Your immune system is precisely that – a system, not a single entity. To function well it requires balance and harmony. Poor diet, lack of exercise and stress, all have an effect on our immune system. Most people cannot afford “down time”. Missing work or school or re-arranging schedules is inconvenient, to say the least. Your immune system does a remarkable job of defending you against illness and disease but sometimes it may struggle. To help it function well try to adapt some of the following strategies: • Try to keep stress levels in check • Don’t smoke • Get regular exercise • Try to adapt a good sleep routine • Maintain a healthy weight • Be aware of the importance of regular health check- ups with your GP, blood pressure etc • Eat a healthy, balanced diet which includes fresh fruit and vegetables

To help maintain a healthy immune system there are some excellent natural products available in our health stores for all the family which are well worth checking out. Some of our recommendations are: IMMIFLEX CAPSULES: daily intake of immiflex will secure important nutrients for your immune health such as VIT D and BETA GLUCANS, which will serve the whole family, helping ward off poor health, minimising the negative effects of stress and increasing resistance for athletes for those who participate in vigorous physical activity. DR WOLZ RANGE OF PRODUCTS: specially formulated for overall immune health, and may help to reduce overall tiredness and fatigue COMVITA WINTER WELLNESS: if you are looking for an effective all in one formula to help support your natural defences and maintain healthy airways, then check out the comvita range of products for all the family. IMMUNE SYSTEM BIOTIX: a unique complex of aged garlic, vitamin D, selenium, zinc and copper, all contribute to the normal function of the immune system. 1 to 2 capsules daily after food. OLIVE LEAF: is antibacterial and antiviral, ideal for fighting off the dreaded winter bugs as well as helping to strengthen the immune system. Don’t forget your PROBIOTICS - a healthy gut is a healthy immune system, TerraNova and Viridian are amongst some of our most popular blends. As always we are happy to advise which products suit your particular needs. Until next time, stay healthy.

Brian Kennedy - Cancer Free and Loving Life! By Marisa Reidy

HE is one of Ireland’s most beloved singer songwriters who rose to fame well over 20 years ago with his unforgettable hit, Message In The Box. All these years later, Belfast’s favourite son Brian Kennedy is blessed to be back to top form after a gruelling cancer journey and says the experience has taught him to always trust his instincts – a message he also really wants others to heed! Now celebrating the success of his aptly-named ‘Recovery’

album and enjoying packedout gigs across the country, Brian tells Connect that his love of music began at a very young age and was somewhat of a natural progression. Despite encountering several challenges in life – from the horrific experience of growing up on Belfast’s Falls Road to being estranged from his family - Brian says that his love of music has been the one constant in his life. “My relationship with music has always been a very instinctive one. Back in the

day, there was so much mystery and magic about music. No one knew how records were made and how songs were written, as opposed to these days where everyone seems to have an album going on,” he says. “Certain songs just stopped me in my tracks like “The man with the child in his Eyes” by Kate Bush. It was almost like she was singing directly to me through the speakers. I still have that feeling now when I listen to her or Joni Mitchell and I think women in particular have that ability because they are so emotionally honest.” Asked how he first went about developing his talent, Brian says that a former teacher played a huge role - at a time when he really didn’t even realise that a career in music was a possibility. “It was a very natural journey. I never had any lessons in my life really but certainly a teacher at school told me he thought I had a voice when he heard me. Mr Seamus Ewings was his name and he was the first to encourage me,” Brian explained. “[Growing up] I hadn’t a clue what to do. I didn’t know I could be a singer for a job. I

4 | Connect Kerry |November 2019

didn’t know any others. These days it seems everyone wants to be famous, but back then no one was and ‘Top of the Pops’ seemed like the land of make believe.” While one can only imagine the horror of growing up on The Falls Road in Belfast during the one of the most notorious periods in Irish history, Brian doesn’t hold back as he recalls his first-hand experience of The Troubles. “Growing up on the Falls Road was nothing short of a nightmare. We lived in a chaotic Catholic ghetto patrolled by soldiers. It was very definitely a war and I saw people shot dead right in front of me,” he tells Connect. He did add, however, that music was his escape, telling Connect: “Music made me feel things very deeply and I was comforted very much by it as I started to grow up,” he said. The horror of life on the Falls Road, coupled with a growing detachment from his own family, saw Brian make the move to London at a very young age. Asked if the move was simply to escape Belfast and home life or to further his music career, Brian said it was ‘both really’…

Connect | Lifestyle “I had outgrown my home situation very, very early so London always had that draw because relatives prospered there and we had a long history of exile,” Brian tells Connect. “Also, the music industry was on form there and I knew I had to throw the dice and move there. I’m very glad I did. What a brave decision it was and continues to be.” While his relationship with his family has never been restored to this day, Brian says he has learned to accept that... for his own mental well being. “No bridges have been built, not really. As to why that is well that’s a whole other series of Oprah,”Brian says.“I think big families either work very well or they don’t. I was the only gay child, things like that. But I would choose estrangement over dysfunction any day of the week.” And speaking of his sexuality - while Brian being gay was clearly an issue for some members of his family, the much loved performer says that being true to himself was always most important, regardless of the consequences. “The hardest part is actually coming out to yourself. But yes, some people get it and others just don’t. This was at a time when HIV and Aids were exploding all over the world and it was a death sentence then. There was and still is, I think, a lot of prejudice and

ignorance about being gay. But you have to be your true, authentic self and that’s what I did and I don’t regret it for a second,” Brian said. Despite enjoying an amazing music career, which was kick started by music mogul Simon Fuller [Pop Idol, Spice Girls, Annie Lennox, S Club 7] – Brian’s world was turned upside down in 2016 when he was diagnosed with rectal cancer. Now, as he looks back on his gruelling battle, and thankfully his epic victory over the disease, the legendary singer says men always need to trust their instinct if they feel something isn’t right. It was, in fact, that very instinct he speaks about that led Brian to his own grim discovery. “I learned [of my cancer] because I trusted my instincts yet again. I knew something wasn’t right. I’d had some blood now and again going to the loo and at the same time my brother had been diagnosed with terminal pancreatic cancer, so I rushed for a colonoscopy and we found the initial tumour,” Brian explained. “There was a certain amount of ‘I bloody knew it’ and of course fear about the future ahead, even though I also knew we had caught it early and that rectal cancer was then and is now very treatable.” Brian admits that his treatment and recovery was brutal, but it was a necessary evil if he was to come out the other side. “It was a nine-hour surgery and incredibly difficult to recover from. I literally had to learn to walk again and become accustomed to not one, but two, stomas with bags and stuff,” Brian

