five to five DISTILLERY

estled in the lush greenery of Mount Tamborine lies a hidden gem that every spirit connoisseur needs to discover - The Cauldron Distillery. We had the chance to catch up with Darren, one of the owners, and got the inside scoop on their unique approach to

We'd love to hear the story behind your journey - what was it that inspired you to start a distillery and how did you turn that

Cauldron Distillery is the passion project for my brother Glen, best mate Greg and I. Over many a social event was there a quality drink shared alongside and good story and a laugh, and it got us thinking that maybe one day we could be working together on a ‘drinks related’ project. In 2020 we purchased a beautiful vineyard on Tamborine

Mountain and set about establishing our craft distillery onsite. On such a wonderful property, in god’s country on top of the mountain, where everything grown in abundance and the water so pure, it’s almost impossible not to be inspired!

What is your signature product, and what sets it apart from other spirits/gin on the market?

Our signature range is made up of 3 locally inspired gins. Sunset Gin is our naturally coloured pink gin and takes it’s name from some of the incredible coloured sunsets seen from the western escarpment of the mountain, overlooking the great dividing range. Mountain Gin is a fresh and lively spirit that is filled with the produce that grows in abundance on the mountain plateau – citrus and floral notes that are perfectly balanced. Coastal Gin is a nod to our eastern Gold Coast neighbours, and this expression of a navy strength gin is uniquely bold with savory and sweet notes from salt bush, Queensland macadamia nuts and fresh vanilla beans.

8 | Scenic

Could you walk us through the process of making gin at Cauldron Distillery? How long does it take to make?

To make a good gin, you first have to start with an idea, concept or inspiration. As an example, when we considered our seasonal release True Blue Gin, we only wanted to highlight unique Australian ingredients. We investigate what is available locally, interrogate it by tasting it raw, cooked and distilled, consider how it may compliment other botanicals and of course how it will taste in a gin. In this case we landed on Strawberry Gum leaves, local Finger Limes and Aniseed Myrtle – and what a combination it is! Between concept and a finished product there is anywhere between 5 and 15 iterations of the recipe completed on our 5L recipe still to find the perfect balance of flavours. Once complete, the ingredients are scaled up to our production stills and the actual distillation process takes around 15 hours before letting the spirit rest for a few weeks to allow the flavours to combine.

For those who haven't had the chance to visit yet, what can they expect to experience at Cauldron Distillery?

A really relaxed vibe with a choice of indoor, undercover or outdoor spaces to sit, relax and unwind. We’re not pretentious so come in your pluggers or your Sunday best. Families

love our venue as there is plenty space for the kids to run around burn off energy and pets are welcome too. Mums and dads can escape with one of our unique cocktails, a glass of local wine or a Queensland craft beer plus grab lunch from our kitchen menu. We engage local musicians to play a set every Saturday and Sunday afternoon and it’s become a really popular local venue to meet and reconnect with friends and family. If its your first visit you can’t go past our guided signature tasting paddle where you can sample our gins and liqueurs and decide which one is going home with you.

What do you think sets Mt Tamborine apart as a destination for food and drink lovers. With the mountain only being 1 hour from both Brisbane and Gold Coast, it really is one of the closest regional escapes from the hustle and bustle. As part of the Scenic Rim food bowl, you can experience local farmer’s produce, roadside stalls, locally inspired cuisine, artisan producers of craft spirits, wine, beer and other beverages. When exploring the mountain you’ll be amazed what is grown here like kiwi fruit, avocados, rhubarb, citrus and even coffee beans from Tamborine Mountain Coffee Plantation – who we collaborate with to make our ever popular Café Freddo Della Montagna (coffee liqueur).

Finally, if you could have a drink with anyone (living or dead), who would it be and what would you drink?

There are so many choices here, but I can’t go past a person who has inspired me for my whole life with his ever-present energy and passion, Sir David Attenborough. If I’m channel surfing and one of his documentaries is on, I can’t turn away! It I was ever lucky enough to sit and have a drink with him, we’d sip a perfect pour Sunset Gin and Tonic in the Tamborine Mountain rainforest, listening and looking at the amazing nature and wildlife.

BOONAH

A thriving rural community with a rich cultural and historical heritage

Boonah is a charming rural town located 70 km southwest of Brisbane, nestled within the scenic rim of mountain ranges and Cunninghams Gap. The town's history dates back to the early 1800s, when two pastoral runs, Duganden and Coochin Coochin, were established in the area.

The town itself was initially called Blumbergville, named after the Blumberg Brothers' stores that opened in 1882. It was later renamed Dugandan before finally being given its current name in 1887 when the railway station opened. The name Boonah is believed to be derived from an Aboriginal word that describes the bloodwood tree or a brigalowtype acacia, which reflects the town's deep connection to nature.

As the town continued to grow, various institutions were established, including several churches such as the Lutheran church (1882), the Catholic church (1887), and the Methodist church (1883). In 1888, the Goolman local government division's offices were moved from Flinders to Boonah, and the railway was extended from Ipswich, which further increased the town's importance.

Other institutions that were established in the town include a hospital (1900), an Anglican church, a Salvation Army chapel, and a Church of Christ. Boonah's commitment to education is evident in the establishment of two schools of arts, the first in 1893 and a larger one in 1912. The Fassifern Butter Factory, which operated from 1901 to 1974, contributed significantly

to the town's growth. Over time, the factory witnessed a shift from clearing scrub and growing maize crops to dairying and pig farming, and finally to irrigated horticulture, particularly potatoes. Fodder cropping was significant, especially during the dairy era.

Today, Boonah is a thriving rural community with a rich cultural and historical heritage that continues to attract visitors and new residents alike. Let's take a look at a local business that contribute to the vibrant community of Boonah.

Boonah Law Practice is a small locally-run firm servicing the Scenic Rim and beyond. The firm is made up of local professionals you can trust, headed by the Principal Director, Riki Millard LL.B.
