See for yourself what makes Queen Ethelburga’s so special Just a week after achieving great results nationally at A level and BTEC, students and staff at Queen Ethelburga’s Collegiate celebrated excellent results at GCSE, across both of it’s senior schools.

80% of the results for Year 11 pupils were graded A* or A in QE College, or the new 7 to 9 grades. In the Faculty of Queen Ethelburga’s, which offers more creative and vocational options in addition to the traditional GCSE subjects, 93% of the grades were A*- C or equivalent.

The Principal of Queen Ethelburga’s, Steven Jandrell, said it had been another excellent set of examination results and this was a tribute to the meticulous preparation that staff and pupils had put into the new, more rigorous GCSE courses: “At a time when there is national concern about the increased demands and how this will be reflected in the results, I am delighted to see such success across both our senior schools. Our 20% pass rate in the College at the new, exclusive grade 9 in English and Mathematics, compared with an estimated national average of 2% is indicative of the quality of our pupils’ performance and I could not be more pleased.”

“Our personalised approach to working with each student is really working to our pupils’ benefit and, as our sixth form results showed last week, our GCSE performance is providing a platform from which great results are achieved across a very wide variety of subjects.”

Within the College, at GCSE, Catheryne Kelly of Doncaster gained the equivalent of over 10 A grade GCSEs including the new numerical grades.

Particular successes in the Faculty at GCSE included Laura Goff from Garforth who achieved 5A* and 2 A grades, as well as gaining an 8 and 7 in her English GCSEs and a C grade at AS level Mathematics, whilst Douglas Sword of Great Ouseburn, near York, gained 2A* and 3 A grades in addition to a 9 in Mathematics and an 8 and 7 in English.

In last week’s results, Year 13 students in QE’s College, which follows a more traditional, academic curriculum, returned 85% of A level grades at A* or A, whilst Faculty students achieved 77% A* and A grades at A level and 91% Distinction* and Distinction grades (Equivalent in UCAS points to A* and A at A level). These results will continue a tradition over recent years for both schools to be near the top of national league tables for results.

Lost wills: Ensuring your legacy is secure

JULIA BURNS, ASSOCIATE SOLICITOR IN THE WILL, TRUST AND ESTATE DISPUTES TEAM AT IRWIN MITCHELL, EXPLORES THE ISSUES. ven with today’s technology, lost wills can occur. There is no central will registry and with an everchanging legal landscape, tracking down an original will can be very difficult – especially if the will was created some time ago.

All reasonable efforts should be made to try and find the original will. “Reaching out to friends, family and advisors is a good starting point and trying to establish a paper trail may also help,” Julia Burns, an Associate at Irwin Mitchell Private Wealth’s Leeds office, explained. “Finding the original document will save a potentially timeconsuming and costly process in the future.”

But what if the original will is nowhere to be found? Being part of the Will, Trust and Estate Disputes team, Julia frequently sees cases involving disputes over missing wills.

She advises that finding evidence that the original will was made can be a great help. “If it’s possible to obtain a solicitors’ file, a copy of the will or even a handwritten note made by the deceased concerning the will, an application can be made to the Probate Registry without the original will.”

Where an original will was in the custody of the deceased and cannot be found after their death there is a legal presumption that

the will was destroyed by the deceased with an intention to revoke it. However, this presumption can be overturned in circumstances where evidence exists to suggest that there is a more probable reason for the will being missing. The court will assess the available evidence and ask itself: is

“Finding the original document will save a potentially time-consuming and costly process in the future.” the most likely explanation for the will being missing that the deceased destroyed it with the intention of revoking it? In the absence of any evidence, the presumption will apply.

“What counts as evidence in this situation?

Any sort of records by the deceased or copy wills or oral evidence of conversations with the deceased could be vital pieces of evidence

in these situations. If there is any sort of letter or record by the deceased about the existence of the will and their intentions for it, then this acts as primary evidence that the original wasn’t destroyed,” said Julia.

This means it may be possible to use a copy of the will for securing probate, but only if the evidence is strong enough. The best way to prevent this scenario would be to store the original will at the solicitors’ office which drew up the document. “It’s the safest place to keep a legal document,” Julia explained, “Plus the solicitor will be very used to the process.”

Telling family, friend or any advisors where your will is stored is helpful for those dealing with your estate. “It’s not a nice thing to think about, but easy access to your will is so important for your family or friends.”

Born to be wild RAY MEARS WILL BE REVEALING THE SECRET TO SURVIVAL – AND MUCH MORE – AS PART OF HIS UPCOMING TOUR IN HARROGATE THIS MONTH.

ver the past two decades, Ray Mears has become a world-renowned expert on the subject of bushcraft and survival.

His various programmes including World of Survival and Tracks, have reached out and touched the hearts of many because of his down-to-earth approach, love for the subject and the empathy and respect he shows to indigenous people, their culture and nature.

Along with releasing a new TV series – Australian Wilderness – focusing on remote areas of the country and their incredible landscapes and animals, Ray Mears is also embarking on a UK Tour – Born to Go Wild, taking place from October to November 2017.

Here he is talking about his career highlights,

For someone unaware of bushcraft, how would you describe it?

Where did your interest in bushcraft come from?

It’s a knowledge of nature that enables you to travel safely in places and gain enrichment from nature because you know more about the world around you.

I grew up with a love of the woods and developed an interest in nature, wildlife and camping out quickly. However, I didn’t have any equipment, so I was lucky to be introduced to bushcraft at an early age.

My judo teacher had been behind the lines in Burma during the Second World War and he was one of my mentors. The most important thing he taught me wasn’t actually the skills of bushcraft but a way of learning.You find a subject, take it apart, understand how it works, put it back together and see if you still agree with it. If not then see if you can find a better way, but otherwise accept it for what it is – it’s a process I’ve always followed.

How did your career begin?

When I began my career it was difficult as no one knew what I was talking about. I started doing TV as a way of broadening my audience and showing everyone what bushcraft is, as I wanted to create an opportunity for people to learn the skills.

During your new TV series, did you come across any dangerous animals?