6 | Connect Kerry |November 2019

explained. “I was also very allergic to the drugs and had a series of terrible nightmares. Then of course there was six months of chemo, which was the most exhausted I’ve ever been in my life but I got through it all.” Amazingly, Brian’s recovery process was a huge source of inspiration for him – during which he continued to perform, once with a ‘bottle of chemo on stage’ – and allowed him to write ‘The Recovery Album.’ “I was determined to document this time of recovery and what better way than to write songs about it and sing them even though I was in the middle of gruelling chemo. My producer and I came up with songs that I’m extremely proud of. The art work is selfies I took before and after the surgery and there’s even a picture of my tumour on the inside,” Brian reveals. Excitedly telling Connect that he is now cancer free and feeling great, Brian admits that being back to full health is a truly wonderful feeling.

“Although I never really stopped, my energy is so much better now and I’m adoring all the fans who share their cancer journeys with me now as I talk about everything between songs. I get messages all the time of encouragement and of course tragic losses too. “ Asked if he had any advice for men who may be worried or concerned about their health, Brian was adamant that they trust their gut! “I always say to men to get checked and get double checked even if their GP says otherwise. That was my experience. If something is found early enough then it is treatable, usually,” he said. “Trust your instinct and don’t be afraid to get a second or even a third opinion. Having stomas is not the end of anything either, in fact they have surprising benefits and I’m living a very full wonderful life. Brian’s Recovery album is now on sale and a list of upcoming gigs can be found on his website: www. briankennedy.co.uk

By Marisa Reidy ANYONE who works in, shops in or simply visits Tralee on a regular basis is undoubtedly familiar with the bustling business that is Rock Street Post Office. Although small in size, it has at its core the invaluable family values that have been instilled by the Collins and Williams families since it first opened its door in 1961. At the helm for the past 28 years are Marie and Martin Williams, who took over the running of the busy business back in 1991, a few short years after Marie’s mother Frances passed away and her father Ted subsequently retired. Today, Marie and Martin are rightfully proud of having continued the family business and watched it grow to the bustling little postal hub it has become. Marie tells Connect that having gown up behind the counter - helping her parents run the business along with her brothers taking over the helm seemed like a natural progression. You only have to speak to Marie for a matter of minutes to know that she absolutely loves what she does – despite the obvious challenges with come with being a post mistress of a sub post office in the modern era. It’s because Rock Street Post Office has such a loyal customer base, as well as staff who know and care about those customers, that the success story is continuing all

these years later. While many rural post offices are closing their doors, Rock Street PO is bucking the trend and Marie and Martin are happy to be part of it all! Marie explained that when her father decided to step back from the business, she and Martin had to make a very important decision about their future... “We had been running the Bon Bon Newsagents next to the post office at the time, which we had taken over shortly after getting married,” she explained. “We had grown up in the post office and all the family had been working there at some point, so it seemed like the natural next step. Saying that though, it was a huge challenge for us because it was one thing working there in the past, but now we had all the responsibility.” Despite that responsibility, it was a decision that they would savour, Marie says, and one which has seen them make so many friends along the way. “Our customers are just so lovely and over the years we have got to know them all so well. It’s like one happy family,” she says with a massive smile. “There are so many great characters and we have some great craic, which I suppose is the benefit of us being there for so long. We really know our customers and can nearly tell who’s going to walk in the door, and when. We get to know them and their families

10 | Connect Kerry |November 2019

and it’s lovely.” It’s that genuine sense of friendship and camaraderie that Marie and Martin pride themselves on, with Marie telling Connect that it’s much more than just a ‘post office’ per say. “I suppose what’s key to our relationship with our customers is that we always try to give them that extra special personal touch,” Marie explained. “We do whatever we can to help them, especially if it’s something they can’t do themselves or need help with. We just want to make sure they are ok.” This unique relationship with their customers also means they keep an eye out for them and their well being, which Marie says is hugely important. “Some customers are like creatures of habit. We know when they’ll be in – what day and almost what time in a lot of cases. So if we don’t see them for a few days or whatever, then we can ask friends or family to make sure they’re ok,” Marie explained. Also key to the success of the business, Marie says, is the wonderful staff who have made such a wonderful contribution over the years. “We have been very lucky with the great staff we have employed down through the years and our children Nigel, Shauna, Aisling and Richard, all following the tradition, and of course Mary Ryle who has been with us a long time now,” Marie said.

Connect | Lifestyle But just like many other business these days, post offices in general are facing many challenges, Marie explained our dear friend ‘the internet’ being the biggest culprit. Marie says that what many people don’t realise is that sub post office postmasters are paid per transaction, which means human interaction is key to their success! “A lot of people are not aware that we are paid per transaction, so obviously the more people we have coming into the post offices to carry out their business the better,” Marie explained. “Unfortunately, human interaction is diminishing and a lot of people are moving to online banking, having their wages paid into their banks and their bills paid by direct debit, so of course that is putting a strain on the post office network.” And that’s the reason why so many rural post offices closed their doors over the past few years – a trend which Marie found particularly upsetting. “While it hasn’t affected us directly, thankfully, seeing some of the smaller rural post offices close was a real shame as they were the lifeblood of the community for some people. Especially the elderly who maybe can’t drive or who saw the post office as the only place they could meet people,” Marie said. Asked what measures are needed to ensure the future success of post offices like Rock Street, Marie - who is an executive member of the Irish Postmasters Union said the solution is twofold:

12 | Connect Kerry |November 2019

Firstly, as she previously explained, people need to be made aware that sub post office owners are paid on a ‘pertransaction’ basis and so need make a conscious decision to use the service more. Secondly, the government has to take some of the responsibility too... “We are looking for more government services to be offered to the post office network, such as motor tax, Department of Education exam fees, Drivers’ Licence, Department of Agriculture fees just to name a few. At the moment, social welfare

and pensions make up the majority of our business, but even that is shifting a little as it is sometimes now paid into people’ bank accounts and their bills are then paid by direct debit.” While Marie will continue to vigorously represent the sub post office network at national level through her position on the executive council, she says the local community can also do their bit by supporting their local post office more. Luckily, she and Martin have been blessed with great staff and a wonderfully loyal customer base, which the couple hopes will continue for a long time to come.

