EDITOR'SNOTE Hi everyone The first month of school is down and I bet your all secretly looking forward to mid term already and the break, but that’s a few weeks away yet! Dont forget our hospitality awards are coming up so we want you to nominate your favorites, all details inside. We have lots for you to read and enjoy this month, well actually when I say ‘we’ that’s a slight stretch, I feel wrong writing this note myself this month as I didn’t really have much to do with it at all. As most of you know I was sent on a little trip to Cork University Hospital for brain surgery and yes they did find one I’m relieved to tell you all !! I was diagnosed with Syringomyelia and Chiari Malformation, I will let you check it all out on mr google if you wish to find out more, but the bottom line was me ending up in theatre for over 5hours to get fluid out of my brain and body and give my brain space to move again. It has changed things for me and has definitely put a stop to my 24/7 on the go for the minute but hopefully I will get back there very soon. I would just ask any GP’s reading this to take time if not already familiar with the conditions to check it out as it’s an illness not really well known in our country and I really would love to see this changing. There are less than 2000 cases in Ireland and no known specialist to deal with it. I am overwhelmed with the support shown to me and my small business sinceits all happened, people have gone out of their way to ensure this issue is with you all, and family and friends have just been amazing as I’m not allowed work or drive at the minute which is tough going but people can’t do enough, the house is full of cards, flowers, gifts and more so from the bottom of my heart I say thank you all so much, I don’t want to thank anyone in particular in case I miss someone but I am forever grateful to you all and you know who you are. They say you see those real people around you at times like this and it’s so true, I’m blessed with good people. So onwards and upwards for more great things from Connect, but one piece of advice take time to enjoy life too, you only get one chance at it so make memories with those you love and have no regrets Until next month Hugs to you all

The use of beneficial bacteria, commonly known as “PROBIOTICS” to improve health dates back over a hundred years, but only in the last few decades have probiotics become very popular. They are now widely available and even used clinically to manage a variety of complaints. Believe it or not we human beings are mostly made of bacteria, in fact the bacteria cells in your body out numbers your own cells 10 to 1. Most of these bacteria are found in your digestive system and influence the health of not just your digestive system but your overall body. Modern lifestyles, including stress, alcohol, antibiotics, poor diet and lack of exercise can cause an imbalance in your bacteria, depleting your good bacteria and allowing the bad bacteria to flourish, which may lead to poor health and sluggish digestion. PROBIOTICS (available in capsule) are good bacteria that help improve the health of your gut. Good bacteria are also important for the development of a healthy immune system and some research has shown that a daily probiotic may help reduce risk of infection. They also help with digestive issues such as irritable bowel which may include loose bowel movements and or constipation, bloating and excessive gas. Children are susceptible to coughs and colds and there are probiotics available specifically for children and many are suitable from birth. Some of the most commonly asked question include: • 1: Can I just eat yoghurt which contains probiotics? Research shows that yoghurts made with probiotics often have very low levels of good bacteria in them and may not help your gut bacteria. They may also contain additives including sugars, artificial sweeteners, flavouring or preservatives. • 2: Do probiotics interfere with medication? There are no interactions between probiotics and common medications but if you are taking immune suppressants you should speak with your GP before taking probiotics. • 3: Can I use them with antibiotics? Yes, just ensure you leave an hour or so between antibiotic and probiotic. Several studies have shown that probiotics may help prevent the negative effect of these medications on your good gut bacteria. • 4: Can I take probiotics while pregnant? Probiotics can be used safely while pregnant and may have benefits for both mother and baby; as with all supplements it is best to stick with one formulated for pregnancy. We know good bacteria are effective in digestive health but it is important to take the one to suit your specific needs. Remember a healthy gut is an essential step towards good health. AS success stories go, they don’t get much bigger and better than celebrity chef, TV star and author, Donal Skehan. The renowned Howth man is currently living the dream in LA, having worked his way up from his initial food blog at the age of 21 to becoming one of the most recognised faces in the food industry. Inspired by a family of passionate food lovers who worked in the food industry for over 60 years, cooking and eating hearty home cooked food has always been a way of life for Donal. Although Donal always loved food, he tells CONNECT that never in his wildest dreams did he think he could make a career from it. “Food has been a passion of mine since I was a child and remember helping my dad out with his food business, getting the fruits and veg ready for the next day, often while I was doing my homework,” he said, “I loved perfectly, honest food and it all started off as a hobby, but I had no idea back then that I could turn it into a career. Donal says he always had the intention of working in TV and studied media in college,

