture of the exterior of Burton Closes Hall which is surrounded with gothic aspects of the interior design from different aspects of the home including woodwork, ceramics, plaster work and stained glass. The work demonstrates the care home’s and artist’s passionate understanding of the styling and gothic revival movement and the important links that the home and well dressing group have with the local community.

Chesterfield Well Dressing Designer: Alyson Barnes Chesterfield’s design celebrates Joseph Paxton. He is closely connected with Chatsworth, where he was head gardener. He built the Emperor Fountain (still the highest gravity fed fountain in the world), and designed the orchid house, arboretum and rock garden. This dressing shows Paxton’s daughter, Annie, standing on a leaf of the giant waterlily Victoria Amazonica in the Lily Pond at Chatsworth House. It was the strength and internal structure of this leaf that gave Paxton the inspiration for the design of the Great Conservatory at Chatsworth and, a few years later, Crystal Palace. The flowers on the border of the well dressing are taken from the book ‘Paxton’s Flower Garden’, which he co-wrote with John Lindley.

Discovery, Vision, Invention Designer: Elaine Chapman and Paul Fletcher Tideswell’s well dressing design was inspired by the words ‘Discovery, Vision, Invention’ on the railway wheel, which is part of George Stephenson’s statue at Chesterfield Station. The design will include images reflecting the achievements of local designers and inventors such as Robert Bakewell’s wrought ironwork arbour known as ‘The Birdcage’ at Melbourne Hall; Chatsworth House, remodelled by William Talman, and the Great Conservatory and Emperor Lake and Fountain engineered by Joseph Paxton. It will also include a depiction of the railway wheel from George Stephenson’s statue and an umbrella to commemorate Bradwell’s Samuel Fox’s invention of the first steel umbrella frame.

HANNAH SANDERS REPORTS. erene countryside, excited crowds, flowing manes and the sound of thundering hooves can only mean one thing: the highlight of the equestrian calendar – Chatsworth International Horse Trials is on the horizon. There are three jam-packed days (12-14 May) of thrilling world-class riding competitions, elegant dressage, exhilarating cross-country and nail-biting show jumping along with endless activities for all the family. Set in the heart of the Peak District, the house and its magnificent grounds are home to the Duke and Duchess of Devonshire. The couple are renowned for their love of all things horses: the Duke has served as Chairman of Ascot for over a decade and the Duchess owns many prize-winning animals making Chatsworth an ideal location for the event. The weekend showcases some of the world’s leading horses and riders, attracting spectators from far and wide. Previous winners include Pippa Funnel, Andrew Nicholson and William Fox-Pitt. Although the riders and horse will take centre stage over the weekend, there’s also a bundle of exciting activities for all the family to enjoy. This includes a sheep show, where they’ll be educating and entertaining audiences with

If horses are more your cup of tea, join the ponies and riders for the British Scurry and Driving trials. This obstacle course of cones, barriers, rocks, arches and ramps for the ponies takes place against the clock. There will also be a Mullenscote Gun Dog Display, Paws For Thought dog agility show, Pony Club show jumping and mounted games along with a Hound Parade. Away from the arena, there’s a children’s entertainment area with face painting, farmyard animals, pottery painting, mini land rovers and more. Its three disciplines - dressage, cross country and show jumping - are designed to test both riders and horses in a variety of different ways. The winner will demonstrate that they can master each successfully and move flawlessly between them, demanding immense skill, patience and determination to tally up the least penalties at the end of the weekend.

Cross country is fast paced and action packed which is why most consider it the highlight of the shows. Horse and rider race against the clock around Chatsworth Park on the banks of the River Derwent. The course is filled with seemingly impossible fences and solid obstacles - including some of the Duke and Duchess of Devonshire’s handcarved wooden sculptures.

This stage of the trials takes place in the arena and sees competitors tackling fences made of brightly coloured poles. Athleticism and control are of vital importance and penalties are given for every second over the allotted time, horse disobedience, knocking off a pole and failing to complete the course in the set order. While dressage may seem the calmest of the three disciplines, it’s arguable one of the most difficult - one that demands years of training in order to succeed. ‘Horse ballet’ as it’s known, requires the rider to display precise control of the horse as it performs a series of movements including pirouettes and gaits. Points are awarded for grace and fluidity with the overall aim being able to show perfect harmony between the horse and the rider.

