EDITOR NOTE Hello and welcome to Connect, It’s November and I am sure all your little ones are maxed out on sugar from the Halloween festivities. Maybe you have indulged a little yourself. Well no need to worry we have the tips on how to lose a dress size before Christmas. We also meet 2FM DJ Jenny Greene who is making her way to the INEC this December, she tells us all about her life and what it’s like on the road doing gigs like this. Paul Galvin launched a fantastic new collection for Dunnes Stores recently so we went along to see what we can expect for the men in our lives this season. We also took a trip to Castleisland as this is fashion month for them with their amazing night coming up on the 9th so we went along to meet some of the traders to see what they have to offer. It’s getting cold and it’s time to prepare for winter so we checked out what is available to sort your home for winter. There are lots of great bargains out there at the moment if you need to get a little renovation done or even purchase a new stove, check out Corcorans who have an outstanding collection. Orla our Fashion editor catches up with the very talented Anne Cantillon Linnane one of the very many talented designers we are blessed to have here in Kerry, and we have lots more on fashion for those choosing the winter wardrobe. Lots of events happening this month so get yourself along to one, it’s a great way to pass a winters night, Castleisland have an intimate evening of fashion in the lovely surroundings of the Ivy Leaf theatre, Shaws are supporting the Hospice with a night of fashion and of course our very popular Ladies Lunch Fashion and Beauty Afternoon is taking place this month on Sunday 26th, this is always an amazing day out and preparations are well under way so make sure you have your ticket reserved on time. So as always there is lots to read and lots to check out, the clocks have gone back the nights are getting darker so please stay safe on the roads and don’t forget to check in on that elderly family member or neighbour, this time of year is always harder if you live alone the nights are longer so if you have a few minutes call for that cuppa, it’s a half an hour out of your busy life, to your neighbour or family member it’s a lot more. By Marisa Reidy ONE minute was all it took for fans to snap up tickets to 2FM DJ Jenny Greene’s hotly-anticipated Killarney gig with the RTE Concert Orchestra on December 15. Within hours a second date was announced – and yet again tickets sold like wildfire. The popularity of Jenny Greene’s amazing set – which combines 90s club classics with a 48-piece orchestra - may have surprised some music fans across Ireland, but none more so than the Dublin DJ herself. Speaking to Connect ahead of her two sell-out gigs at the INEC on December 15 and 16, Jenny admitted that she honestly believed she’d be lucky to ‘get away with’ the original gig at Electric Picnic last year – a concept that she could never have predicted would become one of the most sought after music gigs for fans right across the country. “About five or six weeks before last year’s Electric Picnic Dan Healy, the head of 2FM, came to me with the idea and said ‘are you in or out,’” Jenny told Connect. “I initially thought it was a mad idea but we literally hit the ground running. It was a bit of a rush to put everything together, so I really just hoped we’d get away with it.” And get away with it they certainly did – going on to play the 3Arena, the Marquee in Cork, Galway Arts Festival to name but a few, culminating in two special gigs in Killarney next month. And speaking of coming to Kerry, Jenny turned the attention to the female vocalist who accompanies her at her sell out orchestra shows – Killarney’s very own Gemma Sugrue. Anticipating a very special reaction from the Killarney crowd when they hit the INEC stage in December, Jenny was full of praise for local lady Gemma.

“When all this was initially being talked about, Mary Sexton – who is the RTE concert Orchestra coordinator – was talking about Gemma and how she would be perfect for what we were doing. It was really funny because she was talking about how she had seen her perform in a Spice Girls’ tribute band as Baby Spice and I remember thinking that that didn’t fill me with confidence,” Jenny joked. “But as soon as I heard her I thought she was amazing, and as well as being so talented she also gets on so, so well with everyone and there are no egos, which is great.” Jenny, who played a solo DJ set at the INEC several years ago, says she and Gemma are really excited about returning to the Kerry venue. “The INEC is amazing and really lends itself to something like this so we are really excited to come back,” she said. “Of course Gemma is really excited about it and it seems the people of Kerry are too, which is brilliant.” 2FM listeners will probably best know Jenny Greene as co-presenter of the morning show with Nickey Bynre of Westlife fame. She also presents her own hugely popular Electric Disco show on the station on Saturday nights. When asked about her career path, Jenny admitted that being a DJ was her dream from when she was a young child. “I remember being about 12 years old and my next door neighbour was a DJ and I thought, I’d love to do that,” Jenny told Connect.

