Stewardship reaches beyond natural resources and livestock

The May/June issue of American Red Angus Magazine focuses on environmental stewardship and sustainability and, in the following pages you can read how Red Angus is excelling in many different environments and markets. Ranchers, farmers and agriculturists are dedicated to good, sound production and management practices that care of our natural resources and livestock, however Red Angus stakeholders are also stewards of our breed. Webster’s Dictionary defines “stewardship” as, “The conducting, supervising or managing of something; especially, the careful and responsible management of something entrusted to one's care.”

The stakeholders, members, staff, Board of Directors and officers of the Red Angus Association of America are stewards of the association through their responsible management of the cattle, data and association services. Each of these categories plays a very vital role in the success of our association.

Members register cattle and provide information that helps evaluate cattle based on performance data that is the most useful and trusted source in our industry. Red Angus data is highly regarded because our members have understood the need for complete data that makes us a highly valued source of honest genetics for commercial cattlemen. Total Herd Reporting (THR) makes our data the most reliable in the beef cattle world. As new technology develops, we will increase the amount of valuable predictions for Red Angus genetics,

6 American Red Angus Magazine ■ May/June 2014

and I am sure our members will embrace these new tools designed in making profitable genetics for the beef cattle industry.

Staff has been working hard to provide services needed by our members from registrations to marketing. We are currently working diligently to upgrade our database. The new database is essential to make our registration process easier and more streamlined for accurate high-value genetic predictions. Staff works long hours during times of high submissions of registration data to make sure we have results that can be used for evaluation of cattle. Staff also helps our commercial customers market their cattle through all of the association’s marketing options. Each member of the Board of Directors is a good steward because they volunteer time to serve and help direct staff toward goals of further gains in market share. This Board of Directors always bears in mind ways of gaining business share for Red Angus seedstock and commercial cattle influenced by our genetics. This ensures we will continue to gain demand and see continued growth in Red Angus cattle registrations. Leadership is always looking for ways to gain critical mass for continued growth for our breed. As your current president, please feel free to contact me with ideas, suggestions and yes, even criticisms so we can continue the great success and remain strong stewards for the Red Angus breed. ■

Summer is a time for connecting We all have heard how important it is for us to add value to our Red Angus. Over time we have developed marketing programs – on our own and as an association – to take advantage of production practices, genetics and customer services. But in the end, it is the little things – the details and the extra effort – that makes us feel good about ourselves and makes us special in our customer’s eyes.

With the upcoming summer season, it is time for us to develop added value on behalf of our customers. The people that proudly serve our beef products to their family and friends need the reassurance they can trust the quality, safety and wholesomeness we have built into our production systems. Summer is a perfect time to promote Red Angus beef and listen to our consumer base. Summer also is a great time to visit and communicate with your customers and seek new

Red Angus opportunities. Ranch visits, community celebrations, social events and phone conversations are tremendous ways to listen to your beef customers and meet fellow cattle people. Many will utilize and share printed and electronic materials like newsletters and eBlasts to communicate with their customers. Fellow Red Angus members and enthusiasts will gather at field days, state tours and regional meetings, festivals and events which are a fantastic mix of fun and business. The best advice is to enjoy the season, the people and the occasions. May your summer be filled with sunshine, timely rains, growing things and fellowship.

Make plans to attend the Red Angus Convention in Savannah, Ga., this September, and take advantage of the doors that you can open. What you do today will create the future. ■

Marketing Update by Chelsea Poe, Marketing Programs Coordinator

Tagging Calves and Marketing at Summer Video Sales Spring calving season is coming to an end and it’s time to start marketing calves in summer video sales to be delivered in the fall. Remember to call RAAA Marketing Programs to enroll your calf crop before advertising them as enrolled in the Feeder Calf Certification Program (FCCP) or Allied Access (AA) on video sales. You must complete the supplier enrollment process before they can be marketed as Certified Red Angus or Allied Access.

Also, send in your completed customer enrollment agreement and the first page of your calving records to finish the verification process. A customer enrollment agreement and calving record are REQUIRED to verify your calves in Red Angus Process Verified Programs! Having your Certificate of Compliance prior to the video sale date not only makes sale day easier for you and your representative, but it also shows buyers you have all of your paperwork complete and the transition will be seamless.