We had one moment, which wasn’t filmed, where we saw a snake trying to swallow a frog. At first it was thought to be a grass snake but after closer inspection you could see it had been bitten. The snake was small, young and brown and it turned out to be the second most dangerous in terms of venom – so I was glad no one picked it up.

What are three things that are a necessity to take with you into the wild?

A sense of humour, common sense and a knowledge or curiosity to know more about nature.

What was your favourite area of the series to visit?

We visited lots of places including Kangaroo Island, Flinders, Walpole and Cataract but the

Kakadu environment was my favourite. The first time we went to that part of Australia, I spent a month living with Aboriginal people who taught me how to live in traditional way, so I’ve always felt a strong kingship with that area.

Having worked with Aborigines before, what did you take away from the experience?

In 1996 we made a film in a series called World of Survival, where I worked with a man who was one of the last people to live a Stone Age life. It was incredible to work with him and his knowledge and experience of the land and how to take care of it was just overwhelming. It was an amazing experience, and one that won’t be able to be recreated because that generation have all gone.

I’ll also be showing some clips from Australia, whilst talking about the importance of understanding nature, including how to take care and look after it, which is something I learnt from Aboriginal peoples, whose law states it’s their main responsibility to look after the land. It’s going to be a really fun event and great for the whole family.

What is your advice for anyone wanting to learn bushcraft?

The first thing is to read as much as possible, be patient and determined. If they get an inkling of something, or have a question in their mind that says ‘why is the done?’ or ‘why was that tool used?’ never let go until you have an answer. These are very important and more often than not lead somewhere new.

What will your tour include?

Next year I’ll have been teaching bushcraft for 35 years, so I’ll be focusing on key skills

The road to recovery ith professional and amateur athletes taking part in sport and competing in events across the country, we have advice and guidance on what to do if the worse happens and you run into an injury.

Dr Stephen Feldman is Medical Director at Yorkshire’s leading MRI and sports injury imaging provider, LivingCare, and club doctor to a Premier League Football Club. With an expert team of consultant radiologists, LivingCare has over 50 years’ combined experience delivering sports radiology and imaging, including at the 2003 Commonwealth Games, 2003 World Indoor Athletics Championships and the 2012 Olympics, as well as for a host of other sporting stars and top clubs.

So, if you’re embracing the sporting events of 2017 or have a niggling sports-related injury, here’s Dr Feldman’s guidance:

What to do if the worst happens

The treatment of a sports injury is dependent on the body part injured. If you have incurred a serious injury by participating in sport, you should go straight to A&E for an urgent Xray, especially if a fracture is suspected.

However, if your injury isn’t as serious, you should use the PRICE procedure immediately.

If you’re in pain you can also take painkillers, either paracetamol or an antiinflammatory tablet like ibuprofen (400mg) three times a day, as long as you have no other underlying medical conditions.

Understanding imaging

The diagnosis of a sports injury may require an X-ray, Ultrasound or MRI scan. So firstly, it’s useful to understand the difference.

An X-ray is a form of radiation that passes through the body to produce an image.

less dense tissue such as muscles appear in shades of grey, showing fractures and breaks clearly.

Ultrasound, on the other hand, involves having a small instrument placed on the body which directs high frequency soundwaves toward various anatomy to produce an echo which creates an image. Ultrasound is particularly good at capturing motion of muscles, tendons, ligaments and joints to help diagnose sprains, strains, tears, and other soft tissue conditions and can be also be used to help guide therapeutic injections.

Whereas an MRI uses a powerful magnet and pulses of radio waves to capture images of the body’s organs and structures, detecting changes which may indicate diseases caused by trauma, infection, inflammation or tumours. An MRI scan is used for sports injuries, lower back problems, suspected arthritis or other long-standing joint pain.

After your scan, the images will be interpreted, allowing the appropriate referral to a treating clinician. At this stage it is advisable to see a sports physician or orthopaedic surgeon with special interest in sports injuries. They can then choose which members of a multi-disciplinary team of practitioners are appropriate to manage your condition.

Getting a scan and your options

You are likely to start by seeing your GP, who will have direct access to X-ray and ultrasound if they feel referral is appropriate.

However, scans can also be obtained by directly contacting a local diagnostic unit offering X-ray, ultrasound and MRI scans.

This allows patients to be seen quicker by avoiding NHS waiting lists, which can be as significant as up to 18 weeks.

Once your scan has been reported, you will then be sent to your GP, a sports physician or orthopaedic surgeon for decisions on treatments.

Often your GP may be able to utilise the NHS Musculoskeletal services to manage your injury, however the waiting list is likely to be long and most GPs don’t have the expertise in managing sporting injuries so

many patients are left feeling their problem is not a priority, due to a lack of NHS resources.

The road to recovery

Physiotherapy is extremely effective in managing a sports injury. Find a good therapist with a reputation for treating sports injuries specifically. Contacting your local sports clubs is a great way to locate recommended, expert practitioners in your area or alternatively you can use the NHS Choices website.

If you are suffering from a back injury, a chiropractor or osteopath may also be able to help diagnose and treat your injury and can also refer onward to appropriate diagnostic services.

Lots of self-help advice and therapist recommendations are available online through sites like www.patient.co.uk, the Chartered Society of Physiotherapists website or the NHS Direct, local Clinical Commissioning Group or NHS Choices websites.

What to do if your injury persists?

A corticosteroid injection can be used in the long-term or for chronic management of sports injury but are best administered by a recognised sports physician with a good reputation.

Great getaway PICTURESQUE CHESHIRE MAKES FOR A VERY RELAXING BREAK, WRITES HANNAH SANDERS. elaxing on plush leather seats, in front of the cast iron stove while enjoying a tipple – or two – was an ideal way to admire the rustic chandelier and array of violins balanced delicately on wooden beams along with a picture-perfect view of blooming-foliage and lush green fields, all making for a quintessentially British setting.

The Vicarage Freehouse & Rooms is nestled in the picturesque Cheshire countryside, near the River Dane. With its rustic exterior and climbing ivy, it blends perfectly into its surroundings, creating the perfect British getaway.