but the lack of ‘hands on’ experience led him to quit the course. “I was never a great student” Donal laughs, “and when I realised that I wasn’t doing enough of the physical side of what I wanted to do, I dropped out.” While he did go on to work in media, presenting Bubble Hits for a number of years where he combined is love of filming and writing - from there he went on to start his food blog, ‘The Good Mood Food Blog,’ chronicling quick cooking dishes and the cheap meals he prepared when he first moved out of home. The blog received the award for Best Irish Food Blog in 2009. Donal recalls how it was a special 21st birthday present from his mother that got the ball rolling on that blog! “At the time I was loving all the food blogs that were out there and on my 21st birthday my mam bought me a new camera and all I wanted to was take photos and post about food. I remember the first photo I ever posted was a homemade pizza I made for my now wife.” Donal’s award-winning blog then led to a book deal for his first book, “Good Mood Food: Simple, Healthy Home cooking”, which was awarded Best Irish Book of 2010, as well as his first television series on

Following on from that, Donal launched his own YouTube Channel in 2014 under Jamie Oliver’s Food Tube Network, which currently boasts over 17 million views and a dedicated following of one million subscribers worldwide. The channel features fun, easy to make recipes, beautiful food photography, behind the scenes videos from his many journeys, bloopers from television appearances and exciting top collaborations with BBC Breakfast famous YouTube stars and top chefs. He has also appeared on numerous television programs both here in Ireland and abroad, such as NBC’s The Today Show; BBC’s number one rated cooking show ‘Saturday Kitchen’; The Good Food Channel’s ‘Market Kitchen; and Ireland AM, and has of course been a recurring guest chef on numerous TV shows. So how does a man from Howth end up moving lock, stock and barrel to LA? “I remember going to a ‘VidCon’ over here for YouTubers and saying to myself: ‘I need to move here’,” Donal tells CONNECT. “It was all happening over here and I was also here for the Food Network at the time and just said to my wife: ‘We’ve just got married, we’re starting out on a new path anyway, so do we take the opportunity

and try something completely different? It was a case of now or never, and so we did it.” Asked what a typical day is like in the life of Donal Skehan, he laughs, joking that it’s not really all that exciting! “Most days I’m just here in an office, preparing for a shoot, working on recipes or testing recipes, so pretty normal really,” he says. “Of course I’m also always working on the YouTube channel and have TV appearances here, so it’s busy.” Despite living his best life in LA, there is always that longing for home – like most Irish people. “I find myself back and forth to Ireland a lot more than I thought and while it’s amazingly hard not to be bowled over by LA, I’m here to work and don’t know if that’s forever or not. I have a little boy and another on the way, which I suppose often makes the grá for home even stronger. It’s always heartbreaking to get back on the plane after being at home.”

But being the workhorse that he is means he’s always busy, and the last few months have been spent preparing his ninth book – Super food in Minutes – which hit the shelves here in September. Donal explains that this latest offering came off the back of his last book, Meals in Minutes, and features a host of meals that ‘people actually want to cook.’ “The book is all about real, fast and delicious family food that just so happens to be good for you. It includes 90 delicious recipes, and tips and tricks, for healthy home cooks that will change the way you cook.” Using 10 ingredients or less, each recipe uses streamlined, quick cooking methods with minimal effort and maximum results that help you make the most of your time spent in the kitchen. There are clear nutritional breakdowns, vegan, vegetarian and paleo options for each recipe, and a clean cook-friendly design. “I’ve put together 90 recipes of meals that can be cooked in 30 minutes or less and features lots of nutritional information. I’ve learned from 10 years of doing this

that most of the very simple recipes shone through,” he said. “I found that when you offer simple solutions and answers you connect with people on a deeper level. I am in the service of home cooking and aim my books at people who want to create a home cooked dinners and I feel strongly about that.” You might think that with his book on the shelves, Donal might take a second to come up for air, but he tells Connect that it’s all go, particularly next month As well as preparing for the arrival of a new baby in November, Donal is also launching a new gluten free food brand called ‘Tali Cali’ next month and has just recently returned to Ireland to film a new TV show, also due to air here in November. For anyone wanting to (try) to keep up to date with al that’s going on with Donal, he has a strong social media presence on Facebook, Instagram, YouTube and Twitter, engaging his fans with plenty exciting and dynamic content. Food for thought indeed!