THEIR STORY SO FAR.....

Mother and daughter team Frances and Maureen McCarty are the well-known faces behind the success story that is Tralee’s Brush & Blush hair and beauty salon. We chat to the pair about how their dream became a reality, what makes their relationship work and what lies ahead for their thriving business.... Tell us a little about yourself, outside of work: Maureen: Apart from working with my mom , I would be very close to all my family which includes my dad Gerard, older brother Ger and younger brother Des. I adore my dog Fred and love walking him in Fenit where I am from. If ‘m not working I’m usually socialising or shopping! Frances: I moved from Tipperary to Kerry 28 years ago and live in Fenit with my husband Ger from Kilfenora and three children. I’m also big into the GAA – the hurling and football – and of course I like to go up home to visit my family as much as I can. We don’t really have much time for anything else! Tell us about your background, career-wise: M: I left school before doing my Leaving Cert and went straight in to hairdressing at the Irish College of Hairdressing in Killarney. I use to work the weekends with my mom in the shed at the side of our house and half way through my training my mom broke her arm so I had to go nearly full time with her. After the course in Killarney finished I continued on up-skilling with someone of the top hair dressers in the county including David Campbell, Alan Keville, Alex Keville and also world renowned Sophia Hilton and Sharon Blane. I did a Masters in colour with Wella and graduated with a distinction. Over the past few years I have won a variety of awards for wedding hair, colouring and business awards. I suppose, dropping out of school made me extra determined to be successful I always add that extra bit of pressure to myself.

F: I always wanted to be a hairdresser. I was born in Coventry and I remember I used to go down to the hairdressers with my mother when she was getting her hair cut. I remember they would be really busy and I really long thick hair to cut so I’d say, no I’ll wait ‘til he’s ready mom - and I’d happily sit there all day long, watching. So since I was really young I always wanted to be a hairdresser and that never really changed. I love it. Whose idea was it to open a salon together? M: I suppose we hadn’t planned on going into business together so soon after me qualifying but mom had broken her arm and when she was back we had built up a clientele together so fast that it just seemed like the natural thing to do. It was a big step for mom to move from the shed to open a salon in town but she was almost a wasted talent at home. She had so much left to offer in hair and business and has been an incredible mentor to many girls she has employed over the last few years, including myself.

F: I started in Cut & Curl in Limerick working for Joe Moynihan, who I did most of my training with. I was also with john Sheehan in Limerick for about a year. I finished my training with Joe and went out to work in Ballina where I opened my first place, where I was until I came to Kerry. I went working for Peter Marks and then I met Ger, had the lads and started working from the house first and then from a cabin at the side of the house. Maureen meanwhile went off and did her training in Killarney and then came back working with me. It got so busy that we decided to take a shop that was for rent in Caherane, but when that got too busy so nearly four years later we started looking for a place down town. And now, this Christmas we’ll be two years here.

F: Well it was a case of Maureen moving on and us splitting up, because the cabin wasn’t big enough for the two of us, but we felt we kinda had a good thing going. People liked the ‘younger and older’ aspect to it, so we said ‘look we’ll try it’.

Was this always the career you had envisaged for yourself or Did you have other plans? M: For as long as I can remember, I always wanted to be a hairdresser. I never really thought of the business side of things at the start, but the older I got the more I took an interest in it and went on courses to educate myself further on running a business. But ya, since I was small I was chopping my Barbies’ hair.

F: They were all really supportive. To be fair, my husband and the two boys have been a great support, and Eamon a friend of ours from Fenit has been fantastic, helping us do up both places – so they have all been a great help and without them we couldn’t have done it.

16 Kerry | November 2019 16 | |C Connect onnect Kerry |November 2019

What did the rest of the family/friends think of the idea? M: Naturally they were nervous for us but we are lucky enough to have family and friends that support us in everything we do. My poor dad is the unsung hero of the salon collecting rubbish and fixing sinks. He can’t catch a break with us.

Who came up with the name for the salon? M: The name was all mom! We were having a lie in one Monday morning drinking cups of tea trying to pick a name. We had some laugh trying to pick one. What is the best part of working as a mother/daughter team? M: Being the only daughter, I would have always been close to my mom so being able to share all these moments with her is precious and when things are difficult she always has my back and has the best advice. F: For me, honestly, it’s seeing how Maureen has grown and changed and how she has come on. For a mother that’s fantastic. On the flip side of that, what are the biggest challenges working alongside each other? M: Obviously it’s hard working with family, but we actually work quiet well together. I suppose when we clash it’s probably because we are so alike. F: No matter what partnership you have there are going to be days when you don’t agree, but to be fair my main challenge is to try not to be the mother and try not to take too much charge, because Maureen is every bit the boss as I am. So I need to be conscious of not being overpowering and being ‘the mother.’ What do you think the other person brings most to the business? M: I think my mom brings a wealth of experience. I will always take her advice or opinion on board because, as she says, she has probably seen it or done it before! F: Maureen brings a coolness, whereas I would be a bit more highly strung. I can work under pressure, yes, but Maureen cools things down, so we kind of complement each other. In this business, you have to continually keep up with trends and the changing demands of your clients? How do you do that? M: Going to different courses, seminars or guest artist days which are mostly in Dublin - and now Instagram and Pinterest are great too. F: An awful lot of training is involved and the girls are always off to something. Christine our manager has just finished the MCP (Masters in colour), so that’s the highest you can do. There’s never a week that someone isn’t going to something or there’s someone coming in to train. What is your greatest career achievement to date? M: I suppose for me my biggest achievements are seeing brides so happy on their wedding day and making women feel good about themselves every day. It’s a great feeling to make someone else happy. F: I know it sounds a bit...meh.. but my biggest achievement to date would be seeing what I have done for other girls. I see some of the girls here and how well they’ve come on and even girls who have gone on and left us... and I think that’s the best thing when you can hand that on and someone else can do it – and do it better than you!

