Marisa talks to Lottie Ryan who recently got married, she tells us all about it, about her life and her beloved dad as we approach father’s day. Newlywed & Broadcaster By Marisa Reidy JUST a few short weeks ago, bubbly 2FM presenter Lottie Ryan married her long term boyfriend Fabio Aprile in an intimate ceremony in front of family and close friends in her husband’s native Italy. Of course, the popular RTE personality could have opted for a lavish showbiz affair in front of the country’s media, but before setting off for her dream wedding in the sun, the daughter of the late broadcaster Gerry Ryan told Connect that she was more than happy to keep things simple. Although Lottie and Fabio – who have been together for 10 years – actually married at a low-key ceremony in Dublin back in March, Lottie told us she was extremely excited to get away and share her big wedding day with her nearest and dearest. “We’re extremely excited about the wedding as it’ a great opportunity for us to get our close friends and family together for one big party,” she told us. “Because we are only having a handful of people there, it lent itself to being an easy process, so we’ve been very chilled about the whole thing. If the numbers were bigger, I could see how things could get on top of us, so because we’ve kept it small we’ve really enjoyed the planning and can sit back and not stress.” When asked if Italy had always been the destination of choice for her intimate wedding, the 30-year-old said it simply outweighed all the other possibilities - for a number of reasons. “There were a few options on the table but because Fabio comes from there it just felt like the natural option,” she said. “Then of course there’s the amazing food and the wine and the sun, so that was enough for me,” she laughed. And while Lottie’s personal life is clearly blooming, so too is her radio career, with the newlywed likening her new slot on 2FM’s Breakfast Republic to ‘hitting the jackpot’. Lottie, of course, also presents 2FM’s hourly entertainment news each day, but says she is absolutely loving the morning show – despite the early starts.

“When I got the job on Breakfast Republic, I felt like I hit the jackpot. We literally laugh the whole time so it’s a pretty amazing position to be in,” she told Connect. “I come in at 6am and present for an hour on my own and then the guys [presenters Jennifer Zamparelli, Keith Walsh and Bernard O’Shea) come in and 7am and we have such a great time. It’s a huge milestone for me to have reached.” Of course, with her 6am start comes a 4.30am rise daily – but Lottie says you just have to get used to it. And the reward is worth it. “You just become a morning person, simple as that. The alarm goes off at 4.30am but it’s not as bad as you think. When you think about it, no one wants to get out of bed early but what I’m getting up for makes it worthwhile.” You might think that being the daughter of the late great RTE broadcaster Gerry Ryan would mean that Lottie’s career path was always planned out for her, but that wasn’t the case at all. She admits that her career actually took ‘many twists and turns’ before she eventually settled on a career in radio.

Her ultimate dream was in fact to become a professional dancer, but this was sadly shattered by an injury. She does, however, still teach dance at a performing arts school in Dublin, which in some ways allows her to live her dream through others. Before making a name for herself on radio here at home, Lottie also worked on the award-winning hit US TV show, The Good Wife, admitting that she literally begged her way into the gig! “That came about through a huge amount of hard work and endless emails, begging and knocking on people’s doors,” Lottie explained. “I had decided I wanted to work in the US and had been warned that it was a very difficult area to get into. It felt like millions of people turned me down, because I was in that difficult position of being ‘qualified’ (Media & Communication, specialising in radio) but not having any real life experience”. “CBS took me on for a new show that was in its first season and starting to go to air, and I remember ringing home and telling them I was working on The Good Wife. Who knew it would go on to win Golden Globes.” Lottie recalls how the work ethic in the US was somewhat different to what we experience here at home, however. “They work like I’ve never seen people work. They do 16 hour shifts and it’s so intense,” Lottie explained. “I learned more in those few months there than I did anywhere. I was a runner, which meant I did whatever needed doing – from lighting rigs, to making sandwiches to cleaning equipment. I did whatever I was told, but it was an amazing experience.” Lottie’s main radio break back home came through former 2FM presenter, Colm Hayes, who invited her to participate on his show once a week. That was five years ago and she is now not only the station’s showbiz correspondent, but features prominently on their most popular 6 | Connect Kerry | June 2017
breakfast show ever. “I never set out to have a career in radio but I’ve learned that you have to embrace what is put in front of you. Just go with what’s happening,” she said. “People need to remember too that when they’re in school and college they don’t need to have everything figured out. It’s worked for me because it’s got me in the position I’m now in and I couldn’t be more content with what I have.” Of course no conversation with the stunning Lottie Ryan would be complete without asking her about her late father Gerry, whose seventh anniversary took place in May. While Lottie says that he never tried to influence her career, he certainly shaped her into the woman she is today. Describing the late broadcaster as her hero, Lottie says she is blessed to still be able to learn from the master, even though he is no longer with her. “He was hugely influential massively so - and I can’t even begin to fathom how many hours of recordings of him I have at my disposal, so in that way my learning from him won’t stop any time soon,” she said. “He was my hero and I am incredibly proud of his legacy.”