For the second year running, Chatsworth will be hosting the first leg of the Event Rider Masters Series, in which the world’s best riders battle it out over seven events to win the title of Event Rider Master. ally Ambrose, Head of Visitor Experiences has been involved with the Dodson & Horrell Chatsworth International Horse Trials since 2011. Each year Sally and the Chatsworth team strive to make the event a fantastic family day out with top entertainment. Sally has a very diverse role at Chatsworth which entails marketing, education and events along with visitor experience. During the horse trials, she works as part of a close-knit team with Patricia Clifton, Gail Dale, Dave Evans and Ian Stark to create a successful weekend. We caught up with Sally to discuss family attractions, horse trials development and what’s in store for this year’s show.

What has changed since you have become involved in the horse trials?

In terms of improving it, we’ve added an extra arena that holds scurry driving, which are fantastic little horses pulling chariots behind them and whizzing around an obstacle course. We also have brought in the Pony Club mounted games, gun dog displays and the hound parade. We’ve built in fantastic things for all the family, along with trade stands and an array of fine foods. In the last two or three years it has really gone up a gear, not just in the family aspect but in terms of equestrian content too. What’s new this year?

We’re still building on last year’s new additions. So on Friday we have the eventing challenge in the Queen Mary’s Bower area, which is in a grass arena and competitors go over jumps and crosscountry fences. We’ll have more people taking part this year in both that and the dressage and it brings Friday to life in a real equestrian way. We also have the Event Rider Masters

series for the second year which is being hosted by Dodson and Horrell. It is run over six events throughout the UK and Europe and Chatsworth is the first leg. The winner will be the Event Rider Master Champion. How do you prepare for a show?

Each year we work with the course designer Ian Stark and course builder Dave Evans. They like to change the course every year to keep it fresh, exciting and challenging for the riders. You’ll know show time is close when you start to see the fences going up. The arenas are then marked out, marquees go up and then stabling for the horses starts to happen. It’s exciting to see it all coming to life. What do you think the horse trials bring to the Derbyshire area?

It brings in international visitors, not only those who are competing but spectators as well. People come and stay for the weekend, they get to see an amazing event, while enjoying the beauty of the Peak District landscape. Why should people come and see the horse trials?

If you have never been to one before, I would wholeheartedly recommend it. It’s not what you would imagine, and you get the chance to be a few feet away from some of the best riders from around the globe. Watching the determination and courage of the riders during cross-country when they are going over the jumps is awe-inspiring. What should visitors look out for?

Head down and see the eventing challenge and dressage on the Friday. It is brilliant to watch and you’ll see some of the best showmanship. There is also the Dubarry Burghley

Young Event Horse. These are four and five-year-olds who are just qualifying to get into three-day eventing, and it is lovely to see them starting out. What is on offer for families this year?

We’ve got Paws For Thought dog agility display. So if you aren’t feeling up to having a go at the agility course with your own dog, you can watch the professionals. Personally, I love the Newfoundland Rescue Bear Dogs – they’re just unbelievable. They have little carts that can pull a small child, which they will be doing over the weekend. They love being in water and when they first came to Chatsworth they went straight for the water jumps, as they are so used to rescuing people from open water. There’ll be a sheep show which is entertaining, but also educational. It features an array of different breeds of sheep and when introduced to the audience, they’ll give you a little twirl. They are real characters and help share part of what Chatsworth is about – bringing the countryside to life. We have a lot of hands-on events too including pottery painting and circus skills workshops, which are brilliant for all the family. What do you think the family attractions bring to the overall event?

The horse trials by themselves are a great event, but all the attractions create a really exciting day out that appeals to all the family. Finally, what is your favourite sporting event of the weekend?

For me it’s cross-country. I think it is the speed and size of the fences that I like. It is amazing to see the skill from both the horse and rider – they have nerves of steel.

Taking a child on holiday – who needs consent? GRAYSONS SOLICITORS’ BRADIE PELL LOOKS AT THE LEGAL COMPLICATIONS THAT CAN ARISE WHEN OBTAINING PERMISSION TO TAKE CHILDREN ON HOLIDAY. t’s that time of year again – when we are thinking about our holidays abroad. For many of us it’s about deciding where to go, but for parents who are separated or divorced, the decision can result in emotional and legal complications. Many parents don’t realise that taking a child out of the country may require the other parent’s permission and that without it, they may be committing a criminal offence. Where the court has granted a “live with order� or, as they were formerly known, a “residence� order, stating who the child lives with, the parent in whose favour the order is in doesn’t need to obtain the permission of the other parent providing the holiday is for not more than one month. Where there is no order in force, parents need to obtain the permission from all those with parental responsibility. Parental responsibility is defined in the Children Act 1989 as: “All the rights, duties, powers, responsibilities and authority which, by law, the parent of the child has in relation to the child and his property.� Broadly, this means that someone with parental responsibility can make decisions about a child’s upbringing and is responsible for their welfare. But who has parental responsibility? All mothers acquire parental responsibility automatically for their children. Any father who is, or who has been, married to the child’s mother has parental responsibility for