The hotel is run by Flat Cap Hotels and inside it’s spacious and well thought out with three comfortable lounges, contemporary outdoor dining area, games room as well as light and airy conservatory area and country house style restaurant. We didn’t want our stay to end.

The hotel has six exquisite signatures rooms, each with its own quirky touch such as a large chess board, which as competitive people, we took full advantage of. With its shabby-chic décor, including checked cushions, a deep blue chest, vintage gold mirror and finished with a delicately painted ‘do not disturb’ sign hung on the door, the room lived up to expectations as luxurious retreat from home.

The bedrooms are well-designed with luxury bathrooms to match – ours came with a huge bath and a rainmaker shower, the perfect place to unwind and put on your glad rags before experiencing The Vicarage’s restaurant.

They source their produce locally with a menu driven by the gardener’s foragers, farmers and suppliers of Cheshire, and we were blown away. Stand-out dishes included pan-seared prawns in chilli butter, Cornish crab with a chilli and lime jam, Vicarage burger and chocolate and strawberry brulée with pastry tuille. Service throughout was immaculate.

The dining area was bustling all evening, and I immediately fell for the rustic décor.

From a wall of antique mirrors, to fabric animals busts, riding hats, plush velvet seats and family crests hung on the wooden beams, I felt like I was Elizabeth Bennett enjoying a weekend away with Mr Darcy.

After a restful night’s sleep in the comfiest of beds, a hearty breakfast in the conservatory was just what we needed before taking a tenminute drive to Knutsford to wander around the many independent shops, enjoying the cobbled streets and brightly painted facades, before lunch at another of the family-run group’s hotels – The Courthouse.

The former Crown Court has been converted into the Barristers Restaurant and

Rooftop Gardens, and the refurbishment emulates the building’s history and grandeurstyle.

Sitting where the judge used to reside, looking down on the defendant – now the fully-stocked bar framed with towering plants – was a fun experience whilst we enjoyed a luxurious lunch. Stand-out dishes included Atlantic prawn and avocado sandwich, chocolate tart with caramel gel and Tatin with pineapple and caramelised puff pastry. Service was outstanding and we were treated to a tour of the grand building.

The lush surroundings of The Vicarage make for the perfect place to unwind and enjoy a peaceful and memorable weekend away, whilst enjoying the close-by historic town of Knutsford with its iconic Gaskell Tower.

Join the Crewe HISTORIC NORTHUMBERLAND HAS PLENTY TO OFFER, WRITES PHOEBE SEYMOUR – PERFECT FOR A SHORT STOPOVER. at next to a huge fireplace, surrounded by stone walls and a wooden beamed ceiling, sipping ale from tankards, this could easily be an iconic scene from Game of Thrones.

But we were not at Castle Black on the icy northern border of a fictional land, we were at Lord Crewe Arms, on the border of Northumberland.

Built in 1165, this hotel was originally part of Blanchland Abbey, home to the White Canons of the Roman Catholic Order. These monks famously dressed in white and as blanche is French for white, the village became known as Blanchland.

This building was originally the Abbot’s lodge, guest house, kitchens and dining room, and the gardens served as cloisters for the monks of the Northumbrian moors.

The abbey was dissolved in 1539 and was bought by the Radcliffes, then the Forster family, before being taken over by Lord Nathaniel Crewe in 1708. And if you like a good ghost story, they say Dorothy Forster still walks the abbey to this day.

Back in the land of the living, hotel guests and visitors alike can enjoy the Lord Crewe Arms’ Crypt Bar, the cosy adjoining Derwent room, or sit next to the afore mentioned grand fireplace – just the thing in these colder months.

surroundings of the lower fireplace room if you wish.

The evening we arrived, my partner enjoyed an Isle of Wight salad with Langley Farm cottage cheese to start and a juicy flat iron steak for his main, while I had chilled, white gazpacho, followed by tender roast suckling pig porchetta with whipped polenta and spinach.

Back in our room, I relished the chance to dip into the deep bathtub and cosy up to the wood burner with a cup of tea, before settling into a sumptuous double bed.

The next morning we gazed out of the dining room window at the gorgeous gardens, whilst eating breakfast. I had eggs royale with salmon that had been smoked and cured on the premises. The hotel is also proud to grow its own vegetables and has a biomass shed to generate its own energy.

And it’s not just a great place for a leisurely stay. There are also brilliant facilities in the adjoining Gatehouse for business conferences, containing a meeting room, sitting room and kitchen.

Once we had checked out, the receptionist suggested several walks, but the bottom line was, “Whichever direction you walk in, you’ll get to the North Pennines!”

With Derwent Reservoir just a couple of country miles up the road, the Crewe is wellplaced for sailing and water sports, as well as cycling, fishing and shooting. It’s also a great base for day trips to the Beamish Museum

and Hadrian’s Wall, or even for a shopping trip to Newcastle.

On our walk, we came across a chicken crossing the road – a sign we were truly in the country, and the ruins of the old Shildon Engine House – a symbol of the area’s industrial past.

Back in the village, we perused the traditional sweets and the homemade cards and gifts at a local shop, before going to the Monk Tearoom, an old school room-turnedcafé, for a pot of tea before returning home.

So if you want to feel like the king of the castle, venture over the North Pennines or explore the nearby museums, Lord Crewe Arms in Blanchland is a cosy and comfortable home from home. What’s more, they have been named ‘Inn of the Year 2018’ by the Good Pub Guide.

t may not be rocket science, but creating the perfect pint of ale can be just as technical. From the fermenting process, right down to the types of hops and water they use, each step must be performed meticulously to achieve the golden colour and depth of flavour, Timothy Taylor are famous for.

“The well water we use is unique to us and has thousands of trace elements that influence the flavour of our ales,” says head brewer, Andy Lemen. “We use a rare, high-quality variety of barley called Golden Promise. It’s more expensive, but we haven’t found one better. Plus, we use whole flower hops, whereas many other breweries use an extract.

