If you like rib eyes, and you like eating mushrooms then you’re sure to enjoy this take on the classic roast, carrots and potatoes dinner. Each season Oklahoma provides windows to harvest edible delights from natures bounty. Spring brings the elusive morel mushroom to the table. INGREDIENTS

1. Whole Beef Rib Roast 2. 15 Large Freshly Picked Morels 3. 8 New Potatoes 4. Olive Oil 5. Cracked Black Pepper 6. Cracked Smoked Sea Salt

DIRECTIONS

1. Gather at least 15 large morels prior to prepping meal. 2. Wash and clean mushrooms and remove all stems set aside. 3. Chop the stems and mushrooms that aren’t in good shape for topping. 4. Suttee cut mushroom pieces in olive oil, set aside. 5. Cut your potatoes in half and season with salt, pepper, oil. 6. Season your entire rib roast rub down with olive oil. 7. Prepare your grill to the hottest temp. 8. Sear roast on all sides with high heat, creating deep, defined grill marks and remove. 9. Place seared roast into roasting pan, add potatoes, mushrooms, and topping. 10. Cook to desired doneness but long enough to ensure potatoes are done, add a bagged Caesar salad for greenery.