“I asked my parents for decks for Christmas and they got them for me – two belt drive twin tables. I would buy records in town each week until I eventually compiled a full collection, which I still have.” Knowing exactly what she wanted to do in the future, an ambitious 15-year-old Jenny contacted Pulse FM which was running a talent contest, which she won – the prize giving her the opportunity to come to work at the station in the background. This allowed her to make some valuable contacts in the music and DJing world, leading to her securing an early set at Palace Nightclub – while still only 15 years of age. “The passion was always there, but at the time I never really believed I could make a career out of it if I’m honest. But there weren’t that many female DJs around at the time so I suppose that gave me an edge. It was a novelty for a lot of people I suppose.” Jenny stayed with Pulse FM for two years until the station closed, and then at the age of 17, got a job with FM104 presenting a weekend breakfast show. “I was working part time in a clothes shop and I got a call from the station offering me a weekend breakfast show. Again the female thing played in my favour, as they wanted a girl to present the show.” Jenny was in fifth year in school when she started presenting the new show and soon realised that this was definitely the career for her. “I spoke to my parents about it and we all agreed that I should leave school and pursue this,” Jenny said, “I was never really

very academic so that’s what I did.” Now Jenny is a formidable force as part of the Nicky Byrne show on 2FM - a partnership that she admits she was very unsure of at the beginning. “I always consider myself a music DJ and love playing my own style of music, so being a daytime presenter was never something that I really aspired to,” Jenny said. “I didn’t know Nicky either, so I didn’t know what to expect and looking back now I could never have imagined that I would love it so much. We get on brilliantly and every day is a laugh.” Jenny still presents her Saturday night Electric Disco on 2FM – despite being given the option of no longer working at the weekends. “I was told I wouldn’t have to do any more Saturday nights if I was working every day with Nicky, but as I say, I always loved dance music and this is what I love to do so I was happy to keep on doing it.” Despite all the success that Jenny has enjoyed in her career, presenting a prime time radio slot on 2FM and filling out arenas with the RTE Concert Orchestra, her proudest moment came last June when she married the love of her life Kelly Keogh. Their wedding took place at Wineport Lodge in Westmeath, with Jenny’s 2fm co-host Nicky Byrne among family and friends in attendance. Jenny proposed to Kelly while they were on holidays in Portugal the previous September, telling her Twitter followers at the time: ‘She said yes! Over the moon!!” Describing her new wife as her biggest fan, Jenny told Connect that the couple are excited to come to Killarney next month for what promises to be a super show. “It’s been an incredible two years and the wedding was definitely the highlight,” Jenny said. “Kelly comes with me to all the gigs so she will definitely be in Killarney. It would probably be a bad omen at this stage if she wasn’t there.” You can tune in to Jenny and Nicky weekdays on 2FM from 10am as well as Jenny’s Electric Disco on Saturday nights at 8pm.

WHY TAKE PROBIOTICS? 1: Can I just eat yoghurt which contains probiotics? Research shows that yoghurts made with probiotics often have very low levels of bacteria in them and may not help your gut bacteria. They may also contain additives including sugars, artificial sweeteners, flavouring or preservatives. 2: Do probiotics interfere with medication? There are no known interactions between probiotics and common medications (if you are taking immune suppressants you should speak with your GP before taking probiotics.) 3: Can I use them with antibiotics? Yes, just ensure you leave an hour or so between antibiotic and probiotic. Several studies have shown that they may help prevent the negative effect of these medications on your good gut bacteria. 4: Can I take probiotics while pregnant? Probiotics can be used safely while pregnant and may have benefits for both mother and baby; as with all supplements it is best to stick with one formulated for pregnancy. Ensure you seek out probiotics that have been tried and tested. For adults some of our favourites are the UDO’S range, BIO-KULT, QUEST MEGA 8 and BIOCARE. We know good bacteria are effective in digestive health but it is important to take the one to suit your specific needs. Remember a healthy gut is an essential step towards good health. Dropping a Dress Size for Christmas