18 | Connect Kerry | November 2019 18 | Connect Kerry |November 2019

How does it make you feel to have built up such a great business together? M: It’s very special to have done it together and I’m very grateful for the support my mom has given me over the years. She always puts me first. F: Obviously I’m ecstatic, but very humbled by all the help we have received along the way from so many people. Since we were outside in the cabin to now, people have been amazing and we have some very loyal customers who have followed us, without whom we wouldn’t have anything. That’s been fantastic. What does the future hold for Brush n Blush? Are there any plans you’d like to share with us? M: In November we plan on opening our next Brush n Blush in Ballina/Killaloe Co. Tipperary so it’s very busy at the moment! I plan on working Tuesday & Wednesday in Tralee and Thursday Friday Saturday in Ballina. F: My sister will also be going in there [new shop] with Maureen and we hope to be a lot more training as well. Maureen is going to be focussing a lot more on the wedding market and it will be completely different to here. Apart from that, we’re hoping to get into the education side of things a lot more as we’ve both trained in that area and would like to do more of that.

Glazed Roast Ham

Traditional Christmas Ham - 2 Choices The finest Honey Mustard and Treacle glazed ham

Always best to soak the ham the night before, just suberge in cold water ,will take the saltiness away! Discard water after soaking - Heat oven to 180C/fan 160C/gas 4. Place the ham, skin-side up, in a deep roasting tin, then add enough water to cover the base of the tin. Scatter the orange wedges and cinnamon stick around. Cover the pan with a tight tent of foil, then cook the ham for about 2½ hrs. (If using a different weight of ham, you want 20 mins per 450g.) - While the ham is cooking, mix the mustard, treacle and orange zest together and honey with enough orange juice to make a mixture loose enough to paint over the ham.

When the ham has had its time, remove the roasting tin from the oven and turn up the heat to 220C/ fan 200C/gas 7. Remove the foil, leave the ham until cool enough to handle, take the first layer of fat away from the ham ,will peel off easily , then pour away any liquid in the tin. Using a sharp knife, carefully cut away the skin to leave an even layer of fat. Use the tip of the knife to score the ham fat diagonally at 3cm intervals – first in one direction, then the other, to produce a diamond pattern. Liberally paint the glaze over the fat, then stud with the cloves at the points of the diamond shapes. Roast the ham for 30 mins until glazed and just beginning to char around the edges. Leave to cool and serve warm or cold, decorated with the bay and orange wedges, if you like, along with my delicious cranberry favourite chutney.

Ingredients

3½ -4kg/7lb 10oz-9lb boned rolled piece unsmoked ham 2 oranges 1 cut into wedges and finely grated zest and juice of the other 1 cinnamon stick, ground giner 2 tbsp English mustard 100g black treacle 100g Honey handful cloves big bunch bay leaves and orange segments, to serve (optional) 100g light muscovado sugar 100ml orange juice, fresh or from a carton lemonzest fromi lemon All optional , add a few spives for flavor i use ,cardamon pod, ginger, clove bay leaf 250g pack fresh or frozen cranberry Method Tip the sugar and orange juice into a pan with spices, then bring to the boil. Stir in the cranberries, then simmer until tender but still holding their shape – this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh. The sauce will thicken as it cools. Will keep in the fridge for 1 week. On the day, bring to room temperature before serving.

The Magic of choosing a Real tree is timeless, make it part of your Christmas

Paudie and Samantha Sugrue at Belfield Christmas Trees are passionate about their business. Choosing one of our real trees is about creating a memory and a tradition for families. Is it their wonderful smell, beautiful foliage, unique shape or your decorative style that makes it worlds apart from an artificial tree? Some of the foliage is used by Samantha to create Table centres, Wreaths, and Seasonal Arrangements. Over the last four years they have made great efforts to protect the environment by using chicken pellets as fertilizer and introducing Shropshire sheep to keep the grass and weeds under control thus avoiding the use of weed killers. All trees sold are 100% locally produced and are replaced the following spring on our farm. Real Christmas trees contribute significantly to the atmosphere – removing carbon dioxide and producing oxygen as well as creating a habitat for many native animals. They are taking actions to help strengthen biodiversity on their farm such as planting wild flower seeds. Ladybirds, Wasps, Lacewings, Bees and small birds such as wrens are most welcome in their plantation as they are a natural way of protecting the trees from harmful pests. We invite you to our farm walk on Saturday 10th November from 11am to 1pm Check our Facebook page for details

Roast Turkey

COOKING GUIDE 2

4½ -5.6kg/10-12lb Bronze turkey giblets removed 1 onion quartered, lemons and oranges 1 quantity of stuffing simple apricot and chestnut is what I would use 85g butter , softened 1 whole nutmeg10 rashers streaky bacon glass red wine, such as Merlot Method 1. Heat oven to 190C/fan 170C/gas 5. Put the onion and a large sprig of bay in the cavity between the legs. Now pack half the stuffing into the neck end, pushing it towards the breast. Secure the neck skin in position with skewers and tie the turkey legs together at the top of the drumsticks to give a neat shape. 2. Weigh the turkey and calculate cooking time at 20 mins per kilo, plus 90 mins. 3. Put a large sheet of extra-wide foil in a large roasting tin, then put the turkey on top. stuff the chopp citrus into the cavity , Smear the breast with the butter,if your brave enough righ under the skin grate over half the nutmeg and season well. Cover the breast with bacon, pour over the wine, then loosely bring up the foil and seal well to make a parcel. 4. Roast in the oven, then 90 mins before the end of cooking, open the foil, discard the bacon, and drain off excess fat from the tin. Leaving the foil open, return the turkey to the oven to brown, basting with the juices several times. Then 30 mins before the end of cooking, place pigs-in-blankets and stuffing of your choice around the turkey, or cook in a separate lightly oiled tin. 5. To test whether the turkey is cooked, push a skewer into the thickest part of the thigh – the juices should run clear. If they are pinkish, cook for 15 mins more, then test again. 6. Transfer the turkey, stuffings and pigsin-blankets to a platter, cover with foil, then a couple of tea towels and allow to rest for up to 30 mins before carving. This gives the juices time to settle back into the meat, ensuring that the turkey will be juicy. Garnish with sprigs of bay.