RECOVERY HAVEN KERRY MAKING LIFE A LITTLE EASIER FOR THOSE WITH CANCER By Marisa Reidy OCTOBER is breast cancer awareness month and here in Kerry we are blessed to have such amazing cancer support services at our doorstep, each offering different, yet invaluable, comfort and help to those on their cancer journey. One such charity is Recovery Haven Kerry – a unique facility that provides free psychological and social support, information and drop-in services to those living with cancer, their families and carers in a safe and peaceful environment. As well as one-to-one counselling, Recovery Haven also provides free complementary therapy sessions such as Reiki, Reflexology and Massage; runs a men’s and women’s cancer support group, bereavement support, arts and crafts, mindfulness courses, Pilates classes, walking groups, a wig clinic fitting service, HSE bra and prosthesis fitting service and information talks. Although officially opened in 2010, initial plans to open Recovery Haven actually began almost two years earlier in 2008 when the Breast Cancer services were transferred to Cork and an opportunity arose to acquire funds which had been donated by the generous people of Kerry to be used within the county. The following year, the plans were stepped up another gear, when a committee - headed by Recovery Haven founder Marian Barnes - was formed, a premises was purchased and by November a registered the charity had been established. Recovery Haven manager, Siobhan MacSweeney, explained that FAS then came on board and transformed the premises at Haig’s Terrace into a wonderful

tranquil place aimed at helping visitors to regain control of their lives as they dealt with their cancer diagnosis. After much work, and several fabulous fundraising events later, Recovery Haven Kerry was officially opened on the 3rd of September 2010 by the charity’s patron Mr Dick Spring . In the intervening years, and with the full support and guidance of the Irish Cancer Society, the cancer support charity has flourished - not only operating from its Tralee base, but now also operating outreach services in Killarney (twice monthly) and Killorglin (monthly). In fact, as the charity looks ahead to its milestone anniversary in 2020, Siobhan says there is huge pride in what has been achieved and great excitement about the potential that still exists for Recovery Haven Kerry. “The demand for our services is at an all-time high, which I suppose is a great thing because it means people are reaching out and looking for the supports that we offer,” she said. “Last year, for example, there were just over 3,800 attendances to our three cancer support centres across the county. That included almost 800 hours of one-to-one counselling for adults – a rise of 31 per cent on 2017 - as well as over 220 hours of child and adolescent counselling. The charity also provided a total of 786 complementary therapies to clients last year, a rise of 22 per cent on the previous year.” SERVICES Siobhan explained that visitors to Recovery Haven are initially met by a trained listener, whether they simply pop in unannounced or have made an appointment.

Connect | Lifestyle The friendly volunteers will listen to visitors in confidence and work with them, finding out how best the charity can support them. “Through our many services, we aim to give the best information, emotional and practical support that will help make a difference to clients and their family at this time.,” Siobhan explained. Depending on their needs, clients can choose from a range of complementary therapies, exercise classes, support groups, art therapy or workshops, or may often be referred for one-to-one counselling with Recovery Haven’s accredited psychotherapists. “Our team of professional counsellors provide confidential, understanding and empathetic support for clients through our short term model of counselling,” Siobhan explained. “Clients are entitled to 8 free sessions during which our counsellors encourage them to express and reflect on the life challenges and transitions cancer has brought into their life. This can empower a person with clarity and confidence to cope and manage these challenges.” In recent years, the demand for children’s counselling services has also increased significantly, but again the team at Recovery Haven are meeting demand thanks to an invaluable relationship with renowned child therapist Edel Lawlor who works with the charity. As well as one to one sessions with children and adolescents, Edel also delivers the CLIMB programme at Recovery Haven aimed at children aged between 5 and12 years of age who are experiencing the impact of a cancer diagnosis in their immediate family. If that wasn’t enough, Recovery Haven Kerry also operates a bra and prosthesis fitting service to women following breast surgery, which is operated by an independent company. Appointments are scheduled personally and directly with the company at 066 718 4075 The charity also operates a wig clinic every Tuesday, offering specialised hairpieces to those who have undergone chemotherapy. The clinic offers a totally private and compassionate service that is obligation free.