What with vegan and paleo, gluten free and pescatarian, the world of dieting, or the newly preferred ‘clean eating’, can be a bit of a minefield. Then again, there has also been a resurgence of taking it back to basics, as is seen every year on RTÉ’s ‘Operation Transformation’. The key reason to shape up is usually an event and what better reason to drop a dress size than for those Christmas pictures? Of course, another key component in any lifestyle change is practicality. No-one has time to prep twelve meals a day and then head to the gym for two hours. This has to be sustainable and going on a shake detox where you don’t eat for the next month is never going to be sustainable, is it? Though Ireland has made huge steps towards becoming a more healthconscious nation, we still rank abysmally low by global standards and are on track to become the most obese country in Europe. Food for thought, pun intended! It’s often said that weight loss is 80% diet and 20% exercise. Of course, everyone is different and some people have a faster metabolism than others. I think we can all admit that the worst thing is that yoyoing feeling you know the one, where you lose a stone, put back on a stone and a half, lose a few pounds and then give up on it altogether because you just want to eat that one piece of cake! Everyone knows the general rules for losing weight; eat more fruit and veg, eat less processed foods, drink more water, exercise, plan your meals and exercise time. But doing this alone can be tough; this is where the support of a club comes in handy. Be it Slimming World, a new gym, a team sport, Weight Watchers, if you feel supported then you’re much more 8 | Connect Kerry | November 2017

likely to reach your goals. You’re accountable and if you decide to give up, it’s not just you that knows but your team members know it too. Looking at the mountain overwhelms everyone; you can’t run a marathon before doing a 5k. Similarly, if someone told me in the morning that I had to give up all sugar, I know it would almost be impossible. Allowing for small treats is essential, because depriving yourself will only encourage bad habits or binges, where you see all the foods you stopped yourself from having and just decide to have a YOLO moment. Similarly, for work-outs, it’s not about having no time but rather about MAKING the time. If you know you’re flat out today, then you have to make time for some exercise tomorrow, just for thirty minutes. Sometimes it’s easier to get it out of the way in the morning as opposed to dreading it all day and deciding not to bother by the time that the evening has come around. Happy November! In preparation for the festive season, here’s my top tips for our ‘drop a dress size for Christmas’ issue. So let’s look at cortisol – it’s the main stress hormone made in your adrenal glands. Among other things, it helps control blood sugar levels & regulate metabolism. It is released when you are under stress. High cortisol when sustained can be linked to high blood pressure, diabetes, depression, insomnia etc. In addition, consistently high cortisol has been linked to increased or maintained weight in the abdominal area. Abdominal fat has four times more cortisol receptors than any other body fat; so help lose weight from your tummy, aim to reduce your cortisol. Simple steps to reduce cortisol: 1. The number one way you can reduce it is to de-stress. Whatever is stressing you out – learn to identify it and take steps

to control it. Do activities you enjoy (eg) reading / walking / having a relaxing bath. If you have trouble nodding off, try using essential oils to promote relaxation (e.g.) lavender or bergamot. Switch off electronic devices an hour before sleep for a better slumber. 4. Practise mindfulness. A study from the University of California proved that mindfulness training improved eating patterns and cortisol response. I’m a fan of the Head Space App and also Jon

Kabat Zinn’s free mindfulness YouTube videos. 5. A healthy balanced diet** low in processed foods and stimulants (e.g.) caffeine is recommended. Personally, I love the My Fitness Pal App (free) to track my food intake and exercise levels. Getting Winter Ready .... It’s the time of year, summer is over if indeed it ever began… we look around the house and see what needs to be done to have it ready for the long autumn winter ahead, we also look this time of year to little changes we can do to improve the look of our home or how we can save on our energy and heating costs so we have asked the experts for a few tips to help you on your way to getting the house ready for the winter.

