Opal the Turkey

Solo the goat arrived here in 2017 at the golden age of ten, transferred from another sanctuary. His journey to safety began long before that. As a youngster, Solo had been thrown from a truck, shattering his back leg—an injury so severe it

ultimately required amputation. Despite everything, he grew into the gentlest soul.

At Healing River Ranch sanctuary, Solo lived alongside Ivy and Daisy the pigs, but his soft nature made him an easy target for bullying. Around that same time, Opal the turkey had lost all her flock mates and was grieving deeply. She needed companionship, safety, and calm.

We created a new habitat with access to the outdoors so Solo could move in with Opal. What followed was a quiet miracle— an accepting, tender friendship that transcended species. They became inseparable, offering one another comfort and peace.

As the years passed, arthritis slowly took its toll on Solo’s body. When the time came, he was wrapped in love, Opal by his side,

kind hearts surrounding him, gentle words whispered as he was lovingly assisted over the Rainbow Bridge.

Opal never truly recovered from the loss of her best friend. She became aggressive and would not accept another companion. Knowing isolation was not an option, we adapted—dividing her habitat so she could still benefit from nearby companionship without the stress of direct interaction. We also gave her a stuffed toy, which continues to bring her comfort.

This is the quiet work we do every day—listening closely, honoring individual needs, and adapting environments so each animal can live and grieve in the way that is right for them. Love leaves an imprint. Grief does too. Solo and Opal taught us just how profound and enduring those bonds can be.

Prescott's 'First Citizen'— Part 2

Last month, we began the story of Pauline Weaver, “Prescott’s First Citizen.” Weaver joined the Union army when the Civil War broke out and served as chief of scouts for Colonel James Carleton’s “California Column” as it attempted to wrest control of the Arizona Territory from the Confederates.

A skirmish at Stanwix Station between rebel Captain Sherod Hunter’s Arizona Rangers and Union men, together with the more violent firefight at Picacho Peak, 50 miles northwest of Tucson in April 1863, were the westernmost military encounters of the entire war. Weaver was in both engagements.

His prospecting talents were tested as he traveled through the Superstition Mountains east of Phoenix. A 1,000-foot granite stalagmite is named for the intrepid scout.

A generation later German immigrant Jacob Waltz is said to have uncovered a vein of gold once mined by Apache Indians. Waltz supposedly carried several sacks of pure gold into an assay office in east Phoenix over several weeks but would never divulge the location of his mine. The story is that at 4 o’clock the shadow of the Weaver’s Needle lays directly over The Lost Dutchman’s Mine, which has never been found.

Weaver died in 1870 at Camp Verde while employed by the army as a scout. He was camped under some cottonwood trees and apparently contracted malaria and was buried in the Camp Verde cemetery.

In 1890 when Camp Verde was decommissioned, all the graves in the cemetery were relocated to the

National Cemetery in San Francisco. J.H. Lee of the American Ranch near Granite Mountain was granted the contract to move the remains. Thirty years later town fathers felt it was simply wrong for the “First Citizen of Prescott” not to be buried in Prescott.

In stepped Prescott lawyer A.H. Favour and Judge E.W. The two enlisted the help of local Boy Scouts who raised enough money to cover the reinternment on the grounds of the Governor’s mansion, where Ms. Sharlot Hall resided.

The casket apparently was even kept in her home and so the story goes she often said “Goodnight Paulino” before retiring. A bronze plaque at the entrance to the mansion marks Weaver’s final resting place.

A World of

Comfort ON ONE MENU AT SHIRLEY'S URBAN EATS

courtesy of Shirley's Urban Eats

There’s something about sitting down and perusing a menu full of your favorite dishes.

Based on the concept of the American diner, Shirley’s Urban Eats is a collection of traditional comfort foods from across the globe. From matzo ball soup, fried chicken, the Little Havana Cubano, green curry pork, Thai noodle salad and the Chinda creole chicken, it’s easy to find something you’ll love.

Shirley’s is our latest concept in 28 years of operating restaurants in Prescott. The menu represents a casual dining style with quality ingredients and simple presentations — where the flavor is the focus.

The space is small, but not intimate. It’s active, lively and full of personality. The slight urban décor stays true to the name with photography from local artists, and the space has undergone a transformation that beguiles its small footprint.

The addition of an almost secret outdoor patio allows for a variety of dining options. From the juice and full-service bar to bistro seating inside and dining al fresco, Shirley’s provides as many seating options as menu choices.

Named for my mother, the menu is full of recognizable dishes with slight updates and personal touches. I wanted to create a menu with all my favorite foods, but that you can never find in one place.

Shirley’s does that by offering recognizable staples alongside creamy chicken pate, homemade hot dogs,

serrano pickled eggs and salads such as the Goi Ga, a blend of napa and bok choy cabbage, grilled chicken and vegetables with a bright scallion dressing. But it’s the matzo ball soup, the Little Havana Cubano, and daily features of Po’ Boys, wild mushroom spaetzle and others that are the clear house favorites.

Starting with homemade chicken stock and fresh vegetables, the matzo ball soup with large matzo dumplings and roasted chicken is a perfect lunch any time of year. Joyce Farm’s “Naked” chicken from The Prescott Meat Company creates a truly tender, juicy and flavorful fried chicken dish. Pre-roasted and lightly seasoned, the dish is served with homemade scallion buttermilk biscuits and old fashioned potato salad.

While regional and international in concept, the menu holds true to my Midwest upbringing — fresh produce and quality ingredients, with simple preparations and presentations.

Some of my best memories have been created in the kitchen or over the dinner table, and each dish is a reflection of someone, a memory or an experience. Whether the mac o’ the day, kielbasa and kraut, ratatouille or the vegan shawarma, Shirley’s Urban Eats is about memories — old ones and those in the making — through sharing a meal.

Shirley’s is open for lunch Monday-Saturday, and later on Thursday-Saturday.