that child. So does an unmarried father who is registered on the child’s birth certificate and who was present at the time of registration post 1 December 2003. Fathers can acquire parental responsibility by entering into a parental responsibility agreement with the mother, which gives the father parental responsibility for their child. Both parents will have to agree to this. In some cases a father can obtain parental responsibility by having his name put on the child’s birth certificate or by court order. The need to obtain consent to take children on holiday can often cause great friction, particularly where there was an acrimonious split. Sometimes you will need a court order, known as a specific issues order. LET HALLAMSHIRE PYSIOTHERAPY HELP. s the days lengthen and the temperature starts to rise the roads are starting to see increasing numbers of cyclists beginning to get fit again. Exercise, and especially cycling, are great for our physical health but also is a great way to reduce the stresses of everyday living. At Hallamshire Physiotherapy clinic we see a number of cyclists struggling to return to full activity due to knee pain. The most common form of knee pain is over the knee cap (retropatellar) and is usually caused by increasing mileage too rapidly or attempting unusual hill climbs early on in the season. The kneecap sits within the quadriceps muscle and repeated loading of the knee compresses the kneecap on the back of the femur which overtime can cause discomfort. The solution to this problem is to reduce activity levels and to stretch the quadriceps muscle. If the problem persists other factors need to be considered such as bike setup and the cycling action. For example, if you sit a long way back on the saddle it is hard to use the powerful hip muscles to generate force on the pedals. This causes the cyclist to over recruit the quadriceps muscles and pain can result.

Generally, the body likes variety and sometimes cycling can cause repeated stresses due to holding one position for a long time. This is often why cyclists experience less pain whilst mountain biking then on their road bike as the greater movement on bridal ways gives more variety. Another factor to consider is what you do during the day. Pain is experienced cycling but sitting long hours in an office is often the main risk factor. In summary, don't increase mileage too

rapidly, stretch tight quadriceps and keep moving if you are in a sedentary job. ‘Beyond the Treatment’ ward refurbishment appeal Dame Jessica Ennis-Hill is helping Weston Park Cancer Charity kick off a £500,000 fundraising appeal to help improve the experiences of cancer patients in South Yorkshire. Funds from the ‘Beyond the Treatment’ ward refurbishment appeal will see two wards at Sheffield’s Weston Park Hospital transformed with modern lighting, furnishings, technology and entertainment facilities to help patients feel more comfortable and less isolated during their stay. As well as the installation of recliner chairs, WiFi, and circadian lighting to facilitate sleep, the refurbishments will see improved day room facilities for visiting relatives and children. Bakewell Show – what’s in store? A shopping village, free parking and an inaugural beer competition will head the lineup of new events at the 187th Bakewell Show on 2-3 August. There will be a wide variety of animals to rub noses with, as well as educational opportunities such as a visit to the new Dairy Show; a unique display of vintage dairy equipment from the 1940 to the 1960s along with a large vintage parade. The show also has an expanded children zone, artisan food and craft stalls, dog show, poultry and rabbit classes and a flowers show. Charity gig The medical consultant behind a Sheffield Hospitals Charity blood cancer appeal is organising a fundraising music festival. More than £55,000 has already been raised for the ‘antimyeloma virus project’, led by Dr Andrew Chantry, haematology consultant at the Royal Hallamshire Hospital and his team of researchers. Westbourne composers get professional support Young musicians from Westbourne School have been given the chance to hear their own work played and recorded by world class professional musicians. As part of that work they took part in a special workshop with the Sheffield Music Hub and Music in the Round, Sheffield’s own world famous Chamber Music Festival. The culmination of the project saw the students’ compositions performed and recorded by the professional musicians from Ensemble 360, the acclaimed professional musicians of Music in the Round.

Room with a view... A suite at the Baglioni makes for a relaxing stay

t was all going so well… we were part of the tourist throng in central London on the last hot weekend of the year. After an early breakfast, Westminster Abbey and the National Portrait Gallery had been ticked off our ‘must visit’ list. The turning leaves told us autumn was on its way, but temperatures soared into the seventies and the dress code was short sleeves and sunscreen. The first sign of trouble was an innocuous little announcement of delays on some lines due to signal failures on the underground. Sod’s law dictated that every conceivable tube journey back to our hotel in Kensington and then on to St Pancras for our train home was suddenly running a drastically reduced service. Cue mild panic and instantly revised plans. Forget that last leisurely lunch; it was time to head back to the hotel, grab our bags and sweat it out one last time on the tube in the