Chocolate Yule Role

5 medium eggs 150g light brown muscovado sugar 100g plain flour 2 tbsp cocoa 30g butter, melted 3/4 x 700g jar Opies Tragana Black Cherries with Luxardo Kirsch 200ml double cream 200g good quality chocolate drops 300ml pot Whipping Cream Icing sugar, to dust

Method

1. Preheat the oven to 190°C, gas mark 5. Grease a 26cm x 35cm shallow Swiss roll tin or baking tray and line the base and sides with baking parchment. Place the eggs and sugar in a large bowl and beat with an electric whisk for 6-8 minutes until the mixture is pale, foamy and thick enough to leave a trail on the surface when the whisk beaters are lifted. 2. Sieve the flour and cocoa over the whisked mixture. Fold in, using a large metal spoon, cutting through the mixture until all traces of flour are gone. Mix in 2 tablespoons of hot water, then the melted butter, until thoroughly combined. 3. Pour the mixture into the tin, spreading evenly into the corners. Bake for about 15-20 minutes until the cake is firm to the touch. Remove from the oven and turn out, top-side down, onto a clean sheet of baking parchment. Then, after peeling off the used baking parchment from the base of the sponge, roll up the roulade, enclosing the clean paper. Leave to cool completely. 4. Drain the cherries and set aside, reserving the kirsch. To make the ganache, pour the double cream into a heavy-based pan and heat gently until the cream is hot but not boiling, then add the chocolate. Remove from the heat and set aside for 2-3 minutes, stirring occasionally, until the chocolate has melted, then stir in 6 tablespoons of the reserved kirsch. Pour the ganache into a bowl and allow to cool, before chilling in the fridge for 1½-2 hours, stirring occasionally, until the mixture is cold and thickened. 5. When the ganache is thick enough to hold its shape when stirred, whisk the whipping cream with 2 tablespoons of the reserved kirsch until it forms soft peaks. Unroll the roulade and spread the whipped cream to within 1cm of the edge. Scatter over the reserved cherries. Carefully roll up the roulade, lifting the paper with one hand and easing the sponge into a roll with the other hand. Slide onto a flat serving plate and discard the paper. 6. Spread the ganache evenly over the roulade with a palette knife, using the blade to create a ‘bark' effect. Just before serving, decorate with chocolate garnishs and or bayleafs and stewed cranberries

Tis the Season…..

Connect | Lifestyle

Catherine’s Fashion Fix .... By Catherine Keane

It's never too early to start thinking about what you're going to wear once the Christmas party season rolls around. Tis the season to get your glam on, but for many the forthcoming rush of Christmas season can prove quite the headache. If you’re going to dress up at any time of year, the Christmas period is the perfect excuse to go as glam, sparkly and festive as you want. When December comes around there are generally more occasions that require you to up your game: dinners with family, catch-up drinks with friends, corporate events and the office Christmas party so why not reflect that in the way you dress and push the boat out a little bit. There are no set rules or dress codes to follow but, let’s face it, nobody wants to look like they are trying too hard, or indeed, not trying hard enough. After all, knowing how to showcase your personal style while simultaneously embracing the festive spirit and maintaining a sense of professionalism is a tricky line to tread. Regardless of what’s on your festive calendar, if you want to make an effort, you’re in the right place. From stylish looks for the Christmas party to what to wear for a night on the town or a Christmas day outfit, I’ve got you covered. Already, I've spotted lots of stylish pieces on the high street, set to see you through the festive season. This season is all about drama. From ruffles, feathered embellishments, through to rainbow sequins, the Christmas party season this year will see every kind of high fashion runway style made ready-to-wear. Nothing is off limits!! Now it wouldn't be a Christmas party without a sequin dress. Dresses, tops, skirts, jackets. trousers and shoes can be seen everywhere over the season. If a mini dress is your thing wear with black tights and boots to dress it down or pair it with bare legs and a killer pair of heels for major glam factor. If you love sequins but a mini dress is not for you a loose fit midi length can be really flattering and comfortable to wear and you won't have to worry about pulling it down or fixing it all night. Why not pair a sheer blouse with a sequin skirt or trousers or a sequin jacket with some skinny jeans and a cami top for a night on the town. However, don’t over-glitter. There are so many cute and sparkly options, but keep it to one piece in your outfit. Nowadays, sequin is not just for Christmas and when styled correctly can be worn all year round. 26 | Connect Kerry |November 2019

A little black dress is always in fashion, no matter what time of the year it is. We all have one black number in our wardrobe that we tend to grab for those ‘I have nothing to wear moments. But when it comes to party season, our trusty LBD can look a bit drab when placed next to the embellished and sequin styles that have taken over the high street. Granted, sequins aren’t for everyone, so if you’re keen to wear your LBD, we suggest updating it for party season with the help of some sparkly accessories. Add a pair of sequin shoes to a LBD for a festive look. For some people party dressing isn’t about sparkle. People want to make their own style statements these days, and it’s much easier to do that in the form of a trouser suit that can be worn later as separates. Pair with a sexy top or sheer pussy bow blouse for a sophisticated look. A sleek jumpsuit is another alternative for the party season. I love the Bardot style and one shouldered ruffle styles as they add a feminine touch without baring too much skin. Lace, velvet, floral and sparkly are all incredibly popular this year. So this party season don’t settle for a look that’s less than spectacular as this is your time to dazzle!!

Exercise &Wellness Hi all Áine of AfitBody Gym here again to tackle all your questions in regards to exercise and wellness.