We’ve also been using the same strain of yeast for the last 37 years.

“We have a hands-on approach and aren’t afraid to get our hands dirty. Everything is done manually by the brew house team, in the same traditional way it’s always been done and we never take short cuts. The key to the art of brewing is to be consistent – that’s the real skill.”

As the old saying goes, if it ain’t broke don’t fix it. It’s a mantra that has served the brewery well and 150 years on, you can easily find Timothy Taylor on draft in a number of

pubs around Harrogate and York, as well as in the ale’s home town of Keighley, of course.

This includes Timothy Taylor’s very own Cask Marque accredited pubs.

Andy has been working for the brewery based in Keighley for nearly 30 years and was promoted to the role of head brewer in October 2015. He and his team are responsible for the production, storage, safety and high quality of the ale – for which, Timothy Taylor has become renowned.

If you are already a lover of local ales, you will be familiar with Landlord – a 4.3 per cent classic pale ale with a complex citrus and hoppy aroma. A recent survey revealed that Landlord has the highest proportion of drinkers who call it their favourite ale and it has won more awards than any other beer, including CAMRA’s Champion Beer of Britain and the Brewing Industry Challenge Cup four times.

The next most popular ale is said to be Boltsmaker, a richer and darker 4 per cent Yorkshire bitter, whilst new for this year is Knowles Spring, a 4.2 per cent easy-drinking blonde beer.

Named after the Knowle Spring upon which the brewery sits and which provides the fresh spring water for all their brews,

Andy says this ale has been made in a traditional way, but with a modern twist.

Never a one-trick brewery, Andy and his team are also excited for the launch of Poulter’s Porter, a blonde ale which will arrive on draft in pubs from November – just in time for the festive season.

The porter has been named after Private Poulter, who served as a medic in the First World War and who had previously worked at the brewery. Poulter put his strength and courage to the test when he went back and forth under enemy fire to carry five men on his back to safety. He was shot whilst doing so, but survived and was awarded the highest award in the UK honours system, The Victoria Cross, in 1918.

When asked how he managed such an act of sheer strength, he claimed carrying the heavy sacks of barley at Timothy Taylor had trained him. Next year will be the 100th anniversary of Poulter receiving the award, so what better time to raise a glass and honour such a local hero.

And it’s not just legendary figures who have the brewery’s respect. Another thing Andy enjoys about working at Timothy Taylor, is the great sense of community.

“Two families are involved in the brewery, including the Taylors,” continues Andy. “And because it’s an independent brewery, we’re not run remotely or subject to say, a company in London. There is a real family atmosphere. Everyone knows and looks after each other.”

As a company run by the local community, producing ale for the region and beyond, with a strong reputation and a long heritage, Timothy Taylor is a brand that makes him proud to be from Yorkshire.

LEEDS’ FIRST COFFEE ROASTERY AND CAFE – NORTH STAR – IS OPEN FOR BUSINESS. RACHEL MARTIN MEETS CO-OWNER HOLLY BOWMAN TO TALK ALL THINGS JAVA. aving previously worked as a green buyer for one of the UK’s leading speciality importers, Holly Bowman realised it was time to take the plunge. Setting up Leeds’ first coffee roastery with business partner Alex Kragiopoulos (known by all as Krag) was a natural progression after travelling extensively at origin and helping to set up many community projects.

As a coffee specialist, Holly ensures all aspects of the business are managed, focusing profoundly on setting quality control procedures, sourcing some of the best coffees in the world and forging relationships with growers across the globe. And, such is her reputation, she is one of only 12 female licensed Q Graders in the UK. Here, she tells Northside about the inspiration behind North Star Coffee Roasters, why she loves Leeds and her top tips for brewing the prefect cup of the black stuff.

What is a typical working day like for you?

We start the day off with a form of quality control called cupping – a technical term for how we taste coffee in the industry – and I sample one of each of the previous day’s roasts to ensure they fall within our quality control guidelines.

I usually have some samples to roast on our sample roaster, and, sticking to specific guidelines, I prepare them for tasting the following day. After that, I might do some blend development with my colleague Ollie Sears, who’s a professional SCA (Specialty Coffee Association) qualified barista.

In short, my days involve tasting a lot of coffee, and documenting changes in flavour profiles, which are perhaps due to the green coffee age or the roast. There’s a whole manner of things I’ve got to look out for to enable us to continue producing coffee at a consistently high level.

You’ve recently teamed up with fellow Young British Foodie Awards winners and innovative micro-bakery, Noisette Bakehouse to bring North Star Coffee Shop and general store to Leeds dock. Why Leeds?

We’re all from Leeds, and for us, it was a crying shame that the third biggest city in the UK didn’t have a coffee roastery.

We’ve been a wholesale business for four years, and now, we’re very much established as a Leeds brand – in fact most of the coffee shops across the city already stock North Star coffee, and we’ve been roasting for them since the beginning.

desire to set up a training space. We put coffee professionals from all over the country through their industry exams, whether that’s in barista skills or sensory skills, and the dock was somewhere that was easily accessible and had accommodation on site.

The coffee shop was an add-on that made complete sense. It’s attached to the roastery, so customers can get a viewpoint of what we do at North Star and are made aware of what goes into the supply chain of coffee and into what they eventually drink.

Do you plan to expand further?

Definitely not in the short term. Our focus is very much on developing a really well established Yorkshire business on the sites we’ve got right now. We’re a very small team and we’ve got a huge wholesale offering, which requires a lot of maintenance. I would never say never, but we need to catch up on some sleep first.

What do you enjoy most about your job?

The global nature of coffee. We work with people all over the world and have connections in countries less well known. I was in Burundi not so long ago (not many people have even heard of it) and I just love the opportunity I have to work with, and create friendships with, people from different cultural backgrounds.

Coffee is about a lot more than what we’re doing here in the UK. We’re contributing to a growing industry that is effectively presenting opportunities for change in some of the poorest countries in the world.

For many, coffee is a substance consumed regularly to stave off sleep and energise for the day ahead. In recent years however, there has been a revolution in high quality, specialty grade coffee that has opened up a world of possibility when it comes to flavour and experience.

