Take the Holiday Light Tour around Durham

From now until the first week in January, a community display of holiday cheer can be found scattered throughout the town of Durham. According to Brian Medeiros, Recreation Director at the Town of Durham Recreation, the Holiday Home Light Tour began several years ago in an attempt to spread some seasonal cheer when people weren’t able to gather in-person through the trying times of COVID-19. This year, nearly 20 houses across Durham are participating in the festive holiday event. “The Recreation Commit-

tee is just excited to get people to join together and have a little fun, and there’s no better way than to spread some holiday cheer,” Medeiros said. Taking the tour is simple. Those interested can visit the Town of Durham Recreation Facebook page, on which there is a map with several dots. Those dots indicate the locations of each home that’s participating. Then, all one needs to do is pack up themselves or the entire family and drive from house to house, following the map the entire way. None of the home decors are judged. Adopting a pet for a loved one may seem like a great gift idea, but before doing so, it’s important to consider why the holiday season may not be the right time.

We are a few days away from Christmas, but the lights on Durham’s official community tree have been shining brightly for the month of December. The annual tree lighting, sponsored by the Recreation Committee, was a day of fun, from Herzig Family Tree Farm providing Santa a ride to the festivities, to Tim Fisher and his band providing beautiful music, and Paper House caroling!

Dealing with the storms of the winter season

As I write this we are in the middle of a humdinger of a storm, the second one in a week. I have not been enjoying either one of them.

Really inclement weather just freaks me out. I will worry about an upcoming storm, whether it be rain or snow, ceaselessly. Which makes no sense, I know, because there is not a darn thing I can do about it, other than fill jugs with water. I have yet to learn how to stop the winds in its tracks. When the storm comes I’m even more of a mess. It’s the power outage thing and the sump pump thing that has my knickers in a knot. I get the lowdown on when we can look forward to the storm ending, and then I have my countdown. I constantly check the time. How much longer? Are we almost done with this? This one is slated to last all day. Oh, Lordy! I’ll just hunker down and dream of a better day tomorrow. Meanwhile, I am happy to announce that my sump pump is still behaving. On, off, on, off, just like it’s supposed to. Music to my ears! I’ve learned to thank the heavens for the small and the big miracles. This is one of the big ones, I would say.

Step back in time with Christmas goose recipe The holiday season is a sentimental time of year. Nostalgia for past holiday seasons and excitement about what's to come make this a particularly special time of year for millions of people across the globe. It's not uncommon for Christmas celebrants to include a little history in their decorations and celebrations each year. Some families may read Charles Dickens' early Victorian novella A Christmas Carol together before watching one of the many film adaptations of the beloved story. Many popular Christmas carols also date back to the nineteenth century if not earlier, adding another degree of nostalgia to the season. Even food can add a touch of the sentimental to Christmas celebrations. This year, holiday hosts can create some nostalgia around the Christmas dinner table by serving this recipe for "Roasted Christmas Goose" courtesy of the Food Network and Mark Slawson of the The Wort Ho- Basting Syrup tel in Jackson, Wyoming. n 1/3 cup corn syrup Roasted Christmas Goose n 1/3 cup cane syrup Yields 6 to 8 servings n 1/3 cup melted butter n 1 14- to 16-pound goose n 1/4 cup sea salt

1. Place goose in a large pot. Add water to cover and stir

in the sea salt. Refrigerate overnight. 2. Preheat oven to 450 degrees F. 3. Remove goose from water and drain well. Remove all innards and trim excess fat from the tail. Rub inside cavity with lemon juice. Place apple, potato, orange and celery inside the body cavity. Truss the bird like a turkey. 4. Place the goose in the preheated 450 degree F oven. Reduce oven temperature to 350 degrees F. Cook 20 to 25 minutes per pound. Baste the goose every half hour with the Basting Syrup. 5. Carve goose and serve with Stuffing and Cumberland sauce. Basting Syrup: 6. Mix all ingredients togeth-

er in a small bowl. Stuffing: 7. Preheat oven to 350 degrees F. 8. Coarsely chop the chestnuts and put in a large bowl. Add the stuffing mix, raisins, celery, apple, onion and salt and pepper. Toss to combine. Pour in the chicken stock, butter and cream and mix until evenly moistened. 9. Transfer to a baking dish and bake until the top is browned and crisp, about 1 hour. Cumberland Sauce: 10. In a saucepan, combine the stock, port, vinegar, shallots, peppercorns and orange juice. Bring to a boil, cook until reduced by 2/3, about 25 minutes. Strain and refrigerate. Serve cold over roast goose.

“In about two weeks, we’re going to have the biggest tax cut in the history of the state,” Lamont told the chamber audience. “It sends a signal.