hope we would not miss our connection. By the time we made it back to what had been the base for a fabulous city break, you could say we were hot and bothered, but a guardian angel was ready to come to our rescue. Enter the immaculately suited-and-booted Alessandro Convertino, manager of the Baglioni, a rather lovely Italian-owned-andstyled boutique hotel in a prime position opposite the entrance to Kensington Gardens. On hearing the reason for our rushed exit, Mr Convertino had a suggestion. The hotel had a snazzy Maserati car for the complimentary use of residents which had just left to drop a party off at Harrods but would be back in five minutes… would we like a lift to the train station? Well, there was only one answer. Panic over, calm was restored, and during our smooth journey across London in airconditioned luxury we could ponder at

leisure one simple fact… the Baglioni Hotel and all who work there are one class act. OK, so he only offered us a lift. Common courtesy, you might say. But this gesture of kindness was just typical of the attention to detail that made the base for our two-day stay a lot more than just a place to stash the bags and sleep. The Baglioni is all about understated luxury and overwhelming comfort. With dark wooden floors throughout and high ceilings there is a lovely sense of space at all times, and the chocolate and gold colour scheme gives the bar and lounge a delightfully relaxing feel. Service is friendly, understated but immaculate nonetheless. Our suite was the last word in modern comfort with a separate dressing room, a lounge with a sofa and chaise and writing desk, a bedroom with a king-sized bed and a spectacular bathroom of black mirrored granite. There was even a fancy Italian

cappuccino maker… I really should have learned how to use it. No matter, the coffee to accompany fresh-baked breakfast pastries was simply superb. Trust the Italians to appreciate the importance of a proper brew to kick-start the morning. Brunello Bar & Restaurant is the name given to the hotel’s chic, recently refurbished restaurant. It has won many plaudits in London as a stand-alone dining venue and the highlights from a menu inspired by traditional trattorias of the 1950s included ridiculously tender Wagyu beef, succulent lobster and the sharpest Amalfi lemon tart. Tempting though it was to linger in the hotel (and they have a gym and spa if you feel so inclined), we were in a prime spot for one of my favourite London pursuits… strolling. We enjoyed a blissful sunset walk in Kensington Gardens. Kensington Palace is just a few minutes away, and with the round pond, the Serpentine and Hyde Park’s stunning Italian gardens all close by, there is no better way to relax on a bright, sunny evening (even if the constant screech of the vivid green parakeets that have made these parks their home mean the atmosphere is never totally tranquil). Stepping out of the hotel there are also some fascinating sights to be found simple by walking in the connected suburbs of Kensington, Bayswater and Notting Hill. This is embassy territory, and tucked away along these picture perfect streets and crescents with their immaculate whitepainted houses we stumbled across the embassies of Ukraine, Moldova, Iraq, the Netherlands and Russia. Of course, even when you have based yourself in a hotel with a splendid restaurant, you still want to sample something of London’s restaurant scene. I’ve come a cropper over the years, mainly by breaking the golden rule of never eating in areas that are obviously attractive

almost exclusively to tourists. You’re only passing through; you might not even tip so why should they bother. Know the feeling? I guess you’ve also succumbed to the fatal hypnotic effect of Chinatown. But I love Chinese food and really wanted to sample the real thing, as eaten by Londoners. I found it on the opposite side of Kensington Gardens at the Royal China on Queensway in Bayswater. Dim sum has been popular here for decades and the queues start at breakfast time on Sundays. An unassuming entry off a busy shopping street gives way to the substantial Oriental dining room with gold-leaf ceiling, which was buzzing with a lively atmosphere. Here we dined handsomely on steamed dumplings of crab and spinach and prawn and coriander, spare ribs in black bean sauce, sesame prawn rolls, crispy fried squid balls and authentically wobbly cheung fun with peanut sauce. London pubs are pretty special too and again, if you just veer slightly off the tourist trail you will be rewarded with proper, unspoiled watering holes. To name just a few, the Goat on Kensington High Street is one of London’s oldest and is rarely quiet, while The Elgin in Notting Hill is slightly bohemian in feel. This room is full of interesting details - the two; most striking details are the beautiful ceiling and the spectator area overlooking the Chamber. The entrance to the Council Chamber is via the Ante Room, located just off the Grand Staircase which shows pictures of all the previous Lord Mayor’s, starting with the Duke of Norfolk in 1897. Here at the Sheffield Town Hall we have six meeting spaces, each varying in size and character. These rooms can accommodate between 11 – 40 guests, and are all a fixed boardroom layout. We caught up with him to ask what it’s like for him behind the scenes.