We’ve had overwhelming interest in the new Choice+ Premium Red Angus Grid! However, only cattle enrolled in the FCCP qualify for Choice+. This new grid provides a sound marketing option for those that purchase Red Angus cattle. Producers must call RAAA to enroll their calf crop and tag their calves before they leave the ranch of origin, then they can market their cattle to potential buyers as eligible for the Choice+ Grid. Reminder! Are You a Grid Master? Submit Data. Red Angus cattle continue to add value to premium markets and build customer reputations through the FCCP. Red Angus’ ability to consistently grade Choice or higher and maintain low levels of Yield Grade 4s make them a target for packers to fill premium branded-beef program demands. Cattle wearing the “yellow tag” or “green tag” signifying enrollment in the Red Angus FCCP or AA may submit carcass data to be considered for the distinguished Grid Master award.

RAAA recognizes Grid Master winners as a way to demonstrate the grid capability and potential for increased market premiums of Red Angus cattle. Producers whose cattle are enrolled in the FCCP or AA are eligible to submit data to the RAAA, and the very best of those cattle qualify for Grid Master status. By collect-

ing carcass data, producers improve their reputation as progressive cattlemen and feeders. They are also able to apply the carcass information into breeding advancements and sire selection in their cowherd. Red Angus calves enrolled in the FCCP or AA that were harvested between July 1, 2013, and June 30, 2014, may be considered if they meet the following specifications under two different classifications: all-natural cattle or conventionally fed cattle. All-Natural Cattle Specifications • 30 head (or larger) load lot size • 90% (or higher) Choice and Prime • 10% (or less) Yield Grade 4 • Calculated Grid Score of 100+

Member Services Bulletin 2013 Spring Inactivation

For members with cows on inventory that have not complied with Total Herd Reporting, it is time to catch up and report information for females that are missing a Spring 2013 record. Spring Inactivation will take place at the end of May. If a calving record or reason code is received in the National Office before July 1, the cow will not be subject to reactivation fees. Keep in mind that all data that is received has an impact on at least one Expected Progeny Difference (EPD). Spring Inactivation contributes to the Stability EPD. Total Herd Reporting provides the foundation for a reliable Stayability EPD. Once a female enters the productive cowherd she is monitored annually for her productive ability. Only females that produce a calf every year up until at least six years of age are given a positive observation. Females that miss a calf or are culled for any reason including soundness, production, disposition, body condition, etc. are given a negative observation. Mandatory collection of stayability observations from all Red Angus herds provides ample data for the prediction of a bull’s ability to sire Ranch-Tested – Rancher Trusted cowherds. (Excerpt from Ranchers’ Guide to EPDs)

Fall 2014 Herd Inventories

Establishing your herd inventory is the first - and a very important step - to Total Herd Reporting (THR) for the upcoming Fall season.

Annual assessments will be billed in December based on active females from your herd inventory and any new females which entered the herd during the calving season. Females that are culled from the herd later on in the season will still be subject to annual assessments.

Herd Inventories are available on the website under Member Data-REDS. Updates or changes can be submitted online, or you may print the herd inventory from Member Data REDS, and send to the National Office with updates. A hard copy may also be requested from the National Office. ■

12 American Red Angus Magazine ■ May/June 2014

Transfers

As the spring bull sale season comes to a close, remember to get all animals transferred within 60 days after the sale date to avoid a late transfer fee. Please double check buyer information when submitting addresses because inconsistent data can create incorrect or duplicate accounts.

Completing the transfer and ensuring that the buyer address is correct is very beneficial to producers having a complete inventory for when they utilize the Red Angus Feeder Calf Certification Program and Allied Access tags.

Teague’s experience will benefit Red Angus Membership

The Red Angus Association of America (RAAA) is pleased to announce the addition of its new member services specialist, Katie Teague. A Tennessee native, Teague will play an essential role in handling the association’s membership department. Teague was raised in Shelbyville, Tenn., where she showed and judged all species of livestock. She earned her bachelor’s degree in agricultural economics and business from the University of Tennessee and her master’s degree from Kansas State University in agricultural economics. “We are really excited to have Katie join the Red Angus team,” said Twig Marston, RAAA Chief Executive Officer. “She brings a strong agricultural background and a skill set that will be valuable in helping producers improve and operate their herds.”