There are multiple flavours existent within coffee that are there because of where it has come from, the altitude it was grown at and the process it has been through after harvest. These can range from floral notes of rose petal and jasmine to sweet flavours of caramel or roasted hazelnut, even ripe vine tomato or blackcurrant.

Coffee’s true value is often not realised if brewed carelessly and we work tirelessly here at North Star to ensure we are coaxing the inherent potential out of every bean at each stage along the supply chain. From the growing to the harvesting to the shipping to the roasting, there are so many obstacles to get over along the way that can have an effect on the resulting cup.

There are many variables to take into account to bring out the best of the bean, but there are certainly a few simple tips that should make a great difference to the quality of what you are able to produce at home.

Possibly the most important factor to take into account is freshness. Coffee

The setup of the retail space was also an incredible achievement – one that’s not quite hit us yet. We’re still recovering from the process, but when we sit and watch people interacting with our coffee it really hits home.

starts to age the minute it is picked from the tree – some of the subtle and complex aromas mentioned above might never be discovered should you always use preground coffee which begins to oxidise and stale the moment it is ground. Much of the coffee you come across in the supermarket can often be roasted up to 18 months previously and is also pre-ground, resulting in a flavour that is much less intense.

Our advice would be to find a roaster local to you working with ethically sourced, specialty grade coffee – this is a recognised grade that represents the top four per cent of coffee produced globally in terms of its quality. It will hold the most potential for flavour if roasted correctly and prepared well, grinding the beans each time and working to a set brew recipe that is usually provided by the roaster. This will give instruction on grind size, coffee to water ratio, brew time and water temperature and helps to ensure you are getting the best out of the coffee.

Brewing coffee in this way does not always mean a long and arduous process, there are methods available such as the Pour Over filter or the Aeropress that can take as little as two minutes – so come on, ditch the instant and welcome yourself into a world of constant discovery and sensory satisfaction. Your tastebuds will thank you for it.

What’s the highlight of your career so far?

Getting to this stage really. When we started we were just a group of 22 year olds visiting businesses that had been established much longer us, and trying to get them to buy into

Work-life balance AWAY FROM THE HUSTLE AND BUSTLE OF THE FAZENDA RESTAURANT GROUP, TOMAS MAUNIER MAKES TIME FOR FAMILY – AND THE ODD GLASS OF WINE. omas Maunier, sales and marketing director of the Brazilian-inspired restaurant brand Fazenda, along with business partner Robert Melman, has been with the company since it opened its first restaurant in Leeds in 2011.

As director, Tomas ensures all aspects of the business are managed efficiently, focusing on the ongoing of accounts, HR, marketing and the operations department, and such is his reputation he was listed within the 50 most influential operators in the North of England.

Here, he talks to Northside about what life is like in and out of Fazenda, his road to success and what the future holds.

How did you get to where you are today?

I studied law in Argentina, as this career runs in my family however before I finished my degree I decided it wasn’t for me. After this, I started working for a small marketing and merchandising agency.

My wife, who is an interpreter, was offered a scholarship for an 18 month post-graduate course in the UK so I came with her – we are still here ten years later.

Once we were here, I met Robert Melman my business partner and we decided to do something together which is how I got into the industry. It was a strange path, but I have 56 Northside | www.northsidemagazine.co.uk

loved everything I’ve learnt and if I had to go back wouldn’t change anything.

What is a typical working day like for yourself?

In the morning, I submerge myself in everything that happened the day before by reading the online manager’s posts. I check how everyone is doing and if there were any issues that need my help.

I tend to have a lot of pre-arranged meetings, so I spend a lot of my day travelling between Chester, Leeds, Manchester and Liverpool.

I also spend a fair amount of time with the heads of our different departments discussing potential ways for us to improve, become more efficient and ensure we are developing.

What do you enjoy doing outside of work?

I am a sports guy, so I play football, tennis, and go to the gym. I enjoy travelling although I haven’t had time to do this as much recently. My wife and I have two children, one six the other eight, who are at an amazing point in their life and I love sharing that.

My wife and I have a real passion for anything wine related so we spend a bit of time sampling new ones.

Where do you see yourself in ten years?

What do you enjoy most about your job?

Tasting new wines and meats on a regular basis is an amazing part of the job. I also really enjoy the amount of time I get to spend interacting with people, it makes each day something different and exciting.

What advice would you give to anyone starting a similar career?

Never underestimate the hospitality industry, as personally I think it is the hardest sector I have worked in. You work 24/7, and it can

I really don’t know, but I do hope that my children continue to stay happy. They would be getting ready to start their own lives, so it will give my wife and I more time to travel.

Do you have any plans to expand Fazenda further?

Yes, we have some very ambitious plans in the works. We are planning to open four new restaurants, including one in Edinburgh but you’ll have to watch this space for more updates.

The best possible taste FLAWLESS FOOD MAKES HORTO A SPECIAL EXPERIENCE, SAYS CHRIS WILSON. asting menus are, in my experience, a bit of a culinary minefield. So much can go wrong, mainly portion control, turning what should be a delightful experience into a bit of a chore.

If I am eating anything between five and 10 courses I find one simple question sorts out the heavenly from the hellish. When the final course comes along, am I still actually looking forward to more food?

If the answer is yes, then hats off to the chef. He or she has got the balance just right and this has been a sensory journey to remember.

If it’s a no, if shirt buttons are bursting and my meal is beginning to resemble an episode of Man vs Food, then the whole rigmarole has been a waste of time.

I’ve had my share of both but I keep persevering because when they get it spot on, tasting menus are just sublime.

Early signs at Horto were very promising.

The latest addition to the much-loved Rudding Park Hotel began as an experimental pop-up. With good feedback the new custom-made restaurant, situated in the cool and contemporary Spa, was opened earlier this year.

If you are coming for dinner, walk past the Spa reception, into the cool, contemporary and calming atmosphere of a bright, spacious restaurant. There is also an a la carte option but the tasting menu, six courses including snacks, looked too intriguing to pass by.