donations to keep its doors open Siobhan explained that the charity’s annual operating costs are in excess of €180,000 per year and insists that without the overwhelming support of the people of Kerry – along the Trojan work or the charity’s fundraising team and volunteers – Recovery Haven simply would not survive. Thanks to the people of Kerry, Recovery Haven continues to offer an invaluable service to those in need of support during a very difficult time and that is something the charity never takes for granted, she says. “There are so, so many deserving causes out there, so the fact that people continue to pledge their support to us, organise fundraisers and support our events means the absolute word to us,” she said. “Without them we simply would not survive and that is something we never, ever take for granted. The good will towards Recovery Haven is overwhelming and we are so grateful to our amazing supporters – too many to mention - who never let us down.” One such fundraiser currently in the pipeline is the 2019 #Movember challenge, where the charity is encouraging the men of Kerry to shave their moustaches or beards in November and help break last year’s amazing record of €35,000. “This was an absolutely amazing event last year, so now we're asking individuals, groups, clubs, pubs or businesses across the Kingdom to sign up and help us break last year's record,” Siobhan explained. “Anyone interested in getting involved can register now and get

We have all heard the ageold adage that ‘you are what you eat’ but one Tralee GP was so convinced about the potential and significance of this mindset that she has revolutionised her practice to apply it! Dr Michelle Cooper was so taken aback with the number of patients presenting to her surgery with abdominal pain, bloating, sluggishness, fatigue and a lack of energy that she decided to do something real and significant about it, by introducing her new, tailormade ‘Nutrition Plan’ for her patients. The Tralee GP, who is the Principal GP at Cooper MediCare, Ashe Street, told Connect that while she had always had a great knowledge of and interest in nutrition and healthy eating, it wasn’t until she came across so many people with abdominal issues and difficulty losing weight that she decided to concentrate more on this aspect of patient care. “I had been seeing more and more patients presenting with symptoms which included abdominal pain, fatigue and difficulty sleeping. I had also noticed that quite a number of my patients were struggling to lose weight,” Michelle

explained. “I knew that giving medicine to deal with abdominal pain wasn’t always the solution and I was frustrated to see my patients resorting to unsustainable fad diets. As a result, I decided to design a tailored, sustainable, evidence-based nutrition solution for my patients.” “We hear it repeatedly that you are what you eat. I am a firm believer in that. Our bodies work just like a machine. We all understand that you cannot put petrol into a diesel engine - your body is no different. People often do not realise that if you fail to eat regularly enough, your metabolism slows down accordingly, so skipping meals and starving yourself will not result in weight loss. People can be enticed into eating low fat, fat free, diet foods which are often more harmful than natural products, as they often contain denatured and synthetic ingredients to make them taste good. My plan is about educating patients on the benefits of eating nutritious whole foods.” Having specialised in the area of women’s health for several years, Michelle made a conscious decision to research more into the area of nutrition and healthy

weight loss, resulting in the introduction of her own ‘Nutrition Plan’ to the vast list of services which she already offers to her patients at Cooper MediCare. Michelle explained that the plan is not a diet, but rather a longterm, metabolism-boosting programme that focuses on eating six healthy and nutritious meals and snacks per day. The plan, which is tailor-made to each client, is designed not only to aid weight loss but to help with other problems such as abdominal pain, bloating, food intolerances, acne, sleep problems, fertility, anxiety and addiction. “There is no ‘one plan fits all’ so my plan is tailor made to suit the needs of every patient

that comes through my door” Michelle explained. “This is not a diet but, rather, a lifelong health plan that works and, as I like to say, one that helps to ‘switch a person back on’. So many people are tired, sluggish and have issues with food intolerances and abdominal pain. This is about getting to the bottom of those issues and making people feel good, like they should feel. It is not about depriving people of the food they like, but tailoring the plan to include healthy versions of what they have been eating.” Michelle explained that patients on the plan first come to her with a complete and ‘honest’

food diary containing a detailed record of what they have been eating the previous week and at what times. Such a detailed diary, she says, not only allows her to assess the patient’s eating habits and pinpoint the wrong foods that they have been eating, but it also allows her to get an idea of the type of foods they like to eat and factor healthy alternatives into the plan. The patient’s body composition is measured, after which a comprehensive, tailor-made eating plan is devised based on Michelle’s own new book of delicious, nutritious, healthy recipes. Patients then return for weekly weigh-ins and measurements over a five week period. Many patients who have returned to Michelle continue with the programme long-term because they are so delighted with how they feel on the plan. Michelle also suggests patients should avoid alcohol during the initial five weeks, where possible, as alcohol interferes with blood sugar levels, often resulting in people wanting to eat more. “I suppose the focus of the programme is to really get people to understand that nutritious food fuels the body, and as I say again, to understand that you absolutely are what you eat,” Michelle said. “With the plan, people are eating six times a day, with controlled portions and with no calorie counting involved, as I have already factored all that into my recipes and into