Getting Debs Ready The Debs Ball... a night out we all looked forward to in our teenage years, it’s an exciting time and also the end of an era where we have one last bash with those friends we probably know since we were four years old. In just a few short months our teenagers will have gone their separate ways, some to college, some to work, and some maybe to foreign shores to try out and experience a new life, so while some say ‘OH NO’ at the thought of the debs, it’s certainly a night to be enjoyed and marked in the calendar as a family event. We look at the preparation involved and we chat to Sharon, the Estee Lauder Counter Manager at Ch Chemists Tralee, we also chat to Jill at Hannons, Dressing Debs girls for many years. Here are their tips and ideas to ensure your debutante is ready for the night of her life.
Getting the look.. 1. Prep skin properly to get your perfect base for your foundation. Cleanse, tone, moisturise along with using a good primer. This will help your makeup last longer & will help your foundation application too. 2. After prepping your skin I usually do the brows first, shape brows & carve out brow with your concealer to define the brow shape. 3. If you are looking for a long lasting foundation to see you through the day & night without the need for touch ups then Double Wear foundation by Estee Lauder is perfect. its oil free & lasts for 15+ hours which puts your mind at ease & frees up you bag for other essentials. 4. Use a flesh toned eyeliner pencil to outline your lips along your cupid’s bow, this makes lips appear fuller. Try on lots of different styles. Dresses look better on you than on the hanger. You might love a dress you never thought you’d wear. - Listen to the opinions of your mom or friend as to what styles and colours looks good on you. - Just because you like the dress in an advert doesn’t mean it’s the dress for you. - Let the salesperson help you try on the dresses. Listen to the salesperson’s ideas because they know which body type the dresses look good on. They know which styles are best and which styles have a great fit. - Let your friends know which dress you buy so that they will be able choose another style. There’s no way to guarantee that you’ll be the only one at the debs with your dress since girls buy online. - Start shopping in season when the selection of debs dresses is the largest. Buy your dress in plenty of time to have it altered if needed. - Be okay with change. Almost every debs dress will need some alterations for a perfect fit. Always buy your shoes before your alteration appointment so the dress can be hemmed to the correct length. - Being more expensive doesn’t always mean better, especially when you have a budget to meet. - And most importantly enjoy the experience and don’t stress out. It’s meant to be a fun occasion and you are the only one who can make it fun or stressful.

fully charged and ready to go Ed Roche presents the ‘Fully charged with Ed and Meghann” Breakfast show on Spin Southwest each morning, we catch up to hear all about life family and getting up at 5 am...