If you’re wondering about the name, Horto is Latin for kitchen garden and provides a

strong hint behind chef Murray Wilson’s inspiration. It’s all about seasonal ingredients with vegetables and herbs sourced from Rudding Park’s very own kitchen garden.

Our particular menu, which doubled as a placemat, had the day’s date on it and we were informed by one of the many lovely, learned staff that you could expect at least a couple of courses to change every fortnight.

We were offered some seriously good sourdough bread to start, with the perfect combination of fluffy dough and chewy savoury crust. You may decide it’s the best bread you’ve ever eaten, and you will be offered more, but resist. The real action is about to begin.

It would take a dissertation to describe each of the six courses at length; lend me your ear and I’ll talk you through every last morsel.

But the shortened version is this: each individual element of our meal was virtually flawless. Our food journey began with snacks of pumpkin and nasturtium cep with smoked horseradish and continued with irresistible small plates of stone bass, pork cheek, Yorkshire grouse, Skyr and chocolate.

Favourite savoury dish for me was the stone bass, with its immaculately opaque flesh and gorgeous crispy skin, served with pickled leek.

This is a good point to flag up the immaculate drinks pairing which accompanied our gourmet feast; six individual glasses specifically chosen to match each course. The stonebass was accompanied by a

delicate cocktail of Himalayan hand-rolled tea, sake and homemade ginger syrup. Like everything we sampled, this was perfectly pitched and lovingly presented with great care.

My companion meanwhile was totally bowled over by the pork cheek served with a divine combination of smoked eel, celeriac and apple. What a powerful combination of tastes and textures, with a suitably big-hitting glass of Tasmanian ‘Devil’s Corner’ Pinot Noir to match.

We finished on a high with the darkest, purest chocolate ganache known to man, accompanied by super sharp blueberries. Was the last mouthful a struggle? Absolutely not.

They are trying something really special at Horto, and it’s working perfectly. Don’t miss out.

Fresh selection FAST FOOD TRENDS ARE CHANGING, WITH MORE EMPHASIS ON HEALTHY OPTIONS, WRITES PHOEBE SEYMOUR. n recent years, there’s been something of a deli revolution. As we slowly move away from burger joints and kebab shops, healthier fast food options such as sandwich shops and independent cafes catering for all manner of dietary requirements are popping up all over Yorkshire.

The Curry Counter is one such place. The business, which started in Bradford in 1991, is making people rethink what they expect from an Indian takeaway. This branch in Harrogate opened nine months ago, and manager Usman is keen to open the next branch in Halifax in the coming year.

My mum and I entered the energetic lime green and brown deli in Harrogate and our eyes were instantly drawn to the array of delicious-looking curries and starters on display. The curries are all made from scratch with authentic Indian and Bangladeshi ingredients at their flagship Bradford branch, before being transported here.

Meanwhile, through the hatch to the kitchen, I saw a chef shaping dough into a chapatti and Usman reassured me all the breads are made fresh on the premises.

Though often referred to as a take away, there are plenty of places to dine in at the

deli. It was lunchtime and though there was a steady stream of customers, the soothing acoustic covers of Coldplay and Bieber songs and comfy armchairs provided a relaxing escape from the hustle and bustle of my working day.

I had a cappuccino (£2.50) made with rich Arabian coffee beans and Mum had an Earl Grey (£2.95). Part of a range of gorgeous teas supplied from a Harrogate supplier, it was possibly the most aromatic tea I’d come across.

Next, we went over to the counter and selected some bite-size morsels from the deep-fried range, which included two onion bhajis, a vegetable pakora, a fish pakora and a mushroom pakora (£1.95 for five). These crisp and lightly spiced pieces were served with a fresh side salad and a small pot of cool mint raita.

For mains, I had the karahi fish (£7.95) with pilau rice (£1.95) and my companion had the chicken makhoni with sweet rice (zarda, £1.95). My curry had a subtle but distinct spicy aftertaste, while Mum’s creamy medium curry was complemented by the sweet rice. Along with two soft and warm chapattis (55p each or three for £1), there was more than enough food to get us

through the rest of the day.

But don’t forget dessert… The Curry Counter also houses a gelato counter called Swish, with its own pink seating area. I ordered a waffle with the two most popular toppings – chocolate sauce and Oreos (£4.95), and Mum finished with scoops of pistachio and hazelnut ice cream (two scoops for £3.95), drizzled in lime and chocolate sauces.

So whether you’d like a daytime coffee in soothing surroundings or a hearty takeaway in the evening, The Curry Counter has a fresh selection of dishes and desserts to satisfy everyone.

Ban Kaewkraikhot launched the first Sukhothai restaurant in 2002 in Chapel Allerton, and such is the brand’s reputation, she has since opened Harrogate, Headingley and Leeds city centre.

The Sukhothai menu focus primarily on Thai fine dining and, as Ban was taught to cook by her mother, the majority of the food is authentic – using meat and vegetables sourced locally, and importing all the spices from Thailand.

“Being a chef is all about making people happy, and there aren’t many jobs that let you use food to do so,” she says. “I’m very grateful to the good people of Yorkshire for supporting us – Kob Khun.”

Bans two signature dishes are Pad Ga Prao – a delicious stir fry with bamboo shoots, fresh chilli and basil – and Pla Neung Manow – steamed sea bass with Chinese leaf, chilli, coriander, lemon and garlic. A favourite, she confesses, she cooks at home often.

Her advice for aspiring chefs: “Don’t stop believing and don’t stop working. My dream started out in a tiny village in Thailand, and now there are four Sukhothai’s.

You have to believe in yourself and work your hardest every day.”

Subrata Ganjan, head chef at Brasserie Blanc, Leeds has been creating traditional French food with a modern twist for the last five years.

“Every day is different, and as head chef it’s important to have control of the kitchen, such as making sure all the food is labelled and stored correctly,” he says.

“I create daily specials, which allows me to be creative and challenge myself, and I make sure the kitchen is clean and that my chefs are prepared in their section for a busy and fun day of service.