Draught proofing

Colour your home…

Draught proofing is the sure way to save energy and keep your home warm. Controlled ventilation helps reduce condensation and damp, by letting fresh air in when needed.

Colour is key in any home, while the magnolia is safe on the walls color is essential, to add life and vibrancy to your living space.

However, draughts are uncontrolled: they let in too much cold air and waste too much heat. To draught-proof your home you should block up unwanted gaps that let cold air in and warm air out. Saving warm air means you’ll use less energy to heat your home, so you’ll save money as well as making your home snug and pleasant. Draughts happen where there are unwanted gaps in the construction of your home, and where openings are left uncovered so be sure to check your house this time of year before the cold damp weather sets in to ensure a cosy and comfy home this winter.

Heat Saving Tips The nights are getting longer and colder. The heating must be turned on more often as a result. We have gotten a few tips on how to save. Thanks to Katie from Corrib Oils for these. • Turn your heating down – reduce it to a comfortable 20 degrees. Lowering your thermostat by just 1 degree can knock 10% off your home heating bill. • Programme your heating – get a programmable thermostat or programmable radiator control so that 16 | Connect Kerry | November 2017

If you are not adventurous enough to change the walls why not ad a splash of color with the furniture..... it is very important to plan colors correctly, if you like strong colors choose a feature wall for that color, but if you’re not totally sure introduce the color in accessories so that you can change your mind without any drastic measures. You can get carried away with colors very easily so choose wisely and take advice from the experts there are lots of in house interior designers in all furniture stores so don’t be afraid to ask for their help. We all love the comfort of home, so enjoy creating that new look.....

George and Mary Sugrue

nominated for national volunteer ireland award! Two Ballyseedy volunteers, George and Mary Sugrue, have been nominated for a prestigious National Volunteering Award in recognition of their work with Adi Roche’s Chernobyl Children International, spanning over three decades and three generations. George and Mary Sugrue’s life is an extraordinary glimpse into the unstinting generosity of the Irish people and our ability to open our heart to the children affected by the 1986 Chernobyl nuclear disaster and are still doing so, over 31 years later. George and Mary were among the first of hundreds of Irish families who opened their hearts and homes to these children in the wake of the catastrophic nuclear accident to provide the children with health boosting break from the toxic environments they lived in. Through their advocacy and hard work they founded and single handed run the Chernobyl Children International Dental Programme. Each year George and Mary drive over 3,000kms to provide high standard dental care to children who have been abandoned to Children’s Mental Asylums. This year, they have expanded their programme with a mobile dental unit which is used to treat terminally ill children on our Hospice and Palliative Care Programme reaching almost 200 children with life-limiting illnesses. George and Mary have assisted in the delivery of over €105million humanitarian aid to Belarus and have subsequently travelled with convoys of aid to ensure its safe delivery. 2017 marked their 21st and 19th convoy respectively that they have been involved with for CCI. They are at the helm of the annual Rose of Tralee International Festival, during which they are one of the only local groups to walk in the famous parade. Not only have Tralee Outreach Group Leaders George and Mary organised the arrival of and welcomed dozens of children into their own home, they have also committed themselves to finding alternatives to orphanages for a number of children. They have actively reunited numerous children with their biological families and most recently have started looking for a foster home for Angelina Gorhova, 11, whose biological family are not a viable option. They have directly saved the lives of many children, reuniting them with families and offering them a future of hope and freedom. The “superhero” husband-wife team are nominated for the Volunteer Ireland Awards, under the Social Work and Social Inclusion Category. According to Adi Roche, founder and voluntary CEO of Chernobyl Children International; “No statistics do justice to the efforts that this husband and wife super team give to CCI every year. They have stood with collection buckets in the rain on street corners in the dead of winter, they have given up their Christmas Eve’s to wrap presents for donations, driven trucks in ice cold treacherous condition across Europe, knocked on doors and asked for help not for themselves but for the children of Chernobyl. Above all else, they keep the memory of Chernobyl alive in the hearts and minds of so many Cork people, 31 years after such a terrible accident. I am so grateful for all they have done for the children affected by Chernobyl and so happy that they are getting the recognition that they so truly deserve. I have no doubt that on the day of each awards ceremony; there will be a group of children cheerleading for them, all the way over in Belarus as they have touched the lives of so many people” The Award-ceremony takes place in Sligo on 1 December and as shortlisted nominees, the Sugrues are also nominated for the coveted overall ‘Volunteer of the Year’ Award. 20 | Connect Kerry | November 2017

