Happy to share their first-class experience are David and Barbara Arnold of Dronfield Woodhouse, who chose Layers to supply and fit new vinyl flooring in their kitchen and dining room.

Mr and Mrs Arnold said: “We first chose Layers eight years ago when they fitted our kitchen with vinyl flooring. We initially went to them because they are a local firm and so we thought we would give them a try. They were in the Civic Centre back then and we used to pass them while out shopping.

“Having been very happy with the service, when we decided to have vinyl fitted in the dining room too, we used Layers again. The dining room used to be carpeted but now it is more easily accessible for David, who uses a wheeled walker, as it is all one level and totally flat.

“When we visited the shop to enquire about the flooring, we felt very looked after.

They got a chair for David and moved things around in the shop to make it more easily accessible for him.

“We had something quite specific in mind and were shown lots of samples. The choice was great and they explained about the different types of vinyl, helping us to reach the right decision. After we had chosen, they said it could be done within two weeks and were happy to fit it at a convenient time for us.

“In the meantime, a man came round to measure the room and he brought samples so we could double check we were completely happy with our choice.

“Then when the fitter arrived a few days later we recognised each other as he was the one who had fitted our kitchen flooring eight

years ago. He placed plywood down in the dining room – as he had done previously with the kitchen – before laying the flooring so it was nice and smooth. The vinyl is also very thick so it looks just like real wooden floorboards.

“We were so impressed with the fitter’s workmanship; he was brilliant. We still can’t get our head around how he fitted the flooring as it was all in one piece but it’s incredibly neat – especially around the radiator pipes. He also pulled out the fridge, freezer and washer and put them back into place with no trouble. All in under two hours.

“He was so impressed with his handiwork he even asked us if he could take a photograph for his portfolio!

“If anybody asks us where to get new flooring, we would definitely recommend Layers. And in the future when we need new carpets we’ll certainly be popping up there.”

Something special Chris Wilson discovers that the Tickled Trout is much more than just a local pub.

G

iven that owner Chris Mapp’s culinary training included a number of years doing 18-hour shifts in the kitchens of highend restaurants run by Michelin-starred big hitters like Gordon Ramsey and Marcus Wareing, perhaps the biggest surprise about the menu at the Tickled Trout is how homely, comforting and straightforward it is.

With steaks, burgers, pies, pizzas and good old spag bol on offer, at first glance this could be any old teatime in a local pub that has decided to diversify by putting a bit of food on.

It could be... but it isn’t. The food at this increasingly popular dining pub in Barlow may not be flash, but with a shaving of truffle here and a fancy tropical fruit salsa there, it is far from routine. And boy, is it special.

Closer inspection of what is on offer reveals a strong Italian theme with pizza and pasta dishes in abundance, along with a dedication to using local farms and producers, while the chalk board always includes fish caught the same day and delivered sparkling fresh from Cornwall.

The venue itself, an ordinary local pub until Chris bought and transformed it a couple of years ago, is looking absolutely pristine after a New Year deep clean, and it remains a proper village local at heart. Beer is another of Chris’s passions and he always has three hand-pulled ales from an ever-changing roster of local independent breweries on tap.

But how many local pubs would also have their own small estate wine maker supplying limited edition DOCG Prosecco? Like I said, nothing fancy at first glance, but what goes on here is delightfully different.

Our meal began with a taster portion of a Tickled Trout speciality, tomato soup made by placing a large tray of tomatoes on the bottom of the oven to catch the beef dripping juices from the Sunday roast. This was comfort food with a touch of class, a theme to be repeated throughout the evening.

Next up were the starters proper, a meaty ham hock scotched quail’s egg (yolk still slightly runny, of course) with spiced pineapple and kumquat salsa, and arancini, crisp risotto squares served with chopped truffle mayonnaise.

With both dishes coated in the crispiest, crunchiest crumbs, this was deep-frying as a work of art.

My main course, the Tickled Trout’s signature dish, was a tender fillet of Cornish sea trout with almonds, pancetta lardons and herbed gnocchi. Everything belonged and was cooked to perfection.

Meanwhile, across the table, my companion was only slightly overfaced by a free range Derbyshire spatchcock chicken, marinated in lemon and thyme, finished on the char grill and served with a mango, crispy bacon and almond salad. It was gorgeously moist, and the leftovers made for a superior

sandwich the following day. Fries, sprinkled with parmesan and chopped black truffle, added a touch of decadence.

Our pudding was a shared tarte tatin, served with clotted cream and vanilla ice cream. The recipe, Chris cheerfully admits, was liberated from his time working with Masterchef guru Wareing. “Write this down,” my companion insisted. “Gorgeous, unctuous, sweet, chewy.” So I did. I’ll add one word of my own... perfect.

I enjoyed cooking from a young age and always wanted to be a chef. When I left school at 16, I started working in kitchens and worked my way up. It helped me gain valuable experience as well as getting my qualifications.

We are always changing the menus and adding specials on to the menu at Cocina so we have the scope to try new ideas and challenge ourselves.

My signature dish is duo of tuna carpaccio and tartar with marinated daikon, sesame flavoured carrot ribbons, pickled ginger and wasabi. Pictures of this, and many others, can be found on my Instagram (chefjud) and Casa’s instagram (casahotels) pages.

