A Fall Wedding

Jennifer Diaz, Sr. Program Coordinator, Dean’s Office - Facilities, shares a family picture from her brother-in-law’s wedding. The couple tied the knot on November 13th. Lee is a RBS Class of 2013 Alum who majored in Finance and Management Information Systems and is now a Financial Analyst at Prudential. His wife, Regine, is an Account Manager at KKR.

Holiday Concert

Jia Ren, Assistant Dean, Accrediation and Assessment, shares a photo of her children’s Holiday Concert. “After almost two years, the in-person concert was held at school. What an amazing feeling it was to get back to playing live music once again! Although the audience capacity is limited and masks are required, the school concert was live-streamed to everyone who was not at the concert. Pajama Drive Success

Thanks to the generosity of RBS, the Dean’s Staff Advisory Committee and pajama.org were able to collect near one hundred books and pajamas to support orphaned and fostered children throughout the state.

SWEET DREAMS New Pajama and New Book Drive

Donations go to Orphaned and Foster Children (though age 18) throughout the State of New Jersey. All sizes are welcome-infant through adult. Warm your hearts and others. What’s more comforting than a snuggly pair of P.J.’s and a book?

Aunt Bette’s Brownies

Shared by Marla Shachtman, Program Coordinator, Marketing Department “These are your typical, chocolatey, chewy, gooey brownies. Nothing fancy or trendy; just a good old-fashioned brownie.” - Marla

Ingredients:

• 4 ounces unsweetened chocolate • ¾ Cup butter • 2 Cups white sugar • 3 eggs • 1 tsp vanilla extract • 1 Cup flour • ¼ tsp salt • 1 cup chopped nuts and/or chocolate chips, if desired.

Instructions

1. Preheat oven to 350 degrees. 2. Line a 9 x 13 inch baking pan with parchment or foil (allow overhang to pull brownies out of pan later). 3. Grease the lined pan with melted butter or oil spray. 4. Melt chocolate and butter over low heat until mixed. Do not let it burn. (If chocolate gets scorched, throw it away and start again. There is no saving it.) 5. Remove from heat and add in sugar, eggs and vanilla. Mix well. 6. Add in the flour and salt and stir until combined. 7. Add chopped nuts and/or chips, if using them. 8. Bake for 28 to 30 minutes. 9. Let cool completely before cutting.

Pro tips: For thicker, chewier brownies, bake in an 8 or 9 inch square pan instead. Lower oven temperature to 300 degrees and bake for 35 to 40 minutes.

If you double the recipe (always a good idea), use the 9 x 13 inch pan, set oven to 325, and bake longer; start checking at 45-50 minutes, but it might take up to an hour.