Now we are in to November and with the start of winter it’s time to invest in that ever so important ‘winter coat’. The winter coat is without doubt a staple in my wardrobe that can be worn year after year. So it is worth investing in, as you are guaranteed to get a lot of wear out of it. Most people buy a winter coat that is a classic neutral so you can wear with everything and also a warmer casual style. However, if your budget extends a bit further you can then also invest in a statement coat/ on trend style for this season. For a real style statement this season’s patterned coats or a Pamela Scott, Tralee block colour coat in the colour of the season are what you need. If you are brave enough to take the plunge and opt for one of these beauties then you are spoilt for choice.

Buying a coat that suits your body shape is critical so that you get the best look for you and more bang for your buck. For larger busted ladies wear tailored coats that define your waist. Siofan Forde “From Ireland to LA – the Irish recording artist following his musical dreams” It is always great to hear of Kerry natives doing well in Music on a bigger platform and lucky for one Tralee native LA has opened up its doors for his future in the business. For any aspiring entertainment creator, Los Angeles is seen as the place to be and the city in which to realise artistic and creative dreams. For one young up-and-coming Pop/ Hip-Hop artist from Kerry, the decision to trade Ireland for America in 2016 is beginning to pay dividends. For Steven Forde, a native of Tralee, each day is an opportunity to grow as an artist and to take another step forward towards his high-rise music ambitions. Having recently re-branded as ‘Stiofán’, the 24-year-old has taken a break from a hectic schedule of live performances and instead settled down to write and record his debut album. Stiofán’s burning ambitions for a career in the music industry remained alight and soon brought him across the Atlantic Ocean to the West Coast of America. Stiofán has actively pursued his interest in music from a young age; his earliest memories come from musicals and variety shows throughout Tralee, Killarney and right across the county. In his short time in Los Angeles, Stiofán has rubbed shoulders with industry experts and found his music resonates with people on a real level.

Nick tells us all about it ..... Hugh Culloty’s started out in Ashe street as purely electrical retail and repairs, then Hugh moved to the current location 28 The Mall. Arthurs music shop in the square was closing doiwn and Hugh made the decision to buy out the stock from Arthurs and start a music department. The biggest seller in the shop is still beginner guitars, but in fairness it’s almost seasonal. We are in piano season now with some amazing deals on Roland pianos from €619 to €5,199 warranty’s ranging from 5year to 10 year. These are truly amazing instruments and it’s been a privilege to witness the changes technology has had on music and instrumentation. I really enjoy helping the beginner musician get started even if it’s just with information to help them decide what type of guitar or banjo or accordion. These days a lot of youngsters are playing trad and other types of music, even classical, which wasn’t the case some time ago when people would only have the opportunity to pursue one discipline. I would encourage parents to give their child an opportunity to play an instrument, science now agrees that brain development through learning music is a quantifiable difference, a decent instrument to start with is important as its impossible to learn on (such as instruments bought in toy shops, they are toys and as such don’t need to play)! It’s not expensive to get started in music, and even if there is no history of music in the family, quite often there can be a talent waiting to burst out, the main thing is to get something that suits, again not expensive but suited to the beginner.

With performing put to one side for the moment, Stiofán has shifted his attention back to the studio and is preparing his highly anticipated debut album. Stiofán says he is putting everything into making this album ‘the best project it could possibly be’.