their plan,” Michelle explained. “It is also very important to point out that this plan is not about depriving yourself of the things you like, but rather, replacing those things with a nutritious alternative. For example, the plan features my healthy version of fish and chips, pizza, chocolate smoothies, chicken kebabs, curries and cottage pies. I want people to be excited about the plan when they leave my surgery, not worried about what they’re going to have to give up. The recipes are also very quick and simple, as I know people are leading busy lives.” So far, the feedback from patients has been wonderful, Michelle said, with several patients coming back over a stone lighter in a matter of weeks. More importantly they feel energised and generally fantastic! “This plan is all about getting your metabolism working again, so patients are really feeling the benefits,” Michelle explained “Because this plan is not a diet, patients are introducing it as a way of life and the results have been really positive. In fact, my very first patient returned to me and said he couldn’t believe how good he felt and that he was excited to tell his friends about it, which of course I was thrilled with. The beauty of this plan is that you can eat well and you can have your treats and enjoy them. Every bit of food on the plan is wholesome, nutritious and delicious. Why not choose a faux fur coat this season to inject some Hollywood glamour into your wardrobe. These fluffy coats have been a favourite among fashionistas for decades, and this season is no exception. From classic neutrals such as black or brown to chic animal prints, a faux-fur coat will add a touch of luxury to any outfit you wear this year. The teddy coat trend that started in 2016 revolves around the look of a cosy jacket that seems to resemble a teddy bear, hence the appropriate name. The joy of the teddy coat is that it can be pulled off by anyone and there's no set way to style it, but considering the sheer size of the teddy coat, it's best to stick to streamline silhouettes below like slim fit trousers and skinny jeans. However, one thing's for sure this coat will be a dream on cold mornings when all you are craving is a duvet day. We guarantee you won't take it off all winter. The camel coat is the classic coat that matches everything we have and looks good on all skin colours. The best thing about the camel coat is that if you are not on a budget, you can invest in a good one, and you will be good to go year after year. There will always be a place in the wardrobe for a timeless check coat. From bright plaids to monochrome houndstooth, no two checks are the same. Hi lovely readers, What can I say about our Kerry boys? well done on a very exciting season and to be fair the best team won Sam but I have no doubt we will be back in Croke park in 2020 walking up those steps to bring Sam home. We have just received another delivery of our Autumn/Winter stock and the only down side is that I have only one head and one pair of hands.... The selection of hats and gloves is “Perfect” . Every shade and texture, lots of colours and styles. Images included. As I have mentioned on many an occasion I own one coat to be only ever worn at Winter funerals but I will be seen wearing hats, gloves and the trusted scarf, how lucky am I that I work in an accessory shop. If you have a winter coat that you are particularly fond of (and we all have that piece of clothing that we hope never gets old ) one of our new range of scarves will give it the wow factor, and if you’re are having a bad hair day (not that happens to any of our lovely readers) pull on a stylish hat and if your nails aren’t looking their best out comes a funky pair of gloves. Now in all fairness can I be more helpful with my advice. Health food choices for autumnal evenings Butternut Squash, Green Bean and Chickpea Tagine Serves 4 Suitable for Vegetarians, Vegans, Gluten Free • 200g Brown Rice • Frylight • 1 Red Onion, Sliced • 2tbsp of minced garlic in brine • 2 tsp each of ground cumin, cinnamon and coriander • 500g butternut squash, peeled and cubed this can be bough pre cut or frozen • 2 400g tins of chopped tomatoes • 1 200g tin of chickpeas (or half a full size tin) • Packet of Green Beans, trimmed and chopped • 2 tbsp of fresh chopped coriander • Fresh Ground Black Pepper • Optional Dash of Lemon Juice.

Cook the rice according to instructions. In the meantime, spray a saucepan with frylight and saute the onion until soft. Add the garlic, cumin, cinnamon and ground coriander and cook for a further 2 mins, stirring continiuosly. Stir in the butternut squash, tinned tomatoes, chickpeas and 200mls of water, leave to simmer for 15mins until the squash is cooked. Add the green beans and cook for 3-4 mins. Add in a few drops of lemon juice to give the dish a little bit of sharpness. Season with the fresh ground black pepper. Plate up the tagine, serve with the boiled rice. Serve with a dollop of fat free greek style yoghurt. Scatter with fresh coriander on top enjoy!!