I couldn’t think of anything better than getting paid to cook! There’s no such thing as a typical day at Losehill House and I really enjoy having the freedom to create new dishes.

I have previously worked at The Prospect Restaurant in Bakewell, East Lodge Country House Hotel in Rowsley, The Rutland Arms Hotel in Bakewell, Pleasant Street Brasserie in Lytham and have been at Losehill for just over eight years now.

My advice for aspiring chefs is that it won’t be easy but listen, work hard and keep an open mind.

I have always loved cooking and used to watch cooking programs and then write down the recipes from Ceefax.

I spent 13 years in London, working for Marcus Wareing at Pétrus and Bjorn van der Hörst at The Greenhouse. I then opened No6. in Padstow in 2005 with my friend Paul Ainsworth before setting up the Tickled Trout last summer.

We have amazing products and suppliers in Derbyshire and South Yorkshire so it is great fun developing the specials. They enable our flair to shine through, being able to create dishes that are unlikely to be attempted by our guests at home.

I learnt about high quality food from my mum and, from the age of 20, I had my own restaurants in Greece. This was the best way to have my own business because of the tourism there. I then moved to the UK in 2001 and set up the deli almost 14 years ago.

The chef side is only a small part of my role, but it means I can ensure the food is how I want it to be.

I loved cooking with my mum and nan when I was a young lad so I got a part-time job in a pub and then went to catering college. As a teenager I worked at Renarto’s Italian Restaurant, which used to be on Corporation Street in Chesterfield.

Before I came to Maison Mes Amis threeand-a-half years ago, I was head chef at Rowley’s in Baslow.

I really enjoy being able to experiment with flavours and textures and coming up with new ideas, such as beef bourguignon, cooked the traditional way but with our own special twist.

I was taken out for a meal for my 16th birthday and was so invigorated by the food that it encouraged me into the kitchen. I have now been cheffing for 28 years.

I have a love for growing my own vegetables at home and hope to inspire my children to do the same. There is nothing better than paddock to plate, especially in the home environment.

I like developing dishes and bringing them up to date. As I was classically trained, it is nice to see old-fashioned dishes and ingredients used in a modern way.

The Rotherham butcher’s shop retail manager, Tony Burrows, has worked as a butcher for 29 years and says the products they offer in store are of the highest standard. “We supply other butchers and offer these same products to the public, almost at a wholesale price. By buying in volume we are able to keep the prices down and pass on the rewards to our customers.”

Tony admits they are also big on quality testing. “When we introduce new products all my staff get involved in testing. It’s the best way to get honest feedback and they know how important it is to offer quality produce so customers return.”

One of their most popular products is the family hamper, which includes an impressive selection of chicken fillets, steak, gammon, beef mince and diced beef and provides more than a week’s worth for an average family.

They also have their own sausage factory in Chesterfield, which supplies their awardwinning sausages. “They really are delicious,” Tony said. “Our sausages come in all kinds of different flavours; chorizo, pork and apple, pork and parsley, tomato and basil. They really are worth a try.”

arch gives us two opportunities to celebrate the people and investment that are making our town a modern destination.

The very aptly named Celebrate Chesterfield takes place on 17 March at the Winding Wheel. I never cease to be amazed at the demand for attendance at this event – by the end of January all 250 of the tickets for Celebrate had been allocated forcing us to start a waiting list.

Celebrate is an important and popular event for the town’s business community. It is an opportunity to reflect on the success we have had in the recent past and to hear, firsthand, from decision-makers about plans for the future.

With the current and future developments in the town and the inward investment it is attracting, it looks like 2016 will deliver similar impressive employment figures for the area.

However, we need to make sure that we have the people who are suitably skilled and ready to take up these job opportunities as they arise. A lack of workforce can be as detrimental to an economy as unemployment

as it puts companies off investing here and creating jobs.

To address this issue we are already making training provision in the town for the post 16 commercial market place, one key area being the opening of Chesterfield campus of The University of Derby later this year. Opening in the former St Helena’s Grammar School, it will offer world-class university facilities for nursing, business, computing, law and engineering students.

National Apprenticeship Week (14 – 18 March) gives us another opportunity to celebrate this month. I am a huge advocate of apprenticeships – they are vital to the economy, particularly Chesterfield’s where SMEs play an important role and young people are the future life blood of many of the businesses within the town. I am pleased to say that Destination Chesterfield is leading by example and has taken on its own apprentice this month.

We are fortunate that we have a number of excellent apprentice providers and trainers right here in Chesterfield – Learning Unlimited part of Chesterfield College Group, NLT Training Services, Slic Training and the East Midlands Chamber, are just three that

spring to mind.

Apprenticeships can be a springboard to a long and fulfilling career. Some of the town’s business leaders were once apprentices themselves, including the Leader of Chesterfield Borough Council Cllr John Burrows and the Principal of Chesterfield College, Stuart Cutforth - both began their career as apprentices with the Coal Board.

While they are no longer in this field, their apprenticeships gave them a solid start to their career and showed them the options that were open to them.

Apprenticeships are key to us continuing to reduce youth unemployment in Chesterfield and attracting new investors to the town. Let’s keep the momentum of National Apprenticeship Week going beyond March and continue to celebrate our new and past apprentices. They are vital to the success of the town’s economy.