As the member services specialist, Teague will work closely with DNA submission, reporting genomic merit, executing all aspects of Total Herd Reporting, handling membership education and providing services for RAAA stakeholders.

“I am excited to be involved in an industry that I truly love and where I can help producers,” Teague said. “I have been involved in several associations as a member, and it is neat to use my experiences to continue to assist producers on the association side of the industry.” Teague has previous experience working as an intern for the United States House of Representatives where she wrote constituent letters concerning the proposed 2013 Farm Bill and gave Capitol tours. She also worked in the Department of Economic Analysis for the American Farm Bureau Federation as an intern working on research, writing market reports and attending meetings throughout Washington D.C.

Teague also brings to the team some international experience. In 2012 she represented Kansas State University at the International Food and AgriMarketing Association conference in Shanghai, China. Teague may be reached by phone at (940) 387-3502 or via email at katie@redangus.org. ■ 16 American Red Angus Magazine ■ May/June 2014

Red Angus competes for beef’s “All-Around Title” by Rebecca Mettler for American Red Angus Magazine

Profitable in grass-fed, natural or conventional feeding scenarios, Red Angus-influenced calves can grow and perform with the best and hang a high-quality carcass. Take a look at these three examples of how Red Angus have become an integral part in providing an excellent beef product in conventional, grass-fed and natural programs. Meyer Natural Foods Blake W. Angell bangell@meyerfoods.com Decatur County Feed Yard

Decatur County Feed Yard is a 40,000head-capacity feedlot near Oberlin, Kan. They focus on providing ranchers with retained ownership or part-ownership opportunities. The Decatur mantra is, “You can’t manage what you don’t measure.” “We are the best in the business of getting information in the producers’ hands,” said Dan Dorn, supply development for Decatur County Feed Yard. Decatur County Feed Yard is the only feedlot in the country that gives producers easy-to-read, individual performance and carcass data.

Dorn cited that roughly 20 percent of the feedlot population is Red Angus influence.

“Red Angus brings the marbling and quality to the party,” Dorn said. “It’s a great option. Some producers don’t want to go black so it gives them another option.”

Their grid is based on Choice, Yield Grade 3 and has premiums for upper Choice and Prime and also for Angus genetics (red or black). Decatur honors the Red Angus Association of America (RAAA) Feeder Calf Certification Program (FCCP) tag as a certification of Red Angus genetics.

is at in terms of genetics and performance can lead to improvement in the future calf crops. “Genetics can move the bottom line $30 a head in just one year, and that’s return to the ranch,” Dorn said. Dorn believes that technology and genetics are moving fast and that the industry can keep improving the profit that returns to the ranch.

“Red Angus fit very well in our grid,” Dorn said. “We have a balanced grid that rewards for quality and muscle.”

Red Angus offer heterosis in a crossbreeding situation. Dorn said that by crossbreeding with Red Angus genetics a producer could hit the feedlot profit drivers if the right genetics are used. Feed efficiency is the biggest profit driver in the feedlot, said Dorn.

“In the feedlot, 35 percent of the profit driver is dry matter conversion, or feed efficiency,” he said.

Receiving valuable information back on cattle can provide a producer with the ability to gain an understanding of the herd baseline. Knowing where the herd

Strauss Brands

Beef is supplied from independently owned family farms across the U.S. that share the passion of providing a highquality, consistent and natural grass-fed beef product.

Strauss Brands Inc., is a family-owned, specialty meat company with a 76-year history providing veal and lamb, and now, grass-fed beef products nationwide near Milwaukee, Wis.

“As of late we are seeing more and more Red Angus,” said Ray Krones, livestock buyer with Strauss Brands.

Four years ago, Strauss Brands began marketing grass-fed beef. The grass-fed beef sector of Strauss Brands has grown to harvest 250 to 300 head weekly and is still growing. “Our customers range from high-end foodservice operators and chefs to conventional grocery stores such as HyVee,” said Lori Dunn, executive director of sales and marketing with Strauss Brands.

Dunn said that Strauss grass-fed beef is the highest growing category in their grocery store customers’ meat cases. Strauss Brand owners, Randy and Tim Strauss, struggled to find high-quality,

Red Angus works great in the Strauss system because the breed offers muscle and highly marbled meat, Krones said. Strauss Brands is always looking for new sources of good genetics and is willing to pay a premium for highquality cattle. “You can get top dollar for top quality cattle – we will compete for those animals,” Krones said.