Salmon Burgers with Petit Pois and Mashed Potato

Serves 4 • 4 Salmon fillets, Skin removed • 2 tsp of light soy sauce • 15g of fresh coriander, chopped • frylight • Zest of 1 Lime • Bunch of Spring Onions, sliced • 500g potatoes, peeled and roughly chopped • 150g petit pois • 2 tbsp of semi skimmed milk • Lime Wedges to serve • Asparagus Tips to Serve. Blitz the salmon fillets in a food processor with the soy sauce, corander, lime zest, spring and onions, reserving a handful to garnish and some black pepper. Pulse until the mixture is coarse do not over blitz it at this stage it will prove difficult to mould into patties. Spray your hands with a little of the frylight to prvent the mix sticking to them and shape into 4 burgers. Refridgerate for 30 mins. In the interim, place the potatoes in a pan of water over a high heat. Bring to the boil, reduce the htat and simmer for 10 minutes. Add the petit pois and cook for a further 5 minutes. Drain and return the potate and pea mixture to the pan, add the milik and some fresh ground black pepper. Mash well and set aside. In a frying pan, misted with butter

frylight and/or garlic frylight fry off the Asparagus tips. Just before cookng the burgers, spray them with frylight. Place in a pan on a high heat for 5-6 minutes on each side or until cooked through. Sprinkle with the reserved spring onions, serve with the mash, asparagus and lime wedges.

Chinese Pork Noodles

• Frylight • 500g of Lean Pork Mince • 2 tsp of Chinese 5 Spice • 2 tsp of minced garlic in brine • 200g of Mushrooms, sliced • 6 spring Onions, finely sliced • 2 tbsp of light soy sauce • 1 tbsp of honey* • 150g of sugar snap peas • 150g of egg noodles • Juice of 1 Lime • Fresh Ground Black Pepper Heat the wok and mist it with frylight. Add the minced pork, fry until browned. Reduce the heat and add the Chinese 5 spice, mushrooms, garlic and spring onions and fry for 5mins. Stir in the soy sauce, honey, sugar snap peas and fry for 5misn. Stir occaisionally untl the sugar snap peas are cooked. Meanwhile, cook the noodles according to the packet instructions. Drain well and set aside. Finally mix the noodles intot he pork and veg mixture, stir in the lime juice, season with black pepper and serve.

Nutty Noodle Salad

Serves 1 Vegetarian • 60 wholewheat noodles (boiled and drained) • 1 grated carrot • 20g of Grated Cucumber • 4 Cherry Tomatoes (Halved) • Lambs Lettuce or Water Cress • 1/2 Yellow Pepper • Cashew Nuts* • 1tbsp of Soya Sauce • 1 tsp of honey* Combine all the ingredients in a bowl, toast the cashew nuts in a frying pan for a few minutes and dress it with the soya sauce and the honey.

Make the garlic sauce if using Heat the kebab meat in the frying pan Toast the Pitta Bread and slice it open, pile in the salad and the meat drizzle on some garlic sauce and chilli sauce if using. Very easy, very tasty!!

Banoffee Pie

This recipe is for 10 servings...if you find this would be too tempting. you could halve the ingredients and make a smaller one... • 60g of low fat spread* • 10 Reduced Fat digestive biscuits* • 2 sachets of powdered gelatine • 250g of quark • 3 Pots of Fat Free Toffee Yoghurt* • 1 level tbsp of granulated sweetner • 1 tsp of vanilla extract • 2 Egg Whites • 2 bananas • 2 level tsp cocao powder to decorate* Preheat oven to 190 degrees/ Fan 170 degrees. Line a 20cm springform tin with baking parchment Melt the spread in a pan over a low heat, meanwhile, put the biscuits in a sealable food bag and bash them into fine crumbs with a rolling pin. Pour in the melted spread, stir well and spon the mixture into the preparted tin and cover the base, pressing down evenly. Bake this for 12-15mins and set aside to cool. While your base is in the oven , put 150ml of hot but not boiling water in a shallow dish, sprinkle over the gelatine poweder and stir to dissolve. Pour the quark in a bowl and whisk until smooth, then whisk in the yoghurt, sweetner, vanilla and the liquid gelatine. Whisk the egg whites in a bowl until stiff peaks form and then fold in the quark mixture. Spoon this mixture over the biscuit base and smooth the surface. Chill for 4 hours until set. Relaase the pie from the tin and put the pie, still on its base if necessary on a serving plate. Thinly slice the bananas and arrange on top, then sprinkle with cocoa powder and slice to serve.

TRYING FOR A BABY: WHAT ARE YOUR TREATMENT OPTIONS?