Ed can you give us a little background about yourself. I’m the youngest of five siblings born on Christmas Eve. I often joke I’m the greatest Christmas gift my mother ever got. Funny enough, it was a Christmas gift that started my love of radio back when I was about 7 years old. My sister Mary gave me a Talk Boy (which is basically a hand held recorder), I would record myself doing fake radio shows in my bedroom for hours and even force my friends to play what I called ‘the radio game’ - whereby I would be the DJ and they would be the caller ringing in to request a song. I still have recordings of my radio shows at home but I’m not willing to share them with anyone just yet, they sound pretty tragic and I sound like a 7 year old girl in them. I went to school in Dromahane which is a small village near Mallow Co. Cork and attended secondary school in Davis College Mallow. Working on the radio is always something I wanted to do but never really thought would be achievable, I mean it’s not something many young lads wanted to be when I was growing up and it certainly wasn’t viewed as a “real job”. I remember telling my career guidance teacher one day that I wanted to work in radio and she looked at me with what I can only describe a sigh of disbelief “maybe we should look at some other options. How about landscaping?” she said. A little piece of me died inside that day when I heard those words exit her mouth! The thing is I was incredibly shy growing up, even to this day childhood friends can’t actually believe that I talk for a living. I would remain fairly quiet in class, because, well, truth be told, I was actually embarrassed of how I sounded and I would often get teased in school because of how I spoke. I figured back then it was better to say very little. Thankfully, that attitude has all changed now with age and ultimately growing in confidence. It was only until I left secondary school that I actually thought working in radio could happen for me. I began a radio broadcasting course in Cork city and starting working on the college radio station for 2 years gaining all the experience I could manage. Previous to that, whilst in school I basically plagued my local radio station at home to give me some experience in the summer months - and 14 | Connect Kerry | June 2017
they did. Once I completed college I got offered my first radio job in 96fm in Cork presenting on Saturday nights from midnight until 6am - although is wasn’t the prime time slot that many dream of it was certainly a great start. Soon after that, I landed a job with SPIN South West as a news reader. Again, it wasn’t something I ever thought I’d see myself do but for me it was all about gaining experience and getting that foot in the door. I remember being a news reader and thinking to myself constantly “I want his job” - referring to the DJ at the time.
You worked here in Kerry for a while so I guess Kerry is close to your heart? Yeah that’s right. After I worked as a news reader I decided I needed to focus on the area of radio that I really wanted and that was music presenting. I worked in Kerry for 3 and a half years presenting various radio shows and assisting in commercial production when needed (basically making the ads). I presented a Friday Drivetime show and I also presented a Saturday evening show called Fresh! I also presented a breakfast show on a Saturday morning, plus I also read the death notices something that I never imagined myself do. Hey, I guess you’ve gotta do what you gotta go. Kerry has always been close to my heart, I like to consider the kingdom my second home. My mother is from Rathmore in Co. Kerry which basically meant that I spent a lot of time growing up in Kerry, from visiting cousins in Rathmore, Killarney, CastleIsland and just about every inch of Kerry imaginable. As a family in the 90’s, my grandfather would take us all in his car to various horse racing events in Ireland with Kerry being a huge focus. We’d travel to the races in Listowel, head to Killarney and my personal highlight was visiting Tralee. We’d often travel during the Rose of Tralee festival - back then, we would make sure to arrive early in the morning so we could get the roses autographs and we’d even go on all the carnival rides with the roses for free. After we got to hang out with the roses we’d then make our way to the races where we’d make sandwiches and drink Country Spring Orange from the boot of the car, if we were feeling fancy we’d get TK Orange or a bottle of red lemonade. They really were the best of times and something that’ll I treasure forever.
You are now presenting fully charged with Meghann, how do you find the early mornings? Are you a morning person in general? Honestly, I’m not a morning person at all. I could sit here and lie and say I love them, but truthfully I don’t. Name one person who loves the sound of their alarm at 5.20am in the morning? Not me, that’s for sure!

I’m hopeless for eating breakfast and always have been, I hate going to bed early the night before but once I’m in bed I’d happily stay there. Since I’ve started presenting Fully Charged on SPIN South West I can safely say that my relationship with mornings is getting better. The alarm is less of an enemy and more of a friendly reminder that I’ve got to wake up and head to a job that I really do love. The thing is, once I’m awake there’s no stopping me. People have said to me “how do you have so much energy in the morning?” or “how do you sound so happy, so early?” - I never know how to answer them. That’s just the way I am. It really is rare I’m in a bad mood and if I am it’s probably because I haven’t eaten.
