Lorna’s Banana Breakfast Cookies
These are absolutely delicious, and great to grab-and-go. I love to do a double batch as they freeze really well and can be defrosted overnight in the fridge. That way, I always have them at the ready for those rushed school mornings!

Serves 4 • 2 large bananas • 80g porridge oats • 50g chopped up chocolate, chocolate chips or raisins (or a combination of chocolate and raisins) METHOD
1Preheat the oven to 180°C/Fan the boil and cook the pasta according to the packet instructions. Cook the veg in the same pan, a few minutes before the pasta is done. you’re like me and keep reserves of it ready for any occasion, retrieve
160°C/Gas 4 and line a baking tray, ready for your cookies.
2Mash the bananas really well in a large bowl. Add the oats and mix together. some from the freezer and heat it gently to defrost.
When the white sauce is ready stir in half the cheese and let it melt.
Once the pasta and veg are ready, take out 1 ladle of the cooking water and add it to the cheese sauce, stirring through.
Drain the pasta and veg and put into a large dish.
Pour over the cheese sauce and mix well.
Top with remaining cheese and put under the grill to melt for 5–10 minutes. 3 Stir through the chocolate or raisins (or both if you love a chocolate-raisin combo).
4Scoop out eight dollops of the mixture, placing them on the baking tray, evenly spaced.
5Bake for 10–12 minutes until golden
Cheesy Veggie Pasta
This recipe introduces you to my legendary cheese sauce. Some people are wary of a white or cheese sauce as it takes time, but it’s worth it as you can make a large vat of the white sauce and keep it in individual portions in freezer bags. Trust me, once you’ve made this you won’t ever go back to pricey jar or packet sauces.