What’s it like to compete on national TV?

Tell us about your current role.

Which is the most satisfying kitchen that you’ve worked in?

A

My first responsibility is leading my team of pastry chefs, ensuring they all have the skills, training, equipment and the environment necessary to consistently produce great desserts. I create the dessert menus at both of our restaurants, source ingredients and equipment, and generally make sure everything is running smoothly. What do you love about creating beautiful desserts?

Our guests have high expectations so we aim to exceed these and deliver a really high quality dining experience for them. When they arrive at dessert I want them to thoroughly enjoy themselves. That’s the most important thing. It’s not about showing off or surprising them, it’s about delivering absolutely delicious desserts, which also look stunning. Our open kitchen at Crafthouse means I can see into the restaurant; it’s very rewarding when guests smile and take photos of their desserts. But I seek deliciousness above everything else. I tend to stick to classic flavour combinations like elderflower and gooseberries, rhubarb and custard and strawberry and cream yet in modern and exciting ways. The refinement comes from the quality and freshness of ingredients, and the techniques applied. What’s your greatest professional achievement?

I’d say my latest menu at Crafthouse is something special. I am constantly trying to learn and improve so that each time I change the menu it’s better than the last. Then I know I’m heading in the right direction. I’m thankful to be in a great kitchen with the right equipment, the right team and great support.

It’s very challenging and very rewarding. It really stretches you but you come out of it as a better pastry chef, thinking more critically about what you create and with a better understanding of the discipline required. I have learnt so much and met great people.

I’ve worked in Michelin star restaurants and as a stagiaire at Jason Atherton’s restaurant Pollen Street Social in Mayfair where diners can watch the pastry chefs at work – it’s a brilliant idea. I also first used liquid nitrogen there, which was pretty cool! My Fathers Heart kitchens are carefully designed around each customer’s individual lifestyle answering a whole array of competing demands. But what do you think makes for a great kitchen design?

It’s a nightmare working in a poorly designed kitchen. You can lose so much time and end up in a real pickle that way. It should be designed just for you. That makes a huge difference to how much you enjoy spending time there and cooking. It should be efficient, well-spaced and have all the important pieces of equipment integrated into it including plenty of well organised storage. Having the best equipment means you can produce your best work and produce it consistently. What would your advice be to the four young chefs competing at My Fathers Heart?

They’re in for a real treat competing in that environment. I’d advise them to focus on sourcing quality ingredients as the building blocks to creating a great dish. Then concentrate on cooking everything precisely and getting as many layers of flavour and different textures as they can into their dishes but without over extending themselves and running out of time! East Lodge takes the cake TOP TO BOTTOM? JAM ON FIRST? CHRIS WILSON PUTS AFTERNOON TEA ETIQUETTE TO THE TEST. very visit to East Lodge comes with a built-in wow factor. It might be the stunning setting, in the heart of the Derbyshire countryside and on the cusp of the Chatsworth estate. For many it’s the first glimpse of those manicured gardens and water features, gorgeous views that make this luxury four star establishment one of the region’s most popular wedding venues. But for my friend Gill, who knows a thing or two about the finer things in life, it was the merest glimpse of a floral pattern on a cup and saucer that set her heart a-flutter. “This is Shelley, bone china and very collectable,” she pronounced, as we took our seats in the dining room. Was she bluffing? I just had to take a quick sneak at the writing on the bottom of the cup. She was spot on, of course, and very pretty it was too. But I was drawn to the view outside the window, a beautiful lake, birds on the wing and a burst of colour from spring flowers. And soon enough we were both distracted by the arrival of our late lunch … or afternoon tea to be precise. This is an English tradition that has been revitalised in recent years, and there can be few finer settings for a spot of good, oldfashioned indulgence than this classic country house hotel. The East Lodge version of afternoon tea is

classically simple. The current vogue for reinventing traditional dishes has no place here. There are six different teas to choose from. Gill selected the Gourmet Classic, a blend from Kenya, Assam, Ceylon and Rwanda, while my Darjeeling ‘Margaret’s Hope’ is, apparently one of the most respected of the 86 Darjeeling estates. They were certainly both very refreshing brews. Soon the true centrepiece of the table was being carefully placed between us, a threetiered cake stand artfully arranged with savoury delights and sweet treats. I’m not sure whether tradition actually demands that you start at the bottom and work up, but seeing as the first level was savoury it made sense. Cut into neat but not too delicate rectangles, with crusts removed of course, a tasty selection of ham, smoked salmon, egg and tuna sandwiches eased us gently into the sweet treats to come. Level two was not without controversy as alongside the macaroons and lemon drizzle cakes were two light-as-air and just-baked scones, with clotted cream and strawberry jam on the side. So what was the etiquette here... jam first or cream? Being a lady of great refinement, Gill insisted that jam first looked neater, with a modest smear of cream on top. Personally I see the eating of a sweet scone as an exercise in gravity-defying gluttony, which means a