You have been in the media business for a while now what advice would you give to students thinking of thinking that route. I would say to anyone no matter what their career choice is.. just go for it!! Whether you want to work as a teacher, in a shop, be a carer, work in the media, whatever you want to be, just work towards it. Life is too short to be thinking “what if” or “I don’t think I can do it”. I think having courage is so important but even more so, passion. If you don’t have passion for what you do then it will shine through and it’s the passion that will keep you going when you start to doubt yourself. Hard work, persistence and belief in yourself are some of the most important traits too I think. Try not to care about what others are thinking and just do it! Sadly, so many people see radio or media in general as a quick fix to become a star or a celebrity and it’s quite annoying when you see people use radio for that purpose. That’s what reality tv is for (just go on that). If working in the media business is what you want then give it a crack, what’s the worst that can happen? But remember, it is work and it is a business. I would say to anyone looking towards a career in media that there seems to be this myth in the air that you have to know people in the industry to get a job - that’s simply not true. I knew nobody in radio when I began, in fact the industry was nothing but something I aspired to work in but never thought possible. I once worked for over 3 years before I ever made a profit as all my money earned was spent on buses and trains to get to work and then the remainder of my earnings was spent staying in B&B’s or grotty hostels just because I wanted to be on the radio. There are one or two hostels that shall remain nameless but lets just say I saw and heard some questionable things going on that’s for sure. I’d like to think it’s worked out but it wasn’t without it’s fair share of hurdles that’s for sure.
What does Ed do to unwind? Oaah these questions bring back flashbacks of filling out CVs. The interest and hobbies section was always where I exaggerated the truth on those yokes. 16 | Connect Kerry | June 2017
I’d say I keep it pretty basic in terms of what I do to unwind. You’d think I listen to enough music at SPIN South West but honestly I love music and it’s the one thing that helps me wind down. Headphones are almost always in my ears which probably isn’t too good for my poor ears but it’s great for me. I actually like to draw too, in fact I often said that if radio didn’t work out then I would have taken a career in art in someway shape or form. Perhaps, graphic design, architecture, or even a job as a cartoonist (that’d be pretty cool). I love to watch Netflix but who doesn’t? Roll on the next series of Stranger Things. I also love going to the cinema too, there’s a lot to be said for a large popcorn a bag of Minstrels whilst watching a film on the big screen. Like most people my age I enjoy a night out on the town too, whether it’s a quite one at a local bar or throwing some dodgy shapes on the dance floor - any form of “socialising” with friends is essential to unwind. Is it bad that to admit I love social media too? I’m fairly active on Twitter, Instagram and Snapchat @EdRoche if you wanna give me a follow. It’s a great place to connect with listeners.
What is the biggest highlight in your career to date? There have been so many highlights. With my job I get to interview a lot of famous people and people with surreal stories (some interesting, some are definitely not). I also, get the opportunity to host many exciting events - one being Junk Kouture which is a nationwide contest which encourages young designers in secondary schools all over Ireland to create clothes from everyday junk that would normally find its way into the bin. I’ve hosted that for the past 3 years which is heaps of fun. Earlier this year, I got to go to The BRIT Awards 2017 where I saw the likes of Ed Sheeran, Katy Perry, Coldplay, Little Mix and many more perform live. That’s certainly a perk, but my highlight has got to be in 2014. I won a PPI Radio Award, which is basically an Oscar for Irish Radio Industry professionals in 2014. The award I won was Silver for Best Music Programme with SPIN South West. There was something about winning that award that meant so much to me, mainly because I was up against some stiff competition on a national level and I beat them. That’s often unheard of in radio especially for such a strong category. I reckon that’s my highlight so far, although there’s plenty of time to create some more highlights. Lets see what happens.

KEEPING YOUR MOUTH CLEAN DURING PREGNANCY
Can oral health influence pregnancy? Do you really lose a tooth with each pregnancy?? Your mouth is the gateway to your baby’s health. Pregnancy is a crucial time in a woman`s life and maintaining good oral health is essential in ensuring good overall health. Despite this 2234% of woman consult a dentist during pregnancy in the United States and figures are probably lower than this in Ireland.