I don’t want to get Bulky! .. Won’t I Get Bulky? This is undoubtedly the most common comment I get from women Looking to tone up and get in shape. Many of us out there still believe weights are a male thing and if we even look at a dumbbell we will end up looking like the incredible hulk. But rest assured ladies we are simply not built for that, our hormonal structure is different to that of our male counterpart. Guys develop their muscular physiques because they produce more testosterone and growth hormone, which plays a large role in increasing muscle mass and strength. Females get their curvier physiques because they produce estrogen and limited amounts of testosterone and growth hormone. In fact, most women produce less then 10% of the amount of testosterone that men produce. Unfortunately for us estrogen plays an important, and slightly annoying, role of storing fat! You need to train & Fuel very specifically to build bulk and muscle bulk. For the majority of us out there, lifting weights will give us exactly what we are looking for, toned curvy, bum’s tums and thighs, and even better still will boost our metabolism and fat burning capacity. If you looking to change your body shape or

tone up, talk to someone about creating a programme for you, doing resistance training at least 3 times a week will help you achieve this goal. And with all goals…. Consistency is key! Another fast and effective way for us overworked females is to use high intensity interval training (HIIT) or Tabata training. Essentially, HIIT consists of short intervals of all-out effort, followed by short recovery times. The great part is the workouts are very short, but very effective. Even better, these shorter workouts could have more cardiovascular benefits then long, slow aerobic exercise. Great news for busy mums trying to fit it all in. The World of Google is filled with HIIT and Tabata training ideas so get searching and try a few out. Starting this November gives you 6-7 Weeks to the sparkle season, so lets do it .. lets sparkle ! This is an excellent way to train if you are limited in the time you have for You time So this month’s homework is to do a little research on HIIT and Tabata training and simply give it a try, you won’t regret it!

Asian Zucchini Noodle Salad Recipe

Prep time: 20 minutes Yield: Serves 4 Some vegetables can be harder to digest when they are raw, like cauliflower or zucchini. So, if you are not used to eating raw zucchini, take it easy the first time, and don't eat more than a regular portion.

•3 to 4 zucchinis (1 1/2 pounds total) •1/2 teaspoon salt •1 1/2 cups thinly sliced and roughly chopped red cabbage •1 large carrot, grated (about 1 cup) •1/2 large red bell pepper, thinly sliced then cut into 1-inch segments •2 green onions, thinly sliced on the diagonal •1/2 bunch cilantro, chopped, leaves and tender stems (about 1/2 cup)

Dressing: • • • • •

1/3 cup seasoned rice vinegar* 2 Tbsp olive oil 1 1/2 teaspoons dark roasted sesame oil 1 clove garlic, minced (about 1 teaspoon) Pinch of red pepper flakes

Recovering

I mentioned recovery last month and it plays such an important role it’s no harm to talk recovery again. This isn’t just for gym bunnies, we need recovery from the daily grind. Take time out from the hustle and bustle, have a coffee, read a book, or simply sit and breathe. We wouldn’t dream of letting out phone batteries run low and die, but we can run ourselves into the ground. Its time to slow down and recharge. A healthy & happy body starts with the choices you make each and every day. Happy Trainin & Fueling!

Seasoned rice vinegar is rice vinegar that has been seasoned with salt, pepper, and sugar. If you have plain rice vinegar, you'll need to add seasoning and sugar to it. Method 1 Using a spiralizer or other spiral vegetable slicing tool, use the zucchini to make the zucchini noodles following manufacturer's directions. You should have 5 to 6 cups of "zoodles". Place in a colander set over a bowl and toss with salt. Let the noodles drain a bit of their excess moisture while you prep the other vegetables. 1. Many of the noodles are quite long, so you'll want to cut them up a bit with scissors to make them easier to toss with the other vegetables. 2. 2 Place the zucchini noodles in a large bowl. Add the cabbage, carrot, bell pepper, onions, and cilantro. 3. 3 Whisk together in a medium bowl the seasoned rice vinegar, olive oil, dark sesame oil, minced garlic, and red pepper flakes. 4. 4 Pour the dressing over the zucchini noodles and vegetables and gently toss to combine. 5. Serve immediately.

GUM HEALTH FOR A BETTER LIFE

Gum disease (periodontitis) is a silent disease affecting up to 50% of the population, with approximately 10% of people experiencing the most severe form. However, it can be prevented, and it is easily treatable if diagnosed early. Research has shown oral health is significantly linked to our general health and wellbeing and so oral hygiene is about more than simply maintaining healthy teeth and gums. Gum disease is a disease of inflammation, caused by bacteria that collects at the gum line as dental plaque. This plaque needs to be removed by brushing and cleaning between our teeth twice a day. The inflammation caused by the plaque damages the periodontal ligament and bone which supports the teeth causing the gum to come away from the tooth and pockets to form. The plaque then grows down into the pocket where it is much harder to clean. It is a slow and progressive disease that over time can cause the teeth to become wobbly and fall out. Our susceptibility to gum disease is highly variable and partly genetic. Other risk factors include: diabetes (especially poorly controlled), smoking (possibly including e-cigarettes), stress, poor diet and obesity. One of the simplest things we can look out for as a sign something may be wrong is bleeding gums. If you notice your gums are bleeding or you are worried about your oral health speak to your dentist so they can help you. The most important step in treating and preventing periodontal disease is home care and maintenance. Generally, brushing twice a day for two minutes with a small headed, medium bristled toothbrush is recommended. If you have periodontal disease you will need to spend longer. Rechargeable power (electric) toothbrushes are slightly better than manual toothbrushes, but both are effective when used correctly. Interdental brushes must be used daily between the teeth where the toothbrush cannot reach. See your dentist or hygienist for full personalised oral hygiene advice.

Red Flags One of the red flags that I referred to last month is when you are in a relationship with a partner who withholds affection if you are not behaving in a way that suits him. This is very common, where people who are unable to ask for their needs to be met, or who find it difficult to express their emotions, will withdraw, perhaps going into a sulk or becoming cold and distant, and have to be “won around” or pacified.

