Garrison Hotel is worth seeking out, writes Richard Abbey.

he grade II listed Garrison Hotel is best known for being a former military guardhouse and ammunition base dating from 1854. As part of the Hillsborough Barracks refurbishment in the early 1990s, it was given a new lease of life but retains many of those unique features.

The hotel opened in 2001 and the grounds still hold many of the original walls, turret towers and arch keystones due to the listed status. The architecture is a mixture of the Gothic and castellated style. features in the Guardhouse Bar Restaurant, which complements the 43 bedrooms and function suites.

It remains a bit of an undiscovered gem and serves lunch (Monday to Wednesday 12-3pm), an extensive evening menu as well as Sunday lunches, which are priced from £14.95.

Summer had brought a new cocktail menu and my wife couldn’t resist a raspberry mojito (£7.95), which had sharp and punchy

evening. The Garrison Hotel has a good selection of beers on draught, including

those from local real ale breweries, as well as artisan gins and world whiskeys.

Starters can be ordered in the traditional way or can be eaten ‘tapas-style’ – you can mix and match three different plates for £15.95.

We began with dishes of mature cheddar cheese croquettes (£6.95) and spiced whitebait (£4.95) and were very impressed.

The whitebait replicated that crispness and was complemented beautifully by the lemon and tartare accompaniments.

Main courses showcased two very different dishes. A chicken Caesar salad (£14.95), made with streaky bacon, baby gem lettuce, croutons, parmesan and Caesar dressing – and of course, sliced chicken breast – was perfectly summery and substantial, marrying all those classic belly and black pudding dish (£15.95), which was a real stand-out. The pork had been cooked perfectly, deliciously tender with bubbled-up, crisp crackling and well matched to a punchy peppercorn

sauce. Sauteed baby potatoes, caramelised baby onions and a free-range fried egg completed the picture.

We’d also brought my son along who was keen to try one of the Garrison’s pizzas. The Caprese (£12) brought more cheese, tomato, basil and pesto combining pizza with a side order of fries (£2.95).

Service throughout our evening had been exemplary and although we were having second thoughts about indulging in dessert, our waiter, Jobish, insisted we try the banana split which has become something of a signature dish at the hotel. It was easy to see why – caramelised banana, ice cream to our evening.

The Garrison Hotel was recently named by TripAdvisor in the top 10 best value hotels in the UK & Ireland.

ourmaline offers a beautiful rainbow of colours, with no other gemstone having quite the same range of hues, or even stones that have more than colour!

TThe gem was recognised as a distinct mineral species in the 1800s, often being confused with other gems previously. The name tourmaline originated in Sri Lanka, deriving from the Sinhalese meaning ‘mixed gems’ and referring to the multicoloured assortment of crystals found in the gem gravels of that country.

discovered in the state of that name in Brazil although the name is often now applied to similar gems from Mozambique and Nigeria. The presence of traces of copper gives a stunning ‘pop’ to their colour.

It is not uncommon for a single tourmaline crystal to display more than one colour due to alterations in the chemical environment during growth. The crystals form as long prisms with a rounded triangular cross-section and those displaying more than

one hue may vary along the length (so one end of the crystal is one colour and the other end a different colour) or have concentric zones of different colours when viewed in cross-section. Because of the range seen in tourmaline it is possible to see a variety of combinations, but the most common is green and pink. A variety called watermelon tourmaline is often cut into slices to display a bright pink centre framed by an outer zone of green.

Tourmaline also exhibits strong pleochroism, a property that is connected to the way light interacts with a gemstone and means that it can appear different colours when viewed from different directions, in tourmaline’s case often darker and lighter shades of the same colour; darker when viewed along the crystal and lighter when viewed from the side.

It is quite common to encounter carved tourmalines in both jewellery and decorative objects, since it can form in large sizes and such a range of colours. The gem is rather prone to inclusions, and using it in this way, or for beads, cabochons, and rose cut gems, really shows off the beautiful colour in material that would not be especially attractive as a faceted gem. The inclusions can then add texture to the gem’s appearance and give each stone a unique look.