My father was my biggest influence in getting into music, he got me my first piano when i was 3, back then people were throwing pianos away. He was an accordion player and a very tasty musician. I still play occasionally, for fun mostly, in fact we have a Righteous Dudes reunion gig in Naterjacks in Castlegregory this month, hopefully we can remember the tunes!

Community, Love, Agency, Meaning and Purpose There have been a number of studies done on what contributes to a happy life. In general, though there are some variations, the findings can be summed up in one acronym: CLAMP Community, Love, Agency, Meaning and Purpose. Community, of course, means a sense of belonging, and for most of us that means family, friends, neighbourhoods and shared interest groups like sports, arts, social activism, etc. Love has to do with having people in our lives whom we love and by whom we are loved. Meaning is the understanding that we are not here by accident, and that we have significance and a reason to be alive, and purpose has to do with having goals, aims or a sense of achievement and role. Agency is perhaps more difficult to grasp. It is about our ability to control our own lives, actions and destiny. In a free democracy, as adults, we may expect to have considerable agency and choice in our lives. However, our agency is limited by several factors: social structures such as laws, cultural expectations, material resources, time or physical ability, etc. We may wish to climb Mount Everest, but our ability to do so is restricted by the fact that we are too poor, too old, too unfit, or whatever other limitation stops us. These are easy to see and identify, but there are other limiting forces that are completely unconscious, and we are not even aware of them. These most definitely interfere with our agency, and in order to be truly free in our choices, we must develop insight around them. I will explore how we can do this next month.

Tralee Born Poet, shortlisted for

The Warwick Prize for Women in Translation Tralee born poet, Ailbhe Ní Ghearbhuigh, newest collection, The Coast Road, has been shortlisted for the Warwick Prize for Women in Translation 2017, with the winner being announced on November 15th. Ailbhe has previous published two collections and has won several awards. Her poem ‘Filleadh ar an gCaithair was chosen as Ireland’s EU Presidency poem in 2013 and was shortlisted in 2015 for RTE’s ‘A Poem for Ireland’. Stephen Roche caught up with her for a quick chat.

Your Collection, The Coast Road, is shortlisted for the 2017 Warwick Prize for Women in Translation. Tell me about the collection? The Coast Road is a selection of poems from two Irish collections, Péacadh (Coiscéim, 2008) and Tost agus Allagar (Coiscéim, 2016). Peter Fallon, of The Gallery Press, approached me some time ago about producing a bilingual book with a variety of translators. There are 13 translators and I’m delighted with the end result. Is the excitement of being shortlisted for this prize the same as it was from the first time you were ever shortlisted for a prize? Absolutely! Writing is a solitary endeavour and it’s wonderful to get positive feedback in any capacity. Do you think there should be more Irish language poets/writers? There’s many great writers working in Irish today who don’t receive the attention they deserve, probably because the reading public in Irish is quite small. I think bilingual books are a good way to get the work out there, and hopefully steer readers back to the original texts.

What do you think are the main differences in writing in Irish and English? Writing in the Irish language offers the opportunity to be in dialogue with an incredibly rich literary tradition that goes back centuries. I’ve received huge support from fellow writers in Irish, especially from the workshop that meets in Meadowlands in Tralee on Easter Monday each year. Whichever language you work in, writing is hard work and it’s important to get feedback and advice from others who are interested in literature.  Being a poet can be seen as hard work and tough, and the publishing process can be long and daunting. Do you think it’s harder for Irish language poets? I don’t think so, actually. There are so many journals, both in print and online, that you can submit work to, and because it’s a smaller community, it’s possibly easier to speak to publishers. It’s a very positive and supportive environment.  Did publishing your first book change your process of writing? If so, how? I suppose it made me take writing more seriously, and I tried to write beyond my own experiences. I became a bit more ambitious about what I wanted to achieve thematically, which is why my second book, Tost agus Allagar, contained poems about various modes of communication.