Kerry from Monday, October 14th until Friday, November 1st. If Lee Strand’s new 100% Renewable carton is in their fridge they will win a hamper. Plus, all finalists will be in with a chance to win €1,000 at the Lee Strand & Radio Kerry live outside broadcast in Tralee on November 2nd. Customers will also have a chance to win merchandise on Lee Strand’s social media by posting images of the new pack with the hashtag #ReMOOable. Lee Strand has a strong commitment to environmental excellence and has achieved many awards and accreditations. Nominated by the Irish National Accreditation Board (INAB) Lee Strand has represented Ireland at the European EMAS Awards (EcoManagement & Audit Scheme) in Germany in 2014. Lee Strand is also the only company in Ireland registered with the prestigious EMAS III accreditation. Lee Strand has a proven track record in managing energy and sustainability. Lee Strand's commitment to sustainability and resource efficiency has been acknowledged by the achievement of Energy Manager of the Year Award 2008, a prestigious award made by Sustainable Energy Ireland. Lee Strand has also received many other accreditations including: Origin Green; ISO 22000:2005 – Food Safety; ISO 14001:2015 – Environment; Excellence Through People and the Health Mark 34 | Connect Kerry |November 2019

This is very controlling behaviour, and it can create real anxiety for the partner, who becomes frightened of displeasing the other person, “walking on eggshells” around him, restricting their own behaviour so as not to create disapproval. The opposite side of that coin is the partner who becomes very angry, also creating anxiety and fear. One can end up always placating, or giving in, so as to avoid provoking the anger. Typically in this scenario, one partner is blamed for “making” the other angry by their behaviour. This leads to a dynamic of domination and submission, where the dominating partner uses anger or withholding to control the behaviour of the other, and that is an enormous red flag. If you notice your relationship falling into this dynamic, if you are in any way fearful of your partner’s responses to your behaviour, look closely at the relationship. Either sort it out (you may need some help to do this) or consider whether you want to continue to be with somebody who creates that kind of fear in you.

The Mall, Tralee Hello lovely readers, Hope ye survived the Trick or Treaters and are enjoying the Mid Term Break. When I become head of Ireland and it is on my bucket list,I am going to insist that there is Mid Term Breaks for Retailers..... I know it may seem a little early to mention the Christmas word but let me tell you I have very organised customers coming in to me daily who started their shopping when the kids went back to school at the end of August and are finishing their lists now. I would consider myself an early starter with the Christmas gifts but my idea of early is middle of September, and I must admit I have a few pressies wrapped and labelled. We at That's Perfect want to make Christmas as easy for our shoppers as we can and it is for this reason I want to let ye know that we are always happy to take deposits on any item and also if you would like to pay into a Christmas club weekly, that facility is also available. When you start your shopping early there is a l w ays a wider choice available and then the panic buying that a lot of our male customers are guilty of on Christmas Eve which is a lot more expensive doesn't need to happen. I will give you an example we have in stock at the moment the largest selection of scarves that would make a beautiful gifts,we have ever had, ranging in price from €15 to €30, result very happy lady or gent, leave it until last minute choice not there maybe not so very happy lady or gent.... I can only go on what I do myself and I make out a list of who I need presents for what I think they would like and how much I have to spend on them and always remember the most expensive gift may not be the best gift or what they wanted the most. Mary , Paul and myself are more than willing and dare I say it able to help you out if you are having difficulty trying to chose a scarf or a bag for someone and always remember because we would know almost 90% of our customers and we nearly always know what they would like or what would suit them. I suppose what I am trying to say in a round about way is let us take the stress out of your gift shopping as we have a lovely range in stock at the moment to suit all tastes and budgets. I have included some images but if you want to see more go to our Facebook page That's Perfect. I must sign off now and get preparing for Connect Kerry Hospitality Awards on Wed 13th Nov. at INEC Killarney. So many decisions to make... What to wear? Hair up Hair down Hair straight Hair curly? What tan? what shoes?what bag? one thing that needn't be questioned is what will the night be like Always amazing thanks to our "editor in recovery " Margaret. Until next time, Keep smiling and be kind to everyone you meet,

Kerry’s newest addition to the music scene Daithi O’ Regan is one of Kerry’s newest up and coming performing artists and has proven his talents over and over again performing at some well renowned venues in Kerry and hoping to make a name for himself with his music all while still being in school and working his weekend job! Here I got the chance to find out what makes his music journey so exciting. Hey Daithi thanks for chatting with me! It’s been a pleasure to get to know you over the past few months, your talent is evident in your gigs and I hear you’ve been studying lots of instruments from a young age! So tell me, where do you get your musical ability? Is it in the family or is it something you were drawn to yourself? I suppose there has always been music in our house and it has had a huge influence in my life. I can remember from a young age really enjoying music. Getting my first drum kit at age 8 was really something special. As a student at Yamaha School of Music, I studied and played the drums to Level 8, achieving many distinctions and receiving a few medals along the way. Completing exams and playing at student of the year assessments were major highlights. In a very lucky series of events, I was offered Donal Walsh’s # livelife drumkit, which I feel very privileged to own and to play. During this time, I also had some piano lessons. But playing the guitar at home won out! I can also remember my father, a big musical influence in my life, playing the guitar and singing. He would often play at social events or family gatherings and by 14 I had decided that learning to play the guitar would be the next step in my musical career. I’ve spent many hours with my guitar in hand, feeling very frustrated at my inability to sound anything close to the artist! Perseverance has paid off. After long months of slowly trying to learn, it suddenly started to come together. Singing along when playing either piano or guitar has helped sharpen my ear towards vocals. I can now read charts and play along to songs at will. How have you found breaking into the gig scene in Kerry? Have there been specific people and venues that have really helped your music journey? I was very fortunate to receive an opportunity to play a couple of gigs in Bailey’s Corner as part of my TY work experience. Both Garry O’Donnell (proprietor) and Martin Hurley (musician) have been extremely supportive. Martin has been a tremendous help and a strong influence from the start. He has very kindly offered me a slot to play on a weekly basis prior to his own gig. So now I am playing every Friday night 9.20 - 10pm Playing music for people gives you a feeling like no other in life. From a young age, I performed at school concerts and the like, but playing for a live audience and seeing them enjoy the music you’re playing is incredible. I look forward to it every week and I hope to play other venues too in the future. 42 | Connect Kerry | November 2019 42 | Connect Kerry |November 2019