With pregnancy comes changes in your body, emotions, and mouth. 50% of women will develop pregnancy gingivitis. (inflamed gums) A mild form of gum disease that is present between the second to eight trimesters during pregnancy. It usually goes away after childbirth. Hormones make your gums more easily irritated by plaque. Adopting a good oral hygiene approach including brushing after meals and flossing should eliminate the problem.
Periodontal (gum)disease is a chronic bacterial induced inflammatory condition that attacks the gum tissue and bone supporting the teeth. If left untreated, periodontal disease can lead to tooth loss .6% of women experience gum disease during pregnancy. Research has indicated that women with periodontal disease can have adverse outcomes during pregnancy including giving birth to a pre-term or low birth weight babies. These reports come from the American academy of Periodontology and the European Federation of Periodontology urging women to maintain periodontal health. Mums with gum disease are four to seven times more likely deliver a preterm baby with a low birth weight. Gum disease can lead to tooth loss and other systemic conditions such as cardiovascular disease and diabetes. Babies with a low birth weight of less than 5.5 pounds may be at risk of long term health problems such as delayed motor skills or learning disabilities. In the U.S visiting the dentist and receiving treatment for periodontal disease can reduce birth risks by 28%
2-10% of women can develop little soft tissue growths (pregnancy epulis) in the gum which resemble a raspberry. These are plaque induced and generally tend to resolve after the pregnancy. They generally bleed and if they become large and irritating they can easily be removed by your dentist.
Bleeding, tender, swollen gums, bad breath, and loose teeth can all be signs of gum disease. These should not be ignored and one should visit their dentist immediately. It is preferably to visit the dentist every 6 months for an assessment and more frequently if one suffers from gum disease. Women should attend for regular dental checkups, ideally prior to becoming pregnant. However, it is possible to preform dental treatment during pregnancy. It may however, become uncomfortable during the latter stages of pregnancy. The Dental Health Foundation, WHO and American Health foundation of Obstetricians and Gynaecologists encourage women to sustain their oral health and seek regular cleanings during pregnancy. Gum disease can normally be treated with non-surgical therapy. Losing a tooth during pregnancy is an old wives tale and is not common during pregnancy, unless you have untreated gum disease.
Your baby’s teeth develop between the third to six months of pregnancy so eating healthy including adopting a diet rich in protein and Vit A, C, and D and calcium and phosphorous are important. To reduce neural tube defect, you need 600mg of folic acid daily. Drinking plenty of fluoridated water will keep your own teeth strong.

Morning sickness can cause erosion of the teeth during pregnancy. The acid produced can attack the enamel in the teeth. It is preferable to rinse with water or fluoride mouthwash afterwards and wait for at least 30 mins prior to brushing teeth. You are also more at risk of cavities because of the acid produced. If brushing makes you gag, take it slowly and perhaps try a smaller toothbrush or flavour toothpaste.it is important to stick to your routine. A dry mouth sensation can also occur during pregnancy. This can be both hormonal and partly contributable to morning sickness. Rinsing with water rather than fizzy drinks is best. Your dentist can also help with this through recommending some mouthwashes and sprays.
It is safe to visit your dentist during pregnancy; however, you must inform your dentist if you are pregnant. Treatment is usually undertaken in the second trimester. Dental x-rays are normally deferred until the second trimester if required.remember, it is just as important to look after your teeth and gums during pregnancy as it is the rest of your body.