massive dollop of cream first, followed by a spoonful of jam that will immediately try to escape down the side, necessitating speedy and none-too-refined scoffing. Less elegant, more fun… you decide. A memorable afternoon was rounded off in some style with a selection of patisserie. Someone in the kitchens has a marvellously light touch when it comes to pastry, so while our afternoon was certainly indulgent it was far from being an endurance test. Rather like the lovely pattern on that tea service, the complete experience was delicate, refined and a touch of pure class. A counter stuffed full of treats HANNAH SANDERS FINDS THAT EVERYTHING IN THE GARDEN CENTRE IS, WELL, LOVELY ou might think that the café at Ferndale Garden Centre is merely a place to refuel after pottering amongst the plants or browsing through their homeware sections, but even if you don’t have green fingers this is a food destination in its own right. It’s not hard to see why either, as friendly ladies serve behind a counter filled with an array of delicious sweet treats and freshly made quiches. The café is decorated with animal prints and paintings (all for sale), refurbished church pews and a log burner nestled in the corner perfect for a light bite whatever weather. Despite the spring sunshine, the weather wasn’t quite warm enough for us to enjoy the outdoor seating area so instead, we placed ourselves by a window with a view. Before we ordered, head chef Mark Bailey set aside some time to talk to us about the menu and the produce. All the vegetables and meats are sourced locally where possible and everything is homemade and fresh. He is also particularly proud of the pie of the day.

“Our pies are made with a hot water suet pastry and we have some really nice fillings for them. They’re not your average pie,” adds Mark. So how could we not sample one at least? My partner chose the steak and ale pie (£7.25). It came served with a generous portion of home-cut chips, mushy peas and a spring of rosemary. The pastry was cooked beautifully - no soggy bottoms here - and the chef didn’t miss a mark when it came to the meat. Cooked to perfection it melted in the mouth and was complemented by the rich gravy. I opted for more of a light bite with the basil, tomato and chorizo panini (£6.25). The bread was delightfully crisp and the tomatoes were fresh and juicy. When paired with the slightly spicy chorizo, it brought out all the flavours. It also came garnished with a side salad full of all that locally sourced produce. To accompany the food, we opted for two lattes (£2.45) - mine being a soya one which was rich and luxurious as a dairy alternative. Exploring the dessert counter, mine was an

easy choice. After hearing raving reviews about the carrot cake (£3.50), I just couldn’t resist. It was delightfully moist, spread with a thin layer of rich topping and sprinkled with almonds. My partner chose the Victoria sponge (£3.25), a lovely generous portion which was light and fluffy, filled with fresh cream and sweet jam. I had a burning love for Menzels, the late cocktail bar that occupied the space which Kettle Black has replaced, but this new squeeze is a worthy rebound – lively, yet dark and seductive. The new kid on the block in Ecclesall Road’s cocktail ‘scene’ is a treasure trove of decadence. It has undergone a glamourous refurbishment and is now drenched in neon worktops, brass hanging lightbulbs and rich wooden floors. All of this is fully complemented by a heated courtyard veranda – perfect for an afternoon drink – cosy VIP mezzanine and a soundtrack of rehashed club classics that sound as funky as ever through the hefty sound system. Kettle Black is intimate, unpretentious and feels refreshingly authentic. The vibe: relaxed, friendly and cheerfully intimate. It feels a little like a clandestine world of its own, far removed from the bustle of the street outside, despite the fact the bar is habitually packed, especially on weekends. Atmosphere aside, it is behind the bar is where the magic comes alive, with their

impressive menu designed to serve up a dose of drama in every drink. Classics are often best left untampered with, but the smooth, subtle espresso martini (£8.50), featuring signature twists including mint, Pooh Bear pick ’me’ up, or gingerbread, tastes even better than a perfectly made original. The Rouge Kettle (£8.50), a rambunctious raspberry cocktail, mixing Haig Club single grain whisky with Chambord, fresh raspberries, lemon juice, cranberry juice, and a dash of Angostura bitters, served in a copper martini glass, is fruity and refreshing. As is the Singapore Sling (£9) – made from Tanqueray London Dry, Cointreau, cherry brandy liqueur, DOM Benedictine, fresh lime juice, pineapple juice and a splash of grenadine, garnished with a fresh orange slice and a maraschino cherry. If you’re the kind of person who, like me, prefers a long drink after a long day, I’d suggest the delicious Lozzaberry (£8.50), a long drink served with fresh strawberries, muddled with Ketel One vodka, amaretto, fraise syrup and cranberry juice. And don’t forget your phone... there are some serious Instagram opportunities here. The staff are in general are very attentive and are also happy to go off menu, whipping