Is there a goal you’re working towards music wise? College? Recording an ep etc? Music for me, has always been an escape. When I’m playing the stresses of life and any distractions disappear and for a while I can feel completely free. My goal for now is to continue to grow and improve my singing and playing. Recording a song or album would be a dream come true, but for now I am happy to be playing locally and to have music as such a positive influence in my life. Who are your biggest influences from the past and present? If I had to name one person, I would say John Mayer. His style of songwriting and musical talent are to be marvelled at. His music will never cease to bring a smile to my face and I will often learn new techniques simply from watching him. In more recent times however, I have turned to more of an Indie vibe in regards to what music I listen to and play. I would say a combination of Tom Misch and The Academic as well as Mumford and Sons have influenced my song choice and style of songwriting. If you could give any fellow young artists advice on how to get out there what would you say? Social Media - it’s everywhere. Everyone has access to it and it’s a sure fire way to receive easy exposure. I spend hours recording and uploading clips of me playing and singing on Youtube and Instagram. Sometimes they will be very popular and other times not so much, but putting yourself out there, regardless of audience size is a gateway to meeting people in the industry and to have people find you. Don’t be afraid to ask other musicians for advice. The sage advice I have gotten from other musicians who have seen me play has been a tremendous help. Without this advice, I would not have had the courage to play and develop my range of music. I have to say the local Tralee musicians have been very kind and extremely supportive. Where can we check out your music and where are you performing in the next few weeks? I play down in Bailey’s Corner every Friday night 9.20 - 10pm, come down and have a listen, you won’t be disappointed! Also you can check me out on Instagram @ daithioreganmusic as well as on Youtube @Daithi O Regan. Thank you so much for taking the time Daithi! Looking forward to catching another gig by you in Kerry soon

Kerry Airport Celebrates 50th Anniversary Of Air International Travel To Wild Atlantic Kerry development moving forward, to the benefit of passengers traveling in and out of Kerry and the hospitality sector in the county, is the development of the new-look and easy to navigate airport website - www.kerryairport. ie. The economic footprint of Kerry Airport influences employment and the earnings of those directly employed at the airport, the support services onsite and in the supply chain. Kerry Airport contributes approximately €9.5 million to the local economy each year.

CONFIRMATION of seven routes for 2020, a new-look website and a charity partner to underline plans to reach out to communities more throughout the Kingdom are among Kerry Airport’s key plans as it celebrates its 50th anniversary. Kerry Airport was officially opened on Saturday 30th August 1969 by the then Minister for Transport and Power, Brian Lenihan TD, and 50 years on the vision of its founding fathers has been realised in the shape of a successful and respected international airport. Half a century on from that historic occasion, modern passengers will be delighted to learn that Ryanair will continue to serve Kerry with flights to Berlin and Frankfurt Hahn in Germany, London Luton and Stansted in the UK and, to the delight of sun-seekers, Alicante and Faro in 2020. The short 50 minutes journey from Kerry to Dublin is a major saving in time for busy Kerry businesses needing access to Dublin and onward to destinations in the USA, Middle East and Australia. Seamless interlining of the Aer Lingus flights from USA to Kerry via Dublin is seeing increased American tourists coming direct to the Kingdom. The CEO of Kerry Airport, John Mulhern, said: “Over the next 12 months, as Kerry Airport celebrates its 50th anniversary, we will honour past accomplishments and ensure the airport’s continued success and contribution to the community of Kerry and the wider region. John Mulhern has announced that Kerry Airport will team up with Pieta House for 2020. “The wellbeing of passengers is a priority for our airport and when immersed every day in tourists enjoying our beautiful county it can be easy to lose sight of those; often male, often farmers, often struggling with small businesses, often battling existing mental health issues without support who increasingly find themselves marginalised and isolated in rural Ireland. In choosing Pieta House as our charity partner for 2020, Kerry Airport has rightly identified with an organisation equally concerned about this increasing marginalisation of rural Ireland and the isolation many feel as population centres and opportunities for social interaction shift relentlessly into urban centres. Pieta House has a dedicated team working in Kerry to support people and communities in crisis by providing freely accessible, professional services to all who may be affected by suicide,” he said. Kerry Airport and Pieta House will team-up in the coming months to launch the 2020 Darkness Into Light Walks in Kerry as well as other events that will raise funds for and awareness of the great work being done by the volunteers and friends of Pieta.

KILIMANJARO MAMA WINS BEST FEATURE FILM AT KERRY INTERNATIONAL FILM FESTIVAL Following a sell-out premiere at Killarney Cinema on Saturday evening and a standing ovation as the credits rolled things got even better for some Kerry based filmmakers. Director Malcolm Willis and Producer Brian Hurley along with film crew were astonished when they were informed their feature documentary “Kilimanjaro Mama” was shortlisted for two awards as part of the twentieth Kerry International Film Festival. Before the night was over it was revealed that they won Best Feature Film which is an impressive achievement for an independent production with a tight budget against some big budget international competition. Kilimanjaro Mama is an hour long documentary featuring an extraordinary young woman, Louise Quill from Tralee, Co. Kerry. Throughout the film Louise tells us the story of why she decided to set up Tir na Nog orphanage in Africa, what drives her and the impact it has had on her own health and wellbeing. Documenting the journey from Ireland to Tanzania, this is the story of one woman’s sheer dogged determination to give the children of Kilimanjaro the best possible chance to overcome the tough life they have been dealt. Director Malcolm Willis stated: “This is our home festival and it was very special having all the hardworking crew with us on the night, it’s a small team of people who worked extremely hard to make this. This film shines a light on the amazing children of Tir na Nog orphanage and the inspirational woman behind it all, Louise Quill.” Following the win producer Brian Hurley commented: “This was an amazing and unexpected accolade. We were thrilled with the support at the premiere but to have also won Best Feature Film is unreal. All involved in Kerry International Film Festival should take a bow for putting together a world class event and thank you for allowing us to be part of it.” The award winning documentary film will now be entered into a select number of film festivals nationally and internationally and the filmmakers plan to secure a television broadcast in the coming months. For more information contact Brian Hurley on 0879007304 or Malcolm Willis on 0879052415