I hope you are having a great month so far and have been enjoying the lovely weather we have been getting? I was on holiday in the South of France and was lucky enough to catch the buzz and glamour around the Cannes film festival! Unfortunately I didn’t get invited to the red carpet events (maybe next year) but that didn’t stop me soaking up the fabulous atmosphere and taking inspiration from the beautiful make up looks. As debs season is upon us again and always tends to give Cannes film festival a run for its money, the good news is that one of my absolute favourite looks is very much on trend- the cat lined eye. All manner of winged lines graced the red carpet and I am sure they will feature heavily at debs balls around the country over the coming months. The winged liner is best achieved with a liquid pen and I’m not going to sugar coat it- it takes a bit of practice to get right (read: do not wait until your event to try for the first time!). I find an easy way to practice applying liner is to hold a hand mirror under your chin and look down into it as you can see more of the lid this way and you don’t have to close your eyes. Start on the outer corner of the eye by laying the liner brush flat against the lash line so get the outline of the shape you want. Don’t line all the way into the inner eye, just into the middle of the top lash line. Look into the mirror straight on and see if you have the basic shape you want. You can then build up the look to be as strong as you would like. Always work upwards with the wing rather than bringing it down as this will make the eyes look drooped. Think elongation and feline! Pair the cat eye with a nude matte lip and you are on to a winner, uber glam and gorgeous! Until next time, Au Revoir,

Standing room only at the launch of Breeda Hurleys new book Survive and Thrive: The Journey of a Lifetime A packed crowd congregated at the Rose Hotel Tralee recently for the eagerly anticipated launch of Breeda Hurley’s book Survive and Thrive. With standing room only the launch was an incredible success for the inspirational Kerry business woman and mother of eight. An impressive line-up of guest speakers including Pat Slattery, Anne Hannon, Liz Maher, Donna Kennedy and Billy Keane took to the stage on a night that had many laughs with Breeda’s son Brian Hurley being the perfect MC for the evening. The best part of the night was certainly when Breeda read excerpts from the book that had the audience in stitches. Brian opened up the evening by reminding his mother that special moments like this are fleeting and, few and far between. “Mom this is your night, enjoy the richly deserved plaudits, this is part of your legacy and a ‘pinch yourself’ moment.” Speaker Anne Hannon, CEO of Sort My Books commented: “Survive and Thrive is full of hard won experience and intuitive guidance. For me it’s a must read for any business owner.” Award winning author Donna Kennedy said: “Breeda is one of the biggest Victor’s in this Country. She is certainly a creator of circumstance. Supreme Apprentice Chef, Pádraic Randles, KENMARE
The 2016/2017 Supreme Apprentice Chef, Pádraic Randles, is a 5th year student at Pobalscoil Inbhear Scéine, Kenmare, Co Kerry. The 17 year old is from a dairy farming background which has afforded him an appreciation of the importance of good quality food. He enjoys Home Economics and improving his culinary skills. This year he took part in the Apprentice Chef for the 2nd time as he loved the experience last year. His recipe from last year’s Apprentice Chef programme featured in the “Cook for Recovery” cookbook published by Recovery Haven, Cancer Support house. In addition, he represented the Apprentice Chef at the IT Tralee Food 4 Thought event alongside his chef mentor Mark Doe. The duo did a cookery demonstration showcasing his 2016/2017 winning dish. All the ingredients used can be sourced locally and are “good mood foods.” ---------------------------------------------------------------
Award Winning Recipe Marinated pan fried Skeaghanore duck fillet, potato rosti, spring roll with celeriac and cabbage, carrot & cumin purée, candied hazelnuts and sweet potato crisps.
