This year I am seeing the spirit of Christmas through new eyes. With a young family, I am learning about the magic of Christmas and the joy of experiencing everything again for the first time. There is something unique about this time of year – the air is different, people smile more, and there is genuine warmth in one’s embrace. In the end, I have realised that actually, all I want for Christmas is just more time to feel and experience this joy – the joy of Christmas.

Nelson Htoo, a cherished member of Quintessentially, has made a remarkable impact in the hospitality scene alongside his partner Elin, as they blend their unique culinary backgrounds - Burmese and Scandinavian - into their shared passion for food.
In the summer of 2020, Nelson opened Club Rangoon, Hong Kong’s first authentic Burmese restaurant, with a heartfelt mission to introduce his homeland’s rich and complex cuisine to the world. Now based in Singapore, the restaurant has received widespread acclaim and captured the hearts of many.
Elin Fu, originally from the small town of Hamar in Norway, moved to Hong Kong in 2017 seeking new adventures. After graduating from the Hong Kong University of Science and Technology, she explored various roles in the corporate world but soon realised her true calling lay in the bustling F&B industry. Co-founding concepts like Candour and the Nordic café Hjem, Elin has quickly become a beloved figure in the local lifestyle community.
In this feature, the duo shares personal insights about their Christmas traditions and their journey in the hospitality industry, offering a glimpse into how their backgrounds shape their business ventures.
Since Christmas is heavily centered on hospitality, what does it mean to you?
N: For me, Christmas is all about family and togetherness-a time for sharing and creating memories. It’s the same spirit we embrace at Club Rangoon, where everything is about community and connection. There’s a special joy in seeing everyone return home for the holidays to celebrate with delicious food and drinks.
E: I grew up in Norway so Christmas is bringing the family together, everyone is helping out and cooking together.
What are some key lessons you’ve learned about managing a restaurant during the holidays that could help newcomers?
N: Our two concepts take very different approaches to the holiday season. For instance, Hjem, our Nordic café, naturally evokes more of a traditional Christmas atmosphere compared to a Club Rangoon, a Burmese restaurant. The cooler climate in Hong Kong, as opposed to Singapore, also enhances that festive feeling. It’s not always about putting a Christmas related product on the menu but for us it is equally important to focus on the community events, private events and different activation for your restaurant/cafe without swaying too far away from your own concept and yes PLAN EARLY!
What inspires you about the holiday season, both personally and professionally?
N: The holiday season has a way of bringing out the best in us. It’s not just about the lights, the gifts, or the festive decorations; it’s about the feeling of togetherness that comes with spending time with family, friends and our teams. This time of year offers a natural pause in the whirlwind of daily life, giving us the opportunity to reflect on the past year--all the challenges, its victories, and everything in between. Especially with Elin’s background, this time really highlights how she misses her family so we are always looking forward to go back home or try to make time for family even just a little during this time!
Is there a dish you always associate with Christmas Eve or Christmas day?
N: I know Turkey is a big one for most people but for me a well cooked honey glazed ham is the ultimate centerpiece for any holiday table. And of course, lots of champagne.
E: Julebrus! In Norway, every city has their own soda that they create just for Christmas holidays so when the holiday time comes around I always look forward to it! You are only able to get this drink during this time so it’s quite special for me growing up as a kid in Norway.
5. How do you incorporate your cultural backgrounds into your festive celebrations?
N: Coming from a Burmese background, where Christmas isn’t traditionally celebrated, I only experienced it when I first moved abroad! It just opened my eyes on how big people are on Christmas and the Christmas spirit. Also as a Southeast Asian, where rice is such a staple in daily life, encountering a traditional Christmas spread, with dishes like roast turkeys, pies, casseroles, pies, and cakes--would naturally feel very different. But having all this once a year makes it much more special.
E: I tend to do activities that I usually do when I am back home in Norway while I am in Hong Kong. For example, I have to get a Christmas tree, go to different Christmas markets, Christmas music is blasting as soon as it’s Dec 1.
Nelson usually gets an advent calendar for us as well. It’s funny because you can see all these little things reflected at Hjem.
Can you share a story about a customer or anyone who inspired you to give back to the community?
N: Back home in Burma, the spirit of giving/donating is deeply ingrained in our culture--it’s pretty much a part of who we are. Whether it’s a celebration, a birthday, or a personal milestone, the act of giving back is always at the heart of it. We believe in doing good deeds and creating a positive impact wherever we can, a value that I’ve carried with me throughout my journey and Elin is sharing her kindness by connecting with her community, hoping to inspire others through virtual support and simple, genuine interactions every day. She wants to influence and everyone to feel the warmth of knowing, “you are not alone”.
When we opened Club Rangoon, it was important to preserve and reflect those same values. As part of this close-knit F&B industry in Singapore and Hong Kong, we’ve been fortunate to receive incredible support. It’s this sense of community that inspires us to keep going and growing.
That’s why we believe it’s only right to give back in meaningful ways, contributing to the communities that have supported us. It’s not just about running a business; it’s about being part of something bigger--creating a ripple of generosity and connection that mirrors the values we hold close to.
What makes you feel most at home now, as an adult?
N: Growing up in many different cities has redefined what “home” means to me. Rather than being tied to a specific location, home became more about the people I’m with-the connections and comfort they bring.
Now, as I split my time between Singapore and Hong Kong, these two cities have become my anchors. They’re places where I feel a sense of belonging and familiarity, surrounded by people that make me feel like home.
E: Home is still wherever my family is. There is a different sense of home feeling for Norway, Hong Kong and Shanghai (where my grandma is).
Looking ahead, how do you envision celebrating Christmas as a couple and as business partners in the future?
NE: We celebrate Christmas usually following Nordic traditions as a couple. We would usually follow more European Christmas traditions such as going to different markets for the festive vibe, and Christmas themed events. Norwegians usually celebrate Christmas on the 24th instead of the 25th too so we follow that! And of course, Hjem is the best place to grab a cup of brew or some mulled wine if you are in Hong Kong!