Red Angus competes for beef’s “All-Around Title” Meyer Natural Foods

Meyer Natural Foods (MNF) is the largest provider of natural and organic beef products in the United States. The largest label within that organization is Meyer Natural Angus (MNA). In 2013, just over 100,000 head of Red Angus- and Angus-influence cattle were harvested for the MNA label alone, said Blake Angell, cattle buyer for Meyer Natural Foods.

Robert Meyer started MNF in the early ’90s with an acquisition of a ranch in Montana. He initially stocked the ranch with Red Angus cows. “There’s been a tie to Red Angus through the company since inception,” Angell said.

Today the ranch is used as a supplier of feeder cattle for the MNA program and is still Red Angus influenced.

Cattle must be a minimum of 50 percent Angus genetics (red or black), naturally fed and meet other specifications to be eligible for MNA. “The goal is to have cattle that have the genetic potential to provide 90-plus percent Choice-grading carcasses,” Angell said. “Red Angus does a good job at consistently providing that.”

He works closely with RAAA and promotes the FCCP. MNA is the only natural program that provides premiums for cattle enrolled in the FCCP. That’s on top of the premiums producers will receive for natural cattle.

MNA offers commercial producers who are interested in retained ownership a vast network of feeders with experience in feeding natural cattle. This provides a better outcome for the producer, said Angell. The number of RAAA Grid Master

In order for cattle to qualify for Meyer programs, they must be at least 50 percent Angus and fed naturally Awards won by producers who put cattle through the MNA program is a reflection of the value of Red Angus genetics, he said. The Red Angus Influence Though these three operations specialize in different types of cattle feeding, they all have the common goal of providing the end consumer with a satisfying beef-eating experience. Red Angus genetics have proven to be effective in giving each of the systems a high percentage of cattle that grade Choice or higher, while doing so in an efficient manner. ■

Success lies in Planning by Michael Flerchinger, CPA, The Nichols Accounting Group P.C.

Many of us have probably heard the quote by Winston Churchill, “He who fails to plan is planning to fail.” This quote has nearly turned into a cliché in groups of people who preach planning. However, like most clichés, there is a lot of truth to it.

Planning in any business – whether it be the local hardware store, the small ranch with 50 mother cows or the larger ranch with 1,000 mother cows – is of utmost importance. The only difference between these three examples is that the planning will have differing objectives and goals based on various factors such as the stage in the businesses life, the succession possibilities of the operation, and the legal and regulatory environment in which they operate. The list is endless which means there is no cookie-cutter approach to successful business planning. There are two major categories of business planning. Some may think there is a third but “shooting from the hip” or “winging it” doesn’t count as a planning strategy. Operational and strategic planning are the two major categories that must be considered. Each of these has its own subset of planning aspects, albeit in different levels of importance.

We’ve discussed the importance of strategic planning in previous columns and the basics of what that entails. Strategic planning compared to operational planning is longer term in nature and encompasses the operation as a whole, not just a certain sector of the ranch. While the goals are long term, they must be broken down into shortterm, measurable steps to reach specific milestones, bringing your operation closer to its desired state.

Strategic planning has been a term that has been in business for many decades now, but sometimes becomes overly complicated for smaller businesses, which it should not be. You’ve probably heard terms such as SWOT analysis, key performance indicators, mission plans, visions and the list continues. What’s most important about a plan of any kind is that it’s actively managed and held to a defined timeline of expectations for outcomes. It doesn’t need to be overly complicated and sometimes a third-party perspective helps remove the emotions and/or traditions that can get in the way of performance improvement. Today, we’re expanding on the basics of Operational Planning

Operational Planning Operational planning in a nutshell is defining a plan that will help the operation attain short-term goals. This operational plan can be broken into numerous parts. Depending on your operation, there may be more or there may be less, however, there are some pieces that are crucial to all plans.

• Budget Plan – Every operation should have a budget-planning process. In this process there should be a clear definition of who is responsible for what is in the budget. Who sets the budget? Who monitors the budget and who do they report to when adjustments are necessary? There needs to be input in the budget for all those who are involved in the process. Additionally, how is financial information reported and shared? Do you have the right data systems in place to provide the necessary information to make informed business decisions?