“Before dishes are sent out, I check them – this is my biggest focus of the day – ensuring the food is served to a high quality and with impressive presentation.”

Subrata says he enjoys challenge of being a chef: “Serving food is what I love and it makes me happy to share my passion with others,” And his advice to other aspiring chefs: “Always cook with love and passion, don’t give up, believe in yourself and stay focused.”

Lee Heptinstall has been the head chef at Harvey Nicholas Fourth Floor café for four years, where his days involve checking orders, maintaining a high standard of produce, working stations and overseeing service, ensuring all the food goes out to the best of the team’s ability.

“Seasonal ingredients offer the very best flavour and we also like to source ingredients from Yorkshire suppliers,” he says.

“Each season, we do recreate a few familiar dishes, but changed or enhanced a little – we like to keep making inspiring dishes for our customers.

“I like being creative and making our customers happy. There is nothing better than the instant feedback you receive and the faces of people really enjoying their food.”

Fazenda offers a rodizio experience of different prime cuts of meat, which have been grilled to perfection by gaúcho chefs in the way it has been done for centuries, and served ‘churrascaria’style (straight from the barbecue).

Francisco Martinez has been in the kitchen for three and a half years and currently, the company is undergoing a significant expansion – with three new openings on the way – so his focus is primarily on keeping on top of the day to day at the existing sites.

“Right now, we’re also working on something different to our everyday menu, called Roots and the future of Brazilian food,” he says.

“It will be very avantgarde, taking on traditional Brazilian flavours, and as I started my career in El Bulli, Catalonia (repeatedly voted the best restaurant in the world) this new menu will allow me to mix up the best of my culinary skills.”

His advice to aspiring chefs: “Always think out of the box. My mentor taught me that the best thing to be is creative and organised, and it’s important to educate your palate.”

Thomas Robertson has spent eight years at The Woolly Sheep, first as sous chef, and, after a year in London, he returned to take on the role of head chef – a responsibility he says, he thrives upon.

“My team and I work a 48hour week. We start prepping at 10am, and in the afternoon I have administrative work to do, which typically involves writing menus and researching new ideas. Then it’s back to the kitchen for evening service.

“The camaraderie in the kitchen is like no other. When the day is done, you take real pride in knowing you’ve delivered a service that’s brought joy to others.”

His signature dish? He doesn’t have one, and for the simple reason, he says, that “if you limit yourself to a single dish, you can easily stop striving to better yourself.

“Dishes should constantly evolve with the time and seasons – what’s in season one year may not be ready the next – and this can also be said for you customers, as what people want can changes from week to week.”

Utilising the best local produce, cooked with discipline and finesse, is no easy feat, but is something that chef Paul Leonard believes is essential when endeavouring to uphold The Devonshire Arms’ Yorkshire heritage.

With so many delicious options to choose from, he can’t name just one signature dish, but says: “We have a scallop dish served with pork cheek, which I really like, and a beef and bone marrow dish, which again is a favourite of mine, but signature dishes evolve through the years, and we are at the beginning of an exciting journey here.

Though I am certain some dishes will become signature over time.”

His favourite element of working as a chef: “It’s like no other job. It’s tough, and the pressure is always on, however the team work, meeting great suppliers and the adrenaline of service make it all worthwhile.”

And his advice to other aspiring chefs: “Never give up, and respect everything and everyone around you.

There are going to be tough days, but keep your chin up and power through – I guarantee it will be worth it.”

Ash Johnson has worked at The Cairn Hotel for four years and each day is busy with preparation, cooking, cleaning and documentation.

“Generally, my day starts around 7.30am,” he says. “I check that our sometimes 200+ guests are enjoying breakfast, then it’s time to make sure everything ordered the previous night has arrived before checking the fridges to ensure we have plenty of food for lunch orders and bar snacks, all whilst preparing for evening service.

“If we have a function on, this also needs to be prepped for, and after the evening service, it’s time to write the orders for the next day.”

But Ash says working hard is worth it: “Becoming a chef is hard work and not for the faint-hearted – the hours can be long over the festive seasons, but as long as you don’t give up and you keep your head down, you will make it.”

And his advice to aspiring chefs: “Ask if you’re not sure, because knowledge is what makes chefs grow. Also, remember be a team player and help educate the people below you, just like the chefs above you will.”

The Fairfax Arms take pride in using culinary innovations, to excite the most discerning of palates, and always focuses on using local produce and suppliers to source some of the region’s finest ingredients.

Firm customer favourites include trio of rare breed pork, slow-cooked belly pork, braised pigs cheek, panseared loin, homemade scratchings, sweet potato purée, fondant potato and cider jus, and the menu changes regularly, based on the seasons.

Never afraid to try new ideas, head chef Ben Turner says: “I enjoy the whole experience of being a chef, from being able to be as creative as possible and pushing the boundaries, to working closely with some of Yorkshire’s finest suppliers.”

A typical day at Rudding Park involves a visit to the kitchen garden, where over 100 different herbs, salads, edible flowers and fruits are grown.

“I like to showcase the ingredients in the cooking methods I use, allowing us to create dishes packed full of flavour, using quality heritage varieties that are usually hard to find,” says head chef Murray Wilson, who’s been serving up modern British cuisine from the Horto kitchen since May 2017.

His favorite part of the job: “The creative side, devising dishes and developing the Horto team.”

And his advice to aspiring chefs: “Think long and hard about the career path and if it’s right for you. Too many youngsters think it’s easy after watching TV chefs, but it’s hard work.”

Oliver worked his way up to head chef of the Boars Head Hotel between 2004 and 2010, before opening a stint of hotels across the country and returning in 2013.

“At the castle, we cook for a range of events: weddings, conferences, outdoor events, small private dinners – you name it, so most of our menus are bespoke to the diners’ personal requirements,” he says.

“We also use a lot of produce from the estate and gardens. Birds and deer are shot on the estate, and herbs and plants such as wild garlic are foraged from the land.”