We know that 1 in 6 couples will have difficulty conceiving. Even when a couple are fully investigated, we may find that all tests are normal. Prior to commencing any fertility treatments, it is important to review a couple’s medical history and ensure that they are as healthy as possible. It is important to look at possible lifestyle changes such as stopping smoking and eating healthily. Very often small changes in diet, losing a small amount of weight can help. For men sperm quality can improve if they stop smoking, start specific multivitamins etc.

What If Ovulation Is Not Happening?

In about 25% of cases attending a Fertility Clinic ovulation does not happen i.e. an egg is not being released mid cycle. This is particularly common in women with Polycystic Ovarian Syndrome. Our first line treatment in this situation is to give tablets such as Clomiphene or Letrazole. These medications encourage ovulation. To ensure that the treatment is appropriate, and that too many eggs are not being produced, ultrasound scans are performed and hormone blood tests are taken. Treatments can be adjusted based on these results. If pregnancy is not achieved within six months of simple treatments it is usually appropriate to “step up” the treatments to daily injections of FSH / LH. As this treatment is more intense and increases the risk of multiple pregnancy ULTRASOUND SCAN MONITORING WITH BLOOD TESTS IS CRUCIAL.

When Is IUI The Best Treatment?

IUI is a treatment where sperm is prepped to ensure the best quality sperm are inseminated into the woman’s womb. We use this treatment when there are issues with sperm numbers, for unexplained infertility, where donor sperm is being used and when IVF may not be a suitable treatment. IUI leads to a successful pregnancy in 32 | Connect Kerry | October 2019

10- 15% of treatment cycles. Many couples wish to do IUI for 3-6 cycles before considering IVF.

How Can IVF Help Achieve a Pregnancy?

Since In Vitro Fertilisation’s inception 40 years ago the treatment process has changed so much. EU Regulation ensures high standards for couples attending European IVF clinics. While many couples feel it should be a “last resort” there is much merit in considering moving to IVF early. Pregnancy rates vary from 46% per treatment cycle in women under 35 years to 39% at age 37 and less than 15% at 41 years of age. So, starting at an earlier age makes it more likely to be a successful treatment. Laboratories now commonly have specialist incubators known as Embryoscope which allow us to view the embryos as they grow over their first few days; the strongest and best embryos can then be selected to put into the womb. Many new laboratory techniques called ICSI, IMSI allow the best quality sperm to be injected into eggs. Where sperm are not making their way from the testicles a procedure called TESE (testicular epididymal sperm extraction) allows sperm to be harvested directly from the testes. Nowadays we encourage couples to allow their embryos to grow to Day 5 as this also optimises pregnancy rates. An even more technological advance now available to couples is PGS / PGD. With this

procedure embryos can be biopsied to genetic abnormalities detected. For couples with a family history of conditions such as Cystic Fibrosis (very common in Kerry) embryos without abnormalities can be replaced to minimise the risk of hereditary conditions. It is also a treatment that we now offer to couples who have had recurrent pregnancy losses. This helps to increase pregnancy rates. Sadly, some women may not be able to get pregnant with their own eggs and donor egg IVF is a very frequent request seen at our clinic. Surrogacy is a treatment option that, once again, is more frequently availed of by couples where the woman has no womb or for whom it is not safe for her to become pregnant.

We have so many options in terms of exercise now, such a variety in terms of intensity and ability that there really is something for everyone, you just need to take the time to find your way. So this months homework is to try a new form of exercise or to jog up your weights or running routine taking yourself out of that comfort zone to help with that euphoric production. Variety as they say is the spice of life. Recovering Another essential player in our wellbeing is our recovery, while its great to be exercising we also need to ensure we are allowing our bodies the down time they deserve, its an amazing powerhouse functioning constantly so be nice to it. Look at your overall diet, particularly what you are consuming after training to see if you are taking in enough protein. Protein can often be overlooked in todays diet, but it is essential for growth and repair. To work and feel at our optimum it is essential that we are hitting our protein requirements on a daily basis.