• Production Plan – The production plan involves management of the cattle and how they will be raised to the point of sale to maximize the profit on those animals. Depending on your operation this plan will be more or less complex. A larger ranch with multiple revenue sources will likely have a much more complex production plan.

• Marketing Plan – The marketing plan ultimately outlines how, where and when your products will be sold. There should be some flexibility in your marketing plan so you can maximize the price you get for your products. Your initial marketing plan may call for your calves to be sold right after weaning, however, maybe market forces are such that it makes sense to wait two or three months and hold those calves to hit a higher market price. Your marketing plan should involve these types of analyses to ensure likely possibilities have been considered. Marketing plans are worth nothing if it’s simply based on “how we’ve always done it.” There will be some crossover in your operational and strategic planning. This should be expected because the attainment of strategic planning goals is based on attainment of operational goals. Further, your strategic planning will be the foundation for how you develop your operational plans. Most importantly, discussions of strategic and operational plans are worthless until they have been properly documented, agreed upon by key personnel, and an implementation plan is part of the design. Your ranch’s long-term sustainability success lies in planning. ■

Finding the beef-market niche by Jennie Rucker for American Red Angus Magazine

Making the most of his farm and his pastures has given Sam Dobson of Statesville, N.C., a leading role in marketing beef to the modern consumer. Dobson is the youngest of nine generations to be farming his family land. His great-grandfather started a dairy back in 1930 and it is still the major operation on the farm. Dobson was studying political science at Appalachian State University but returned to the farm in 2001 after the dynamics of his family made it where he was needed back home. Dobson said that it took him about 30 seconds to make the decision to return to the family farm.

Since becoming fulltime on the farm, he has made some major changes such as certifying the dairy as organic through Organic Valley. They were already practicing intense grazing for years, a major requirement for organic dairies, so Dobson felt that the time was right for that change.

The steer standing behind Dobson is nearing his finishing weight.

Nut Gap Meats, and was the very first person in North Carolina to get his meat handler’s license.

Their friendship has grown into a working relationship and Dobson is now the livestock coordinator and production consultant for Hickory Nut Gap Meats. Grazing cattle for the company has become the niche market that Dobson was looking for.

During his years at college, he had also been able to see a different type of people – city folk that were far removed from life on the land but wanted to know what went into their food. He believes this is the way of the future for agriculture.

Red Angus Add Consistency Dobson said they first started out with all kinds of cattle but the company is now looking for more uniformity. “We want the size of that ribeye to be consistent,” explained Dobson. They grazed some Red Angus years ago and really liked the carcass quality. Now the cattle are predominantly Red and Black Angus, both purebred and crossbred. The carcass quality is excellent and they finish entirely on grass.

It was during this time that Dobson attended an Agricultural Leadership Development Course and there he met another student, Jamie Ager from Asheville, N.C. Ager owns one of the biggest grass-fed beef, pork and poultry companies in the state, Hickory

To Expand or Diversify? Dobson sensed that the farm was at a crossroads and he needed to diversify or do a major expansion of the dairy. He didn’t want to expand from milking 95 head to 500 so he looked for other ways to increase farm income.

They have been purchasing steers for more than six years from several Red Angus producers, most recently from Ronnie Holman of Hard Rock Cattle in Granite Falls, N.C. This year Dobson will be grazing over 30 of the Holman steers that will weigh from 500 to 650 pounds when they go onto Dobson’s pastures.

Finding the beef-market niche

Whole Foods and some is sold through buying clubs where a customer signs up to purchase certain cuts of beef.

A buyer from Chipotle Mexican Grill was on the farm recently to look into how the cattle were raised and treated before they contracted to become a beef buyer. “This is the way of the future and we need to understand and adapt to what our customers want,” said Dobson. Red Angus Are Economical Grazers The cattle are grazed on fescue pastures then given a boost of good grass such as orchard grass overseeded with matua and clover for a quick gain at the end. Dobson runs one steer per acre. The target weight is 1,100 pounds when they are finished and the moderate frame size of the Red Angus is just right for that finishing weight. The genetics, carcass quality and coat color of the Red Angus breed are an excellent combination for the grass-fed beef business. “The Red Angus are out eating when the black ones are still in the woods. They are much more heat tolerant,” said Dobson. “I also look at how cattle do over the winter and Red Angus tend to winter well. You can graze cattle more economically if they don’t lose weight over the winter.”