---------------------------------------------INGREDIENTS
For the duck: 1 large duck breasts, 1 tsp five spice powder, sea salt, 25g hazelnuts - toasted For the duck marinade: 3 tbsp of dark soy sauce, Juice of 1/2 orange, 3 tbsp of honey, 1 tbsp of rice wine, 3 garlic cloves, thumb sized piece of ginger, 3 star anise For the rösti: 1 large floury potato, vegetable oil For the puree: 2 carrots, 1 shallot, 1 clove garlic, 1/2 tsp Cumin, splash of oil and water. Buttermilk For the sweet potato crisps: 1 sweet potato, salt and pepper For the Spring Roll: Celeriac, 100ml cream, Savoy cabbage, spring roll pastry, egg white Sides: Candied hazelnuts (toasted hazelnuts dusted in icing sugar), Buttered spinach (Spinach in knob of butter), Carrot cubes (honey, thyme, butter and parsley), Mandarin orange

Method 1. (Night Before) Whisk together all of the ingredients for the marinade. Score the duck diagonally. Put the duck into a bowl with the marinade making sure to coat the duck in the marinade. Place covered in the fridge until cooking time. 2. Preheat oven to 180 degrees/Mark 6. Chop carrots, shallots and garlic. Toss in oil, water and 1/2 teaspoon of cumin. Place covered in tin foil in the oven for about 40 minutes. Once the tray of carrots and shallots is really soft, put the into the nutri-bullet along with some buttermilk and puree. Keep adding more buttermilk until a slack texture is obtained. 32 | Connect Kerry | June 2017
Heat frying pan on medium heat. Grate potato for Rösti into a tea towel. Squeeze as much moisture as possible out of the potato and season generously. Pack the grated potato tightly into a metal ring. Add butter to preheated pan. Gently push the rösti from the ring ensuring it maintains shape. Fry rosti until it has a golden colour all around. Place in oven. 3. Slice sweet potato using mandolin. Place in deep fat fryer for about three minutes, ensuring not to allow them to go golden/brown. Place hazelnuts onto baking parchment on a baking tray. Place the hazelnuts into the middle tray of the oven for 8 to 15 minutes. Once hazelnuts have been cooked place in tea towel bun and allow rest for 5 minutes. Gently work off the hazelnuts skins. Dust Hazelnuts in icing sugar and place back in oven for about two minutes. 4. Slice carrots into cubes. Add to a pot of boiling water and allow to cook until al dente. Once cooked, toss the carrot cubes in butter, honey, thyme and parsley. Separate the egg yolk from the white . Brush the inside of the spring roll pastry with the egg white. Shred the cabbage and cube the celeriac. Blanche the celeriac and cabbage in a pot of boiling water. Put the 100ml of cream on heat and allow it to reduce. Mix the cream through the celeriac and cabbage. Carefully spoon the mixture into the pastry and roll tightly. Deep fat fry the spring rolls until a golden brown colour is achieved. 5. Remove the duck breast from the marinade and gently pat dry. Pour the marinade in to a small saucepan. 6. Rub the duck breast generously with five spice and sea salt. Place the duck skin side down in a heavy based pan and cook over a medium heat for 6 to 8 minutes. Turn the duck and fry for about a minute. Place the pan into the oven for 10 minutes. Place the rosti in the oven for 15 minutes. 6. Preheat medium frying pan. Add a knob of butter and once melted, place a few spinach leaves and allow them to slightly wilt. Bring the marinade to a simmer over a high heat for ten minutes until thickened. 7. Let the duck rest on a chopping board for 5 minutes under tin foil to allow the meat to rest. Begin plating.

The Power of Words Words are powerful. They shape our perception and colour how we view things. For instance, think about the word “sunrise”. We think about the sun coming up over the horizon of the earth, and rising into the sky. Of course, this isn’t what happens. In fact, the world turns towards the sun and gradually away from it, and the sun itself doesn’t move at all relative to the earth. However, the word we use shapes how we see this phenomenon. The same is true of the words we use about others and ourselves. Children are told that they are bad, or stupid, or lazy, and they come to see themselves in that way. Even more powerful are the words we use about ourselves, as part of our inner dialogue. Do you use derogatory or shaming words about yourself in your head? Do you think of yourself as not good enough or somehow unworthy? Not very bright? Ugly or fat? If so, have a look at your “self-talk”. If you give up before you even start, are you thinking “Oh, I’d never be able to do that”, or “I’d be no good at that”? If you’re anxious, do you tell yourself that the worst is bound to happen, and you won’t be able to cope? If you’re depressed, do you think to yourself that everything is hopeless and there’s no use in going on? That your life is miserable and not going to change? Self talk really matters. Words are very powerful, even the ones we don’t say out loud.

comes to Moyvane ONE of the country’s most noted and gifted singer songwriters, Phil Coulter, will visit North Kerry this month for a special, intimate concert not to be missed, The renowned singer will perform at the Church of the Assumption, Moyvane, on Tuesday, June 13th, as part of a local fundraising campaign to help cover the costs of painting the parish church. A gifted communicator, musician and composer, Phil Coulter brings his own unique and inimitable style to his concerts. His songs are challenging, uplifting and also very consoling. Organisers are hoping for a large attendance on the night to help offset the costs of the painting work.