One of his favourite plates: “An autumnal dish of poached wild duck breast, sorrel and confit leg cannelloni, wilted gem lettuce, sautéd chanterelles.”

Award-winning Asian restaurant Kebabeesh, takes inspiration from traditional Indian and Pakistani cooking, with some signature dishes echoing all the way back to the ancient Mughal Empire.

Founder Jay hails from the culinary capital of Lahore – centre of culture, art and literature –and also draws on his father’s Persian heritage for inspiration.

Each of Kebabeesh’s chef has been classically trained in the best hotels in Lahore, India and Dubai, and, together with Jay and his son Ammar, they create exciting menus with fortnightly or monthly specials to introduce new, authentic flavours.

“We take our standing as one of the top Asian restaurants in Leeds/Bradford very seriously and we’re very much part of our local community, organise charity nights and other special events on a regular basis,” says Jay. And you can even enjoy a Kebabeesh meal in your own home: “Our delivery service is extremely popular and our customers are happy to wait that little bit longer to enjoy the same high quality food we serve in our restaurant.”

Micro-bakery, Noisette Bakehouse have teamed up with North Star Coffee to bring a coffee shop and general store to Leeds dock.

“It’s a fusion of the two businesses; a coffee shop serving the best freshlyroasted coffee and a bakery/kitchen serving sweet and savoury bakes – a match made in heaven,” says founder of Noisette Bakehouse, Sarah Lemanski.

“A typical day starts early with the breakfast bake, just in time for the doors opening, followed by prep for the lunchtime rush.

“The afternoons are busy with baking preparations, and the day ends with just about enough energy to scribble down inspiration for new additions to the menu.”

Though she classes herself as a baker before a chef, Sarah enjoys taking raw materials and basic ingredients and transforming them into something innovative.

“I love to create imaginative dishes that are flavourful and nourishing.

Yes, there’s a lot of cake and sometimes a lot of cheese, but there’s a lot of balance across the menu too.”

Her signature bake? The Morning Cake™. A sweet vanilla and sour cream cake batter, layered with cocoa, tonka bean and an almond streusel topping.

ACQUISITION PRESERVES HERITAGE OF HARROGATE BATHROOM RETAILER.

Continuing success n established high-end bathroom specialist in Harrogate has been acquired by another heritage brand, in a move that will save jobs and preserve the 100-year old legacy of the company.

More Bathrooms – part of the fifty - two year old Passmore Group – has acquired Charms Bathrooms, based on Beech Avenue.

With the existing owners approaching retirement, this could have marked the end of an era for family-run Charms. But the deal with Passmore Group, which is also familyowned means that the story can continue for customers in the town.

Charms’ history in fact began in the late 1800s, when George Martin established a well-known plumbers merchant serving customers in Harrogate, York and Leeds. The business was passed down to George’s son John and in the 1960s, a small plumbing business founded by Brian Passmore was among the customer base.

Like Brian, John handed the business down to the next generation once more and, fifteen years ago, Charms’ focus on bathroom retail was borne. Whilst Charms and Passmore’s More Bathrooms brands were, in effect, competing with one another, the owners

continued to recognise the cultural similarities between the two, which kick-started merger talks in recent months.

Commenting on the deal, Tony Passmore, Passmore’s current managing director and son of founder Brian, said: “Charms is similarly a family-run brand synonymous with trust, quality and integrity, so the fit into our stable of companies was perfect. We look forward to bringing 50 years of installation expertise to the table – especially for some of Charms’ clientele who may have previously used the company for ‘supply only’ bathroom purchases.”

With a 3000-square-foot showroom already in place, there was little fit-out work to do in preparation for the re-opening. In fact, with Charms’ exclusivity rights to supply Laufen Kartell and Roca Inspira products to Harrogate customers, Passmore has already been able to expand its range under the More Bathrooms umbrella. However, a number of additional products will also be added over the coming months, including stylish and easy-access shower and bathing solutions.

“We have grown to become the leading bathroom designer and installer in Leeds and the surrounding area, so the acquisition of

this well-known and respected Harrogate business is a logical step in our ongoing expansion,” adds Tony. “It signifies our desire to provide a fantastic bathroom experience to as many Yorkshire customers as possible. We can’t wait to see what the next few years bring.”

Passmore has grown to become a £6m turnover organisation with plans to grow to £10m in the next three to five years. This will create 20 jobs for local fitters, installers and surveying staff in the process.

Passmore is a 50-strong company that services customers within a 60-mile radius of their Wortley, Leeds headquarters. The Group is made up of three core brands – More Bathrooms, More Ability (bathing solutions for people with disabilities) and More Build (turnkey home improvements).

lenheim Park Estates have moved to their new prestigious offices on Carter Knowle Road.

They have created a modern industrial look to their office space, which provides a wonderful environment to work and meet with clients. A key focus of the design was the creation of a large open space with a range of rooms for retreat and casual/formal meetings. The design brief also required a large board room, private offices and a media suite as well as staff facilities and a kitchen/lounge area.

The concept was to create a working environment, which would be conducive to open communication with all areas designed to interconnect with the use of glazed partition walls and doors to create zoned areas.

RECORD-BREAKING GCSE RESULTS AT HARROGATE LADIES COLLEGE Harrogate Ladies College were delighted that the girls were rewarded for their hard work with record-breaking GCSE results with the number of A*-A grades (or the equivalent nine, eight or seven in the new grading system) increasing to 61 per cent.

Hospice art sale Patient care at St Gemma’s Hospice has had a cash boost thanks to the success of long running event, The Leeds Art Exhibition and Sale.

The popular event, which celebrates its 17th anniversary, has now raised a fantastic £280,000 in aid of the Moortown-based hospice.

The event opens on Thursday 26 October at The Grammar School at Leeds for four days. There will be 900 pieces of art and photography on display at the exhibition, all of which are available to buy with prices varying from £20-900.

The exhibition will showcase work from professional and emerging talent using modern oils and acrylics to traditional landscapes, pastels and photography.

Opening times for the exhibition are: 26-28 October 10am-6pm and 29 October 10am-4pm. Entry is £3.