As livestock coordinator, Dobson seeks producers that will custom graze for Hickory Nut Gap Meats. They now graze steers in the mountains of Ashe County and down in South Carolina and Georgia. Throughout the year, the cattle are taken where the grass is optimal for the season. They spend the winter grazing in South Carolina and Georgia and the summer grazing in the mountains of North Carolina. The animals perform better and it is more

Charlie Thomas runs a birth-to-slaughter operation, finishing the steers in his own feedlot. economical for them to harvest the grass when and where it is growing the best.

“Everyone’s goal is to make a living, and efficiency in farming is the key. Grass is the cheapest feed source available as long as the cattle themselves harvest it,” stated Dobson. “Agriculture is changing right now. You are going to have to put yourself in some category or niche to survive, and we need to become more efficient in all our programs.”

Red Angus Excel in the Feedlot Red Angus cattle not only perform well in a grass-fed operation, but also directly in the feedlot. Just 30 minutes from where Sam Dobson lives, Charlie Thomas feeds out 25 to 30 steers each year in his feedlot in WinstonSalem, N.C. These are home-grown steers that Thomas takes from birth to slaughter. Thomas raises both purebred and commercial cattle but his herd is mainly Simmental and Red Angus.

38 American Red Angus Magazine ■ May/June 2014

About 75 percent of the feedlot steers are Red Angus influenced. They are finished on grain that Thomas produces on the farm. He finishes them at 18 to 20 months of age and shoots for a 600-pound carcass.

Thomas saw the benefit of adding Red Angus genetics to his commercial Simmental herd more than 10 years ago. Red Angus had good carcass quality, good dispositions and they cleaned up the horns and spots on his Simmental cattle. The cattle are also finishing at an earlier age since he added Red Angus genetics. The Red Angus carcasses were grading Choice so it was a complete win-win situation for Thomas to add them to his freezer-beef operation. Thomas has a list of people that want beef and that list continues to grow as word spreads about the quality of his home-grown beef. The people around the WinstonSalem area are interested in supporting local farmers producing good local food. Thomas said that the abattoir he works with vacuum packages

Finding the beef-market niche

Genetics, carcass quality and coat color make Red Angus ideal for the grass-fed beef market niche. the beef, which is what the customers wanted. He said that if he had the time, he could easily sell beef at the farmers’ markets but that is very time consuming for a fulltime farmer. He prefers to sell halves and quarters to his customers but he does have his meat handler’s license so he is able to deliver beef to buyers. Ensuring Consumer Satisfaction Dobson is also working toward producing cattle from birth to slaughter right on his farm. He plans to get from 80 to 100 mamma cows and raise his own steers for grass-fed beef. The dairy still provides the cash flow but he is setting up for a longrange future business with this plan.

Whole Foods is very interested in buying cattle that can be certified birth-to-slaughter right on the farm. Since he is already producing beef that is Global Animal Partnership (GAP) certified, Dobson fully understands what a third-party audit means.

Any beef produced under the Hickory Nut Gap Meats label is certified under Step 4 of the GAP certification. Being certified by GAP assures customers that the product is safe and

40 American Red Angus Magazine n May/June 2014

has been raised, prepared and handled by safe and humane practices.

“It is aggravating to have to deal with a third-party audit but it is the future. Consumers are watching us closely now,” Dobson said. “GAP even regulates how many hours animals can stay on a trailer.” He purchases steers from within the state and keeps them local. Many of the large retailers now require GAP certification and Dobson feels that it will increase as time goes by. There are only 640 beef cattle producers in the nation that are Step 4 certified, and even less pork and poultry producers, so cattle grazing under the Hickory Nut Gap Meats program are in demand to discriminating consumers.

Producers like Sam Dobson are rare, and farmers taking animals from birth to slaughter like Charlie Thomas are also uncommon. These cattlemen have found their niche in the beef market and Red Angus genetics are helping them to provide safe, delicious beef to the satisfaction of the consumer, because, as Dobson said, “At the end of the day, they better enjoy what they are eating or they won’t be back.” n