up any conceivable cocktail if you so wish. Our elegant hostess Rebecca had even organised for a bottle of Prosecco Gran Cuvee (£27.50) to be served on arrival, which went down very well with the table. I have more than a little crush on Kettle Black and a second date is definitely on the cards. This is the place to take a date or to catch up with friends over a conspiratorial cocktail away from the frenzy of the city. A real taste of India RACHEL MARTIN GETS TO KNOW THE NEW KID ON THE BLOCK… t’s easy to picture a stereotypical plate of fine dining food - dainty in dimension and precisely plated to within a millimetre of its life. But one of the reasons I love Indian food is because, typically, it is the exact opposite. So when I heard there’s a restaurant in Sheffield aiming for innovative, London-esque Indian fine dining, I was intrigued as to how they are developing the model. Tucked away in Hillsborough, The Front Room is the new kid on the block in Sheffield’s Indian restaurant ‘scene’, but it is already known for its classic dishes – executed with fine-dining mastery – and continued success in delivering “the food of India”. And, if it’s opulence you’re after - gleaming white walls, gilded columns and the faint sound of rhythmic Indian music playing in the background – The Front Room creates a real sense of occasion, making it difficult at first to lower your eyes to the menu. Once you do, though, you’ll find plenty of classic dishes to choose from, particularly a great selection of vegetarian options. And so it’s no surprise the offers were enticing a lot of groups into the restaurant, even on a bitter Thursday evening. The staff are, perhaps, the most attentive in the city and we were greeted as if we were childhood friends by manager Nadim Khan. We asked for a selection of starters and a curries to share - chef ’s choice - and prior to the actual meal our studious server had brought out the requisite poppadums and

chutneys. Where, amongst the sharpness of pineapple and sweet mango and apricot, a revitalising mint and coriander dip, bursting with equal degrees of warmth and freshness, stood out. Our starters were laid in front of us - the colours bright and beautiful and the mix of aroma’s consumed the air. And the portion sizes were small but packed with punches of flavour. The tandoori king prawns soft and succulent and the chilli paneer indulgent with each mouthful. A little rustic around the edges and precisely cooked. I could tell why the adraki lamb chops are a popular dish – flaky and tender, the lamb was perfectly infused with garlic, ginger and chilli and tasted exquisite dipped in the tomato marinade. A cold Tiger beer and Bombay Sapphire and tonic later, our mains shamelessly took centre stage; where to start was the question that sprung to mind. There were lots of things to savour: parotta: a layered flatbread made from maida flour, with crisp charred edges increasing the moreishness level; peshwari naan topped with glazed cherries; pilau rice and lamb laal maas, slow-cooked with rustic flavours and chilli heat. Of particular note were the tender scallops, fried to a light golden brown, enveloped in a mellow spice mix of chilli, mustard and coconut milk, and the spinach and garlic lentils. So good in fact you could eat them on their own.

Almost full to the brim, we couldn't resist the chocolate molten cake (it's safe to say the plate was licked clean thanks to the gooey chocolate centre) and sticky toffee pudding. A naughty but delicious treat to end the meal. I’d call The Front Room a find, but it already has quite a pedigree. Nadim and head chef Rakish Parshad have between them worked in many illustrious restaurants across South Yorkshire, including the Ashoka on Eccclesall Road, and this unassuming venture – unhurried and great value – is the perfect place to be quietly dazzled. I look forward to returning to sample the new three nations buffet lunch, an eclectic mix of Indian, Indo-Chinese and South Indian cuisine, which launches later this month. Seaside special PHOEBE SEYMOUR ENJOYS THE TRADITIONAL TASTE OF GOOD OLD BRITISH FISH AND CHIPS AT SEVEN SEAS. hen it comes to nostalgia for British food, fish and chips can’t be bettered (or should that be battered?) The scent of salt and vinegar mingled with the sea air is a holiday memory most of us share – no matter what generation we belong to. I was therefore looking forward to a drive out to Seven Seas in Wickersley. First opened in 1931, the take-away business has a strong reputation and when the restaurant opened last year it was an instant hit. On this particular Friday lunchtime, the upstairs restaurant was packed, including many more mature diners taking advantage of the senior citizens’ special. With plenty of menu options for children, and nautical memorabilia and black and white photos, it’s the ideal restaurant for all the family. Though miles away from the coast, owner Theo Efthymiou says the business uses locally-sourced ingredients as much as possible. “We have daily deliveries and all of our fish is caught off the coasts of Norway, Iceland and Scotland. However, our potatoes are produced from our local farmers in northern England and all of our desserts are from a local supplier. “What makes us different is that we use