Do you think Irish language poets come from small villages rather than towns or cities? Are the surroundings influential? Among the poets who I consider contemporaries, they are from anywhere and everywhere: Gaeltacht and non-Gaeltacht, cities and villages, and write about anything and everything! Taking part in Slógadh when I was in Gaelscoil Mhic Easmainn. My parents both speak Irish so it certainly helped that I didn’t have to struggle to learn the language, like so many do. Did your time in Tralee influence any of your poems?  I love going to Fenit and Banna when I’m at home to clear away the cobwebs. And there’s a poem in The Coast Road  about Tom Waits on honeymoon in Tralee. I think the place you grew up in stays with you for life.

Recipe

STICKY GLAZED PORK RIBS

----------------------------------------------Ingredients 1.5kg Pork Ribs (2 whole racks) For the marinade 6 tablespoons redcurrant, plum or other fruit jelly 2 tablespoons runny honey 2 garlic cloves, crushed to a paste 1 tablespoon finely grated fresh ginger ½ -1 medium-hot red chilli, finely chopped, or ½ teaspoon dried chilli flakes 2 tablespoons soy sauce

BBQ Sauce 50 mls Hoisin 30 mls rice wine vinegar 30 mls soya sauce 1 clove garlic, crushed Pinch of chilli flakes 1/8 teaspoon ground cinnamon 1/8 teaspoon ground cloves ¼ cup ground sugar Celeriac Remoulade 1 celeriac ½ cup mayonnaise ½ teaspoon English mustard Lemon Juice

----------------------------------------------Method Combine all the marinade ingredients, whisking together well. Put the ribs in a large oven proof dish and pour the marinade on top. Use your hands to make sure the ribs are well coated. Cover and leave to marinade for at least an hour. Cover the dish with foil and bake in a preheated oven 150oC for 2 hours.Raise the temp to 160 oC. Remove the foil and turn the ribs in the marinade. Cook for a further 30 minutes basting regularly. BBQ Sauce -Place all ingredients together in a pot and simmer for 5 minutes. Celeriac Remoulade - Peel the head of celeriac and cut into fine julienne, add lemon juice and mix. Add mustard and mayonnaise and mix together. Serve with homemade bbq sauce and a celeriac remoulade.

-MINDFULNESS MEDITATION IN THE WORKPLACE Stress is inevitable in life and the reality is that we all deal with stress on a daily basis. Symptoms can include headaches, aches pains and tense muscles, frequent colds and infections, insomnia etc. Beyond these physical symptoms stress can also have an impact on general mood and mental health. This can result in difficultly concentrating, trouble learning new information, difficulty making decisions or feeling overwhelmed or overloaded. As an employer we are responsible for ensuring that the Health and Safety of employees is protected in the workplace and this includes recognising the impact of stress and putting actions in place to relieve stress in the workplace. Many companies are now introducing methods to reduce stress in the workplace with Programmes such as Mindfulness based stress reduction. The main components of these programmes are mindfulness mediation and yoga. Mindfulness Meditation has many benefits and can help increase awareness of what causes stress in the workplace and recognise patterns that lead to stress. Mindfulness also enhances emotional intelligence, notably selfawareness and the capacity to manage stress. Many large well-known companies have implemented mindfulness based programs for its employees and smaller organisations are educating staff so they can be more mindful at work. Through these sessions employees learn how to be more mindful at work and how to practice short mindfulness exercises so that they can engage the wise part of the brain and make good decisions. The neurological benefits of mindfulness to increase emotional intelligence, empathy and self-regulation contribute to our ability to manage conflict in the workplace and communicate more effectively. Regular practice of mindfulness increases the brain’s ability to repair itself and grow new neural connections. So just like physical exercise is important for a fit and healthy body it’s important to regularly practice mindfulness too. A simple mindfulness practice is the one minute meditation. Find a quiet place and focus your attention on your breath. If your mind wanders - as it invariably will! - just bring your concentration back to your breath. Overtime you will be able to notice habitual thought patterns and learn how to work with these to minimise stress levels.