Tofu , Quinoa, Orange & Walnut Salad Ingredients: • 1 teaspoon olive oil • 1/2 cup finely chopped white onion • 1 cup uncooked Quinoa • 2 cups water • 1/2 teaspoon Sea salt • 1 cup fresh orange sections (about 1 large orange) • 1/4 cup chopped pecans, toasted • 2 tablespoons minced red onion • 1/2 pound (2-inch) slices asparagus, steamed and chilled • 1/2 jalapeño pepper, diced • Handful of Walnuts • 80-100grm Tofu ( ** prawns, or Salmon also an option)

Dressing:

• 2 tablespoons fresh lemon juice •1 tablespoon extra virgin olive oil •1/4 teaspoon Sea salt •1/4 teaspoon freshly ground black pepper •1 garlic clove, minced

To prepare salad, heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add white onion to pan; sauté 2 minutes. Add quinoa to pan; sauté 5 minutes. Add 2 cups water and 1/2 teaspoon salt to pan; bring to a boil. Cover, reduce heat, and simmer 15 minutes. Remove from heat; let stand 15 minutes or until water is absorbed. Transfer quinoa mixture to a large bowl. Add orange and next 5 ingredients (through jalapeño); toss gently to combine. 2. To prepare dressing, combine juice and next 4 ingredients (through garlic) in a small bowl, stirring with a whisk. Pour dressing over salad; toss gently to coat. Sprinkle with chopped mint. Garnish with mint sprigs, if desired. Serve at room temperature.

Kerry Film Festival....

Kerry International Film Festival 2019

We really have a stunning selection of both big intentional hits and more local films that support the filmmaking community across Kerry. Our 20th programme features a host of Irish Premieres, Feature Films, Short Films, Documentaries, Animation, Q&A’s, a curated strand of industry events and, above all, KIFF is a great social occasion and festival experience for all film fans.

20th Edition

Highlights include the Irish Premiere of Rare Beast the directing debut from actress Billie Piper. This anti-romanic comedy tells the story of Mandy is a modern woman in a crisis. Raising a son in the midst of a female revolution, mining the pain of her parents separation and professionally writing about a love that no longer exists, she falls upon a troubled man, Pete, who’s searching for a sense of worth, belonging and ‘restored’ Male identity. Rare Beasts is screening on Sunday 20th at 6.30 in Cinema Killarney. KIFF also have the Irish Premiere of SXSW wining film The Peanut Butter Falcon. This touching film tells the story of a young boy with downs syndrome who runs away to fulfil his dream of becoming a professional wrestler. In this good-natured, heartfelt adventure comedy-drama, a modern-day spin on Mark Twain’s adventures of Huckleberry Finn from producers of Little Miss Sunshine. Zak (performer and disability advocate Zack Gottsagen) lives in a nursing home but dreams of becoming a professional wrestler. Running away in hopes of reaching the wrestling school of his idol, the Salt Water Redneck, he meets Tyler, a small time outlaw, on the road – and together they team up, winding through deltas, eluding capture, drinking whisky, finding God and catching fish. This classic feel good, coming of age story, is there perfect heartwarming film to launch the festival of with, so we are screening it on Thursday 17th at 6.30PM, all ages welcome. Closer to home we have the World Premiere of Terry McMahon's new film, THE PRIZEFIGHTER, this promises to be a seal out event as Gary "Spike" O'Sullivan (the Irish professional boxer who has formerly held the WBO International and Irish middleweight titles) and Paschal Collins (coach & manager) & director Terry McMahon will all be present for screening and extended Q&A. A must see event for any boxing, MMA, or short fan in general. Screening Friday 18th at 8.30PM Eibh Collins our festival programmer this year wanted to make the festival as inclusive as possible. To this end we are excited to be hosting several Family friendly Features, animation and short film. Including a dialogue free animation called MINUSCULE - MANDIBLES FROM FAR AWAY, about a adventurous Ladybug. A free Autism Friendly screening of the 30min animated short film, Mind My Mind, which is a film about how having a brain that is wired differently affects your social life, and particularly your love life. Flirting, sex and romantic relationships are very challenging for people with autism, as they are associated with thousands of unwritten rules and exceptions. Katie O Connell and Patrick O Connor

Celebrating in Style Katie O Connell and Patrick O Connor –Scarteen. Friday the 13th was a lucky day for one couple in the county when they exchanged vows before 220 guests at the Holy Cross Church . Katie tells Connect ‘We had the Dublin African Gospel Choir at the Church and they were unbelievable. I go to Kenya every summer as part of an education project so I really wanted to bring that African soul and joy to the ceremony’ Fr. Kieran O' Brien was the priest fulfilling the ceremonial duties. Katie and Patrick choose the beautiful surroundings of the Sheen Falls to entertain family and friends for their reception, this venue held precious tradition for them as both parents had their receptions at the same venue. The celebrations continued at the lovely Dromquina the following day.