pure groundnut oil, which means our fish and chips are lower in fat.” My companion and I enjoyed every mouthful of our seafood platter for two (£8.95) starter. The batter was light and crisp and we were surprised by the different textures on each tender morsel of scampi, cod, whilst the prawns were presented in a crunchy cone-shaped pastry. All tasted fresh and came with a side salad and sweet chili dipping sauce. This was accompanied by a pot of tea for one (£1.80) for me, which came in a fittingly traditional matching tea set, whilst my companion had a refreshing Appletiser (£1.80). For mains, I had the fish pie (£9.45) and my companion had the traditional fillet of cod and chips (£8.75). My pie had a perfectly smooth and buttery mash with a creamy sauce and generous chunks of cod, salmon and prawns. This was served with garden peas and plenty of chunky chips. Meanwhile my companion had a particularly nostalgic moment when he bit into his mouth-watering square fillet of cod. The batter strongly reminded him of the kind his grandfather used to make and transported him back to his childhood. This also came

with garden peas (though you can have mushy) and more deliciously golden chips. For dessert, I had another British classic – sticky toffee pudding (£4.95) with a homemade toffee sauce and a scoop of vanilla ice cream, and my companion had the cheesecake of the day – a towering wedge of vanilla fudge cheesecake (£4.95) topped with gold decorative pieces to create the perfect finish to an indulgent lunch. Perfect venue WITH ITS PICTURE-PERFECT SETTING AND DELICIOUS FOOD, THE MAYNARD IS THE IDEAL DESTINATION FOR THAT SPECIAL OCCASION, WRITES PHOEBE SEYMOUR. aving arrived at The Maynard in Grindleford on a gorgeous spring day, my partner and I could see why so many couples fall for this Derbyshire hotel’s charms as a wedding venue. But there is so much more to The Maynard than its picture-perfect manicured garden and romantic views. Not only is their à la carte menu two AA Rosette-accredited, the service is outstanding and the setting is immaculate. I enjoyed a light and fruity glass of Chilean Sauvignon Blanc (125ml, £3.45) and my partner, a pint of refreshing Moonshine (£4), as we perused the menu on the decking outside, before being guided inside to our table – which still gave us a glorious view of the fountain in the garden and the green hills beyond the French windows. We were greeted by a selection of soft, warm bread rolls, before tucking into our starters. My partner had the crispy Szechuan wonton (£7), whilst I had the pan seared scallops (£8.50). My soft-centred scallops were nicely complemented by crunchy black pudding croutons in a zingy apple and hazelnut salad. Meanwhile, my partner’s wonton was a delicate and crisp parcel filled with fennel, tomato, carrot and coriander served with a jug of Szechuan sauce. This was followed by an intermediate dish

of sharp goats’ cheese crumbled over juicy pieces of watermelon, creating the perfect palate cleanser, before our mains arrived. Despite being tempted by the vegetarian options, I chose the roast rump of lamb (£22.50), whilst my partner had the roast chicken breast (£21.75). My lamb was tender with a juicy pink centre. Presented in succulent slices, the lamb was served on a bed of swede and carrot mash beside a minted croquette potato – a contemporary twist on a classic flavour pairing. My partner was delighted to discover that his chicken had a stuffing centre filled with aromatic herbs. This was coupled with a leek and potato dauphinoise and a caramelised shallot jus, to create the ideal Sunday dinner dish with a difference. After one more delightful intermediate dish of warm ginger cake, whipped cream, rhubarb puree and stem of rhubarb, our desserts arrived. As we were in Derbyshire, it felt only right to sample The Maynard’s take on a traditional local dessert, so I chose the sour cherry Bakewell tart (£6.50). Served warm with chunky flakes of coconut, it was served with a cool and creamy scoop of white chocolate and brandy ice cream – perfection. Meanwhile, my partner was sampling the array of exotic flavours available on the restaurant’s ice cream menu. He had chosen

scoops of clotted cream, mint chocolate and strawberry, to make up his trio of ice cream (£6.25), which were separated by crunchy chocolate chip cookies and a drizzle of fruit coulis. Well, summer is right around the corner. By then, darkness had descended outside, but we revelled in the cosy contemporary restaurant a while longer, admiring the huge canvases of colourful artwork and enjoying the ambience created by the glowing tea lights.
